Easy Mushroom, Soft Cheese, and Walnut pasta
Creamy mushroom pasta – a classic combo for a reason. And this version is comforting, fast and delicious, just perfect for a Valentine’s supper. Penne, rigatoni or fusilli are great pasta shapes to use here.
Ingredients
25g walnuts
1 tbsp Olive Oil
1 shallot or ½ small onion, finely chopped
1 clove/s garlic, finely grated or chopped
250g mushrooms
150g dried pasta
½ tsp sea salt flakes
125g Soft Cheese
½ unwaxed lemon, zest and juice
Small handful fresh herbs (such as parsley, basil or chives)
Method
Step 1
Heat a dry frying pan, add the walnuts and toast over a low heat for 2-3 minutes, until golden. Roughly chop and put to one side.
Step 2
Add the oil to the same pan, set over a medium heat and soften the shallots, or onion, and garlic until translucent (about 3-4 minutes). Meanwhile, pulse the mushrooms in a food processor, or use a knife, until finely chopped.
Step 3
Add the mushrooms to the pan and toss everything well. Arrange in an even layer and cook, uncovered, over a mediumhigh heat, undisturbed, for 5 minutes.
Stir well, rearrange into an even layer again and repeat for 5 more minutes, until golden and dried out. While the mushrooms cook, boil the pasta according to pack instructions.
Step 4
Sprinkle the mushroom mixture with the salt and add the soft cheese, lemon zest and juice. Stir well. Reduce the heat to low, stir until the cheese has melted, then remove.
Step 5
Drain the pasta, reserving the cooking water. Add it to the mushroom mixture and toss well to combine.
Use a slosh of cooking water to bring everything together and coat the pasta in a glossy, creamy sauce. Divide between 2 bowls.
Finely chop the herbs. Sprinkle the pasta with the chopped roasted walnuts, herbs and plenty of black pepper, then serve.
Queen of Hearts French Toast
French toast gets the Valentine’s Day treatment with a heart-shaped jam middle. This charming breakfast or brunch recipe is simple enough for all ages to help make, but looks so pretty and impressive!
Ingredients
2 large eggs
125ml semi-skimmed milk
1 tsp vanilla extract
½ tsp ground cinnamon
1 tsp caster sugar
25g baking spread
4 slices of brioche loaf, about 2cm-thick
150g seedless strawberry jam
100g mixed berries
crème fraîche, to serve (optional)
icing sugar, to serve (optional)
Method
Step 1
Preheat the oven to its lowest setting.
In a mixing bowl, whisk together the eggs, milk, vanilla, cinnamon and sugar with a pinch of salt until really well combined. Pour into a shallow, wide bowl or dish.
Step 2
Melt half the baking spread in a frying pan over a medium heat. Meanwhile, take 1 slice of brioche, lay it in the egg mixture for 10 secs, then turn over and soak the other side for 10 secs. Carefully lay in the pan, then repeat with another slice.
Step 3
Cook on each side for 3–4 mins until deep golden brown, then put on a baking tray and keep warm in the oven. Repeat with the remaining 2 slices.
Step 4
Gently warm the jam until slightly looser: you can either do this in the microwave for about 20 secs* or in a pan over a low heat for about 1 min.
Once the French toast is ready, use a heart-shaped cutter about 4.5cm across at the widest point to carefully stamp out a heart shape in the centre of each slice, then transfer them to plates.
Carefully spoon most of the warmed jam into each gap. Serve the heart cut-outs alongside with the berries and some crème fraîche and a dusting of icing sugar, if you like.
Add a few drops of just-boiled water to the remaining jam to thin a little and drizzle over.
*Timings correct for an 800W microwave
Tip: If you don’t have a heart-shaped cutter, make a cardboard template and cut round it with a knife.
Grow Your Own Food!
Advice from 101-year-old Kathleen on Living a Happy Life
Kathleen, a resident at Care UK’s Mountbatten Grange, on Helston Lane, shared her valuable advice to mark her newly minted centenarian status, while celebrating with those nearest and dearest to her. In honour of Kathleen’s milestone birthday, a lively celebration with balloons, banners and a delicious cake was organised by her family and team members at Mountbatten Grange.
As she celebrated her 101st birthday, Kathleen shared her advice for living a long and happy life – “avoid fast food and grow your own healthy produce”.
Kathleen was born on 18th December 1923, in Langley, Buckinghamshire, before her parents moved to Henley when she was four years old. As a teenager, Kathleen was sent to Windsor to help care for her aunt. There, she met and married her sweetheart Horace Lewis, and the pair lived in the town ever since.
Kathleen and Horace were married for many decades and were blessed with three children and three grandchildren. Every year from 1955, the couple took their children camping overseas, leading to many wonderful adventures and touring France, Spain, Italy, Switzerland, Austria and Guernsey.
Kathleen said: “Horace didn’t see the ocean until he was 21, so we felt it was very important for our children to see the world.”
Former office worker Kathleen has always had a passion for gardening, knitting and dressmaking. She was thrilled to be surrounded by friends, family and team members as they came together to celebrate her momentous birthday. When asked what her secret was to living a long life, she said:
“Working hard and keeping your brain active is important. It’s also vital to avoid fast food and instead choose to cook and grow your own healthy produce. Have fun at family gatherings and always have something to look forward to.”

As a much-loved resident at Mountbatten Grange, it was an honour to mark this tremendous milestone with her and hear her very good advice for living a long and happy life. Here at Mountbatten Grange, everything we do is centred around our ethos of ensuring residents live active and fulfilling lives –and Kathleen’s 101st birthday celebration was no exception. It was lovely to see how happy she was to be surrounded by those closest to her on the day.”

Valentine’s Day Mocktail
This delicious Valentine’s Day Mocktail is quick and easy to make with just three ingredients!
Ingredients
1 sprig of fresh rosemary
Ice
75ml Seedlip Grove 42 non-alcoholic spirit (a citrus blend of three types of orange with uplifting notes of ginger and lemongrass)
75ml orange juice
45ml gourmet raspberry syrup
2 half-slices of strawberry on a cocktail stick
Method
Step 1
Add a sprig of fresh rosemary to a cocktail shaker.
Fill the shaker with ice, then pour in the Seedlip Grove 42, orange juice, and raspberry syrup.
Step 2
Secure the lid and shake vigorously for 30 seconds. Double strain into a coupe glass.
Garnish with the strawberry slices on a cocktail stick. Serve!

The gentle murmur of the River Thames greets you as you arrive in Windsor, the historic town draped in the soft blush of February. The air carries the crispness of winter, mingling with the faint perfume of freshly brewed coffee and the sweet aroma of early blossoms in the nearby gardens.
Strolling hand in hand, the sight of Windsor Castle’s majestic silhouette looms in the background, its ancient turrets standing tall against a sky painted with pale hues of dawn. It was as if the town itself is a postcard brought to life, setting the perfect stage for an unforgettable Valentine’s Day.
The day begins with a leisurely walk along the riverside, the cobbled paths glistening faintly from the morning dew. The Thames glides beside you, its waters shimmering like liquid silver in the sunlight, ducks and swans gliding serenely across its surface. The occasional boat drifts by, its occupants waving warmly as you pass. The laughter of children echoes
faintly from a nearby park, but at this moment, it feels as though the world exists only for the two of us.
As the sun rises higher, we wander into the heart of Windsor, where quaint boutiques and charming shops beckon.
In a cosy chocolatier, the rich scent of cocoa envelops us as we select delicate handmade truffles, a decadent treat to savour together later. We couldn’t help but smile as our fingers brushed, our hands fumbling slightly as we try to discreetly choose something special for one another. The shopkeeper, an elderly woman with twinkling eyes, wraps our selection with a knowing smile, as though she has witnessed countless love stories unfold within her walls.
Stepping back into the crisp winter air, we meander towards Alexandra Gardens, where the manicured lawns and elegant flower beds offer a quiet retreat. The river providing a tranquil backdrop as we find a secluded bench, settling down to watch the world go by. Over steaming cups of coffee from a nearby café, we speak of dreams and memories, the warmth of our drinks mirrored by the comfort of each
other’s company. A gentle breeze stirs the trees overhead, carrying with it the promise of spring, while the soft call of birds adds a soothing melody to the moment.

Though we’ve seen it many times before, today its grandeur seems heightened, its ancient stones steeped in an air of romance. Wandering through its historic halls, we marvel at the stories hidden within its walls, each room whispering of centuries gone by.
The St George’s Chapel, with its intricate gothic architecture and hushed reverence feel like a sacred pause in the day, a moment to simply be still together in the presence of so much history.
By the time the evening arrives, the town is aglow with the soft golden light of street lamps. The riverside paths, now quieter, feel almost enchanting as we stroll once more along the
stunning River Thames.
As the evening draws to a close and the town grows still, we walk with a sense of contentment that is hard to put into words. Windsor, with its timeless charm and the ever-present whisper of the Thames, has gifted us a day to cherish forever. In the glow of its lights and the serenity of its riverside, we found not just the beauty of a town, but the joy of being together in its embrace.

Afew years ago I had a most fun adventure and lived in Thailand for a couple of years. Among the many wonderful, colourful and family friendly festivals that took place around the Country The Chiang Mai Flower Festival is one of Thailand’s most celebrated and vibrant cultural events, showcasing the beauty of the country’s flora and the artistry of its people. Held annually on the first weekend of February, the festival takes place in Chiang Mai, the “Rose of the North,” which is famed for its temperate climate and rich soil, ideal for growing flowers and ornamental plants.
This dazzling three-day event turns the city into a kaleidoscope of colours and aromas. The festival highlights the region’s horticultural heritage, with meticulously crafted floral displays, parade floats adorned with blossoms, and a variety of cultural performances that draw thousands of visitors from Thailand and abroad. It is a time of celebration, where creativity, nature, and tradition converge in a spectacular showcase.
Highlights of the Festival
The Grand Parade
One of the most anticipated parts of the Chiang Mai Flower Festival is the Grand Parade. Held on the Saturday morning of the festival, the parade features an impressive procession of flower-covered floats, traditional dancers, musicians, and locals dressed in colourful Lanna attire, the traditional clothing of northern Thailand. These floats are true works of art, decorated with thousands of meticulously arranged
flowers such as orchids, marigolds, and roses. Themes for the floats often draw inspiration from Thai myths, Buddhist iconography, and regional culture, with each one competing for prizes awarded for creativity and craftsmanship.
The parade begins near Nawarat Bridge and winds through the streets of Chiang Mai, culminating at Suan Buak Hat Park, the central hub of the festival. Spectators line the streets to marvel at the intricate details of the floats and to cheer the performers.

Beer Bread
Inspired by a recent trip to Holme Grange Craft Village and its wonderful artisan bakery, I thought we would try baking something that is very popular at the moment - Beer Bread. This oh-so-buttery and easy beer bread recipe needs only 10 minutes of prep and is made with just 5 simple ingredients! With a tender crumb, buttery crisp edges, and a subtle hint of beer, this no-yeast bread is incredibly flavourful and requires no kneading or rising time. Give this one a go!
Ingredients
375g all-purpose flour
50g granulated sugar
1 tablespoon baking powder
1 teaspoon salt
330ml can or bottle of beer - medium bodied beer with a mild flavour like a lager or pale ale works best
100g butter, melted
The beer stands in for yeast and eliminates any rising time in this beer bread recipe. Gather the few items needed and get ready to be wowed by the easiest loaf of bread you’ll ever bake.
Method
Step 1
Prep the pan:
Grease a 9×5 inch loaf pan and line with parchment paper for easy removal.
Step 2
Mix the batter:
Whisk to combine the flour, sugar, baking powder and salt. Using a wooden spoon, stir the beer into the dry ingredients until just mixed. Do not over stir!
Step 3
Assemble the bread:
Pour half of the melted butter into the bottom of the loaf pan. Pour the batter into the pan and then top the batter with the remaining melted butter.
Step 4
Bake:
Bake for 50 to 60 minutes, until golden brown and a toothpick inserted in the centre comes out clean. Slice and serve warm!
What to Serve with Beer Bread
Soup:
This bread pairs perfectly alongside a cabbage roll soup or a bowl of slow cooked ham and bean soup.
Chilli:
Whether a creamy white chicken chilli or beefy slow cooker chilli, this bread will go with them all!

NCDR includes solicitor-led negotiation, mediation, collaborative law - a series of meetings with both lawyers and clients present, and the use of private judging options where an experienced family lawyer, paid for privately, will act as your judge and can give an indication of what they would do if deciding your case or provide a final and binding decision.
The great thing about NCDR is that clients can pick and mix which processes they feel will work best for them to discuss the issues they need to resolve.
Two of the most commonly used forms of NCDR are solicitor-led negotiations and mediation.
What is Solicitor-Led Negotiation?
The aim of solicitor-led negotiation is to try and reach an agreement via solicitors’ correspondence, discussions on the telephone between solicitors or at a round table meeting. Often solicitor-led negotiation is regarded as a good alternative to mediation, when mediation is not suitable.
Mediation
Mediation is a voluntary, without prejudice and confidential process whereby the parties meet with a trained independent Mediator. The Mediator will not impose a decision on the parties and instead he/she acts as a facilitator to assist the parties to explore and discuss the issues in dispute, with the aim of finding solutions.

During the colder months, staying warm, healthy, and social can become harder for many of us. It is important to check up on older relatives and loved ones. Here is some advice on how we can best spot signs that a loved one may be in need of some extra support:
Has their appearance changed?
If personal hygiene or grooming appears neglected, it may mean daily tasks are becoming difficult. Watch for signs including weight loss or small burns, which can suggest struggles with cooking.
Are they taking their medication?
Look for signs like excess stock of medication or blister packs with missing doses, and consider encouraging a discussion with their GP or specialist. What’s their social life like? Ask about who they have spoken with recently. Reduced social contact might signal isolation.
What’s the house environment like?
An untidy and cluttered home can suggest housework is a challenge. Notice too if they’re using fewer areas of the house, perhaps due to fear of falling.
Do they call more often?
An increase in the frequency of their calls could mean your loved one is feeling anxious, forgetful, or lonely.
Realising that your older loved one is struggling by themselves can be difficult. However, the sooner help is in place, the better. Remember to give yourself lots of grace and reach out to professionals for support.

The 2025 Swimathon
The Wokingham Lions Swimathon Returns!
The Wokingham Lions Swimathon returns this summer offering a great low-cost fundraising opportunity for charities, schools and community groups.
The date is Wednesday 16th July 2025 from 10am to 3pm. The daytime slot is designed so that schools as well as charities can get involved. Pupils aged 8 or over on 16th July 2025 can enter. Our thoughts are aimed at pupils in year 6, who will be moving onto their Secondary School in September, and those in years 11 and 13 who are in the finishing stages of education.
Taking part in the Swimathon with their fellow pupils, would be a wonderful way to support their school and mark the end of their Primary or Secondary education.
Teams can be made up of staff, volunteers and friends. It is also an opportunity for local businesses with Corporate and Social Responsibility (CSR) policies to swim on behalf of a local charity.
The Swimathon is the perfect Team Building event, and entering a team will show your dedication to the local community. Many companies also have a ‘Match Funding’ policy, where they match funds raised, increasing the total amount going to charity.
Wokingham Lions Club’s aim is that PTA’S and charities alike will add The Swimathon to their annual fundraising programme. There is a nominal entry fee of £30 for a
team of up to 8 swimmers, after that every penny you raise you get to keep.
The Swimathon is about having fun whilst raising money for your cause. Participation in the event is easy. Recruit a team of up to 8 swimmers (all abilities welcome), which could include friends, family, colleagues, classmates or volunteers, register your team with Wokingham Lions, set up your online giving page and then encourage family, friends and colleagues to supports you. The public viewing gallery will be open on the day, so bring along friends and family to support your team.

A Historical and Religious Perspective
St Valentine is a name synonymous with love and romance, largely due to the global celebration of Valentine’s Day on 14th February. However, the life and identity of the historical figure or figures associated with St Valentine remain shrouded in mystery. The name refers to multiple martyrs venerated by the Christian Church, and the blending of their stories has contributed to the rich tapestry of traditions surrounding the saint.

Historical Background
St Valentine is believed to have been a priest or bishop in the Roman Empire during the 3rd century, a time of significant persecution of Christians. The Roman Emperor Claudius II, also known as Claudius Gothicus, ruled during this era and is said to have prohibited marriage for young men. According to one legend, Claudius believed that single men made better soldiers, unencumbered by familial responsibilities. Valentine, defying the emperor’s edict, allegedly performed secret Christian weddings for couples, earning his reputation as a protector of love and marriage.
Another legend recounts that Valentine was imprisoned for aiding Christians, who were harshly persecuted under Roman law. While in prison, he is said to have performed miracles, including healing the blindness of his jailer’s daughter. Before his execution, he reportedly wrote her a note signed “Your Valentine,” an expression that continues to resonate in modern romantic traditions.
Martyrdom and Veneration
Valentine is believed to have been martyred on 14th February, possibly in 269 AD. His steadfastness in faith and refusal to renounce Christianity led to his execution, which cemented his status as a saint and martyr within the Christian tradition. In 496 AD, Pope Gelasius I declared 14th February as the Feast of St Valentine, honouring his sacrifice and commitment to the faith.
St Valentine is associated with various virtues, particularly love, fidelity, and devotion. His relics are distributed across multiple churches, with notable claims from Whitefriar Street Church in Dublin, Ireland, where pilgrims still visit to seek blessings for their relationships.
The Romantic Connection
The association of St Valentine with romantic love likely emerged in the Middle Ages, influenced by the works of poets such as Geoffrey Chaucer. In his 1382 poem Parlement of Foules, Chaucer links Valentine’s Day to the mating season of birds, symbolising the pairing of lovers. This period also saw the rise of courtly love, a chivalric tradition that idealised romance and inspired the exchange of poetic verses, flowers, and tokens of affection.
