










There’s something magical about the way food and drink bring people together. A great meal can turn strangers into friends, and the right cup of coffee can spark creativity, connection, or simply a moment of peace in a busy day. October feels like the perfect month to celebrate one of my favorite subjects: food and beverage.
Here in our community, we are fortunate to have a growing and vibrant food scene. From cozy cafés that serve up lattes with a personal touch, to lively restaurants that transform a night out into an experience, to neighborhood bars where conversations flow as easily as the drinks — these local spots are what give our town its unique flavor.
Supporting local has always been important to me, and it matters now more than ever. When you choose to dine or sip close to home, you’re not just filling your plate or your glass — you’re investing in people. Behind every dish and every pour is a story: a family chasing a dream, a chef experimenting with new flavors, a barista who remembers your order before you even ask. Those stories are what we get to savor when we choose local.
This issue is dedicated to highlighting just a few of the incredible restaurants, bars, and coffee shops – and even a new discount grocery store - that make Windsor and the surrounding area so special. My hope is that you’ll be inspired to try someplace new, revisit an old favorite, or maybe even plan a gathering with friends around food and drink. After all, sharing a table is about more than what’s on the menu — it’s about connection, community, and creating memories.
So here’s to October — a month to slow down, savor the season, and celebrate the food and beverages that bring us together.

Owner Reuben Esh recalls the excitement his mother felt providing ample groceries for her family of six after shopping at Reuben’s uncle’s budget grocery store, an hour and a half from home.

Grocery outlets are not a new concept, dating all the way back to 1946, but Esh’s is responsible for bringing that style of shopping to Colorado. Specific decisions were made during the construction of the Windsor location of Esh’s to keep it from looking like a “salvage store.” And with its clean, organized, and very well-maintained space, Esh’s effectively combines the look and feel of an upscale grocery market with the affordability of a grocery outlet.
Traverse Builders was instrumental in bringing the Esh’s vision to life. Reuben acclaims them for their clear communication regarding budgets, changes, and even the smallest of details. From Oaxaca and Jalisco to Windsor, Luna’s Tacos & Tequila Works to Bridge the Cultural Gap
You may not think the road to Oaxaca doesn’t pass through Northern Colorado, but for Luna’s Tacos & Tequila, the path to cultural and culinary connection with Mexico’s greatest gastronomy runs right through the middle of their Windsor restaurant, at 1246 Automation Drive.
The latest chapter in Luna’s Mexico journey was an August trip to Oaxaca, mezcal’s motherland in the
country’s southern stretches. Oaxaca is famed for its centuries-old distilling tradition - transforming the wild agave plants dotting its rugged landscape into a spirit flush with ethereal flavors that, in recent years, has swooned the drinking world.
Luna’s co-founders Sam Corliss and Brian Seifried are among those who are deeply enamored with mezcal. But what sets them apart is they, and their

team members, have personally visited Oaxacan mezcaleros (mezcal producers) at their palenques (mezcal distillery).
“Just seeing how truly passionate the makers of these spirits are about their tradition inspires us to better tell the story of agave spirits. It gives us context on how impactful it is to drink small artesian
brands, not celebrity backed tequila,” says Seifried, “You start to see our guests really appreciate and enjoy what they are sipping on more.”
Corliss and Seifried have also brought staff to the famous tequila territory of Jalisco, where they toured the distilleries of three of the finest brands in the business: Arette, Don Fulano, and Fortaleza.
Corliss says these “agave trips” have created memorable moments that influenced the way they operate Luna’s.
“I’ll never forget the first time we met Guillermo Sauza. We had just finished a dreamy day touring Fortaleza, and ended up at a little bar in downtown Tequila called La Catrina. We were enjoying a sip when the one and only Guillermo rolled up in his golf cart with his dog Molly. What could have been an intimidating situation turned into one of the most inspiring nights of our life. We sat for hours listening to his stories, sharing our own, and sipping on some of the best juice around. His humility, hospitality, and warmth was something we try to live by every day with our own guests.”
While Corliss was surprised by the approachability of a tequila industry legend, Seifried was inspired by the nation’s food culture.
“The restaurant scene in Mexico is so incredibly diverse. From the best street tacos on the corner to international fine dining, all share a common pride in what they are cooking and indescribable hospitality for their guests. That’s genuine inspiration in our world of factory produced chain restaurants.”
But despite the many miles between Windsor and Oaxaca or Jalisco, Luna’s strives to shorten that physical and cultural gap with a culinary bridge with menu items like beef barbacoa, carnitas and chorizo street tacos inspired straight from the street food stalls of their travels. They even bought a trompo, a

vertical rotating spit traditionally used to cook the marinated pork for al pastor.
“I want people to enjoy some authentic flavors while appreciating a creative approach. Mexican food in Colorado is all an interpretation of a cultural journey our community has been on for generations,” says Seifried.
The classic counterpart to Mexican food is a good old pour of tequila or mezcal, and Luna’s boasts one of Colorado’s largest and finest agave spirits selections.
“I hope our guests get out of their comfort zone and try something new, venture out of the known and into a world of tradition and flavor.”
Inspired by their passion for Mexico's profound culinary world could never burn at its brightest without actually going there, with their staff, on a mission to gather personal and professional inspiration. It is a plan that simultaneously benefits their team and their guests, says Corliss.
“It’s been one of our greatest joys in life to share Jalisco and Oaxaca with our teams. There is nothing quite like experiencing the people and culture of Mexico. Our employees are able to connect with the guests on a much deeper level about their personal experiences.”

Words of Windsor has been in love with this month’s book since it came out! What Goes with What by Julia Turshen is a versatile resource for both new cooks who need guidance and experienced cooks who feel bored with their “goto” meals.
Each section begins with a discussion of the formula. For salads, this means base, crunchy things, rich things, and dressing (with recipes included). Then come five recipes using the formula, which can be followed as written or used as a jumping-off point. And speaking of salads, there’s even a division between salads with lettuce and salads without lettuce—an actual discussion topic in Sam’s household. There’s also a section on meatballs, which is equally brilliant.
By the time readers explore all 20 sections of the book, they will have gained both comfort and a sense of daring. And not everything has to be made from scratch. For example, the polenta recipe expects you to buy it premade from the store. Along the way, Turshen offers serving suggestions for sides and add-ons.
In short, Sam thinks this is a brilliant book and thoroughly recommends it.

Fueled by the desire to maintain what had become a beloved hub for Windsor, Judah and Heather Cofer along with a partner took ownership in 2020. Not long after, Shawn and Shellie Kibler joined to help carry forward the vision and increase the impact.
