We had the pleasure of chatting with journalist, meteorologist, food writer and cookbook author, Magdalena Roze - about how she embraced regional living, leant in to her passion for food and on becoming a valued part of the community.

THE ONE AND ONLY BYRON BAY

Famed for its beautiful beaches and laidback lifestyle, Byron boasts a past that is diverse as its eclectic present. From the Arakwal tribe who lived harmoniously on the land for more than 20,000 years, to the cedar cutters, cane farmers, sand miners, surfers, hippies and holiday makers, each new wave of arrivals has made their mark on the Byron Bay we know today.

“Byron has changed,” people say. It sure has! For a small town, it has a big history, and it wasn’t all peace and love. The story begins with the arrival of the Arakwal tribe of the Bundjalung Nation, around the end of the last ice age. They lived sustainably, harvesting what grew seasonally, hunting possums and wallabies, and fishing in the abundant waters. Known as Cavanbah or ‘meeting place,’ various tribes would meet to exploit seasonal bounty like the mullet run and the ripening of the bunya pine nuts.

With the arrival of Europeans in the 19th century, Cavanbah underwent a radical transformation. Massacres decimated the indigenous communities, and the sound of axes echoed through the surrounding rainforest as cedar cutters and farmers forged their way into the hinterland. By the time they were done only about 1% of the Big Scrub, the largest subtropical rainforest in Australia – which had once covered 75,000 hectares – remained. The rich volcanic soil on the deforested hills were planted with sugar cane and bananas. A timber jetty was constructed and the town, renamed Byron Bay in 1894, became the second busiest port in NSW, with cedar logs, dairy produce, meat and passengers freighted in and out. The waters around the cape were treacherous and following numerous shipwrecks, the lighthouse was erected on sacred Aboriginal land. The coming of the railway further fuelled Byron’s growth into an industrial town.

Whilst Byron’s days as a port ended in the 1950s, the jetty now set the scene for whaling. Over an eight-year period, 1146 whales were killed and hauled onto the jetty for processing. The abattoir was busy too, and according to the Byron Bay Historical Association, “the town was described as reeking from the stench of the piggery, meatworks and whaling factories with their effluent colouring the sea and washing on the shore.”

A time of healing

Following a century of abuse of country, the 60s and 70s ushered in a period of well needed change. Surfers arrived, lured by perfect waves and laidback lifestyle. They weren’t interested in jobs in the meatworks and some started small shops and cafes. Wishing to tread more lightly on the earth, their alternative way of living was captured in the iconic 1972 film, Morning of the Earth. The following year, Nimbin’s legendary Aquarius Festival brought hippies and the counterculture to the shire, with many staying on to create conscious communities. The creative energy flowed, and the arts and music scene flourished. With the closing of the meatworks in the 80s and the subsequent loss of jobs, the town’s focus shifted towards tourism, and Byron’s beautiful natural scenery was now seen as something to preserve rather than exploit.

Following years of negotiation, a landmark Indigenous Land use Agreement was signed with the Arakwal People in 2001, recognising them as the traditional owners of the area contained in the newly created Arakwal National Park. Now, more than 50% of the combined land and sea area between Brunswick Heads and Lennox Head is incorporated in parks and reserves.

These days, arriving at the Main Beach car park, visitors are treated to a vision of paradise and a serene beauty that belies the town’s chequered past. Famed around the world as a coastal idyll and place of escape, Byron’s magic lies in its natural beauty; the peel of a perfect wave, the shade of a pandanus palm on a hot sunny day, a humpback whale cruising by, a pod of dolphins at play in the bay, a white sand beach lapped by a shimmering aqua sea. Now more holiday destination than hippy town, you find world class restaurants, stylish resorts, and chic boutiques alongside farmers markets, healing arts and thriving cottage industries, but its quirky and independent spirit lives on. And may it continue to do so, because there is nowhere else in the world quite like Byron Bay.

When you’ve had your fill of sun, surf and sand, hire a bike or take a wander to explore the town and its surrounds.

Walk

The Cape Byron Walking Track is a 3.7km loop which leads through rainforest, clifftops and grasslands to the lighthouse, now a maritime museum and gallery. This is one of the best places in Australia to see whales (June – October) on their annual migration from Antarctica. Hunted almost to extinction in the 20th century, at least 50,000 whales are expected to pass by in 2024. Stock up on candles, crafts, clothes, ceramics and artisanal food at the colourful Byron Markets (1st and 3rd Sunday each month.) Catch the hippy vibe at the little cluster of long-standing shops like Etnix, Trinkets and Trash Vintage on Jonson Street, and browse crystals, gemstone jewellery and esoteric books at Soulife across the road. Drop by Spell and Auguste the Label for a touch of bohemian whimsy, Golden Breed for vintage/classic surfwear, and Planet Corroboree for Aboriginal artwork and digeridoos. Many of Byron’s designers and creators have moved out to the Byron Arts and Industry Estate, which has grown over the years to become a ‘must visit’ destination and now includes the upscale Habitat precinct.

Byron has a vibrant, ever evolving food scene, including hatted restaurants like Karkalla, which embraces local native food, and Beach Byron Bay with stunning ocean views. Head to Ember for an elevated steakhouse experience, or wander up the hill for a burger with a side of nostalgia at Top Shop, housed in Byron’s 1950s milk bar. And if you are keen to sample Byron’s legendary vegetarian cuisine, try No Bones, Yulli’s Byron Bay and The Byron Bay General Store – an atmospheric cafe that inhabits one of the Shire’s oldest commercial buildings.

Bay Lane buzzes after dark on the weekends, with tables out on the street. Casual eateries here include longstanding Orgasmic Falafel and Fish Mongers. Or soak up the intimate setting at Moonlight while sipping biodynamic wine and grazing on Japanese bites. Looking for night life? Miss Margarita is always lively, for a more sophisticated vibe head to Lovers Lane and Casa Luna. For live music, there’s always something going on at Beach Hotel, The Rails Hotel and The Northern.

COMING UP ROSES

The idea of leaving a busy city life for the shores of Byron Bay may sound idyllic, but the reality of slowing down and embracing a simpler lifestyle can take some recalibration.

This is what award-winning Journalist and Meteorologist Magdalena Roze found when she moved to the Northern Rivers from Bondi with partner, chef and restaurateur, Darren Robertson.

Roze had a full schedule and busy career in the media; you’ll recognise her from The Weather Channel - during which time she accepted the ASTRA Award for Best News Coverage for the team’s reporting of the Black Saturday Bushfires - or from the slew of presenting gigs she’s done over the years, including National Geographic Channel, Network Ten’s News and Weather and co-hosting on The Project. She is a natural on TV; articulate, knowledgeable, and exudes a warmth and vibrance that’s even more lovely in real life.

Roze and Robertson met after being paired in a celebrity episode on Network Ten’s cooking series, Ready Steady Cook. “And we won” laughs Roze, who also happens to be a passionate foodie. It was a match made in the kitchen, so when opportunity knocked for Robertson to open one of The Three Blue Ducks restaurants at The Farm in Byron Bay in 2013, they jumped at the chance.

You could say Roze came to the region with a certain naivety about what a sea change would entail. “I just thought it would be seasonal and I’d come back to the city” she tells me. “I was in a privileged position of being able to fly to Sydney every other week and I tried to juggle work that way.” About six months in, reality dawned on her, “I was asking myself, what have I done? Was this the right move for me?”

“I WANT TO USE MY VOICE TO TALK ABOUT THE ISSUES I’M PASSIONATE ABOUT –THE ENVIRONMENT, CLIMATE CHANGE, FOOD AND TRAVEL.”

After falling pregnant with her first child Roze tried to embrace the shift, but she is candid in telling me that initially she found the quieter life of Byron challenging. “I felt quite lonely and lacked purpose as my media career was all I’d ever known” she says. Still, she leant into the challenge of reinvention and ultimately discovered joy in leading a simpler, more natural life.

It also led her to a path she’d never had the chance to explore before - her passion for food, wellness and lifestyle. Roze is incredibly down to earth. She recognises the privilege she’s had to diversify her career and is conscientious about what she puts into the world. “I have an annoying sense of self-awareness” she notes. “I can’t forget where I came from. And my mother would kill me.” Roze was born in Austria before her family emigrated to Australia where she was raised in the

south western suburb of Bankstown in Sydney. “My family were refugees” she tells me, “I spent ten months of my early life in Villawood Migrant Hostel.” Like many Europeans, food was always a big part of life. “My parents are Polish and Russian, so I grew up eating a lot of very wholesome, home-cooked foods… my memories around food are really happy.”

Although it was just a hobby, exploring her passion for wholefoods and cooking came naturally, especially now she lived in a region famed for its fertile lands and abundance of ethical producers and farmers. Roze began a simple website, sharing recipes and interesting stories of her life in Byron, which quickly gained popularity. In 2017 she released Happy & Whole, a stunning treasury of over 60 wholesome recipes which celebrate the health benefits of getting back to basics. Divided into chapters based on the weather and the seasons, the book also looks at living naturally and covers everything from DIY beauty tips to natural cleaning products.

ambassador, Roze has remained self-effacing, more comfortable shining the spotlight on others and causes close to her heart. “I will only partner with brands I feel a genuine and authentic connection with” she tells me. “I have to 100% believe in the product and it’s message.”

One such brand is Norco Milk, with Roze recently becoming the face of their new Cape Byron premium ice cream range. (The first face that is, since Claudia Schiffer held the role.) “It’s a full circle moment” she says. “Just under two years ago we were cooking hot meals and serving flood victims out the front of the ravaged factory in Lismore. None of us knew what the future held, so to have it making ice cream for Australia again is amazing. I’m very honoured.”

After a lightbulb moment at her son’s playgroup, Roze also began collaborating with her foodie friend Katie Graham, on the development of a new ‘mite’ spread. A project which took over two years of laborious recipe and taste testing by the harshest critics (that’s kids and chefs!). The result? An addictive, delicious and wholesome product called “Oomite” - made from 100% real ingredients and zero additives, nasties or unpronounceable ingredients - which has been lovingly received by the food community (kids and chefs alike).

These days Roze has two children with Robertson and has become adept at juggling parenthood and the multitude of projects she has on the go. “It’s hard to define what I do” she laughs. Regardless, one thing is true; from hosting the popular food Podcast - The Pass and MCing events to her role as a brand

So what does the future look like for Magdalena Roze… Roze considers this for a moment. “I’m so grateful for the opportunities I’ve had” she says. “I want to use my voice to talk about the issues I’m passionate about – the environment, climate change, food and travel.”

This means continuing as ambassador for Byron Bay Wildlife Hospital, it may include reviving her Podcast (she tells me if I write about it, she’ll hold herself to it). “I love meeting new people, learning new things… My parents gave up everything to make a better life for themselves, so I’ve always had a desire to make the most of every opportunity I’m given.”

Roze’s wholeheartedness and integrity are truly admirable. It's clear she has not only embraced the Northern Rivers but has become a valued part of the region. The key she says is, “Contributing to the community, opening your arms and sharing what you have. There’s room for everyone.” She pauses for a moment, then adds, “Regional living has a different vibe. If others are doing well, we are all doing well - we are stronger together.”

FROM LITTLE THINGS BIG THINGS GROW

As Bluesfest prepares to celebrate its 35th anniversary, we look back at the history of Byron Bay’s longest-running festival.

Today, the Byron Bay Bluesfest is big, big business.

An annual celebration of blues and roots music, attracting crowds of over 100,000 over five days, Australia’s most awarded music festival has long been responsible for bringing out such legends in the game as James Brown, Bob Dylan, Grace Jones, BB King, R.E.M, Paul Simon and Patti Smith to the Northern Rivers region.

This year, Bluesfest celebrates its 35th birthday with a jam-packed lineup that includes Jimmy Barnes, Tom Jones, Jack Johnson and Elvis Costello playing the Byron Events Farm (formerly the Tyagarah Tea Tree Farm) over the 2024 Easter long weekend.

But flashback to 1990 and the first ever Bluesfest (then the ‘East Coast Blues

Festival’) was a somewhat humble affair indoors at, now legendary Byron backpacker haunt, the Arts Factory.

“It was really quite small. It felt like there were far more people there than could fit into the room,” says Dom Turner, whose Australian blues band The Backsliders played the first Bluesfest (and will play this year's too). “I can’t remember the exact number, maybe a thousand [but] it just felt like mayhem it’s impact. But, in many respects, that’s the kind of energy that aligns itself with pub rock in Australia, or southern juke joints in America. You’re up close with the band, it’s hot, it’s sweaty [and] that’s what it was like for those first few years. It was very much like one big juke joint,” says the guitarist and vocalist. The festival was the brainchild of local

promoters Dan Doeppel and husband and wife team Karin and Kevin Oxford off the back of successful gigs at the Arts Factory (then the ‘Piggery’) in the eighties. Having purchased the disused slaughterhouse in the seventies for peanuts, Doeppel transformed the piggery into a thriving live music venue that hosted touring international and Australian acts including The Ramones, New Order and Midnight Oil, before morphing into the Arts Factory in the early nineties.

Held indoors over the Easter long weekend in 1990, the inaugural East Coast Blues Festival attracted a modest crowd of 6,000 punters with a lineup of American blues and roots artists, including Charlie Musselwhite, Canned Heat, and Big Jay

McNeely, sharing the bill with Aussie acts such as Phil Manning, Dutch Tilders & The Blues Club and The Backsliders.

“What made those early days so great, for me, was the interaction between the American artists and the Australian artists,” says Turner of The Backsliders.

“There was a curiosity from the American [blues] musicians especially, who thought ‘now, what the hell’s going on with these [Australians] playing this style of music?’

It was peculiar because, naturally, it’s coming from outside of the tradition but it made it all the more exciting.”

Back then the area also had a slightly seedier reputation and, under pressure from local residents and licensing police, the festival was forced to leave the Arts factory, relocating up the road to the Belongil Fields campgrounds in 1993.

Bluesfest grew into its new home outdoors – billing itself as “the biggest blues event in the Southern Hemisphere” – before relocating to Red Devil Park in 1997, and finally settling at the Byron Bay Events Farm (on 120 hectares) in 2010. This year’s lineup will see over 200 performances over five days.

So, how has Bluesfest been able to attract such big names for 30+ years?

“Byron is such a beautiful area, and that was part of the appeal for international acts back then,” says Turner.

“I’ve met and had long conversations with [Grammy-winning multi-instrumentalist]

Ben Harper who played the earlier festivals and was learning to surf in the daytime. He has a deep connection here. For touring artists, it’s a welcome break from travelling from city to city, it’s such a beautiful town.”

In 1994, current Bluesfest director Peter Noble would come on board. In the years to follow, he would be awarded

the Rolling Stone Australia Award for contribution to popular culture (2014) the Medal of the Order of Australia (2016) and the “Keeping the Blues Alive” award from the Blues Foundation (2017). To date, Bluesfest has become Australia’s most decorated festival, including seven wins at the NSW Tourism Awards.

Its founder attributes the festival’s continued success to its hometown.

“It should have been impossible in a small coastal town in northern New South Wales but the secret ingredient was Byron Bay,” Karin Oxford told the Echo.

Popular with chefs, distillers and artisanal producers across the region, bush tucker has had a huge revival in recent years – and you can forget the witchetty grubs and honey ants, it’s all about the fragrant botanicals. We join a Bush Tucker Tour to find out more about traditional Bundjalung food and culture in the Northern Rivers.

Late afternoon sunlight filters through the palm trees as our group gathers in a circle at Bangalow Parklands. Our guide is Arakwal, Bundjalung woman Delta Kay, whose ancestors have lived in the area for thousands of years, and passed down their customs, knowledge, ceremonies and stories to her for safekeeping. Calling to the spirits of her ancestors to let them know we are there, she explains, “It’s like me coming to your house and knocking on your door – would I just come in? No, I would wait for you to invite me in.”

Our Bush Tucker Tour starts by the toilet block, which would seem odd but for the colourful mural that adorns it, which tells the story of European arrival in the region. The first scene is a vision of utopia; a beautiful creek running through vibrant rainforest filled with ancient trees, birds and animals. In the next scene the creek has shrunk to a trickle and all that remains of the rainforest are big tree stumps. “When the settlers looked at the forest they saw money in their eyes,” says Delta, and the ancient silky oaks, hoop pines and red cedar trees were cleared for timber. With the big trees gone, much of the bush tucker, the birds, the animals and a whole way of life also disappeared. “I am excited about how country is being respected and cared for now,” says Delta. The Parklands we are walking in is a great example – regenerated grazing land, planted with hundreds of native species thanks to efforts by the Anglican church, Bangalow Land and River Care Group and Delta herself.

Delta is a natural storyteller and we hang on every word as she shares the Dreamtime story of the junbung – platypus, who can sometimes be spotted here in Byron Creek. As a kid, Delta and her brothers and sisters foraged for snacks and she leads us down the trail to a bush, whose yellow fruit was known as “fluffy leaf lolly.” Native ginger provided tasty bush lollies too “good for tummy ache and quenching thirst on a hot day,” says Delta, while the leaves were used to wrap fish prior to cooking in the fire to give aromatic flavour. “My mum knew where all the bushtucker food was,” she adds, passing around the coarse leaves of a sandpaper fig, which her mum used to rub on the soles of her feet to smooth away callouses. The small dark fruit is juicy and delicious, although less sweet than a European fig.

Delta’s ancestors moved around for seasonal abundance, but also for ceremonies and social visits, and would follow the song lines, or songs of country. “We listen to the land because she tells us everything, where to camp, where to find food.” Sustainability was key, and when we see baby turtles clinging to a log in the creek, Delta explains “we could only eat the binging (turtles) when the silky oak trees flowered.” We stop to crush fragrant myrtle leaves - lemon, cinnamon and aniseed, which all make medicinal teas. And discover that mosquitos and bluebottles have always been about – tea tree leaves were traditionally rubbed on the skin as a repellent, while the leaves of the crinum lily, were used to soothe stings.

Emerging from the forest trail an enticing display of bush tucker foods awaits. There’s tart pink lilly pilly fruit, wincingly sour Davidson plums, dianella – Bundjalung blueberry, which burst in the mouth in the most satisfying way, and sublime finger lime – a Bundjalung superfood now famed around the world for its pearl like insides. Delta has brought us coastal treats too; some wonderfully salty native spinach, juicy sea purslane, and my favourite, the nyuli, a type of karkalla that tastes like a salty kiwi fruit.

For Delta, who started Explore Byron in 2020, it’s all about connecting people back to native food, and educating kids is a big part of that. “My dream is that kids will want a lilly pilly or finger lime in their lunchbox, not an apple that’s been kept on a shelf for months and sold in the supermarket.” The tour has certainly changed the way I experience the bush and coastline and motivated me to plant more bush tucker trees and shrubs in my own garden. Surf for Sanity is an annual community event at Cabarita Headland that promises a fun day of epic surf battles, food trucks, live music, good vibes and gorgeous scenery – all for a great cause.

"Surf for Sanity stands as a pillar of support for those facing mental health challenges. The event provides a platform for open conversations, reducing stigma, and creating an environment where everyone feels understood and accepted."

It’s no secret that surfing makes you feel good, and as far as feel-good family events go, Surf for Sanity, is a great one. Collaborating with Cabarita Boardriders, the primary goal is to unite the community and shed light on mental health issues, while having plenty of fun in and out of the surf. "It's our favourite event of the year," says eight-year-old Willow who competes in the Junior tag team. Her mum Jo, who surfed with 14- year-old daughter Ruby as part of the first mother daughter team in 2023, loves the way the event brings the community together. “The vibe is high and it raises money for a charity that has, in some way, affected us all and is close to our hearts.”

Surf for Sanity was founded by Steve Ashburn in 2019. Growing up in the region, he had encountered his own mental health hurdles and found sanctuary with Cabarita Boardriders. Through his own experiences, he identified a need to bring awareness to mental health support in the local community, to check in on your mates and to spread the message ‘it’s ok not to be ok.’ "Surf for Sanity was born out of our love for the waves and the belief that the ocean has a healing power. It started as a simple idea to bring our community together through the joy of surfing, and it has grown into a celebration of unity and mental well-being," says Steve.

The lead up to the annual event includes a mental health night ‘Get on Board,’ hosted this year by the ‘Swellians,’ Vaughan Blakey and Jed Smith, from the surf podcast Ain’t That Swell. With dinner, refreshments and guest speakers creating what Janine Pollard, Surf for Sanity event producer, describes as "a night of raw authenticity, bravery and vulnerability in support of our mental health initiative.”

The surfing comp includes open teams, a women’s event and a junior tag competition. Plus food trucks and live music in the park with stunning Norries Headland creating a picturesque backdrop. Surfing, community, food and good music - it doesn't get better than that, says Jo!

Living in the Tweed Shire, I am no stranger to the Tweed River, which I regularly cross over, drive alongside and gaze at while sipping coffee. I have seen it sparkling vibrant blue with the early morning sun, glowing pink at sunset, and flooding its banks after heavy rain. But today, on a leisurely River and Rainforest Lunch Cruise with Tweed Eco cruises, it’s like I finally get to know the river.

There is something soothing about river cruising, which is enhanced by the laidback vibe on board the iconic Golden Swan, an enchanting 1972 river boat. After coffee and cake, we head up to the breezy top deck to lounge on sofas, and take in the views. Passing through the shimmering waters of Ukerebagh passage, I am fascinated to see what lies behind the urban sprawl of Tweed South, chiefly a nature reserve that includes littoral rainforest, and the mangrove forests, salt marshes and small sandy beaches of Ukerebagh Island. Rounding a bend in the river at Fingal village, Wollumbin (Mount Warning) looms into view. Jet skis whizz past, fishermen putter by in their tinnies, and kids wave to us from houseboats. It’s the weekend but it’s hardly busy on the river, and the further we go, the quieter it becomes. We pass coastal scrub, fields of sugar cane, cows grazing on the flood plains and enticing tributaries that beg to be explored by kayak.

Captain Muz has been skippering the Golden Swan on and off for 25 years, and is passionate about the area and its history. His running commentary is full of interesting facts about the indigenous tribes who first lived here, explorers, shipwrecks, conservationists, and floods. A true river man, I ask him what he loves about the Tweed. “The way the bushland comes right down to the river,” he replies, adding “the river is a well-kept secret.”

The Tweed Valley, through which the river flows, is flanked by world heritage national parks and recognised as one of the three most bio-diverse regions in Australia – the other two being the Daintree and Kakadu. And as we near Stotts Island Nature Reserve, traditionally called Keebah, ‘a place to respect,’ the landscape changes. All is quiet but for cicadas and bird song, and I spot black swans and pelicans floating in the water, and terns, osprey and a magnificent brahminy kite soaring above us. Suddenly, it’s as if we have sailed back in time and find ourselves alongside lush, pristine rainforest dense with Bangalow palms, hoop pines, soaring fig trees and cotton trees. The lowlands and flood plains of the region were covered in rainforest just like this, until European settlers arrived, and it’s a privilege to see how our area once looked.

Heading downstream we are treated to a lunch of generous grazing boards. Tweed Eco Cruise Director, Kylie Peterson is keen to showcase local artisanal produce, and sources everything from an 80km radius. There’s plump juicy river prawns, homemade quiche, charcuterie and cheeses, served with dainty finger lime and saltbush. Kylie’s parents started Tweed Eco Cruises in 1988 and she grew up cruising the river. “The river has a character, there is always something new to share and discover about her,” she says. “As much as we share stories on board, the river tells us the stories, that’s what I love, I love listening to her.” Tweed Eco Cruises is an eco-accredited tour operator and runs various cruises as well as private charters. For the local Aboriginal people, the Tweed River was a source of food and water, and traversable by canoe. For the cedar getters, it was a way of transporting logs downstream to the awaiting boats. The early 1900s were known as the golden years of river boat travel as paddle steamers and schooners plied the water with people, provisions and produce. These days the calm tidal waters are a perfect playground for boating enthusiasts.

The ambience and warmth are further enhanced by the exceptional service of an obviously close-knit and knowledgeable team, all of which is credit to owner, chef-turned-restaurateur, Troy Lister. “I want my team to love their work, so supporting them is of utmost importance” he says. “There’re no egos. We value our locals, and we are all just working to create an outstanding dining experience every time.” A local of 30 years himself, Lister’s reputation for excellence precedes him - as the previous owner of the Beef & Beach at the Lennox Hotel, he spent 12 years building it into an awardwinning steak and seafood destination - and it's his passion for hospitality and love of the community which brought him to Byron. Ambience, service and business acumen may be a winning alchemy but it’s the steak we came for, and here’s where Lister’s knowledge, experience and determination to become the ‘standout destination for premium steak’ comes to the fore. “We looked around and realised there were no steak specialists in the area, so we made this our mission” he says. Lister’s dedication to excellence starts with sourcing the freshest and highest quality produce available and, whilst giving me a tour of the impressive kitchen, he educates me on the flavour difference between grain and grass-fed (grass-fed gives lighter, sweeter flavours), the beef grading system (which considers the fat content of your cut), and the process of dry aging (which produces a distinct nutty, ‘popcorn’ flavour). But the secret weapon in this heady mix is undoubtedly, a premier piece of cooking equipment fondly known as the ‘Josper’. An enclosed charcoal grill, that cooks at temperatures of 400-500 degrees with controlled/low oxygen – helping to render the fat in the meats and imparting in the process, deliciously smoky, sweetly caramelised flavours. “The Josper changed everything in terms of how we cook food and especially, our steak. There’s nothing else like it, and the outcome is incomparable.” For Lister, it’s all about producing uncomplicated, delicious and consistently high-quality food or, as he says, “a product without the B.S.”

Thankfully the tide has turned on fast fashion, and we are fortunate to have, spread across the Northern Rivers, a plethora of boutique pre-loved stores to explore. That means, bespoke, quality pieces with a story to tell, and never ending up caught in the same outfit at an event ever again. So grab your reusable bags and join us on a sustainable adventure.

First stop: Ballina’s Bunnyhole Vintage.

“I love the artistic qualities of fashion and design,” says founder Nikki Roberts. “But I am also a huge greenie and I love being able to utilise these amazing resources we already have.”

Bunnyhole started as Treasure Trade on Molesworth Street in Lismore in the former hallway between The Canberra and a nightclub.

Nikki would invite the public to bring in their pre-loved vintage ware and offer either cash or store credit. “It was a real circular wardrobe,” she says.

Multiple floods wiped out her store – and her stock – and Nikki made the decision to re-open and rebrand.

“Every single item has been handpicked by me,” she says. “I aim to have a wide range of clothes for as many sizes as possible, with little snippets from as many eras as I can access, dating from the 1940s.”

From sourcing garments for TV and theatre productions, to acting as a personal shopper to locals, Nikki loves what she does.

“My greatest joy is witnessing that moment when someone puts something on and it feels like it was made just for them and you can tell that they feel fabulous,” Nikki says.

Just up the road is Thread Softly Vintage in Lennox Head. The store is bursting with handpicked vintage and modern pre-loved pieces, and also includes handmade goods for men and women. There are faded Levi’s and as-new Vans as well as sunnies and bags.

From there, head up the hill to Two Roads Vintage in Newrybar. From bohemian 70s skirts to 90s grunge, the collection of predominantly womenswear (with some kids’ clothes) has been lovingly curated by owner Melinda Watson. Aged just 18 she started selling pre-loved clothing at markets, studied fashion and opened Two Roads Vintage first in Lismore six years ago, and now runs it from its Old Pacific Highway home.

In Byron Bay is the new kid on the block, Froth the Label. Opened in 2023, it was a shopping experience as a teenager in Texas that would lead to owner Ashten Massingill opening her own store.

“As a kid, we didn’t have a lot of money,” says Ashten. “I went to Buffalo Exchange – which is an exchange/buy/trade store in the states – and it was the first opportunity I had to buy the brands and the labels that the cool kids were wearing at school.

“I bought a pair of Abercrombie jeans that left me feeling like a million bucks – it changed my life.”

While she’s always been an avid op-shopper (“it’s the thrill of the hunt”) she’s found that the locals have embraced the concept of trading in their own clothes with gusto.

Customers can bring in their pre-loved quality garments (ladieswear only) and accessories and exchange them for cash or store credit to shop for a new piece.

“We all have things in our closet that we’ve worn to an event or we’ve had our moment in them,” Ashten says. “It’s rewarding to get something out of your closet that you don’t wear and replace it with something.”

They aren’t a vintage store – Froth’s niche is daily basics. “The classics that you rely on year after year,” says Ashten. “Hopefully we have something for everyone’s price point, we buy all brands from Zara to Zimmerman and we like timeless pieces. Second hand isn’t second best.”

Don’t leave Byron without ducking into Mr Vintage, filled with goodies in an edgy warehouse space in the industrial estate. From men’s tees to retro bathers and everything in between, this cool store is a treasure hunter’s delight.

After following the Pacific Motorway for a few clicks, turn off onto the Tweed Valley Way and head to the black-and-white cow themed village of Mooball. Here, next door to The Victory, you’ll find SiGi – a shop bursting with carefully selected vintage and preloved clothing with a focus on natural fabrics and designer labels. Vintage mirrors crowd the walls and hanging lanterns create a warm light to check yourself out as you try on your finds. Finally, head back onto the motorway and take a right into Bruns.

Meg says buying quality kids clothing over mass-produced cheap pieces means parents are doing their part of the planet. “Buying organic cotton kids clothing helps preserve our planet and keeps our air and water clean,” she says. “Also, organic fabrics don’t produce harmful toxins that can cause irritation to kids with sensitive skin.”

There is something magical about New Brighton – and now, artists will be able to soak in the tranquillity and create some special pieces in paradise thanks to the first dedicated hideaway for creatives.

Hair slicked back and skin still damp from the creek, Natalie Popovski sits in front of a canvas of half-imagined flowers. The oil painter and ceramicist is “painting her little heart out” each day while it’s light in New Brighton’s first dedicated art residency space.

It’s called Merge Creative – founded by Clare Maynard, who grew up in New Zealand watching her mum create beautiful pieces out of clay.

“Mum was a potter and quite an alternative individual,” she says. “I think everybody has a creative side, that’s what sets humans apart. I’m really drawn to artists and creative people.”

Clare moved to Australia and went on to have a creative career herself - working as an interior designer - but it was after buying a cute three-bedroom house on Marshalls Creek, and seeing how the floods impacted the community, that was the turning point.

“To see everyone’s possessions piled up on the road was devastating,” says Clare. “We have this beautiful little property and after the floods I sat back with my partner Richard and thought, ‘What can we do here? How can we add to this community? How can we allow different people to experience this place?’”

And so, Merge Creative Residency Art and Youth Foundation was born. The freshly renovated three-bedroom house, writers’ studio and shed will be opened to artists to stay, soak in the serenity and immerse themselves in a body of work. “You can’t help but be impacted by being in an environment like this, where everything is very slow. There’s limited cell phone connection and Wi-Fi so you’re sort of forced to be present.”

Whilst the residency will allow them access to local galleries and mentors, the relationship with the community is two-way. Artists will also be able to contribute to New Brighton during their stay – through artistic evenings and workshops that the community can come to, enabling them to rub shoulders with emerging and established creatives. The residencies will also be open to local, interstate and even international artists – an American sculptor has already been accepted for an upcoming residency.

“I’m really excited about the period after an artist leaves us and being able to watch their career develop” says Clare with a smile. “When we can step back and say, ‘Oh, that was the time of their residency at New Brighton’.”

As a step mum of four and with a son of her own, Clare is passionate about nurturing youth enterprises and initiatives. Firstly, through Merge itself encouraging young artists to apply, and also as an ongoing sponsor of Currumbin Beach’s annual SWELL Sculpture Festival in the form of a bursary.

“I’d like to be able to offer a residency for people that are graduating uni and not really sure of where to go next,” Clare says. “From there, we want to have a mentorship integrated in and help provide paths to take, and we’re developing relationships with local galleries.”

Clare also hopes that the house – and its gardens – will become an ever-growing gallery, a legacy of the artists that have found inspiration from their time at Merge Creative.

As for Natalie, she has already seen a change in her work during her immersion in New Brighton. “I’ve noticed my work is getting more expressive, the colours are brighter and a bit looser” she says, putting this change down to the fact there’s no distractions. “You spend a lot of time alone and there’s a lot of silence so you’re able to look a bit deeper into yourself… It helps the process.”

Even her daily routine has changed. “I’m getting up earlier and I work until the sun goes down,” Natalie says. “Then I lock myself away, for reading and reflecting time.” New Brighton is definitely working its magic. The property’s lush gardens, and creek-side location, also help the artists feel a part of nature. “And this small,

quaint community has a real earthy vibe - it feels very spiritual” adds Natalie, who believes that one of the greatest challenges facing artists is having the financial freedom to be able to create.

“It’s not like an apprenticeship, where there are markers and you’re kind of working and earning money while you learn,” she says. “I’m very appreciative to Clare and people like her. It’s amazing to feel so supported.”

And for those keen to soak up those creative vibes and be inspired to release the artist within, the property will also be available in between residencies for short-term holiday rental.

Ziggy, how did you begin your musical journey?

My parents bought me a guitar as a finishing school present. I was 16 years old and at that time, I was already writing for my personal blog and for surfing magazines – I started writing songs at the same time as learning guitar, which turned out to be a very natural extension of my expressive creative interests as a whole. Thanks mum and dad!

Who has been the most influential musical figure in your life?

Ben Howard and Jack Johnson are some of my favourite artists. Ben Howard’s take on folk music is so unique. When I discovered him in 2012, he opened up a whole new world for me. Horrorshow inspire me, because they really opened my up eyes to the depth of storytelling possible through lyrics. I love listening to Latin-infused dance music, because it’s just a big vibe. How you are gearing up for the big year of international touring? What you are most excited about?

Last year, when I was in the UK on my REWIND World Tour, I started writing new music, which I’ve been in the zone recording in studio at Ocean Shores. My 2024 New Love World Tour is the start of a new chapter for me; being inspired by my roots busking in the streets of Byron Bay. I’m excited to be sharing music that I’ve written purposefully to be played live, in beautiful venues across the globe.

How has your background as a surfer and environmentalist influenced your song writing and overall musical style? It's important to me because I feel we belong to the earth, in a literal sense. We are the environment. Without the harmony of a healthy natural world, there is no us.

Music is a great way to share a message because the words are attached to song and feeling. I think people are more open

to listening to what you have to say as a result of the love you can express with the words.

As an independent artist, what are some of the challenges you've faced along your journey?

I've been told so many things aren't possible over the years regarding music and frankly, most of them are possible, if you’re willing to take on the responsibility and the risk. The pros and cons are two sides of responsibility; all the reward, all the risk. Being independent, I can say what I actually want to say. There is nobody refusing to release my work. I am liable and responsible for everything, which is a lot of pressure but I like it like that!

What inspired you to establish your own independent record label and book publishing house?

Curiosity of the road less travelled. I was very curious to find out what it might be like to do it ourselves - to stay independent and have international success on our own terms. I was also inspired by other independent artists. I stand on the shoulders of giants - all the independent artists around the world who’ve gone before me and it's pretty cool to be continuing that legacy. it's been the best decision ever.

Your latest album 'DANCING IN THE DARK' has been met with critical acclaim. What was the creative process behind this album and the themes you explore?

There has been an evolution of my work I think in two major ways; the lyrical content and the mixing. Topically, this is a love/protest album that is a timecode for the last couple years, and mixing wise, we really went a different direction to our previous work.

We made this album over 12 months, and it was pretty intense. The title track

is ultimately a story about dancing in the dark, which sums up the endeavour and spirit of this whole record - singing and digging deep into courage and joy in the face of sadness and chaos.

Your live performances are known for their personal connection with the audience. How do you manage to create that special bond during your shows?

Music, even if played in front of hundreds of people, is something intimate for me. No matter how many you play the music to, it reaches one person at a time. Of course, the most intimate is when you play to a small group of people... but I always try to bring the same feeling to each performance.

Achieving ARIA Double Platinum certification for 'Laps Around the Sun' is a remarkable milestone. What does this accomplishment mean to you as an artist?

It means so much. Any award that is driven by people listening makes me very happy. This will be your third Bluesfest performance. What can fans expect this year?

People are in for a heck of a show. We are pulling out all the stops.

You've spent a significant amount of time in Byron Bay and have a strong connection to the area. What initially attracted you to this beautiful region? I would say it’s the place I began discovering who I truly I am today.

Besides your busy touring schedule, what other plans do you have for 2024?

I’ll be bringing a taste of my New Love World Tour to Bluesfest. Plus, I have some new music and other big projects that I’ll keep under wraps for now!

From interactive kinetic artworks to 360-degree experiences, OTHERWORLD offers a diverse range of installations that invite audiences to step into a world of wonder. One of the standout pieces, The Divine Touch by artist Lumos, transforms the audience's touch into a dance of ethereal light and colour, creating a spellbinding journey of awe and wonder.

Lumos shared his inspiration behind The Divine Touch: "I wanted to create an interactive experience that would engage the audience on a sensory level. By allowing them to physically interact with the artwork, I hope to evoke a sense of wonder and connection to the world around them."

Another highlight is Inner Drift (variation #2) by artist Simon Burgin; an interactive animated work that encourages audiences to consider chaos, order and complexity through body movement. Burgin explains, "I wanted to create a piece that would challenge viewers to explore their own inner experiences and how they relate to the world at large. By inviting them to physically engage with the artwork, I hope to spark a deeper sense of introspection and connection."

But perhaps the most striking installation at OTHERWORLD is ‘Ngarindjin’/Eagle by artist Andy Forbes, in consultation with the late Minjungbal elder Uncle Magpie. This majestic eagle sculpture,

with its 8-metre wingspan, embodies the spirit of the wedge-tailed eagle, a primary animal totem of the area. As visitors gaze up at the sculpture, they are reminded of the ancestral spirits that watch over them, keeping them safe.

In addition to the immersive art installations, OTHERWORLD also offers a 360-degree projection dome, the only one of its kind in the northern rivers area. This dome provides a truly immersive experience, allowing visitors to step into award-winning films from around the world. Currently playing is Labyrinth by artist Sergey Prokofyey; a visual journey through a fantastical labyrinth that challenges viewers to rethink their perception of space and time.
