Az ország, ahol minden ember borász, az ország, amit a világ a borászat bölcsőjeként ismer. Grúzia borászatai minden más országénál jobban megszenvedték a szovjet uralom éveit, most viszont egyre nagyobb sebességgel próbálják behozni százéves lemaradásukat. Grúziában lépten-nyomon, az utcákon is találunk bor és chacha (a helyi pálinka) árusokat. A többségük tényleg meglepően tiszta, jó minőségű, sőt finom, még ha a stílusuk elképesztően változatos is. Jelenleg ezer bejegyzett borászat működik az országban (sok köztük fél- vagy egy-, kéthektáros szőlőbirtok); pedig 2006-ban még csak 80 pincészet termelt bort. Összességében viszont nem beszélünk nagy mennyiségről, országos szinten évi 300 millió palackról. „A grúzok az ősi borászati hagyományaikat követik. Három fontos borrégió van Grúziában (Kakheti, Imereti és Kartli), és mindegyikben másként készítik a bort, eltérő mennyiségű törkölyt tesznek az amfórába, azaz kvevribe. Keleten borostyán színűek a borok, Kartliban aranyszínűek, vagyis ahogy keletről nyugatra haladunk, egyre kevesebb a hozzáadott törköly. Persze a régiók a borkészítési stíluson kívül természeti adottságaikban (terroir) és legjellemzőbb szőlőfajtáikban is különböznek – több mint 500 féle szőlőfajta hagyományos Grúziában, és sok köztük egyedül ebben az országban autentikus a világon. Mukhrani hercege (Mukhranbatoni) a világ egyik legrégebbi úri dinasztiájából származott. A borászat a hobbija lett, miután Bordeaux-ban és Champagne-ban megismerkedett vele. Georgia’s vineries have suffered more than any other country from the years of Soviet rule, but are now trying to catch up on the hundred-year backlog at once. Wine and chacha (local schnapps) vendors are easy to find all over the streets of Georgia. Most of them are surprisingly clean, good quality, and delicious, even if their style is amazingly varied. There are currently thousands of registered vineyards in the country (many of them half to one- or two-hectare), although in 2006, only 80 vineyards produced wine. Overall, however, they do not produce huge quantities, 300 million bottles a year nationwide. “Georgians follow their ancient winemaking traditions. There are three important wine regions in Georgia (Kakheti, Imereti and Kartli) and in each of them, the wine is made differently, different amounts of pomace are put in the amphora, i.e. kvevri. The wines are amber in the east, golden in Kartli, meaning that as we move from east to west, there is less and less added pomace. Of course, in addition to the winemaking style, the regions also differ in their natural endowments (terroir) and their most characteristic grape varieties - more than 500 varieties of grapes are native in Georgia, and many of them are only authentic in this country. The Prince of Mukhrani (Mukhranbatoni) belonged to one of the oldest dynasties in the world. Winemaking became his hobby after getting familiar with it in Bordeaux and Champagne. A nagyobb városok jobb helyein a legtöbb turista lényegében zsákbamacska módszerrel fut bele jó néhány kiváló borba, mint például a Baia’s Wine-ba vagy a Papari Valley nedűibe és a Prince Alexander Chavchavadze Tsindali Estate alkotásaiba. A modern, a világ más részeiről jól ismert módszerekkel előállított grúz borok többsége is különleges, hiszen olyan szőlőfajtákból készülnek, amelyeket aligha találni meg máshol. A legtöbben mégis elsősorban a kvevri borokat keresik; akad köztük jó pár buja, vaskos, robosztus, a szakértők kisebb hibáikat is kiszúrhatják, de többségében igazán szerethetők. Viszont valójában mindenhol csak kis részét képezik a kínálatnak. Párhuzamosan azzal, hogy a grúz borok a világtrendek felé haladnak – környezetbarát művelés, elegáns, könnyed borstílus – a világpiacon is egészen biztosan teret fognak nyerni, méghozzá nagyon gyorsan. Mindezek olyan értékek, amelyek miatt Grúzia évről évre fontosabb célpontja lesz a világ borszakértőinek, és amelyek miatt a fapadosok olcsó repjegyekre utazó közönsége is hajlandó lehet az ország fejlett fővárosából vidékre kimozdulni. of producing 1.2 million bottles a year. In Chateau Mukhrani, a wine tasting of 6 to 7 items costs HUF 9,500 to HUF 13,000, while in the fine dining restaurant, a 14-course menu costs about HUF 6,500 in Georgian lari. Georgia is a relatively cheap country, even from a Hungarian perspective, but not when it comes to alcohol: in terms of average bottle prices, Georgian wines were ranked 5th in the world rankings last year; in restaurants, the price of 100 ml wine usually starts from HUF 1,200 to 1,500 equivalent of lari, and can cost up to four to five times more. Anyone who has a wine region of Georgia in mind usually ends up in Kakheti. The beauty of the territory worth the trip from the capital, Tbilisi, even if the city does not lack modern wine bars. Telavi, Tsinandali, and Sighnaghi are all famous for their wineries, and it is good to know that quality accommodation is very cheap. Most tourist randomly come across some delicious wine in the larger cities, such as Baia’s Wine or the nectars of the Papari Valley and the creations of Prince Alexander Chavchavadze’s Tsindali Estate. Most of the Georgian wines, produced with modern methods well known from other parts of the world, are also unique, as they are made from grape varieties that are hard to find elsewhere. Most, however, are primarily looking for Kvevri wines; they are lush, chunky and robust. Experts can spot their minor flaws, but they are really lovable anyway. However, they are in fact only a small part of the selection. With Georgian winemaking moving towards the world trends - environmentally friendly cultivation, elegant, light wine style - they will certainly gain ground on the world market, very quickly. All of these are values that will make Georgia a more important destination for world wine experts year after year, and that may make the budget travellers willing to venture out of the country’s developed capital to the countryside.
