LETTER FROM THE EDITOR I actually adore the winter season. Far from being blah and bluesy, I relish the cool weather, the early evenings spent poring over seed catalogs and brisk, windy walks on my farm and on the beach. I want lily readers to experience Winter Love, too! Winter is the time for cozy candles and killer boots and closet-cleaning sprees as you put away the holiday trimmings. It’s the time to get your house in order, indulge in slow simmering soups and dried beans and to open up those cans of veggies you put up (or bought) for a little taste of summer to add to your fresh, local greens. Why not take a walk without sweating or swatting mosquitoes and ponder the sublime beauty of the myriad of camellias you will inevitably see? Tuck in some nummy lettuces amongst your pansies, Johnny jump ups and ornamental cabbages and add the best smelling flowers ever, stocks, to your winter garden. Make February a “love yourself” month by trying something new, be it an herbal health boost or a new craft or skill. In short, indulge in the things you love about winter knowing that this is truly the season to chill before our busy lowcountry spring begins!

Local artists inspire the inner creative being in all of us and we can use the early-descending darkness of these winter days to dream—of projects, gardens, plans, schemes and goals… That’s so indicative of life in the lowcountry isn’t it? Each day, each fluctuation in temperature, results in a decline in nutrients.

We dig Lowcountry Local First’s DIRT WORKS program! Who better to run the amazing program, Dirt Works, than one of the first apprentices to enroll in a Lowcountry Local First farm training initiative? Bright, charming, passionate… Nikki Kelley jokes that she is the very demographic the Dirt Works serves. Because the “new” farmer on the horizon looks a little different than the current average SC farmer (namely, male and aged 59). New farmers tend to be young, college educated in a degree that is not agricultural and—hip hip huzzah—the farm field is increasingly the destination of women. But male or female, younger or older, every aspiring farmer should check out this amazing program, the first (and only one) of its kind in South Carolina.

cost access to land, infrastructure, training and networking for new farm businesses in the area. Thus causing the farmers, themselves, as well as their farming practices, to be sustainable… How cool is that??? Now THAT’S trashy! Boo Hoo, it’s true. You’ve probably heard by now that Summervillians and other nearby residents are out in the cold after the slashing of their local recycling program. Now the “aging facility” serving that area will only accept paper and cardboard after a contract between Chas. County and Sonoco (who used to process all those recycling materials) will not be renewed. It begs the question, “How much of the $102 annual fee tacked on local residents’ property tax bills for trash and recycling collection will no longer be used on the recycling of cans, bottles, plastic or glass? And just WHERE will those tax dollars go?” We’re holding our nose because lily Mag thinks that stinks!

We have to give a big arigato-shout-out to these enterprising entrepreneurs because they take great pride in sourcing as locally as possible with the help of Grow Food Carolina, Keegan Filion Farms, Fili-West Farms (remember them from the last issue?) and Abundant Seafood­— as well as buying when possible from other local farmers and fishermen. Insert lily happy dance here… We think that the fact that they make their own condiments, sauces and pickles takes this terrific truck to the next level, too. Woo hoo! kale and tofu fritters

SC Solar Power Future looks bright Cypress Creek Renewables, a company that specializes in long-term solar energy projects, is partnering with regulators, utilities and business development groups (like Sustainable Energy Solutions) throughout the U.S. to build more than one gigawatt of new solar projects between now and the end of 2016 in order to make solar power economically attractive to utilities and consumers. The good news is, they are investing hundreds of millions of dollars right here in SC to create solar energy facilities to help achieve this goal. Yep. Bourbon Barrel Smoked Flakes

Being smoked in aged oak bourbon barrels creates a sweet finish on this subtly smoky flavor. (Check out their barrel providers, Bittermilk, at bittermilk.com) Great for meat and veggies and we love Rustin and Teresa’s suggestion of a slight sprinkle over ice in a cocktail. It was delish!

CLASSIC MARGARITA Rub rim of chilled glass with lime wedge. Dip rim into saucer of Carolina Margarita salt. Fill cocktail shaker with ice and put 1.5 oz tequila and ½ oz of Cointreau into the shaker. Squeeze the juice of 1 large lime through a strainer into the mix. Shake well, pour immediately over ice. “ S alt is b o rn

Margarita salt’s course texture has a teensy, twangy crunch that dissolves quickly.

BOURBON BARREL SMOKED FLAKE ROASTED PECANS Get some locally sourced pecans, shelled and halved. Add 1 ¼ teaspoon Bourbon Barrel Smoked Flakes to 3 Tablespoons melted, unsalted butter. Toss 2 cups pecan halves in butter/salt mixture, spread evenly on baking pan and roast in preheated 325 degree oven until fragrant and only slightly darkened (around 10-15 minutes but watch very carefully to avoid burning). Nummy!

For Asian flare, we sautéd leftover rice & veggies in sesame oil (we used peas, carrots & peppers), stirring in some low fat sesame ginger dressing and topping with sprouts.

LOWCOUNTRY RICE AND CRAB CAKES

¼ cup minced shallots, onions or green onions

1 ½ cups cooked lowcountry rice (we used leftover golden rice)

¼ cup plus 2 Tbsp low fat mayo or ¼ cup mayo plus 2 Tbsp Dijon mustard

½ cup minced fresh red pepper

Here we mixed leftovers (see lily-magazine.com for gifts-in-a-jar savory rice recipe) that included rice, chopped bacon, dried peppers and mushrooms with fresh, chopped parsley and cilantro for a savory treat.

Combine all ingredients in large bowl and shape into patties. (We created 8 large, thick patties.) Heat around 2 Tbsp oil (not olive) in skillet until very hot and add patties. Flip when browned and cook until crisp. *Tip—Fried food loses crisp and get soggy when drained on paper towels. Dry on cooling rack placed over paper towels

It seems they have long shunned the use of pesticides and other practices that pollute the wine as well as the planet. His pick (and ours) for an incredibly expensive-tasting wine for a bargain price is Chateau Jouclary, a unique blended French that is tres magnifique!

But Angela is looking for her next studio base with excitement, knowing that a new adventure awaits her behind each bend in the track.
