The Southern Food Issue

When I was young and growing up in New Hope, Alabama, my family lived next door to my paternal grandmother Vesta B Dickey Clark, known to everyone as Sis, known to us grands as Mammaw. She was very petite in stature, but mighty in everything else. She was mother to four sons and became a widow at age 50 in 1959 when my Pappaw died of a heart attack in her presence. He was the love of her life. She was heartbroken but in true Sis Clark fashion she carried on, navigating life as a widow for 38 more years.

We lived on what would be known now as a hobby farm, with Mammaw and my dad always growing a garden full of everything, raising cows, pigs, chickens.  She had a smoke house for the meats and a little building for her canned goods and freezer full of food.  We lived like most folks lived in the 1960s in the rural South.

One thing my Mammaw was always excitedly proud of was her grapevine. It was planted in an old garden spot fenced off in one of the pastures. It produced delicious fruit with little tending and trimming, but always gave us plump purple grapes for jellies, jams and juice...and of course to eat them fresh off the vines.

She was very protective of the grapevine. I remember once when my Uncle Billy trimmed the grapevine and not much was left. She was excited but not in a good way. I can still hear her saying “you better hope it grows back and has grapes again.”  Lucky for Uncle Billy, the grapevine persevered and produced a bounty that next season.

Fast forward to 2014 with new land purchased by my husband and me, and a barn under construction, I found a place for the grapevine to be planted.  The perfect place for sunshine and next to our future garden spot seemed right.  So a rustic cedar frame was built and the small but mighty grapevine finally was in rich soil to spread its roots and grow juicy purple grapes.

The second year in its new home brought a few bunches of grapes, the next brought more and the next more and so on...but things never lined up for a harvest.

But then 2020 arrived with more grapes on the vine than ever and with my keeping as close a watch on the ripening as the birds, the first ever harvest came.  I couldn’t help but think of my Mammaw with each bunch I picked...and how the little grapevine kept trying, kept going just like Mammaw always did. Small but mighty.

A MINIMALIST Masterpiece

FLOOR TO CEILING MARBLE, LARGE WINDOWS, AND UNIQUE LIGHTING CREATE THE FEEL OF THIS HOME

Modern. Elegant. Sophisticated. From concept to completion no detail was spared, and it shows throughout the entire home. With floor to ceiling marble, large windows, and unique lighting and furniture, the Tomaltys built a masterpiece tucked away in Huntsville’s Jones Valley. With a clear vision of using organic materials mixed with warm and varying textures; clean lines with minimal visual “noise”, Ashley Tomalty chose limestone, marble, solid oak flooring, vintage beams, and unlacquered brass to create the feel of her new home. She drew inspiration from architects including McAlpine House, Amber Interiors, and Jeffrey Dungan.

A focus on indoor/outdoor living inspired by the way people live on the west coast, a functionally designed kitchen, a home gym, a floating staircase, and a dedicated dog yard were all must haves in their new home.

“Indoor/outdoor living really became the focus early on. My husband works a lot of long stretches and is on-call quite often. We wanted to build a home that felt like an escape while still being in close proximity to the hospital,” states Ashley. The kitchen has an 8 foot wide sliding window that pockets into the wall, and on that same wall in the living room is a 16 foot sliding door that also opens completely and pockets into the wall, essentially opening that entire wall of the house to the covered outdoor space. The covered outdoor space is set up with ceiling heaters as well as built in retractable screens to enclose the space and keep the bugs out. With the screens down and doors open, the outdoor living areas become a true extension of the indoors. The Tomaltys cook and eat at home almost every night and the island is the heart of their home. Ashley designed the kitchen around the way they live. The island is large, but has seating on both sides so it functions more like a table. “A lot of people tried to talk me out of an island that size, but I’m so glad I went for it. Essentially, when I’m cooking, I am at the head of the table. My son and his friends can gather and we always have room for everyone.” She continues, “I have my own dedicated sink and dishwasher at the head of the island so I can easily clean as I cook and there’s no need for anyone else to come into that space while I’m working.”

The master bedroom has a soft and peaceful feeling. There is a huge window looking out to the backyard with no other houses in view. “We can push open the window and hear the waterfalls in the pool while laying in bed. I love the vintage beams we ended up putting across the vaulted ceiling, and the leather pendants over the nightstands are so fun.”

For 2 years, designer was Ashley’s full time job. She remarks, “To a certain degree, I just didn’t understand how complicated of a project I was getting myself into until I was too far in. I tried working with a few designers but because I did have such a specific look and feel in mind, I ultimately had to be the one to make all the selections.” Creating moodboards to continuously review and edit was helpful. For some things, she just wasn’t willing to take no for an answer, and found ways to bring them to life. “I actually ended up sketching the design drawings with specs for the floating stairs and outdoor sunken fire/conversation pit myself on graph paper and had some excellent subcontractors willing to make them work.”

“I knew I wanted statement marble. The beauty of natural stone just can’t be replicated and each piece is one of a kind. Selecting the marble felt like selecting art in a way….I just knew when I saw ‘the one’.” Ashley made frequent visits to the local stone suppliers

for months looking for the perfect pieces. When she saw the slabs the family ended up using on the fireplace, she immediately knew she had to have them. “I began working with Ceramic Harmony on the kitchen fairly early on. They went on a buying trip to Italy and sent pictures of some marble choices they were considering bringing back. I knew I wanted my marble when I saw the picture. The size was also important because I wanted the top of the island to be one solid slab with no seams.” Ceramic Harmony was able to line up the veining from sequential slices of marble to create a truly seamless look for the hood, backsplash, waterfall edges, sink wall, etc. “I really wanted the marble to do the talking in the kitchen so I went with a cabinet color that wouldn’t distract, but chose heavy brass hardware from Armac Martin that will patina over time creating a lived-in feel.”

Lighting selection was really important to Ashley. “It’s something I feel makes this home really unique in both the lighting selections and the lighting placement. I put fixtures in reading nooks as well as in niches in the kitchen, and hung pendants over where the side tables would eventually go. I feel those well planned touches make a big difference.” Brad Lapidus at Richards lighting had several selection meetings, dealt with many changes, and made multiple sight visits to ensure the family was happy with the final result. We did under cabinet lights under all the floating vanities in the bathrooms and used very minimalistic recessed lighting to distract the eye as little as possible. “The majority of the lighting came from Visual Comfort, with a few selections from Arteriors and Hubbardton Forge.” She continues, “I certainly tried to have some fun in certain areas as well, especially in the bonus areas, using green lava tile, with wild textured marble and fun wallpaper with monkeys drinking martinis.”

Collecting art has been one of her favorite parts of decorating the house. “I’ve learned about so many artists from friends and family, Ashley states. “The dining room itself was completely designed around the artwork. I discovered that particular

artist after seeing some other work at Design Supply in Birmingham, but ended up buying that piece directly from the artist in Canada.” She continues, “Art is such a personal choice and you just get a feeling when you see something that really speaks to you and your aesthetic.” The Tomaltys have collected other pieces of art during their travels. “I enjoy finding something meaningful when I go to a new country that I can bring back and implement in the design of our home. A sculpture from Greece and a painted vase from Vietnam are some of my favorites.”

Through vision, a love for organic materials and minimalist style, carefully selected lighting, and artwork that speaks to them, the Tomaltys have created a space to call home that is truly a work of art.

ELEVATING THE RESTAURANT SCENE

How three men and their American journey brought them to Huntsville to become restauranteurs

Two of the most beautiful restaurants you will set foot in recently opened in Huntsville. For anyone who loves and appreciates impeccable design and attention to detail, The Providence Bar and Loona’s, located in Providence, will make you feel as if you have stepped into the pages of Architectural Digest or a stunning Los Angeles eatery. In fact Loona’s decor and food is inspired by the Los Angeles restaurant Great White. While Providence Bar features pizzas, small plates, and wine, Loona’s is an elevated brunch destination with an Australian/American inspired menu. Every plate that is sat in front of you at these two new eateries, is beautifully presented, fresh, colorful, and delicious.  And the three faces behind these beautiful restaurant concepts and mouth watering menus are all from immigrant families. Their unique American journeys brought them to Huntsville, Alabama.

The American Dream looks a little different for everyone, but one thing is for sure, if you work hard and stay in a state of learning, anything can happen. Jim Xue entered the US not knowing what life in America would look like for him, but he knew he loved sushi and wanted to learn as much as he could about the art of culinary creations. He learned the ins and outs of the restaurant business as he worked his way up in a sushi restaurant in LA, eventually leading him to Alabama where he would open I Love Sushi in Jones Valley.

“Since 1999 I have seen Huntsville grow and grow,” says Jim. “Huntsville is just such a unique place and every time I travel anywhere I can’t wait to come home.”

Jim met Yunus Hasan one of his co-restauranteurs years ago in the restaurant industry. Yunus came to Huntsville in high school when his dad’s civil engineering job moved his family here. From a first generation American family, Yunus attended Bob Jones High School and met Jim in college. Yunus, a known over achiever, working multiple jobs most his life, playing in a band, and going to college found the restaurant business exciting because you never sit still. Yunus’s restaurant story even includes a stint at former Huntsville sub shop, Subzone. If you know you know. Yunus’s other love is music which he believes is intricitally involved in the atmosphere. “I have been in different bands, one called Madcore which you will not find on any of our restaurant playlists,” he laughs. “But I believe that love for music helps create great sound and tunes that play into the vibe of each of our restaurants.”

Yunus and Jim began working together with the opening of I Love Sushi Madison, and then continued collaborating together with Chop N Fresh.

The third partner, Ryan Colvin met Yunus and Jim at I Love Sushi Madison when he was a waiter. Ryan moved to Huntsville in 2014 while working part time at a steel factory and also waiting tables at I Love Sushi which was near his home. He fell in love with the restaurant industry and felt a kinship with Jim and Yunus, so he gave up the steel job and went fulltime into restaurants. “I saw those guys and all they were doing in the city and their drive for opening new restaurants and it inspired me to be a part,” says Ryan. Through their own journeys these three joined forces to create two of the coolest new restaurants in Huntsville. Gather At The Southern Table

There’s something special about gathering around a table with family and friends to share a good meal, stories, and sweet time together.  If it’s a Southern table, there’s bound to be some delicious specialties that have graced tables and satisfied appetites for generations!

Being raised in the South and living my life here, I have great memories of many good times and good eating.  My mother could make a delicious banana pudding amazingly quick!  It seemed like in only ten minutes she was sliding it in the oven to give the meringue a little toasty color.  My grandmothers made the best turnip greens and I tried for years to cook mine like theirs and finally perfected it, well let’s say close enough!  So many memories and so much good food, it’s hard to write them all.

As times changed and generations passed, some of the ways of cooking changed, the gatherings grew fewer, our lives got busier and even Southern cooking changed a bit.  If you think of it as only greasy fried chicken, fatty and calorie laden, think again!  These old favorites can be prepared, served and eaten lighter and in moderation.

Lifestyle changes have also decreased some of our cooking at home and increased our dining around a table at a nice restaurant.  If this is the case for you, but you still love to have some good ol’ Southern dishes, here are some of my favorite staples and where to get the best around town to satisfy those cravings!

Listed in the book “100 Things to Eat in Alabama” and I second this notion!  There is something especially comforting about creamy, cheesy grits covered with shrimp and a buttery sauce. It’s no wonder this dish is a Southern staple.

So Fresh And So Good

As an avid foodie I try to be very mindful in what I fuel my body with. Don’t get me wrong, I sure do love devouring a scrumptious bowl of ice cream when given the opportunity. But I also feel very refreshed and pleased after I enjoy a health filled salad or bowl. So I bring to you my favorite salads, as well as bowls and where they can be found in the Rocket City! Oh and don’t worry, none of these are boring or plain- all are full of flavor and color. Let’s dig in!

SWEET BOWL ALABAMA AT CHOP N FRESH

Honestly this one is a staple in my life. It is so joyfully good in every sense and gives me the happiest tummy. With a base of kale it houses roasted sweet potatoes, goat cheese, wild rice, almonds, apples, roasted chicken and a balsamic vinaigrette dressing. An absolutely delish salad that I honestly could get everyday and would not tire of. It is pleasing to both the eyes and the taste buds. I love the pairing of a fresh bread slice too. Perfect option if you’re on the go or want to catch up with a friend.

BLUE OAK BBQ BLUE OAK SALAD

A refreshing medley of mixed greens, pickled red onions, shredded carrots, cucumbers, cherry tomatoes. Top it with your choice of pulled pork, chicken salad, chopped brisket, cubed turkey or fried brussel sprouts. Drizzle it with either herbed dill ranch or creole mustard vinaigrette. Personally, I enjoy mine with the cubed turkey plus fried brussel sprouts drizzled in herbed dill ranch. My husband said it best- the salad is not just an afterthought. And I couldn’t agree more! There is a lot of beautiful preparation and hard work that goes into making this delish dish. And it’s incredibly evident as soon as you take that first bite. While the rest of the crew eats barbeque you can indulge a well crafted salad.

GOODLAND POURHOUSE

BERRY GARCIA SALAD + SALMON

My heart was won over when I first had this delightful and delish salad. It is an absolutely beautiful combination of red quinoa, fresh strawberries, goat cheese, arugula, toasted pumpkin seeds, and pecan granola all drizzled in their house made balsamic vinaigrette. Plus the lovely addition of their grilled salmon that is incredibly mouthwatering and a good punch of protein. It is perfection in every sense. Definitely a favorite salad of mine for sure! I love this option for when I am enjoying a meal out with the whole family.

SALT SMOKEHOUSE SUMMER SALAD

All the tastes and feels of summer can be found in this delectable entree. Brightly colored and filled with such fresh ingredients like watermelon and strawberries, this salad is enjoyable to the last bite. Along with the aforementioned items you also have cucumbers, candied pecans, mint, goat cheese, golden raisins and a yuzu vinaigrette drizzled on mixed greens. I adore this and always feel so refreshed after eating it. This, in my opinion, is a nice and light dinner option to finish the day off perfectly.

This Huntsville staple has one of my most sought out after salads. On a bed of lettuce you have grilled chicken, fajita veggies, shredded cheese, tortilla strips, diced tomatoes and salsa ranch dressing. I personally love topping mine with their fresh guacamole- it adds so much flavor and healthy fats. I have ordered this salad for as long as I can remember and I have yet to tire of it. This is the best place to bring an out of town friend to come try- everyone knows that’s a must!

This is an elevated twist on a classic that everyone loves. Providence bar has upped their caesar salad game by including crisp, garlic-herb panko that adds a flavorful crunch to the traditional salad. A perfectly put together bowl that both looks and tastes lovely. A wonderful combination of shrimp, rice, lettuce, corn salsa, queso, chipotle aioli, avocado, cilantro, and cabbage slaw. In my opinion, the juicy shrimp and fresh avocado really elevate the taste of this entree overall. And I have to say that every time I have had this it always amazes me with how excellent it tastes. This delightful and appetizing meal is excellent to indulge in at lunch or dinner.

Painting what makes you happy

What makes you happy? In graduate school, Lara Isbell was fascinated with the human form and attempting to master this type of figurative art. However many of her critiques, both professors and other students, felt that my paintings were too cold or impersonal.Lara recalls, “A favorite professor at that time recognized I was feeling down and losing my desire to create. He asked me a pretty simple question  What makes you happy?” Her first response was her dog Belle who had been her companion throughout college and then in Chicago for graduate school. Lara remembers, “He said, Paint that. Paint your dog, which sounded insane at the time. This set me on the course of painting, literally hundreds of portraits of Belle; followed by a lucrative business in pet portraits in the early 2000s.”

The next chapter of Lara’s painting career, had her going back to the same question that professor asked,  What makes you happy? “At this time of my life, I had begun my career in the wine industry, constantly surrounded by delicious wine, interesting people, winemakers, fascinating chefs with their stories behind their

creative process,” Lara remembers. This period also coincided with the advent of the iPhone, giving everyone a quality camera in our pocket. Lara began taking pictures, like everyone else at the time, of all my meals, whether out at a restaurant or prepared at home. This became the inspiration for the second chapter of her painting career, which was focused mainly on wine as the subject.

Her current chapter began a year ago, once again she asked that question, What makes you happy? Working through my empty nest syndrome, Lara created collages based on empty nests with her children’s art saved over the years. Then she began going through all of the photographs she had taken for the past 18 years, some 20,000 photos. An obvious theme appeared, food. “The amount of material I found once I cataloged all my photos of food that I had either eaten or cooked myself was slightly overwhelming! It inspired me to use this as the basis for this newest series.” Lara continues, “All the inspiration for the work that I do now has been based on what has brought me joy over the past 18 years, food ultimately, makes me very happy!”

“Because my paintings are based on photographs that I’ve taken, it allows me to relive the experience of either creating that dish at home, the joy of sharing a meal with friends, a successful wine dinner or simply beautiful raw ingredients. In short, they are snippets of memories that make me happy. Initially going through those pictures was a sort of therapy for me after my son Eli left for college.”

Her first food to ever paint was cheese. She says, “When I was in my phase of painting wine glasses, I painted a lot of cheese. Which meant, I was eating a lot of cheese, which brought me joy!”

The most challenging food you ever painted, artichokes. “Artichokes are particularly interesting subject matter, they look so different on the inside than they do on the outside. Much like their flavor, their beauty lies in their intricate  simplicity.”

Lara would like to continue to create epicurean art based on her experiences but hopes to include commissions of favorite meals that others have shared with friends and family, knowing true foodies have hundreds of pictures on their phone that are just waiting to be explored.

Lara recently retired from a career in the wine business, where she did hundreds if not thousands of wine tastings, wine dinners, seminars, and classes. She now enjoys working in her studio, volunteering with various community organizations, spending time with friends that usually revolves around food, cooking with her husband, and entertaining her three rescue dogs, who inevitably beg from the table.

So where does Lara love to eat around town? “It’s important to me to support locally owned restaurants here. A couple of my favorite dishes are oysters at Sea Salt, cioppino at Mazzara‘s, the meatball sub at Stanlieos, avocado toast at Good Company Café, green bean burrito at Bandito Burrito, and sushi with martinis at Surin.”

Her favorite meal of all time is Alpine Cheese Fondue and steamed artichokes with lemon butter. “I’ve had the same birthday meal my entire life, it’s an odd one, and those that know me could recite it off the top of their heads,” she laughs. “However, my favorite place for a meal in the world has to be La Crepe Nanou in New Orleansit’s always perfectly satisfying.”

Crystal didn’t always know she would walk the path of hospitality, let alone own such a beautiful restaurant in her hometown. After graduating from The University of Alabama, she followed her curiosity to New York City, where a long-standing love for food became a passion. “When I was in my teens, my Dad mentioned that he could see me owning a restaurant one day. I found it somewhat odd at the time, but it was always something that would replay in my mind. From childhood games of “restaurant” to asking for caviar on grocery runs, the signs were always there,” Crystal recalls.

In Manhattan, she left a successful career in the Wall Street area after the 2008 crash to take a leap into the world of food, and earned her Culinary Arts degree from The French Culinary Institute while working in some of the city’s bustling restaurants. “I was interested in focusing on a career that allowed me to be creative and also incorporate my interests in culinary,” says Crystal. “Culinary school was the first time that school had ever come easily to me. I was a little sponge,” she explains. Crystal recalls that while her training was trying at times, she created lifelong bonds and gained knowledge from her instructors that would prepare her for her future as a chef and restaurant owner.

Upon completing culinary school, her journey then led to Atlanta, where she refined her skills at acclaimed spots like Craft Atlanta, The St. Regis Hotel, and Buttermilk Kitchen. With experience in every corner of the industry, Crystal returned home to Marshall County to bring her vision to life. Old Town Stock House was born—a place where her love for hospitality and thoughtfully crafted cuisine comes full circle.

if you’ve visited Old Town Stock House you cant help but notice the positive, welcoming energy from staff all throughout the restaurant. It isn’t just about the food for Crystal. “In most restaurants, it is common for there to be a divide between the front and the back of the house. I have made it my goal to bridge the gap between the two teams and try to get them to have mutual respect for one another, she explains. This purposeful, team oriented mindset is part of what makes Old Town so memorable. It is apparent that the staff love their jobs and genuinely care about the guest experience as a whole.

From drinks, to appetizers, to entrees and desserts, no detail is spared in the Old Town Stock House kitchen and dining room. Crystal and her staff have experimented and carefully curated seasonal menus to keep the palate wanting more. Visually stunning cocktails dress your table as you wait on your appetizer, and course after course it just keeps getting better.

For an appetizer, the oysters with house made mignonette are a true delight,  and the brussels sprout salad with apple cider reduction is perfectly plated to entice the senses before your entree. Crystal says “I always like to build a good salad, although I love cooking just about anything I suppose.” It is evident that she has a passion for salad, as every season brings new and colorful salads to the Old Town Stock House menu.

Sourcing food from local farmers is something that Old Town prides its self on.  “Working with locally grown produce makes a big difference in the overall quality of the dish,” says Crystal. “We currenly work with Short Creek Homestead, 4G & Swimming Buck Farms. The organic methods that they use and heirloom varietals that they focus on add so much flavor to our dishes.”

There is really no wrong choice when it comes to choosing an entree crafted by Crystal and her team, but it could be argued that no fine dining is complete without a filet. Accompanied by a gorgeous, rich side of potato gratin, seasonal vegetables and drizzled with red wine reduction, this is a steak dish to indulge in.  For the final course, the revolving list of desserts are true works of art perfectly executed to complete the experience.

Chef Crystal Mckone has masterfully elevated the culinary experience in the quaint town of Guntersville, Alabama. INGREDIENTS

• 3 oz goat cheese

• Fresh arugula

• ¼ cup caramelized onions

• 1 pear, thinly sliced

• Honey, to taste

• Butter for toasting the bread

• Rotisserie chicken breast thinly sliced

• Sourdough bread, buttered (optional)

INSTRUCTIONS

Spread goat cheese on one side of the bread. Top the cheese with arugula, caramelized onions, sliced pears and chicken breast. Drizzle with honey. Top with remaining slice of sourdough bread. Use a griddle or panini press to heat the sandwich.

INGREDIENTS

• 1 grilled chicken breast

• 2 slices pepper jack cheese

• 2 slices cooked bacon

• 1 tbsp fruit jam (fig, raspberry, or jalapeño recommended)

• A handful of fresh arugula

• 3–4 cherry tomatoes (halved)

• 1 tbsp garlic aioli

• 1 brioche bun (toasted)

INSTRUCTIONS

Lightly butter the inside of the bun and toast in a skil let or oven until golden brown. Spread a layer of garlic aioli on the bottom bun. Add the sliced grilled chicken breast. Place the pepper jack cheese over the hot chicken to slightly melt it. Layer on the crispy bacon slices. Add halved cherry tomatoes and a small handful of arugula. Spread the jam on the top bun. Enjoy!

Grilled Chicken Sandwich

INGREDIENTS

• French bread loaf, halved lengthwise

• 2 cups cherry tomatoes

• 2 garlic cloves, minced

• ¼ cup olive oil

• 1 tsp thyme or rosemary

• Salt, pepper, chili flakes (optional)

• 8 oz fresh mozzarella, sliced

• 1 cup arugula

• 2–4 tbsp pesto (thinned with olive oil)

• Balsamic glaze

• Optional: 4 slices prosciutto

• Fresh basil

INSTRUCTIONS

Toss cherry tomatoes with olive oil, garlic, herbs, salt, and pepper. Roast at 375°F for 20–25 minutes until soft and caramelized. Brush bread with olive oil. Toast in the oven at 375°F for 5–7 minutes until crisp. Layer mozzarella slices on the toasted bread. Add fresh basil. Return to the oven for 3–5 minutes, just until melted. Optional: Top with roasted tomatoes, arugula, and prosciutto (if using). Drizzle with pesto and balsamic glaze.

Roasted Tomato & Mozzarella Caprese French Bread Savory Roast Beef with Horseradish Cream

INGREDIENTS

• 2 slices crusty bread (sourdough, ciabatta, French bread)

• 6 oz roast beef

• 2 slices provolone cheese

• 2 tbsp butter (for toasting)

• 2 ½ tbsp mayonnaise

• 1 tbsp horseradish sauce

• 1 tsp Dijon mustard

• Arugula

• Cherry tomato

• Caramelized onions

INSTRUCTIONS

Toast the bread. Butter one side of each slice and toast in a skillet until golden. Heat roast beef briefly in a pan. To make the spread, mix mayo, horseradish sauce, and Dijon. Spread on the toasted bread. Layer roast beef, cheese, and broil briefly to melt. Add arugula, tomato, and caramelized onions if using. Top with the second slice of bread.

Fall is here and a great time to settle down with a delicious bowl of soup.

ingredients:

• 1/2 cup extra virgin olive oil

• 1 large onion diced

• 2 medium carrots diced

• 2 celery ribs diced

• 4 cloves garlic minced

• 1 15-ounce can cannellini beans drained

• 1 15-ounce can lima beans

• 1 bunch kale stems discarded and rough chopped

• 8 sprigs fresh thyme or 2 teaspoons dried thyme

• 1 14-ounce can plum tomatoes hand crushed

• 8 cups low sodium vegetable stock plus more if needed to thin

• 3 medium Yukon Gold potatoes cubed

• 1/2 cup flat leaf Italian parsley minced

• salt and pepper to taste

directions:

Step 1. Heat a large heavy pot or Dutch oven to medium-low add extra virgin olive oil. Add onion, celery, and carrots. Sprinkle with salt and cook until softened (about 7-10 minutes).

Step 2. Once the veggies are soft add the garlic and cook until fragrant (2-3 minutes) then add the tomatoes, beans, kale, thyme and vegetable stock. Bring to a boil.

Step 3. Once boiling, turn the heat down and simmer for 1 hour with the lid partially covered.

Step 4. Taste test and season with more salt and pepper if needed. Add the potatoes and bring the heat back up to a boil then lower it to a simmer. Simmer until the potatoes are for tender (20 minutes or less).

Step 5. Bring large stock pot of water to a boil. Add 1 tsp salt. Add 8-16 oz package of pasta, I like ditalini for minestrone. Cook according to package and then strain. Set aside.

Step 6. Taste test the soup once more and make final adjustments to salt and pepper. For a thicker soup feel free to mash some of the beans and potatoes with a wooden spoon.

Step 7. Before serving, add a scoop of pasta to your soup bowl. Top with fresh parsley and parmesan cheese and a drizzle of high-quality extra virgin olive oil. Serve the soup with crusty bread. Enjoy! And remember it is even better the next day.
