What are some of the main countries that influence Grasslands’ menu? Bill Drexel: Argentina, Brazil, Columbia, Mexico, the United States and Canada.

Q: What are a few of the “adventurous cuts” that diners can order at Grasslands? BD: We feature several cuts of meats, such as our pork ribs that are over five pounds per rack. We also have beef back ribs, specials like a Tomahawk and pork or beef chops. Q: What tips do you have for cooking with meat? BD: You always have to cook with a little love for food preparation and finish the dish! Q: What can each guest expect when they dine at your restaurant? BD: When you come to Grasslands, we will do anything to make you a raving fan. If you don’t find what you want on the menu, just let us know and we will get it for you. Q: What's your favorite carnivore dish and why? BD: Our brisket because it is slow-smoked, then we capture the au jus and put it back in the brisket for the strongest beef flavor you will ever taste.

GO ALL OUT • If you cannot decide on one of Grasslandsʻ dishes, you can order a platter. Their “Sorta Hungry” platter includes one of their featured meats, yucca fries and a salad. NATIVE KNOWLEDGE • First time visitors may find themselves overwhelmed by all the delicious options. If you find yourself feeling indecisive, Grasslands recommends the “best steak you will ever have,” their sirloin called Picanha.
