Fast Facts About Baja Travel

How to separate fact from fiction when it comes to Southern Baja safety issues

Fact: There is an incredible amount of misinformation floating around when it comes to crime and public safety in México. There is no doubt this is a country in the middle of a massive transformation. A war on crime wages on, and the violent response from cartel leaders and other criminals— domestic and foreign born—has left a bloody imprint on much of the nation. At the same time, President Enrique Peña Nieto is overseeing major upgrades to the country’s technological infrastructure as the economy is growing at a rate outpacing many other nations’ and most people’s expectations. The story of México, a country at a crossroads, is as nuanced as any. But that’s not the picture one gets when reading many mainstream news organizations’ headlines. For that reason, we’d like to take a little time to look at a few fast facts about Southern Baja travel.

Fact: There is no travel advisory for Baja California Sur The United States Department of State regularly issues and updates travel warnings for certain countries, including México. In its most recent update, the State Department warns against travel to particular states because of “threats to safety and security posed by Transnational Criminal Organizations.” There is, however, no travel warning or advisory in effect for Baja California Sur, the state that encompasses Cabo San Lucas and San José del Cabo, collectively known as Los Cabos.

Fact: Local, state, and federal government take a proactive role in protecting residents and visitors Visitors to Los Cabos quickly take notice of the heightened security along highways, on the streets, and even along the marinas. That’s because the local, state, and federal governments have made a concerted and collaborative effort to protect residents and visitors alike with initiatives such as a special, fully bilingual police force. Military checkpoints are another common sight. These are meant to prevent and intercept criminal activity such as the moving of stolen vehicles or drugs.

Fact: Baja California Sur is safer than many U.S. states The most recent available crime statistics show that Baja California Sur boasts the fifth-lowest crime rate in all of the country. In a past interview, Alberto Coppola, president of the Los Cabos Convention and Visitors Bureau, told us that Baja California Sur’s “average homicide rate over the course of the last four years totals 2.98 deaths per 100,000 in population. By way of comparison, the national average for the United States is 5.0.”

zens safely visit Mexico each year for study, tourism, and business, including more than 150,000 who cross the border every day.” In fact, the Baja California Sur Tourism Board says that 2014 is already experiencing an 8.5 percent bump in visitors over last year, and representatives say they expect to break a new record. And a recent report by Fly.com says Los Cabos ranks No. 7 in the list of destinations North Americans plan to visit this summer. The region is increasingly being selected as the site of major events, including the 2012 G-20 Summit and the now-annual Baja International Film Festival and Ford Ironman Los Cabos.

This spring, the popular Wild Canyon adventure park held a ribbon-cutting ceremony for its new hanging bridge.

The suspended bridge measures 330 meters long—it is the longest of its kind in the world—and is suitable for not only people but also ATVs. Cabo Marine Show Returns for Fifth Year

The longest-running boat show in México returned to Cabo San Lucas in May for its fifth annual expo. The threeday event, which was held at the Cabo San Lucas Marina behind the Wyndham Cabo San Lucas Resort, again drew thousands of visitors to browse booths showcasing the latest seagoing gadgets and playthings, as well as maritime-themed jewelry and fine arts. While their former colleagues are still facing several decades in the workforce, Susan Bessire Fraser and John Fraser are living the good life in Los Cabos. At an age where the average American is just beginning to save for retirement, this couple is deciding which beach to visit today. What is it like to move to Los Cabos? We asked them recently.

“We’d been looking at international living magazines for about a year and a half, but kept thinking about Cabo. We were concerned if we could afford it at this age, so we consulted with our financial advisor. When he said with proper planning we could do this now, we jumped on it,” Susan explains. With a strict budget in place, the couple began

“We love the view. In fact, it’s a dual view,” John explains. “We have both the ocean and the mountains.” They say the floor plan is perfect for them, and they and their dogs enjoy the backyard. It’s a peaceful location, enough so that they can hear the waves. Because of the location they have the flexibility to get to know Cabo San Lucas and San José del Cabo. “And,” Susan adds, “we love that it’s paid for.”

Although they expected to enjoy the weather and beaches, the couple found a few unexpected bonuses. The cost of living is significantly lower than when they lived in the Dallas, Texas, area. In addition to the low property taxes, they find that utilities are “super affordable” compared with

But, of course, homebuyers always want to personalize their new digs. When they set out to redecorate, Susan and John say they were pleased to discover their custom draperies were inexpensive: They simply went to a fabric store and picked the fabric and style. The store has an on-site drapers shop, and the cost of labor was minimal. “If we had known the cost of goods and services are so low compared to the United States, we’d have taken advantage of them even back when we were just vacationing here,” Susan explains.

“There’s always someone to help you,” John says of the growing expatriate community. “There are strangers who will go out of their way to assist; it’s an automatic support system.” As other new arrivals have discovered, it’s easy to make friends and become part of the community.

More and more Americans and Canadians are finding Los Cabos to be the perfect setting for the next stage of their lives. Who’s next?

“Our friends keep asking me, ‘What do you do all day?” John says. The days just fly by here in Los Cabos, the couple says, explaining that it’s nice to have the time to enjoy themselves. They have become active in LIGA MAC, an organization based in San José del Cabo that provides needed services to families in crisis and promotes education and selfesteem among the city’s teen population. And John says he can’t believe he can grill dinner while watching the ocean.

Would Susan and John recommend others follow their example? “Just go ahead and do it,” they advise. “Do your research but be ready for a few surprises along the way.

You will be on the road to a better standard of living.”

Finances are not the only consideration, though. They suggest you also open up to the experience and want something more than just saving money.

New Look, New Association The real estate community has formed a new association to share data and best practices. The new entity, known as MLS-BCS SA de CV, has taken over operation of the statewide multiple-listing service that allows each agent access to every property for sale in the area. The subscribers to this service must agree to follow a strict code of ethics and follow operating procedures that ensure investments are safe and secure. This new entity consists of the same real estate agents and companies who previously offered such services in the past under the national organization known as, Asociación Mexicana de Profesionales Inmobiliarios, or AMPI. Changes in México’s law made it necessary to form the new entity, but the business practices and safeguards buyers and sellers in Los Cabos have enjoyed in the past will continue to be in place. For your protection, work only with MLSBCS members.

Anti-laundering Law Takes Effect

In a related matter, the constitutional amendment that would have put an end to the system by which foreigners hold property within 50 kilometers of the ocean and 100 kilometers of the international borders is no longer under consideration. After passing the lower house of México’s Congress last summer, the Senate failed to take the necessary action within the allowed time period. Foreigners will continue to hold their Mexican properties in a special trust known as a fideicomiso. Article 27 of México’s constitution guarantees that foreigners who have a fideicomiso will enjoy all the rights, privileges, and benefits of a Mexican citizen as they pertain to the residential use of that property. For commercial property, a different legal entity must be formed; your real estate agent can recommend a bilingual attorney in such instances.

New Phase Opening at Cabo del Mar Ecopark México’s new anti-money-laundering law has taken effect, and this law will affect your real estate purchase. Although the exact details of compliance are still fluid, it is clear that buyers (foreign and domestic) will have to provide 34

As of press time, Portus—the developers of the wildly popular Ventanas, Soleado, and Cabo del Mar Ecopark communities—had opened a new phase to pre-construc-

tion sales for Cabo Del Mar Ecopark. This was made necessary as Portus was nearly out of inventory in the two previously available sections. Cabo del Mar Ecopark is the company’s latest project and is targeted to young families and active retirees. Their most affordable offering yet, the project consists of condominiums and single-family residences. As with prior Portus developments, life in Cabo del Mar Ecopark will focus around a spectacular clubhouse. But at Cabo del Mar, an additional feature will be an extensive park within the grounds.

The clubhouse will feature pools, hot tubs, restaurants, spa, market, fitness club, tennis courts, outdoor amphitheater, and chapel. The park will have hiking and biking trails, nature walks, and an opportunity to participate in organic gardening.

The homeowners association will provide landscaping service in the private yard spaces as well as full concierge services. As with their prior offerings, the company has systems in place that make ownership completely carefree. Owners who choose to may also contract with Portus personnel to rent their homes when not in residence. The homes being sold now are scheduled for delivery in 2015. The pricing for the new section was not available at press time. However, in the first two phases, prices started in the low $100,000s U.S. for condominiums and around $150,000 U.S. A number of custom upgrade options are also available to personalize homes. Two floor plans are offered, each with two versions. Having delivered more than 450 homes so far, Portus has a solid track record for producing what it promises. Let’s be honest. There’s a good reason the off-season in Los Cabos is during the summer and autumn months. It can get really hot here. Yes, the tip of the Baja Peninsula is bordered on three sides by water—including the confluence of the Sea of Cortés and the Pacific Ocean—but much of the land terrain is actually desert-like.

But there is good news: Not only do hotel rates drop during the off-season, but you can also expect temperatures that probably aren’t that much higher than the place you just left. Plus, we have all that glorious water, and summer and autumn are the peak seasons for Los Cabos water temperatures and visibility.

What were already world-class conditions for fishing, diving, surfing, and a host of other water-based activities are even better than usual. And we still have all that other scenery, too: towering cacti, the Sierra de la Laguna mountain range, golden beaches, and the unique granite rock formations at Land’s End. So don’t sweat it. There are plenty of ways to keep cool this summer. Here we list five favorites.

Sail Away The Cabo San Lucas Marina is the center of the city in nearly every sense, save geographical. Not only is it the entry point for hundreds of thousands of cruise ship passengers each year but the boardwalk has also become a key shopping and dining destination. And, of course, it’s where the boats are.

Buccaneer Queen (624-144-4217) is one of the marina’s most identifiable tour providers, largely because it’s the only local boat that looks as if it could have sailed the Spanish Main. The impressive pirate ship is a family favorite during morning and afternoon sails—when sword fights and snorkel tours to Chileno Bay are the order of the day—but provides

Sunset cruises around Land’s End offer Mexican dinner specialties and an open bar, while weekend adults-only Blow Outs feature games, contests, and dancing 9 p.m.–midnight.

Losoutdoors Cabos Top activities companies are currently featuring memorable below-the-surface adventures near Espíritu Santo, an archipelago off the coast of Baja California Sur’s capital city of La Paz. One of those is SunRider’s, which offers (624-143-2252) dive trips that depart from Cabo San Lucas aboard a 33-foot catamaran and include two dives at premier area sites like Los Islotes and Fang Ming. Los Islotes is located just north of Espíritu Santo, and the islets preside over a large colony of sea lions, as well as a concentrated sampling of the close to 900 species of fish found in the Sea of Cortés. Fang Ming, on the other hand, is the site of the first artificial reef in Latin America, a wreck dive that was created by sinking two Chinese vessels confiscated by the Mexican government for transporting undocumented immigrants.

Bag the Big One Fishing has always been king in Los Cabos. Long before the area boasted luxury hotels, championship golf courses, and pampering spa services, fishermen were making their way to the southernmost point of the Baja Peninsula eager to try their luck with the abundance of big-game fish, particularly marlin, in the waters off Cabo San Lucas.

Annual summer and autumn tournaments like Bisbee’s East Cape Offshore, Los Cabos Offshore, and Black and Blue may draw the biggest crowds and pay out the largest purses—Bisbee’s Black and Blue is the world’s richest fishing tournament, with million-dollar-plus payouts each October—but the fishing is excellent all year off Los Cabos and the neighboring East Cape, and local companies are increasingly attempting to promote sustainability by encouraging catch and release policies.

Losoutdoors Cabos Soar above the Sea Some of Los Cabos’ most memorable water-based activities don’t involve masks and fins, dive tanks, surfboards, or fishing rods. Instead, these aerial adventures—FlyBoarding, parasailing, and motorized hang gliding—allow visitors to soar over the local waters at heights that range from a few feet to a few hundred.

Each offers new perspectives on the area, tantalizing glimpses at familiar local landmarks like Lover’s Beach and Land’s End from unusual and often breathtaking angles.

FlyBoarding is a relatively new phenomenon, but one that has exploded in popularity in recent years. French water ski champion Franky Zapata invented the concept in 2011, and for the uninitiated, it basically involves a board attached to a pair of boots and also to what looks like a long length of fire hose. The other end of the hose is attached to a wave runner, and revving the throttle sends a pressurized burst of water through the hose, allowing the person who is in the boots to rise from the sea like some aquatic god, or comic book superhero.

Cabo Flyboard (624-143-0146) was the first to bring the sport to Cabo San Lucas, and adrenaline junkies need only to watch a brief training video and pick up a helmet and life jacket at the office before commencing aerial exploits above the waters off Médano Beach.

By Chris Sands What’s not to love about pizza, the delicious combination of golden brown crust, tomato sauce, melted cheese, and tasty toppings that just may be the world’s most perfect food?

Think about it. Pizza is good hot or cold. It’s beloved by children and adults. It’s equally satisfying for dinner, as a late night snack, or for breakfast the following morning. And if you don’t feel like cooking, or walking to the nearest pizzeria, there’s always somebody willing to deliver it to your front door.

This versatile and palate-pleasing foodstuff has certainly found a foothold in Los Cabos, where there are seemingly more eateries offering gourmet pizza pies than there are Renaissance artworks in Italy. And in addition to the usual suspects—delivery chains, mom-and-pop pizzerias, slice specialists, and pub grub providers—a surprising number of highly regarded restaurants in Cabo San Lucas, San José del Cabo, and the connecting Tourist Corridor have added pizza menus to their bills of fare.

Los Cabos’ many fine Italian restaurants are still the most likely places to find handmade gourmet pizzas. The best bets for visitors include one of the area’s oldest Italian-style eateries and one of its newest. Romeo & Julieta (624-1430225), a fixture of the Solmar Group of hotels and restaurants, remains beloved for its old-world Tuscan decor and hearty Italian cuisine, but the Pedregal-area restaurant also dishes up distinctive mesquite-fired pizzas with a choice of thin or thick crusts. The slightly spicy Diavolo topped with salami and mushrooms and the meaty Tybalt (named for a character in Shakespeare’s Romeo and Juliet) headline the Romeo & Julieta’s sizable pizza menu, which also presents guests with some very good vegetarian options.

Relative newcomer Pan di Bacco (624-143-3508) has quickly developed a loyal local following by featuring a host of Italianate pleasures, ranging from freshly baked bread and pastries to panini, pastas, and fine wines. But for pizza aficionados, the premier attractions are Pan di Bacco’s rectangu-

Pan di Bacco is mere steps from the Cabo San Lucas Marina, but three of the city’s top pizza purveyors are centrally located on the marina boardwalk, offering waterfront views and fresh sea breezes with their gourmet pies.

Familiar favorites like cheese, pepperoni, and Hawaiian pies are augmented by gourmet combos like the salmon and potatoes with capers and arugula, and the exquisite Tartufo and Fontina topped with black truffles, truffle oil, and fontina cheese. This mix of simplicity and sophistication makes Baja Cantina a popular gathering place for pizza connoisseurs of all ages.

And the wood oven–prepared pizzas are to die for, particularly the superb combination of wild mushrooms, crème fraîche, parsley, and truffle oil. Chef Tadd Chapman has changed the way we eat and talk about food in Los Cabos. During a short time span, he has introduced several San José del Cabo eateries—some he started, some he sold, and some he revamped—including three very popular establishments.

The first location is named Habanero’s Gastro Grill & Tequila Bar (www.habanerosgastrogrill.com), which is named after the habanero chile pepper and opened in October 2004. The restaurant serves European-style bistro fare with a Mexican twist, which Chapman calls Mexican fusion. In 2010 Chapman christened Don Sanchez (www.donsanchezrestaurant.com), reinventing it as a fine dining concept in November 2012. He owns the building in which Don Sanchez is housed and, later that year, he opened the Retro Burger Bar (www.retroburgerbar.com) in the space above it. The three restaurants are as different as their names imply.

Habanero’s began as a sidewalk café.

Picture a European bistro, where you can sit outside and people watch.

These are not the norm in Los Cabos, so Chapman shielded the area around Habanero’s with areca palms so patrons could enjoy breakfast, lunch, and dinner with some privacy. When the opportunity presented itself, Chapman expanded into the space next door and added an air-conditioned tequila bar—complete with 100-plus tequilas—while maintaining the open terrace to take advantage of Los Cabos’ beautiful weather. In 2005, his mother, Christina Chapman—an excellent chef in her own right—joined him as a venture partner in Habanero’s.

While primarily a dinner spot, the restaurant has established itself as a morning favorite. It is especially popular on Sunday mornings, when the 15-item menu includes four varieties of eggs Benedict and a mixture of

Mexican and American-style dishes.

All are available for less than $9 U.S. and come with coffee and fresh fruit.

Specials are the norm here. On Taco Tuesdays, you can select from those made with lobster, fish, shrimp, and pulled pork. Huge “designer” salads are also popular, as is Mexican fare, specialty burgers including one called Sloppy Texas Burger made with tequila barbecue sauce, and pasta dishes. The topselling dinner is the surf and turf for two. On any particular day, the dinner special may be arrachera served on top

of mashed potatoes with sautéed rajas and onions in a delicious cream sauce.

It is worth a visit to find out what chicken Voodoo and chicken Piazza are.

Sinful desserts—all made by Chapman’s mother, Christina—include Mexican coffee mud pie.

wine room and tapas bar for an intimate dining option with Ezra Katz art pieces from the Ida Victoria Gallery adorning the walls. Continuing through the upper level, there is a stairwell leading down to a massive hacienda-style courtyard. There are fountains, fire pits, and wall friezes depicting Mexican architecture.

Specialty drinks include refreshing Baja

sangria made with red wine, brandy, Cointreau, lime, cassis, orange juice, and sparkling water. Another must-try is the jalapeño basil margarita.

Chapman says he is proud to serve locally sourced ingredients, including organic farm products and seafood from the Sea of Cortés like oysters and clams from Northern Baja. His goal, he

says, is to bring in live geoduck clams, which are native to North America’s West Coast and one of the largest clams in the world. Chapman describes Don Sanchez’s food as contemporary Baja fusion, and the seasonal dinner menu includes a rich cioppino with mussels, a duo of crusted crab cake and fried soft shell crab, seafood, lamb shank and beef from Sonora, México.

Most evenings, guests can enjoy live sax, guitar, or trumpet performances.

What has become especially popular is the chef’s tasting and pairing lunch, which features five courses for a wining and dining experience by reservation only from noon until 3 p.m. Whatever the chef’s whim is on that particular day—and whatever is in season and available—is what you can expect. Don Sanchez also offers full-service event dining for weddings, custom events, private parties, groups, and incentive programs for groups of four to 300.

Always thinking ahead, Chapman is entertaining thoughts to introduce a Cultural Flavor of Baja theme night, perhaps with foods from Ensenada and traveling down Baja to Los Cabos with indigenous foods and folkloric dancing performed by a local dance troupe.

Another idea formulating in the fastthinking, fast-talking chef’s head is promoting organized wine tastings and wine flights with a prix fixe menu.

On the opposite side of the culinary spectrum is Chapman’s Retro Burger Bar, which opened in November 2012.

The name itself takes one back to an earlier time, a revival for the recent past.

Chapman calls this eatery his “jive burger dive.” With 13 big-screen TVs, myriad beer and specialty drinks, and live music in the evenings, this is a hopping spot. It’s open 11 a.m. until 2 a.m.— the only bar in San José del Cabo that stays open that late—making it the perfect place to wind down the evening with some munchies. Where else can you get a bowl of fresh popcorn, root beer floats, banana splits, classic burgers made on house-baked sesame seed buns, or cheeseburger lollipops?

He is continuously restructuring and recently hired a new chef who will focus on the Don Sanchez facility.

Chapman is among the top culinary chefs in Los Cabos but is quick to say he is proud to be among so many good chefs. He is a humanitarian and has been giving back to the community by working with LIGA MAC as well as the Chefs al Rescate (Chefs to the Rescue) program to fund a wheelchair factory for disabled children,

and he has been a participant in the Los Cabos restaurant association’s Sabor a Cabo, a gastronomic fundraiser for the fire departments and Red Cross, as well as numerous other charitable organizations.

Not resting on his laurels—he continues to appear on TV and receive various “Best Of” awards—Chapman is already planning his fourth eatery. It is still in the planning stages, but we can expect more of the same diversity in food and design. So the family of three will be expanded to at least four in the very near future.

Nick-San has branched out, creating its own labels of tequila and wine, as well as a champagne bar

Twenty years ago, Nick-San introduced Los Cabos to authentic Japanese food and a one-of-a-kind brand of Japanese–Mexican fusion. That innovative spirit has continued. In 2012, the family behind Nick-San debuted its own tequila and wine—and, more recently, a champagne bar—always teaming with the best producers to provide clients with the best quality. Read on to learn about the history of these beverages and how they are being interpreted at Nick-San.

Tequila: The Spirit of México Tequila is the most famous and representative Mexican beverage. Though known around the world, tequila is still 58

an enigma to many: Not everyone understands what it takes to produce this beverage.

Tequila is the name of a town in the state of Jalisco, México. The town is the most recognizable producer of tequila and the agave plants needed to produce it.

Contrary to popular belief, though, there are other regions legally authorized to produce tequila. These regions include greater Jalisco and specific municipalities within Nayarit, Michoacán, Tamaulipas, and Guanajuato.

The production of tequila is expensive, and it must be done delicately. The agave tequilana Weber, variety azul

(Weber Blue Agave), plant takes seven years to grow, and most used to produce tequila are seven to 10 years old in order to obtain the best flavor and qualities. In order to have real tequila, it is important to follow some rules to ensure the quality and origin of the beverage. Tequila must be made from no less than 51 percent Weber blue agave. Higher quality or high-end tequilas are made from 100 percent Weber blue agave, as shown on the label. The aging must be in oak barrels. There may be maturation rooms, but these need to be within the designated regions.

In 2012, Nick-San made the bold choice to create its own brand of tequilas. As with all of its menu items, the restaurant wanted to provide guests with the highest-quality products available. So it partnered with Tequilas González Lara to produce three varieties: Nick-San Silver or Blanco: This is perfect to pair with citric, creamy sauces and fresh salads. Consider

Nick-San Aged - Reposado: This is great to pair with seafood. Try it with the Black & White Sashimi, Fish Kara Age, and Chasoba.

Types of Tequila Blanco/White/Silver: Clear, unaged tequila that is normally bottled right after being distilled or matured for less than two months.

Joven/Gold: A white tequila that has not been left to rest or mature but to which colorants and flavorings have been added. These tequilas can be made with 100 percent agave but are more often made with 51 percent mixed tequila.

Reposado/Aged: Tequila that has remained in wood barrels for at least two months but no longer than a year.

Añejo/Extra Aged: Only bottles that have been aged for at least one year in an oak barrel can be labeled añejo, or extra aged.

Nick-San’s wines can be enjoyed straight or as part of a cocktail. The Isayaki is made with white wine, mineral water, Controy, and fresh basil.

Extra Añejo/Ultra Aged: The newest tequila classification requires tequilas be aged for a minimum of three years.

can take much of the credit for that.

And people are becoming more familiar with—and enjoying more and more—good pairings of wine and a great meal.

Wine: A Good Pour

For that reason, a couple of years ago, Nick-San decided to debut its own house wines to offer clients a wine of good quality and value that pairs perfectly with the menu. Wine does not always have to be expen-

sive to be enjoyed. The process of finding and fine-tuning took a long time, but Nick-San eventually adopted two wines.

The first is a white wine from the Guadalupe Valley; it’s a fresh and fruity blend of sauvignon blanc, chenin blanc, and Colombard grapes. It has a nice gold color, and it is fresh in mouth and nose with notes of citric fruits and minerals.

This is the perfect companion for seafood or white meat. Try it for a summer lunch—or basically all year in Los Cabos—with the Oysters Ponzu, the Hamachi Sashimi, or the popcorn shrimp.

The second, a red, comes from Côtes de Bordeaux in southern France. La Grange Clinet is a more structured wine with character. It is a combination of merlot, cabernet sauvignon, and cabernet franc. This wine is a fruity red wine with intense notes of blackberry and hints of flowers and vanilla. This is a great wine to pair with red meat, spices, and grilled fish. Try it with Lobster Sambal, Hamachi Yaki Onigiris, cilantro onigiris, curry fish, or even Nick-San’s chocolate cake.

Champagne: A Touch of Bubbly The world’s most glamorous drink is universally employed to toast special celebrations. It is produced exclusively in the Champagne region of France, where the only grapes used are chardonnay, pinot noir, and Meunier.

There are two types of champagne that most people know, blanc and rosé. The first is made with the three authorized grapes without the skin to prevent from coloring the champagne, and the second one is produced with the skin of the pinot noir, which is a red grape to give the color “rosé.”

Depending on the sugar content, you may have seven types of champagne, ranging from less sweet to sweetest: brut nature, extra brut, brut, extra sec, sec, demi sec, and doux.

The Celebrity Canadian-born Tadd Chapman is a robust young man who’s charming, strong willed, and knows exactly where he is going. At 37, he already owns three popular restaurants in San José del Cabo.

He took culinary classes in high school. On scholarship at Vancouver Island University Malaspina, he trained under several well-known chefs. And he went to work.

Meanwhile, his father moved to Los Cabos, and on a visit Chapman saw an opportunity. After a series of buying, selling, and partnerships in various ventures, Chapman opened Habanero’s Gastro Grill & Tequila Bar, a neighborhood eatery, in 2004. Don Sanchez followed in 2010, then the Retro Burger Bar in 2012.

At 15, he wanted a car. His dad told him to get a job. Instead of one, Chapman got two, including a position peeling potatoes. He bought a beater of a car and launched his culinary career, going from dishwasher to prep cook to line cook.

He was born in the coastal state of Campeche—it is in the southwestern corner of the Yucatán peninsula and borders the states of Yucatán and Quintana Roo—an area known for its outstanding seafood.

Arbez brings a lifetime of seafood experience to bear on his menus for Baja Lobster Co., which include a five-course bill of fare for guests at the all-inclusive Marina Fiesta. For the rest of us, Arbez has recently rolled out a new à la carte menu featuring a superb mix of traditional and contemporary recipes. The lobster Thermidor would pass muster with the late great French chef Auguste Escoffier (although he called it Homard Thermidor), while the San Lucas dish is as fresh and tangy as its ingredients— lobster sautéed in garlic and topped with spicy tomato sauce.—C.S.

and resident kitchen maestro at Baja Cantina Marina. The dockside restaurant has only improved under Yacer’s stewardship, showcasing excellent gourmet pizzas, pub-style favorites, and fine steak and seafood dishes.

Guerrero-born Eliodoro Gutierrez is executive chef at María Corona, a restaurant named for the owner’s grandmother, whose century-old recipes still form the backbone of the menu. He started at María Corona during its inaugural year in 2009. Since ascending to his present position, he has shown a remarkable facility with traditional regional specialties.

But venture over to TripAdvisor, and all the mentions of hidden treasure appear to be in reference to Enrique Diaz’s cozy Alcaravea Gourmet, a downtown Cabo San Lucas café dedicated to the bold flavors of Mediterranean cuisine. Since opening with a capacity of only 15, Alcaravea has grown to accommodate a cozy 60. But what’s grown exponentially larger is its reputation. Online travel sites are filled with reviewer comments like “Hands Down Best Place in Cabo” and “Been Here, done it, and will do it again.” We can understand their enthusiasm after having sampled dishes like the Alcaravea mushrooms (the mushrooms are sautéed with white wine, extra-virgin olive oil, Parmesan cheese, Marsala wine, sage, basil, and oregano, then baked), Sea Earth carpaccio salad (thinly sliced fish, salmon, and beef are served with arugula and Parmesan), and the carbonara prepared with freshly made pasta. Los Cabos dining Baja Cantina Marina Like its sister restaurant, Baja Cantina Beach, this Cabo San Lucas Marina favorite is constantly working to get better. Corporate chef Manuel Arredondo—see our feature “Top Chefs,” on page 62, to learn more about him—has helped Baja Cantina Marina and all the Baja Cantina Group restaurants do just that since joining the organization, bringing with him more than 30 years of experience in catering and fine dining establishments. During our visit, we enjoyed a tasting of the restaurant’s most famous dishes as well as fish ceviche served in a half-coconut shell and a cheese fritter made of white and yellow cheddar and red bell pepper shaped into a ball and lightly fried. The clam chowder, a house specialty, came served in a bread bowl. Shrimp Baja Cantina, a large prawn wrapped in bacon and grilled, followed. Next arrived the entrées: blackened mahimahi served on seasoned rice and a skirt steak topped with cheese and accompanied by guacamole and beans. For dessert, we opted for the delicious tiramisu.

Campestre Restaurant Bar There is something decidedly refreshing about a restaurant that doesn’t put on airs. At Campestre Restaurant Bar, an institution among locals, the owners are the first to tell you

that they don’t boast a luxe location or ocean views.

Instead they have excellent prices and generous portions of dishes that range from out-of-this-world chilaquiles (try the green option with sliced skirt steak) to tampiqueña and Mexican combo, lobster tail, coconut shrimp and Imperial shrimp. What began as a small four-table palapa in 2000 has grown to a spacious dining hall that nevertheless fills quickly. The wait for a table during lunch may be long, but be patient. De Cortez Mesquite Grill This quintessential beachfront restaurant is about as close as you can get to the sea without getting wet. Diners can enjoy a spectacular view from either the terrace or the enclosed dining room. Of course, there is also an aquarium, a sleek tapas bar, and an alfresco dining area that is simply lovely. Invita Bistro The most beautiful window in Cabo San Lucas looks out across the festively lit gazebo in the center of the town square, Plaza Amelia Wilkes, toward colorful villas clinging to a hillside. After a few glasses of Chianti and several helpings of Invita Bistro’s homemade breads and pastas, it’s easy to imagine one has been transported to chef Antonello Lauri’s hometown of Rome. The expansive window and enormous wine-themed painting from local artist Yandi Monardo are lovely, but the heart of the restaurant’s charm lies in its family-recipe Italian dishes, many of which date back several generations. The Moxitos Beach Club The newest restaurant on Médano Beach is quickly making a name for itself thanks to its beautiful location, surprisingly accessible price points, and a smart menu with a heavy focus on fresh, local seafood. Popular dinner starters include excellent smallplate servings of ceviche and shrimp cocktail, and the Caesar salads—prepared tableside by the talented waitstaff—are among the very best in Los Cabos. For the main course, it's hard to top the mariscada seafood platter for two, which has lobster, crab, jumbo shrimp, octopus, and the catch of the day served with rice and grilled vegetables. walking distance. We began our dinner by sitting at the sushi bar—you should try this at least once—and chef Edgar “Eddie” Carbajal attended to us right away. We didn’t even have to look at the menu, since he offered to prepare us a dinner designed around our favorite flavors. We started with the famous tuna tostada, a tasty rice tostada with fresh tuna, avocado, red onions, and a bit of spice. Later, we continued with a Salmon Yuzu sashimi, which is made with thin fresh salmon slices that are filled with crab and avocado and served on a yuzu sauce. It was to die for. As we continued our night, we tasted many other dishes. Among them were the Gorgonzola Shrimp, house-made gyozas, a lobster roll, and many other dishes that were suggested by the manager, Jorge “George” Carbajal. These were accompanied by Nick-San’s very own sauvignon blanc, which is produced in the Guadalupe Valley.

To end the night, we had a surprise for dessert: The Propina Roll, as the chef calls this roll just for fun, is a tasteful avoca-

The Sashimi Especial is a perfect choice, if you’d like to taste the special offerings such as Cilantro Sashimi, Serranito, Yuzu Especial, Hamachi Curry, and the Black and White. These pair perfectly with Nick-San’s house white wine. Then we continued with the Dynamite Scallops with Nick-San’s red wine, which is a great Bordeaux that is easy to drink and pair with many of the dishes. We’d suggest the ones we had that night: the Lobster Sambal, Serranito Roll, and Chasoba, a tasty green tea pasta with shrimp and curry. During our visit, we chose to skip dessert and instead indulge in Nick-San’s aged tequila. Since Nick-San has its own tequila brand, we figured we’d give it a shot. We were pleasantly surprised to find a well-balanced bouquet.

While owner John Bragg’s restaurant has built a reputation for its enormous tequila collection, there are in fact many reasons tourists and locals have favored the downtown Cabo San Lucas restaurant for more than two decades. Guests can watch as the chef grills shrimp, lobster, and prime cuts of meat and sing along with strolling mariachis from the comfort of Pancho’s air-conditioned dining room or expansive alfresco area. Get into the party mood by ordering one of the best margaritas in Los Cabos or a “bandera.” The drink— its name means “flag” in English—features shots of premium tequila, lime juice, and house-made sangrita that make up the colors of the Mexican flag. San Lucas Marina favorite has more menus than most restaurants have tables—breakfast, bar, kids, lunch, sushi, and dinner—and yet everything is consistently fresh, filling, and delicious. Sunset da Mona Lisa Romance transcends every element of the Sunset da Mona Lisa experience so much so that the restaurant averages one engagement per night and has hosted countless weddings. Three chefs share executive duty here, and they’ve created a menu that is the perfect pairing for an incredibly romantic view of the sunset over Land’s End. The menu was crafted to cater to all types of dietary restrictions (including gluten sensitivities), and there’s something for everyone. There are antipasti (try the crispy Raviolo Croccante with Beluga Kaluga caviar), house-made pastas, fresh seafood, meaty entrées, and a roster of deliciously indulgent desserts. We began our dinner with an appetizer of thick-cut, carpaccio-style tuna that popped with notes of soy and citrus. We continued with house-made gnocchi filled with crab in a white truffle cream and beef tenderloin and vegetables.
