Safety First Los Cabos’ mayor reflects on her first 100 days

At the press conference marking her 100th day in office, Castro Guzmán reflected on what has been accomplished so far: the activation of treatment plants expanding access to water, increased collection of waste, a plan to rid the municipality of potholes, and 30 percent reduction in city spending. The reduced spending was a result, her office says, of the decision to reduce government office leasing, eliminate computer equipment purchases in the administration’s first year, and for the mayor, as well as her trustees and staff, to donate 10 percent of their salaries toward administration spending.

Safety has also been a top priority for the mayor in her first months as mayor: A life insurance policy is now in place to help families of police officers killed in the line of duty, and a domestic violence unit was created to better serve Los Cabos residents. But public safety does not end there. To mark her first 100 days in office, Castro Guzmán issued an exclusive statement to Los Cabos Magazine: 6

The beginning of the “Safe City” model that we have implemented in Los Cabos arose from the need to unite the three levels of government leadership together. And of course, when we talk about leaders, we are also talking about all the business men and women who have made this great touristic development possible.

The key word of our safety model is coordination. Safety cannot have different colors, different agendas, different themes or different plans. We must be blind to the different political parties within our city and state. We must all share this great responsibility to ensure the safety of all our citizens.

We are currently using a ‘’Safe City” model that we have at the municipal level as an example to each of the municipalities that are tourist destinations with beaches. We have so far, implemented that model in three of 15 cities that meet this tourist beach destination criteria. What is our intention? Our plan is to talk about what we have done well.

We have to set aside political differences and use the need and the will to work in coordination. When I talk about the magic word “coor-

S A F E T Y dination,” I say it because if we, as government leaders, maintain ourselves in a permanent dialogue on the subject of security with the business community, then everyone is seated at the same table. What happens if we do not comply with our promises as politicians or as government leaders? Obviously, the community will see this as an instable city.

The founders of this city who have economically supported this area from the beginning, see when we have not done a good job of governing, and to them and every one of our citizens, safety and security are very important.

The business leaders’ support has been at the heart of the expenses they have assumed in an effort to keep Los Cabos safe for everyone.

The businessmen and women of Los Cabos have worked in longstanding coordination with the other branches of government that we can count on today with the navy corps’ presence.

When Armida Castro Guzmán was sworn into office last summer, she became Los Cabos’ first-ever female mayor.

When we speak of a safe municipality, we are talking about a municipality that is ready to receive tourists but is also ensuring the safety of its citizens. We cannot believe that the city’s security only concerns the beautiful areas of the Los Cabos, because security involves everyone within our city limits. When my husband and I arrived in Los Cabos, we joined an effort that was providing results in terms of city-wide safety.

A “Safe City” model in which we all are seated at the same table. A safe city model in which the military presence will be here, in which the federal police will arrive, as well as Acedena, and the navy personnel that are already here. Our plan is to create a containment barrier in which we can help reduce delinquency.

At the moment, the director of public safety security is a former navy officer. He is not someone I put in that government position, nor is he someone I named to that office of public safety, nor is he someone I recommended. He is currently carrying out the rules and guidelines of public safety in coordination and at the discretion of our state level of government.

Thanks to all of our protective agencies of our “Safe City” municipal model. A great municipal model that guarantees both citizens and visitors a city on permanent safety alert because crime does not disappear, and we need to be ready and waiting for it. Why? because by permanently working to maintain a safe and secure city, from dusk to dawn, we can achieve our safe and secure city goals with the help of the navy, Acedena, federal police, PFR, and of course our local police officers.

What do we want? When we say we want a safe municipality of peace, we are saying that we are going to do everything in our power to make it so. When talk about having a safe and secure city, we are talking about a “Safe City” model that we have implemented during the last year that we have been in office.

What do we have to do? Work on prevention and in order to do so, is why we are investing much of the budget towards the comforting tranquility of a safe and peaceful city. Working around the clock towards the prevention of crime. Y

We have to work together because Cabo requires about a 1,000-member police force and right now we only have 500 officers. We are expecting another 18 policemen by April 30, and we plan to incorporate a tourist police force that is badly needed right now.

Happy Birthday to Us! An inside look at our 25th anniversary celebration

That’s just what we did when the Los Cabos Magazine team celebrated our 25th anniversary at the Palmilla Dunes residential complex in San José del Cabo in April. Los Cabos Magazine general manager Perla Palomino, publisher Joseph A.Tyson, and Palmilla Dunes assistant to the developer Patricia Soto pulled out all the stops for an elegant evening of wine, food, music, and extraordinary entertainment.

Guests were greeted at the red carpet entrance with a stepand-repeat photo backdrop and costumed stilt-walkers on either side before being ushered down to the beauti14

ful oversize pool area illuminated with colored, flickering lights. That’s where wine and hors d’oeuvres were provided

by Deni’s Catering.

Cabo Entertainment Company and LaCirco provided live music, singers, acrobats, contortionists, and a fire show to the enjoyment of the more than 300 elite guests who mixed, mingled, and strolled around the enchanting pool area. A theatrical performance by Scaramuccia Theater and dances

by Antonio Vargas Studio and Euridice Dance Center added to the top-notch show. Some of the entertainment took place in the shallow water of the pool, which added to the uniqueness of the entertainment.

You can’t turn 25 without throwing a big party, right?

When the second publisher decided to close Baja Explorer magazine, I decided to stay in Los Cabos and produce my own publication. I was already designing brochures, postcards, and rack cards for clients.

“We published the first issue of what we then called Los Cabos Real Estate Guide on October 16, 1993. It was 40 pages. One year later, we rebranded as Los Cabos Guide. And, in 1998, we officially became Los Cabos Magazine: It was now 132 pages, and some 125,000 copies were printed for the year. To date we have printed approximately 2.6 million copies. From our humble beginnings, our company has grown to operate 30 websites, our popular voucher program, and the magazine.

Additional sponsors included Alex Alanis DJ (lighting, music, screens), Meridiano 109, Jannet Peralta (recognition plaques, backstage printing), Aspi Media (design), and Baja Wine (wine).

Tyson thanked everyone for joining in the anniversary celebration. “It has been an incredible ride and quite an evolution—for me, the magazine, and Los Cabos,” he stated in his opening remarks. “They say there are no bad days in Cabo, but the truth is that we have weathered a lot—both as a publication and more generally as a community. From hurricanes to the recession, swine flu, and the ups and downs of tourism, we’ve had our growing pains and our obstacles. But through it all, we have persisted.”

“I came to Los Cabos from West Point, Virginia, back in the early 1990s. I was drawn here by my love of adventure and photography. Cabo looked very different back then. Cabo Wabo was just getting started. Fishing was still the primary beach activity.

All in all, it felt a little like an untouched Wild West.

“I started by selling advertising for the original Baja Traveler magazine before it was reorganized with new management in 1991 under the new title Baja Explorer and then shuttered in early 1992.

“Our goal has never changed: We aim to be the primary hub of information for tourists in the region. And we’ve been able to do that because of the support of so many people, many of whom are here tonight.

“I want to thank our Los Cabos Magazine team, too, starting with my wife, Perla Palomino. Our editor Ashley Alvarado couldn’t be here tonight, but she’s been with the magazine for a decade and asked me to send her best. The design of the magazine has also gotten sharper over the years, and I’d like to thank designer Rogelio Perez and those who came before him. As you can see, this is a group effort. I just want to say thank you once more to all of you for your support.

We couldn’t do it without you.”

Times were very different back in 1993, when Virginia-born entrepreneur Joseph Tyson launched Los Cabos Magazine—then known as Los Cabos Real Estate Guide. Of course, you don’t have to take my word for it.

As we continue to celebrate Los Cabos Magazine’s 25th anniversary, we’re taking a look back at some of the magazine’s most iconic covers, the stories they tell, and what was going on in Los Cabos—and the world—back then.

Issue 1 The first issue of Los Cabos Magazine debuted in the fall of 1993. It was a 22

compact 40 pages, and the most interesting story didn’t even appear in the publication—then known as Los Cabos Real Estate Guide. You see, Tyson had arrived to Los Cabos a number of years earlier and was selling advertising for the original Baja Traveler magazine. He worked there for two years, before it was reorganized with new management in 1991 under the new title Baja Explorer and then shuttered in early 1992. Not wanting to let his clients down, he decided to launch a publication all his own.

He’d already been designing brochures, postcards, and rack cards for clients, and he felt a magazine was a natural extension of the work.

Issue 6 By issue five, the “Guide” had been dropped by the magazine’s title. And, with issue six, Los Cabos Magazine officially became Los Cabos Magazine. The sexy cover featured a model and a bodyboard, inviting travelers to get to know the region, its activities, and the now biannual publication (up to 132 pages by this point).

Issue 14 Famed Los Cabos photographer Francisco Estrada made his debut as Los Cabos Magazine’s go-to cover photographer in fall 2007. Over the years, his shots have included stunning Los Cabos sunsets, water, real estate, beaches, weddings, golf courses, and more. Issue 42 The December 2015 edition of Los Cabos Magazine featured one of the biggest celebrities in Los Cabos—or the world, for that matter. More than 20 years after first publishing, Los Cabos Magazine finally put a whale on the cover to mark the incredible whale watching conditions right here at the southern tip of the Baja Peninsula. The cover story was a complete guide to whale watching—when to come, 24

Copy That 4 things every buyer needs to know

It’s All About Trust Per Article 27 of México’s constitution, non-Mexicans who purchase property within 50 kilometers of the ocean (approximately 30 miles) must hold that property in trust with a Mexican bank. The trust grants you all the rights, privileges, and benefits of a Mexican citizen as pertain to the property but also restricts you from seeking any legal action from your home country. In other words, you cannot ask the United States or Canada to intercede if you have a dispute in México. Instead, you must settle things through México’s court 36

system. This trust, called a fideicomiso, also offers some estate planning benefits. Of course, it is not without cost; that includes annual fees. If no trust currently exists for the property in question, your attorney will obtain permission from Congress to set one up. In some circumstances, an existing trust can be assumed by the buyer. Your real estate agent can explain the trust to you in detail.

Deal or No Deal Here in Los Cabos, it is customary for the buyer to pay the costs involved in conveying title (closing costs). Depending on what you are purchasing, these costs can be significant and they must be paid in two parts: one half upon acceptance of your offer and the balance at closing. In Mexico, there is a 2 percent federal tax on the acquisition of real property. Additionally, there are fees to local government and to the bank holding the trust. The transaction will be presided over by a state-appointed attorney who is charged

The real estate options in Los Cabos are absolutely stunning and well worth the investment. Of course, before you jump right in, it’s important to remember the whole picture. Asking questions is a good thing. The answers you get may be critical to determining what—and where and how—you’ll be buying.

While there are many things you should learn up front, here are four critical issues to consider before starting your search.

with verifying the transaction and collecting taxes (although this attorney’s title is notario público, it should never be confused with a notary public in the United States or Canada). With closing costs on a moderate purchase totaling as much as 5 to 7 percent of the purchase price, it is important that you make these costs part of the budget. Before starting your search, it is a good idea to get a rough estimate of the closing costs from your real estate agent. In many cases where the budget is tight, my clients have had to adjust their estimated price range to be sure they are able to cover these closing costs without issue.

The Long Game One can imagine that setting up a trust and completing the requisite paperwork might take some time. Closings in Los Cabos take longer than in your home country and in some cases quite a bit longer. A simple closing may take two months to accomplish, but depending on the parties involved it could be much longer. The trust departments of Mexican banks have always had the reputation of being hard to work with but in recent days they have achieved a level of difficulty that boggles the rational mind. And as a party to the transaction their participation is essential to the transaction but in some cases that will seriously impact the time it will take to transfer title into your name properly. At press time one institution, HSBC Bank, was refusing to participate in any transfer, thus forcing sellers to move their existing trust to another bank in order to sell their property. In essence, sellers with existing trusts there have two transactions to complete with closing dates as far as one year from acceptance of the offer. Importantly, if you are buying a property with an existing trust, it is vital to find out which bank currently holds the trust. If a transfer is necessary, consider having your real estate agent stipulate in the offer that the seller will pay the costs for this intermediate transaction.

Forever Home Once you own the property you hope to enjoy it for years to come.

Responsible ownership means there will be associated costs. What those costs will be largely depends on how you plan to use the property, so it’s best to discuss this with your agent prior to purchase. For example: If you are planning to use the property as a vacation rental, you will most certainly need a concierge or property manager who will handle at minimum meet-and-greet service, maid service, and checkout. But if you plan to use this as a personal property for vacation use or long-term owner occupancy, you might look at communities where all outdoor maintenance is performed by the home owner’s association, which makes a single-family home as carefree as a condo.

Paying utility bills online may mean you need no additional management services at all, but most owners find having someone local to check the property periodically, pay bills, and have the property ready for occupancy helpful. Other recurring costs include an annual fee to your trustee bank and annual property taxes. Trust fees are set at the time of closing and remain the same each year. Property taxes in Los Cabos are a fraction of those in the United States or Canada, often just a few hundred dollars per year with discounts for early payment in first quarter of the year.

Starting in the low $200,000s U.S., ownership of one of these condominiums qualifies the investor to join the award-winning golf course at Quivira, regardless of actual occupancy. Many avid golfers are investing in rental properties and enjoying golf club membership as an additional benefit. According to the developer, unlimited play membership is available even during the construction phase.

for these finishes. There is a community pool planned for the complex, but ownership here also qualifies the buyer for membership in the Grand Velas Resorts, which will allow them to use the amenities of any Grand Vela resort in México. Y

The Vela Group are also in presales for two developments in Los Cabos: the Vista Vela project near Costco on the Cabo side of the tourist corridor and the VelaMar Residences near the center of the corridor in an area known as El Tule. Vista Vela will consist of 68 condo units and 55 single-family homes. Both condominiums and homes feature three-bedrooms, three-bath units.

Common amenities include a pool and gym. During construction, the developer is offering presale contracts with prices starting at about $200,000 U.S. Financing is available for Mexicans and foreigners, and the condominiums are expected to begin delivery this year. Prices and terms are subject to change as the project nears completion.

But what about those activities you can enjoy throughout the year? We’ve got you covered! Considering the amount of sunshine we get January through December, you can always count on water activities. On Playa el Médano (Médano Beach) alone, you’ll find parasailing, snorkeling, sunset cruises, wave runners, and water taxi excursions to Lover’s Beach.

The Los Cabos desert-like terrain makes for year-round opportunities to zoom around on all-terrain vehicles, fly across zip lines, and explore the fun yet peaceful tranquility of camel and horseback riding.

although many tour companies allow for small children to ride on the lap of one of their parents. Part of this leniency is attributed to the gentle nature and thoughtful

training of the horses at Los Cabos corrals. All local stables have strong personal relationships between owners and their horses, who together have been combing the beaches and mountains for more than three decades, entertaining their riders year in and year out—from pony to bronco to stallion.

And, of course, nothing beats the breathtaking options to play golf in Cabo on picturesque ocean-view courses designed by the sport’s greatest living legends.After the much publicized addition of the Tiger Woods-designed Diamante course, which opened in 2014, golfing in Los Cabos has never been better. The Tiger Woods Diamante ocean-front course joined the five breathtaking desert-ocean golf courses along the four-lane highway corridor; others are designed by Tom Weiskopf (Cabo del Sol), Tom Fazio (Querencia), Robert Trent Jones Jr. (Cabo Real), and two of them by the legendary Jack Nicklaus (El Dorado, Palmilla). Greg Norman, Gary Player, and Davis Love III are the other hall-of-fame Cabo golf course-designing legends.

One of the most popular activities throughout the year is taking a sunset cruise around the Cabo San Lucas Bay and beyond. There’s a seemingly endless collection of tour providers. Prices start as low as $25 U.S. They can be casual or even offer five-star treatment. The CaboRey, for example, offers lobster and other fine fare plus a live, fire-filled floor show. The Sea of Cortés has been called the aquarium of the world, and you can explore it by diving or snorkeling just about 365 days a year.

Enjoy its biologically diverse, clear waters, and colorful sea life with companies like Cabo Expeditions or Cabo Escape. There are plenty of beaches that allow you to wade in and explore, too—notably Santa María and Chileno. Up for a road trip? Cabo Pulmo is two hours away and worth the drive. It is an area protected by the federal government of México as a marine reserve.

Kayak enthusiasts enjoy a memorable time at Cabo Pulmo as well as serene and tranquil kayak fun at San José del Cabo’s estuary. It’s a freshwater body of water and streams where kayaks traverse peacefully and in quiet, uncrowded bliss. In the Cabo San Lucas Bay, on the other hand, the waters can be a little busier and offer more resistance.

The wildest of all beaches in Los Cabos is undoubtedly Playa el Médano (Medano Beach) in Cabo San Lucas, where all the fun, water-related activities and party festivities take place all day, every day, 365 days a year. While undoubtedly milder than Médano, Chileno’s growing popularity and post-Hurricane Odile renovation have fortified its place among Los Cabos Magazine’s list of Los Cabos’ most frequented and fun beaches. At Chileno, visitors and local families bask in the semi-secluded feel of the beach, where snorkeling tour companies arrive every day bringing guests to enjoy viewing the dizzying array of multicolored species of fish. Chileno is a favorite spot for snorkeling and another of the safest swimming beaches in Los Cabos. In 2015, Chileno was awarded the Blue Flag Certification of Excellence.

When it comes to serious surfing, one of the most famous places in Los Cabos is Playa Los Cerritos (Cerritos Beach).

There are several surfing websites that provide wave and swell updates for avid surfers who travel to this semi-secluded surfing paradise; its popularity has endured throughout the ages. Cerritos is located about 38 miles northwest from Cabo San Lucas along the Pacific Highway driving toward Todos Santos. The small farming community of El Pescador is closest to the Cerritos surfing mecca. The beach has a charming history of a hippie-like culture of surfing and camping thrill seekers, which have contributed to the beaches undeniable popularity.

Chileno’s calm waters make it a popular destination.

Playa Palmilla (Palmilla Beach) is near the resort hotel grounds of the One&Only Palmilla, which is the city’s landmark luxury resort, which first attracted the Hollywood jet set in 1958. The beach offers great swimming in a protected cove, which has been used as the start of the annual Los Cabos Ironman triathlon opening swim stage of the intense and grueling international swim-ride-run physical competition. Public parking is available. Exit at Palmilla off the main highway and follow the signs to the main beach.

One of the nicest, little-known-totourists destinations in La Paz (the state’s capital to the north) is Balandra. It’s a place that’s considered a gem by those who have taken the time to travel to its serene and magical shores, where the water does not reach higher than a person’s knees and waist.

Visitors to Balandra are captivated almost immediately by this incredible Sea of Cortés body of water. There are no restaurants anywhere nearby, and palapas have been built by the community for visitors to use at their leisure and availability. While Balandra is often photographed, there are rarely big crowds. The city of La Paz has done nothing more than construct the palapas as a means to keep the area in its pristine, natural state.

located a few miles outside of Todos Santos. And it’s an oasis that separates it from any other beach in the Baja Southern California Region. Few visitors arrive, and thus leave those who are there to have the beach pretty much all to themseles. The same can be said of Punta Arena, which is unbelievably mild, and can be considered a lost isle of sorts; very few people even know about. It is located 2.5 hours outside of Cabo San Lucas.

In México, the laws prohibit private becahes. In fact, the country’s constitution decrees all beaches are publicly accessible federal property, and, as ordered by law, people have access to them at any time. The only major legal exception to the access rule is for beaches assigned or reserved for military use, none of which applies to any beach in Cabo, wherefore the Military Naval base in nestled near the Land’s End arch at the marina docks entry. D I N I N G Selecting just where to dine on date night is sometimes more stressful than the date itself. Are you looking to wow with expensive dishes or just find an intimate spot? Will it be too fancy or too casual? Will it have a big enough menu that your date will be able to pick something he or she likes?

What follows is a list of some of my favorite places, a roundup of comfortable environments, varied menus, and affordability. Los Cabos has ample options to have a decent dinner as you navigate the sometimes-treacherous dating waters.

Rule number one: Phone down, out of sight.

Going for places that you’ll be able to actually talk with your significant other and laugh without being drowned out by loud noises or shushed for being too loud, I would suggest La Dolce (www .restauranteladolce.com) a small, intimate sidewalk cafe with a wood-fired oven for great pizzas, fresh pasta dishes, flickering candles, smooshed-together tables, creating the sort of intimacy that works well for dates in general, and just a nice place to take a nice date.

If you’re looking to impress with a view, check out Los Riscos (www.ha ciendaencantada.com) or La Deriva (www.laderivarestaurant.com). These restaurants have all the hallmarks of a great date spot. The lapping waves of the shore along the Sea of Cortés are magical. La Deriva has a bar practically on the beach that is perfect for sipping cocktails and a menu with a fantastic selection of Italian cuisine; the cliffside of Los Riscos has private dining areas for a romantic evening, made all the more special with the sound of waves crashing below. You can’t get any closer to the beach than Pitahayas (www.pitahayas.com) which has the most beautiful palapa in Los Cabos.

Looking to mix things up? Los Cabos restaurants feature cuisine from all over the world and with all sorts of built-in entertainment.

The views from Casa del Mar Golf Resort and Spa’s El Tapanco restaurant are delicious. And the picture-perfect Sea of Cortés visits are complemented by expert, amiable service and a full-service menu that pays tribute to México’s rich and diverse culinary traditions.

All of this is done under the masterful watch of executive chef Humberto Espino, a Zacatecas, México, native whose creativity and care are served up table by table. A professional chef for the last decade, he first joined El Tapanco two years ago as a pastry chef.

Espino’s pastry experience is evident. The desserts are delicious. The bread is fresh and crunchy. And the whole menu wows with its traditional Mexican dishes that are prepared with organic, locally sourced ingredients. Just as the website promises, here’s your chance to experience a “truly Mexican, Neo-modernist culinary experience.”

Among the must-try dishes is one of Espino’s favorites: The traditional wedding roast features mole, rice, and beans. Other popular dishes include a seafood tostada featuring the unexpected combination of shrimp, fish, octopus, scallops and mussels; flamed mussels with coriander; and cochinita pibil.

José Luis Madrigal serves as El Tapanco’s food and drinks manager, and he made special mention of the restaurant’s focus on serving local communities. (Locals should make sure to ask about special discounts for residents.)

Agua Salada Barra & Cocina Located on the north side of the Cabo San Lucas Marina, Agua Salada has been open for only two years.

It’s nevertheless already quite popular with locals and tourists alike.

The air-conditioned restaurant and bar was designed to give Los Cabos a different, affordably priced spot featuring sports entertainment, delicious food, and a unique variety of alcoholic beverages. The menu features a kaleidoscope of dishes that include Jalisco-style barbecue tacos, jumbo burritos, hand-formed thick and juicy hamburgers, original recipe Mexican ceviche, hot wings, pastas with seafood or chicken, pizzas, and Agua Salada’s signature sushi—prepared inside the trendy establishment’s bright cherry red Volkswagen bus. The location offers a nice, panoramic view of the harbor. The immaculate, roomy, dining and drinking establishment offers a Tuesday night $20 M.X. drink special. The hospitality extends from the bilingual manager on-site, to Agua Salada’s hostesses, servers, and bartenders. Agua Salada also serves Oaxaca-style mezcal, which is not easily available in the region. F.R.

course meal is available noon–4:30 p.m. with fish, fowl, beef or pasta for approximately $15 U.S., all inclusive. A choice of crispy salad or soup is offered along with refillable iced tea or lemonade, followed by a choice of entrée. Each day there is a different dish, like seabass topped with pesto or top sirloin beef with marsala wine sauce and mushrooms, chicken breast with eggplant baked in tomato sauce, or pasta in butter with tomatoes and olives. A petit dessert comes with the meal; it might be a chocolate brownie with a dollop of vanilla ice cream or a square of mango and yogurt mousse topped with a mixed fruit compote and whipped cream. All entrées are served with the choice of seasonal vegetables or a swirl of pasta with red or white sauce. If you’re coming for dinner, try not to fill up on the stuffed mushroom starter; they’re so delicious and filing that you may not have room for an entrée. At Cabo Wabo, you come for the party, but you’ll want to stay for the food.

No Los Cabos itinerary is complete without a stop at the beyond-iconic Cabo Wabo Cantina in downtown Cabo San Lucas. Red Rocker Sammy Hagar helped put this once-sleepy fishing village on the map when he opened the club nearly three decades ago. It’s simply masterful, from the decor to the food to the service. There’s a ton of diversity within Japanese cuisine, and you can explore it all at Daikoku in Cabo San Lucas.

Daikoku There’s no passport stamp necessary to enter Daikoku, yet you’ll nevertheless feel like you’ve been whisked away to Japan as you cross over a small bridge and are magically cast into a Japanese garden setting. There are two tables where water runs through the tops of the tables and then two small waterfalls that cascade into a Koi pond. A water wheel adds to the ambience that you’re next to a small stream in the forest. There are two teppanyaki grills in the outside garden area. As you walk up a small flight of stairs and enter the restaurant, the floor you’re standing on is made of thick glass with a Zen garden below. You usually go to a restaurant for the food, but Daikoku throws in a spiritual experience along with the food, and has a very warm and hospitable staff, and air-conditioning. There are many sushi restaurants in Cabo, but Daikoku is one of a kind. To my knowledge, it’s the only one to offer bluefin tuna, the emperor of the ocean. The best cuts are from the belly, and from a 400-pound tuna, you may get only a couple of kilos. If you love tuna, you must give this a try and you will not be disappointed. If

you’re a meat lover, try the filet mignon, which is cooked on the teppanyaki grill and served with assorted veggies. The menu also includes chicken and shrimp and other exotic things to choose from.

D I N I N G El Tapanco Come to El Tapanco for the views, and you’ll fall in love with everything Casa del Mar Golf Resort and Spa’s El Tapanco signature restaurant has to offer. Here, the Sea of Cortés vistas are made all the lovelier when paired with a full-service Mexican menu and some of the best service I’ve ever experienced. Executive chef Humberto Espino is a Zacatecas, México, native whose creativity and care are served up table by table. A professional chef for the last decade, he first joined El Tapanco two years ago as a pastry chef. It’s no surprise, then, that the desserts are delicious. The bread is fresh and crunchy. And the whole menu wows with its traditional Mexican dishes that are prepared with organic, locally sourced ingredients. Among the must-try dishes is one of Espino’s favorites: The traditional wedding roast features mole, rice, and beans. Other popular dishes include a seafood tostada featuring the unexpected combination of shrimp, fish, octopus, scallops and mussels; flamed mussels with coriander; and cochinita pibil. José Luis Madrigal serves as El Tapanco’s food and drinks manager, and he made special mention of the restaurant’s focus on serving local communities. La Panga Antigua Restaurant & Bar Travelers have a deep appreciation for the modernity that Los Cabos offers, but that’s not to say there isn’t a wealth of traditional charm. The San José del Cabo’s historic central district is dotted with restaurants, art galleries, and a lovely old church. And La Panga Antigua is one of our very favorite stops. The 150-year-old mansion has long housed the restaurant, charming with its design and menu. Lush tropical foliage surrounds several levels of adobe walls, rock walkways and enchanting seating areas. At the far end is an antique panga, a roughly hewn wooden boat for which the restaurant is named. The staff scurries about taking drink orders, such as a refreshing mojito made with hibiscus, and dishing up incredible farm-to-table fare such as appetizers of threecheese ravioli in a squash blossom sauce; tuna with sesame seed crust and cilantro aioli; baby octopus; or sea scallops with a citrus vinaigrette. Nick-San Palmilla On our last trip to Nick-San Palmilla, we started with a Champagne cocktail from the Champagne Bar at the Garden to get ourselves into the ambience. The chef sent an amuse bouche of whitefish sashimi served with truffle oil. And we continued with a jicama tartar made of seabass, jicama, chasoba, and a refreshing citrus dressing. Try this dish with the house sauvignon blanc so you will be able to appreciate even more the fruity sides of the wine and of the dressing as well. We then continued with the Negi Roll, made with whitefish, crab, shrimp, thin caramelized onions, and a touch of truffle oil. One of our favorite dishes was the crab ravioli, a special dish currently available exclusively at the Palmilla location and consisting of delicious ravioli stuffed with softshell crab and shitake and served with a creamy yuzu sauce. This visit to Nick-San Palmilla was totally different from previous trips; the restaurant was completely remodeled by French architect Jacqueline Perrot, and there is now also a lovely Zen vibe in the Garden Lounge Bar as well as in the terrace facing the sea. Pancho’s Restaurant This downtown Cabo San Lucas restaurant has been a local favorite for many years. One of the reasons becomes obvious once you’ve entered the colorful and inviting interior with photos of its namesake, Pancho Villa, on the walls and decorated papel picado (paper cutouts) hanging from the ceiling. The real test is the food. A large grill occupies an open

corner of the main dining area, and it is put to good use nightly. Not only are the steaks, chicken, or pork chops cooked to perfection, but octopus with its smoky flavor cannot be resisted served with a side of avocado salsa. The succulent lobster tails, whole red snapper, and baby back ribs are also in demand. The menu boasts that the chile relleno is the best in town; try it, and you’ll agree it can’t be beat. Those who savor tequila will be awed by the 500 varieties and are welcome to sign up for one of three tastings in the tequila room and receive a certificate.

Pitahayas Volker Romeike demonstrates his inventiveness at the Sheraton Grand Los Cabos Hacienda del Mar’s signature restaurant with dishes like smoked pork tamal with yellow mole; jicama taquitos with shrimp and char siu; and seafood tortilla soup. The fresh octopus salad is a revelation, while the tuna poke is a delightful summer bite: fresh tuna is paired with watermelon, jalapeño, Tajín, and taro. Chef Roberto Macciadris’s fast-casual Italian menu is made up of timeless Italian favorites—pastas, pizzas, focaccia, soups, and salads—with the occasional Cabo twist. D I N I N G Romeo & Julieta Romeo & Julieta continues to set a high standard for Italian cuisine and fine dining in Los Cabos. For more than three decades, it has grown stronger and stronger. Just last winter, it it debuted The Wine Bar by Romeo & Julieta next door.

Much of that can be attributed to Italian-born chef Matias Forte, who has been with the restaurant for nearly a decade now. Everything is made fresh, and greens must be organic.

Forte says he feels responsible for the health of his patrons, and he makes only periodic changes to the menu; try the pasta alla Norma, a popular Sicilian recipe. The fish is always fresh because Forte checks the whole fish before purchasing in order to see the eyes and gills. A favorite is local tuna, encrusted with sesame seeds and seared to perfection.

When in season, fresh mussels in white wine or a delicious tomato blend are a great appetizer. Classic Caesars prepared tableside are a must. Not only is the food artistic, but the surrounding walls and alcoves of the restaurant are adorned with powerful works of art, including sculpture, by Hector Herrera whose original works shown were inspired by the restaurant. Solomon’s Landing There’s no bad time of year to visit Solomon’s Landing, which is a great spot to grab a beer and a burger and watch some football or a big fight. Come on date night to nosh on creative, flavor-packed sushi and quaff a potent elixir. Or, do as Guy Fieri of the Food Network’s Diners, Drive-Ins, and Dives did, and come for breakfast. On his show, Fieri raved about the strawberry-banana French toast on an episode of his hit show, and for good reason. It’s divine. But it’s only one of many must-try items in the six-page breakfast menu. The chilaquiles were also featured on Diners, Drive-Ins, and Dives, and we can’t get enough of the green version. A new addition to the breakfast menu, the drowned eggs (huevos ahogados) are served in juicy black beans with queso fresco, jalapeños, and chopped nopales. Have a sweet tooth? Try the cinnamony apple waffle that comes topped with warm apple compote and fresh whipped cream. A.A.
