Prepare outdoor grill to medium high heat (spray generously with grill non stick). Cut fish into 1-1.5 inch pieces. Carefully place chunks on skewers and brush all over with olive oil, seasoning with salt and pepper. Lay fish skewers on the grill for a few minutes (usually around 5) until you can lift the fish without it sticking to the grill and there are distinct grill marks. (Test by gently lifting a piece—if it sticks, leave on longer. Gently turn skewers over and cook until firm to the touch, about another 5 minutes. Grill corn by placing on upper rack or on side away from charcoal. The corn will brighten in color, and get brown grill marks as the kernels caramelize. Roast okra and mix comeback sauce as directed on lily-magazine.com. Serve family style in skillet.

Look, if you can buy local by all means do so. If you can’t buy local, buy regional. If you can’t source regionally, at least try to buy domestically. And remember that fair trade goods can even make buying foreign products a little easier on your conscience. We all know that buying and eating local is best. But do the best you can and don’t sweat the rest… we’re here to encourage, not browbeat after all.

Lowcountry Maritime Society Goes Full STEAM Ahead! Turn the glass and strike the bell, it’s time to give a grateful yell! For many people, access to the water is extremely limited. LMS helps provide marine based opportunities and experiences to others, helping promote the connection of coastal SC with our local marine environment.

The famous Chas Mosquito Fleet sails again! This year the LMS’s goal is to educate students and the community about our famous Mosquito Fleet. From the early 1800’s, some of the most skilled watermen and fishermen here were African Americans plying the local waters in this famous fleet of picturesque vessels.

The vessels built by local kids in this year’s program are a part of the New Mosquito Fleet—kudos to LMS for literally bringing history to life!

FFF has big plans for a bright future, including teaching residents to create their own food sources, operating a CSA program and developing a U-pick food forest trail as well as providing an amazing array of educational opportunities through classes, tours, demonstrations and other fun events. Those radical free radicals! Let’s simplify that for ya...we hear the terms “free radicals” and “antioxidant” and “flavonoids” an awful lot. Here is the world’s shortest lily-style explanation of what these terms mean:

Free radical - An official dictionary definition says this: an atom or molecule that bears an unpaired electron and is extremely reactive, capable of engaging in rapid chain reactions that destabilize other molecules and generate many more free radicals in the body. We found a relatively simple explanation of this process at healthchecksystems. com: Free radicals are very unstable and react quickly with other compounds, trying to capture the needed electron to gain stability. Generally, free radicals attack the nearest stable molecule, "stealing" its electron. When the "attacked" molecule loses its electron, it becomes a free radical itself, beginning a chain reaction. Once the process is started, it can cascade, finally resulting in the disruption of a living cell. Some free radicals arise normally during metabolism. Sometimes the body’s immune system’s cells purposefully create them to neutralize viruses and bacteria. However, environmental factors such as pollution, radiation, cigarette smoke and herbicides can also spawn free radicals.

Normally the body can handle free radicals, but if antioxidants are unavailable, or if the free-radical production becomes excessive, damage can occur. Of particular importance is that free radical damage accumulates with age.

way to go. Nix the BBQ sauce until AFTER cooking. To keep moist, add 2 tablespoons of a dry rub to one cup of apple cider vinegar or beer and “mop” ribs once an hour during cooking. Coat ribs with honey or olive oil before cooking. Season ribs with a dry rib rub. 2 tablespoons for every pound of meat is a good rule of thumb. Sprinkle dry rub

onto ribs and rub it into the meat, evenly coating both sides. Make sure ribs are room temp before beginning to cook. Pre-heat your smoker to 255 degrees. Add wood chips to your smoker for awesome flavor. Be sure your exhaust damper is wide open to avoid bitter taste in your meat.
