Oh, Man!

We’re excited about this issue! First, it features our annual Men of Westport - congratulations gentlemen! Second, it’s our 5th anniversary!

Yes, five years ago today the first issue of Westport Lifestyle Magazine found its way into your mailbox. 60 (!) issues later, it’s still going strong! You can read about some of our highlights in the WLM journey.

The quintessential Man of Westport, Paul Newman, died 15 years ago but lives on with Newman’s Own, headquartered on Post Road. Read about how he created it, how its success surprised him, and how his daughter, Nell, played a pivotal role in it.

Announcing our 2023 Men of Westport! You nominated them and we couldn’t agree more with your selection - each man is a pillar of the community, creating change, creating fun, and an all-around great guy.

Another great guy is Chef Damon Sawyer. He’s shaking things up in Bridgeport with his popular new restaurant, 29 Markle Ct.

Did you know that Westporter Winston Allen made historic strides on Wall Street, enabling black businesses to exist? It’s a fascinating and inspiring story you’ll want to know more about.

We’ve always been curious about endurance athletes - what is it like to be in one of the world’s most challenging races? We asked Jean Paul Desrosiers of Sherpa Fit and Saul Zion of Zion Physical Therapy, to share their experiences.

If you prefer to drive rather than run/hike/swim/bike, you can read up on SpeedSport Tuning, a boutique “auto shop” for Porsches and high-end cars. Our panel of guys weigh in with where to go and what to drink, and pssst… we’re divulging Paul Newman’s recipe for his famous salad dressing…

Lastly, how we try to define “Westport lifestyle.”

June is busting out all over - get out there and enjoy it!

CLOCHETTE Bakery

My little bakery business sprang from a lifelong passion for both the deliciousness of well made baked goods and a fascination for the science behind the process. In 2011, armed with a brand new copy of Chad Robertson’s  Tartine,  l immersed myself in the entirely new, yet surprisingly ancient art of sourdough baking. That was the springboard for what is CLOCHETTE, a cottage bakery offering an ever expanding menu of artisan bread and pastry. clochettebakery@gmail.com

HAPPY 5TH ANNIVERSARY WESTPORT LIFESTYLE MAGAZINE!

Since our first 36-page issue in June 2018, we’ve watched it grow steadily through some unprecedented times.

It reminds me of what Paul Newman said about his “salad king” (vinaigrette), “The spunky little bugger gathered itself up, it welded on its knuckles, and it started slugging. It kicked the bejeezus out of all available contenders.”

We owe this to the fine folks of Westport and Weston. You can’t throw a rock around here without injuring someone with a fascinating story.

To talk about everyone who’s been in WLM would take another five years. So we’ll super-skim some of the highlights

Let’s start with Michael Bolton, a truly gracious celebrity who toughed it out until well into his thirties before becoming wildly successful.

He welcomed us into his home. We ate lunch at his dining room table, amid his endless trophies and awards. During our interview and photo shoot, he asked if we wanted to listen to his latest song. He sat at his piano while we draped ourselves around his “music room” and listened to the pop icon’s latest drop.

While we were quietly wondering how to best get a photo of ourselves with him, he asked his assistant, “Would you mind taking a photo of all of us?” Delighted, we crowded

around him and “allowed” her to photograph us with one of the most famous stars in music history.

Martha Stewart, the OG influencer! We “got” her fresh off of a brilliant and gorgeous spread in Harper’s Bazaar.

Then Christian Siriano moved to town. We toured his new home and viewed his boyfriend, Kyle’s, inaugural pieces for his clothing line, Future Lovers of Tomorrow

At that point, he had hinted at a store in Westport, a store with other local “vendors” (code word for purveyors of gorgeous high-end wares, including jewelry and art.)

Now we’ve enjoyed several events at his venue, The Collective West. We marvel at his generosity, inclusiveness, and surprisingly affordable line of denim.

Now Shonda Rhimes! Okay, first: thank you, Shonda, for moving to Westport. Second: thank you for absolutely everything else in the world you’ve done. Not only has Shonda created multiple bingeable shows (please refer to our May issue) but also created ShondaLand.com , wrote a bestselling memoir, is a spokesmodel for St. John, is… you know what? It’s all in the May issue.

Thank you, Westport and Weston! We couldn’t do it without you! Seriously. There’s no way.

“Working with Imke was such a gift. Not only is she deeply knowledgeable about Westport and neighboring towns, but Imke had also moved from NYC to Westport. Lots of common ground, very relatable, so warm and authentic. Imke’s expertise in fielding our questions and her helpful approach made us immediately trust that she truly had our best interests in mind. Imke was available anytime, either in person, via email or by phone. She has a great eye for detail, both in the aesthetics of the home as well as the financial details of the transaction. We love our home and settled in so quickly, which we attribute to the great support from Imke throughout the process.“ - Laura

MEN OF WESTPORT

Each June we task ourselves with narrowing down the fabulous men in Westport and Weston and focusing on a handful who impress us with their creativity and commitment, who bring a certain panache to our community, and who have diverse and unique interests.

This is never easy.

Especially this year, because we threw it out to our readers to nominate their favorites and, well, there are a lot. Bad news is, we couldn’t feature them all. Good news is, we can always feature them next year, or the year after that, or the year after that….

WLM: You’ve helped market some big names in music - Alicia Keys, Notorious BIG, Whitney Houston. What is one of your favorite initiatives?

JN: “There is one promotional tour that I remember like it was yesterday because this artist is still very relevant in our culture today: Alicia Keys. She had been around for a couple years, however, no one at the label could figure out how to get her record on the air waves  - this was before the digital streaming business.

“I decided to select five markets that we felt would understand Alicia, her music and her vibe. Alicia lit the stages on fire. Her music vibe sparked an entire organic soul movement in these towns and I’m proud to say she is still creating hits 20 years later.”

WLM: You begin every morning by giving thanks and asking for the acceptance of new ideas and challenges. What compelled you to start doing this?

JN: “At a young age I was taught that life can be extremely challenging. I realized that I could either be reactive or proactive in my approach to dealing with these challenges.”

WLM: Aside from friends and family, what is one thing you value?

JN: “Individuals who have the courage to be happy daily no matter what life has thrown at them.”

JEFFREY SELDEN

-Managing Partner of Marcia Selden Catering

-Former Board Member, Event Committee Member, Active Volunteer for Pink Aid

-President of Full Court Peace

WLM: Marcia Selden is one of the most popular caterers around NYC. Yet you exude a wonderful sense of humor and charm. We all know catering is a stressful business, so how do you manage to keep it light-hearted?

JS: “I get along with everyone and nothing seems to bother me. My wife says I am ‘unflappable.’ It’s ingrained in my personality to be calm and cool; and translates to the team I work with and my client interactions.”

WLM: You worked with Elton John as his butler while at the St. Regis Hotel, and you were Julia Child’s teaching assistant while attending BU. Please divulge a story about each of them.

JS: “My favorite part of working with Elton was unpacking and organizing the dozens of suitcases of clothing and eyeglasses that he had for his tours! I got to see his clothing and costumes before everyone else which I found so cool. He also kickstarted my love of eyeglasses and gave me a pair of his which I still have. Imagine having a pair of Elton John’s glasses?!

“For Julia – working with her directly and her husband Paul was a treasure. One of my funniest moments with her was her training me on how to present a roasted goose. Feel free to stop me at a cocktail party and ask about ‘the crotch of the goose.’” marciaselden.com

DAN WOOG

-Blogger and Community Builder

-Co-founder of the Staples GayStraight Alliance

-Author of  Jocks and Jocks 2

-Former Staples Soccer Coach

WLM: You wrote a number of books, including a series on male high school athletes. These were national bestsellers and are credited with “changing the face of athletics forever.” But you’re best known, now, for your popular blog 06880DanWoog.com.

What are the biggest changes you’ve seen in Westport since you started 06880 in 2009?

DW: “COVID brought a whole new group of people to Westport – all of them, it seems, from Manhattan and Brooklyn. They came here for all the right reasons – the schools, the amenities, the vibe of the town – and they are very eager to make it their home.

“They are young, smart, energetic, creative, and fun. It’s the 2020s version of the 1950s, when my parents moved here and began making their mark on the place. It’s another exciting time, for sure.”

WLM: What are one or two of your favorite posts and why?

DW: “Hah! I can’t pick one or two out of the 15,000 plus. So I’d have to say: anything that shines a light on an overlooked, unknown, or important aspect of Westport; any post that moves someone to action, or any story that causes someone to say, ‘Holy s---! I didn’t know that!’”

WLM: Owning a business in Westport for almost 50 years is a big accomplishment. What made you decide to become a hairdresser?

TS: “I grew up the oldest of three boys all in one bedroom on the first floor of our Italian family home. School was not for me, I could barely read and write and struggled terribly. I left school at 16 to become a hairdresser. I was lucky to have found something I love to do. That’s why I am still doing it.

“I knew Westport was special [when I opened Greg & Tony] and I still feel that way. Westport draws you in as a member of its community. I have been fortunate to experience and be a part of it over the years.”

WLM: Are there any hairstyles in the last 45 years that you particularly like or dislike?

TS: “I love a layered bob and a short, sculpted cut. Nothing better than when a client gives me artistic freedom after consultation.”

WLM: Rumor has it you’re responsible for Christopher Atkins famous ‘do in Blue Lagoon. How did that happen?

TS: “Ahhh rumor is wrong! I’ve got some notables but that was not one. Pretty sure that was Phil aka Philip. Phil and I started in Westport together at Charles of the Ritz on Main Street [currently Rye Ridge] in 1960.” Editor’s note: Perhaps not Chris, but he did ‘do Bernadette Peters, Lucie Arnaz, and Harry Reasoner, plus all of the actors, actresses, and wigs for the Westport Country Playhouse.

WLM: What are the WDA’s responsibilities?

MC: “As president, I work closely with the merchants and business owners of downtown to improve the commerce and culture of downtown Westport for the benefit of our community. We do this through our events, next major one being the 50th Fine Arts

Festival, which helps draw residents and people from surrounding areas to downtown Westport.

“We also fundraise to take care of the maintenance and beautification of downtown with flowers and hanging baskets in the spring, summer, and fall, and holiday trees and lights in the winter.”

WLM: You want more attractions to keep people downtown - like an ice rink on Veterans Green. Any other ideas?

MC: “I love the idea of putting an ice rink on Veteran Green. I think the plans the Downtown Planning and Implementation Committee (DPIC) are putting together to reinvent the waterfront with the Parker Harding renovation and adding more public green space downtown are incredible. I’d love to one day shut down Main Street for a pickleball tournament. Maybe one day!”

SPEEDSPORT TUNING SPECIALIZES IN FANTASY CARS

BRYAN LAGAS & SPEEDSPORT TUNING

Growing up, Bryan Lagas was always fascinated by cars. His dad was a drag racer and his two older brothers, who both caught the auto bug young, replaced the engine in a 1966 Cadillac and restored Volkswagens when they were teens.

“Everybody was tinkering all the time,” Bryan says of the family passion. “Going fast, loud engines, all of that. I’ve always loved cars.”

So it’s no wonder that he finds himself the owner of Speedsport Tuning (SST), a mecca for all things automotive that’s been drawing collectors and racing aficionados from across the country for decades.

It was nearly 30 years ago that Larry Prentiss opened the first SST, a modest performance shop lovingly tending to a fleet of Porsches out of a few bays in Norwalk. SST was small, but it had a big reputation and quickly drew the talents of top Porsche technician Spencer Cox.

After buying the company, Cox moved it to Danbury in 2005, where he and his team expanded to other fine European-made cars, while offering the specialized service needed for the burgeoning local Porsche Club. In the last nine years, SST clients have racked up more than 330 podiums and 220 wins making it the winningest Porsche Club of America competition shop in the Northeast.

In 2015, Bryan sold his own respected European service facility in Colorado, and coaxed back to his home state to become general manager of SST.

By 2019, he and his team had doubled the size of the business. When Cox, the master mechanic who had become a friend and colleague, passed away later that year, Bryan took over the company as the new owner.

Bryan studied chassis fabrication and custom bodywork in Wyoming after high school to add to his mechanical knowledge, with dreams of building hot rods and custom cars. But his first job found him working with Porsche, having an early appreciation for the precision engineering and quality of German-made cars.

“It’s the materials used and the engineering which ultimately equates to performance,” he explains.

“German cars are built for drivers, people who really appreciate cars.”

Today, SST welcomes all sorts of luxury, racing, and premiere brands – from Audi, BMW and Aston Martins to Lamborghini, Land Rover and Maseratis. One of the largest, individually owned Porsche facilities in the country, SST has gained a following with owners who trust them with some of the rarest and most unique cars in the world.

Each of SST’s four departments – motorsport, vintage, Porsche service, and European service – includes seasoned professionals. Some technicians have specialized in Porsches for 40 years, Bryan notes.

Trust is a hot commodity among collectors. Those investing millions to purchase a vintage rarity want the

work done by the best technicians they can find.

While they’ve diversified, SST’s vintage department specializes in four cam Porsche engines from 1955 to 1962, a Golden age for many enthusiasts.

“There are a very select few that own these vehicles and often people who own one, own several. It adds value to a car to have the best service. But we can just change spark plugs, too,” he chuckles.

On the racing side of things, SST, which also has operations in Florida, is the facility of choice for racers up and down the East Coast, including those hugging the curves at Connecticut’s Lime Rock Park.

The pandemic years were a tense time for SST, which shut down its motorsports department and dialed back vintage for a while. Service slowed a

little, but some company-wide creativity kept the doors open.

Now the future of specialized service looks rosy, as collectible cars have become one of the top five investment choices, Bryan says. In turn, he invests in new technology and training to make sure his technicians are ready to provide the highest level of service.

“They’re up there with artwork,” he says of the increasing value of vintage cars. “It’s such a good market.”

SST is staying ahead of trends by expanding into the EV market and offering high quality Tesla service.

“There’s a massive need for reputable technicians for electric cars,” he predicts. “That’s our next move.”

Saul of Zion Physical Therapy and Jean of Sherpa Fit Share Their Stories

MAN VS. ULTRA ENDURANCE HARDCORE MEGA RACES

Saul Zion, owner of Zion Physical Therapy, and Jean Paul Desrosiers, owner of Sherpa Fitness Training, are endurance athletes. Between the two of them, they’ve tackled almost every conceivable race appealing to über-fit folk. And, with countless hours of hero training, come stories.

Here are two (three?) great ones.

SAUL’S STORY

Saul had just met the woman of his dreams. Problem being, she worked crazy long hours as a lawyer and was training for a half Ironman, so he rarely saw her. Upon completing said half Ironman, she signed up for the full Ironman: 2.4 mile swim, 112 mile bike ride, and 26.2 mile run.

So he signed up for a 10-month training program with her and… the coaches told him not to do it, claiming, “You’ll ruin the vibe of the team or get injured.” Which, of course, only made him more determined.

With their team of 40+, they worked out several hours each weekday - running, biking, swimming. On Saturdays and Sundays they trained 8-10 hours each day, for example a one-hour team swim, four-hour bike ride, and onehour run. The group became close, chatting through long bike rides and commiserating after tough workouts.

On icy cold days the team focused on intense routines with smaller groups. “One person would have a tire around their waist and run up a steep hill. They had to run in front of us, then run back. We all encouraged them.” They’d have snowshoe races to both “push their bodies to the extreme” and build mental strength.

The team helped in other ways, such as offering moral support and advice on overcoming hurdles.

But the race is ultimately “a solo pursuit.” Demanding exercises like the tire run are designed to “break you down” both physically and mentally. The taxing of the spirit is equal to that of the body and must be strengthened alongside it. Saul cites the “demons and challenges that come up” over the long course of exertion that “forces the athlete to deal with all kinds of limitations and breakdowns ahead of the race.”

Limitations and breakdowns such as slicing open his foot three weeks before the race. While visiting friends in Westport, he stepped onto a sharp object in Compo. The laceration required seven stitches.

The doctor required him to stay off his feet and advised him to not participate in the race even though the stitches had been removed a few days before the Ironman.

But few are more determined to succeed than one who has trained for ten months. So he taped up his foot, tugged on his swimsuit, and tore into the choppy waters, heralding his induction into the world as a bona fide endurance athlete.

Of the experience, Saul says, “the strength and fortitude built during training carried me through this experience and has also given me empathy for my patients who are endurance athletes, or athletes of any kind, that are desperate to return to their sport after injury.”

Since then, “I’ve gone back to the experience of training for and racing Ironman when I’ve been tested and challenged in other areas of my life. This experience also brings a unique perspective to my practice as a physical therapist, particularly treating athletes."

As for the race, both Saul and his wife completed within their goal time, under 14 hours.

“Being connected to the endurance world is amazing. We all support each other,” Saul smiles. “I’m glad I did it for that reason.”

JEAN’S STORY

The Marathon des Sables is seven marathons over six days (yes, that means two in one day), on 156 miles of the Sahara desert's relentlessly hot and unforgiving terrain. Sand storms, no shade, temperatures hitting 114 degrees, carrying everything they need for survival on their backs.

In April 2014 Jean flew to the Sahara to join 1,100 other mega runners at the starting line.

Every morning for six days (and twice on the fourth day) he covered 20+ mile runs on soft, blazing sand, with every bit of his luggage and sustenance strapped on his back: “7 pairs of socks, 22,000 calories [dehydrated food], sleeping bag, tin cup for cooking, 1 extra short, 1 extra shirt.”

Every night he slept in a “tent”; little more than a draped tarp to shield the sun.

Every day, runners dropped out.

Running became impossible at points and athletes were forced to slow down and hike.

All clothes and sustenance for 7 marathons over 6 days.

A marine and veteran of numerous primal quests and ultra-marathons, Jean had endured some tough stuff. His years of training for elite endurance challenges involving almost every conceivable physicality helped prime him for the intensity of this desert quest.

The fall prior, Jean hit the treadmill wearing a backpack filled with 28 pounds of rock salt. During the winter he ran in the snow to simulate the Sahara’s tricky topography.

To simulate the desert during cold Westport months, he jacked up the heat to 90 degrees in a training room and sweated it out on a stationary bike.

As for the emotional toll, “You can’t prepare fully for the reality of knowing you have to survive with just what you’ve got.” But because he trains people for races and challenges, he  considered events like this a test “to relate to what a new experience is like again.”

His experience included extreme fatigue, weight loss, running while ill, and brutally blistered feet. Loads of ibuprofen helped, as did emails from home, which MDS officials printed and distributed in the evenings.

ATHLETE LIFE | FITNESS

Running/hiking a marathon in the Marathon des Sables.

On the final day, Jean struggled through the finish line, delighted to learn he completed the race at #303.

The MDS went swimmingly, by all accounts. Not so with every challenge.

Two years later Jean arrived in South America for the Patagonia Expedition Race, a fully unsupported trek across remote, largely untouched regions of the country. The site warns athletes of a “hostile, and even sometimes unpredictable, climate, which complements the difficult, wild character of Patagonia’s extreme southern tip.”

Athletes compete in teams of four and finish together, with nothing but a map and a compass to guide them. The adventure begins with a marathon, then biking on 300K of gravel mountain, and 20K kayak in glacial waters.

The team started strong but unraveled given the reality of a harrowing challenge. By the third day, teammates voiced doubt and talk turned negative. As team captain, Jean spoke up, “I said to them, ‘This negative talk isn’t going to help anyone. The reason why you're here is why you signed up! If it was easy you wouldn’t be here.”

But the country had other plans. “Five days in, with only eight hours of sleep, we were halfway across Chile. We were hiking through land not touched by humans in 10,000 years.” A “50year storm” hit, and it took his team 18 hours to hike only 10K. Two of his teammates had no dry clothes, another teammate had been limping for four days, and they had, collectively, only 2000 calories remaining.

Jean made the call to quit the race. The storm was so terrible it took the Chilean army 36 hours to rescue them.

They didn’t complete the race, but he’s fine with that. For him it’s about “being ultra-curious, testing something, chasing something - the next personal frontier.”

“The worst part about quitting is if it's because you didn’t prepare,” he adds. “Patagonia was beyond our control.”

“It’s not a carnival. It’s hell.” zionphysicaltherapy.com sherpafit.com

THE MOVIE STAR’S SALAD KING

His oldest daughter, Nell, says the recipe was based on a dressing served at Madame Romaine de Lyons bistro, one of “Pops’” favorite restaurants. Madame was considered "the Queen of Omelette Makers.” In fact, her cookbook, The Art of Cooking Omelettes, was in Julia Child’s personal collection.

In addition to omelettes, Madame served “salad and wine.”

HOW PAUL NEWMAN AND HIS DAUGHTER, NELL, CHANGED LIVES AND GROCERY

SHOPPING

“I want to acknowledge luck; the chance and benevolence of it in my life, and the brutality of it in the lives of others.” - Paul Newman in 1994.

Westporter Paul Newman, who died 15 years ago, was one of Hollywood’s most celebrated (and dashing) actors, starring in iconic films such as The Sting, The Color of Money, and Cool Hand Luke.

He understood how fortune gifted him the means for celebrity and wealth, and he never took these blessings for granted. Though his legacy extends far beyond films (husband to Oscarwinner Joanne Woodward, father of six, race car driver, philanthropist), he knew what people wanted of him, once joking “People expect to see that 35-foot image that they see projected on a screen. Bigger than life. Articulate. Decisive. Scrappy. Sensual .”

But behind his sensuality, his glamour, his legend, was his greatest stroke of luck: his salad dressing.

At the height of his fame, around 1980, Paul and his friend A.E. Hotchner mixed a large batch (with an oar, according to rumor) of salad dressing which they bottled and gifted to close friends.

Madame also loved celebrities and the walls of her bistro were lined with photos of famous patrons, including Paul and Joanne.

His (her?) dressing contains olive oil, red wine vinegar, “a heavy dose of Dijon mustard, more salt than you’d think, and pepper,” says Nell. The secret ingredient? Celery seeds. “Madame didn’t use them in hers. I think one day there wasn’t any salt in our house except celery salt so Pop’s used that. Then it became the signature spice,” Nell muses. “I don’t think I’ve ever told anyone that."

In 1982, Paul stood in a room full of empty (“dirty” according to A.E.) wine bottles and had an epiphany. “An idea arised (sic) that would permit me to use the pulpit of my achievement, not only for the betterment of humankind, but also to recycle the bottles.”

He continued, “We would bring to the beleaguered of the world something they longed for more than hope, more than redemption, more even than immortality: salad dressing.”

Thus, “salad king” was born: Newman’s Own Olive Oil and Vinegar Salad Dressing.

Paul convinced his friend Stew Leonard to buy 10,000 cases. Stew agreed, cautioning Paul that celebrity stuff typically flopped and to prep for a big loss.

Stew was right. It floundered. If it ever made money, Paul vowed, he would give it all away.

Then, as luck would have it, shoppers threw every bottle into their carts and grocery stores clamored for more.

This simple bottle of vinaigrette made millions and teased in the “Newman’s Own (NO) empire.” Paul gave every penny of profit, and the company still does, to those whose dice rolled in the wrong direction.

Salad dressing was soon followed by pasta sauce, lemonade, and frozen pizza. Their swift ascendancy to fame was attributed to a combination of “high quality ingredients you could find in your own kitchen” ( NewmansOwn.com), stand-out packaging both witty and irreverent, and corporate responsibility, of which NO is considered a vanguard. Oh - and every label featured Paul’s handsome blue eyes staring straight into the eyes of every delighted shopper.

The first of NO’s largesse was creating a camp for kids burdened with “catastrophic blood diseases.” Looking back, Paul admitted it seemed like “a lunatic idea.”

But it wasn’t. “Everyone rallied,” including the Yale medical team, swimming pool builders, and the king of Saudi Arabia. When The Hole in the Wall Camp (named for one of his most famous films, Butch Cassidy and the Sundance Kid )

opened on June 18, 1988, there were “so many volunteer counselors there wasn’t room to let them all in.”

By 1992, NO had given away $50 million.

In 1993, Nell, then 34 and the executive director of the Ventana Wilderness Sanctuary in CA, persuaded her dad to start an organic line of NO.

Nell grew up infatuated with birds, especially birds of prey. When she was 12, in 1971, she learned that peregrine falcons were extinct east of the Mississippi due to DDT. Concerned, she began learning more about pesticides on food crops, which eventually led to a passion for organic ingredients.

Sister Melissa dreamed up the idea for an American Gothic photo for the label featuring Nell and Paul, master-minding everything for the shoot, including making the costumes.

This label, with the NO trademark humor, reached near-icon status as Newman’s Own Organic (NOO) products morphed into household staples, licensed beneath the NO umbrella. Nell and her partner, Peter Meehan, started with organic pretzels which eventually became her Pops’ favorite snack. The line quickly grew to popcorn, coffee, tea, dog food and more.

The quality of the items, coupled with the celebrity endorsement, was pivotal in the mainstreaming of organic products. According to Nell, “I don’t like to toot my own horn, but the industry was grateful.”

By 2014, Newman's Own Organics had generated $50 million for charity through the royalties they paid to the foundation.

Today, Newman’s Own has, without publicity or fanfare, donated over $600 million to feed, heal, and bring joy to children’s lives. Its legendary altruism has inspired and motivated companies around the world to do the same.

However, Paul’s death in 2008, at age 83, brought some unexpected twists to his family's involvement with NO. Around 2014 Nell’s license to create NOO expired and was not renewed. In 2015, employees quietly removed her image from the labels, folding NOO items into the primary product line. Neither she nor his other daughters are associated with the company at this time.

But back in 1990, long before these controversies, Paul recounted a story about a professor at UConn who was a counselor at The Hole in the Wall Camp:

“One day he was with a boy, about eight years old, whose immune system began rejecting his own extremities, his hands, his feet, little by little.

“They were sitting on a rock by the lake because the boy wasn’t strong enough to go fishing, talking about God and whether there wasn’t one. The boy didn’t know much about God, but was fascinated with the Big Bang theory, in the expanding universe, forces balanced and finite, and that whatever energy you exert in one direction is what comes back from another.

“The counselor said he was glad this camp is different from all others because he got back a lot more than what he put into it. The boy thought about and said, ‘Well, maybe that’s God.’”

Paul paused, then remarked, “If that’s not God, it’s as close as I’d ever hope to get.”

In 1990, Joanne and their daughter Clea graduated from Sarah Lawrence College and Paul gave the commencement speech. His quotes, except otherwise noted, are from this speech.

Paul Newman’s Famous Salad Dressing

CLASSIC OIL & VINEGAR

Paul Newman’s original recipe, as told by oldest daughter Nell, and based on a recipe by famed chef Madame Romaine de Lyons.

ingredients:

• 16 ounces worth of virgin olive oil

• 3 to 4 ounces of red wine vinegar if you like it really tart, or balsamic if you like it sweeter. (Sometimes I blend the two)

• 2 to 3 tablespoons of Dijon mustard

• 2 teaspoons celery seeds

• Salt to taste, approximately 1 to 2 teaspoons (Pops’ recipe called for a tablespoon of salt, just for reference)

• 1 to 2 teaspoons pepper

directions:

1. Put vinegar, mustard, salt, and celery seeds in a large measuring cup and whisk until completely combined.

2. The 16 ounces of olive oil should be in a 32-ounce measuring cup, so you can slowly whisk the blended vinegar mix into the olive oil, whisking as you go.

3. Taste the dressing and adjust seasonings. This recipe will fit into one regular wine bottle.

4. Cork and keep unrefrigerated, shaking the heck out of it each time right before you put it on the salad, as it tends to separate.

To learn more about Paul Newman’s famous dressing and how it raised millions for children, read the article in this issue or visit NewmansOwn.com.

Editor’s note: As Madame instructed Paul, use way more than two teaspoons of dressing per salad.

Happiness is a New Restaurant 29 Markle Ct is Bringing It in Bridgeport
CHEF’S SELECTION | FOOD + BEVERAGE

Chef Damon, owner of 29 Markle.

Chef Damon Sawyer doesn’t just smile. He beams.

With good reason. He opened his first restaurant, 29 Markle Ct (29), this winter and it’s already exploded onto the restaurant scene.

I use the term “scene” loosely because it’s in Bridgeport and there’s not much in the way of a culinary “scene.” Which is one of the many things 29 has going for it. “It’s different than any other restaurant here,” Damon asserts.

Damon has been described as a trailblazer. Says a recent diner, “People will look back and say ‘this is when Bridgeport first developed a foodie scene.’” According to CTBites.com, “Damon Sawyer has rolled out a menu that’s like throwing down smooth lyrics over a sick beat.”

In only a few months 29 has attracted a spirited fan base that includes several well-known restaurateurs, one of whom lamented, “I’ve got to stop coming here. I shouldn’t like it so much.”

Their motto is “Always with love,” and everyone - from Damon, to the waitstaff, to the guy helping renovate their new addition - exudes it. From the stunning platings to the 5 Fingaz painting on the wall, there’s a lot o’ love going down.

Damon ticks off the ways in which he and his staff show love: how they interact with each other and with guests, how they treat vendors and, my personal favorite, not being late.

Mostly, though, they show love with their cooking.

“I want to open people’s ideas about what’s possible with food in Bridgeport,” Damon states. “I want dishes to be as traditional as possible with ingredients based on their culture.”

Take the Curried Chicken Dumpling & Okra Soup. “The dumplings are drawn from both Caribbean and east Indian influences. Curried chicken is a staple of Caribbean cuisine and most curry is a derivative of east Indian curry. Butternut squash was

seasonal at its conception and provides a great base for the dish.”

Or the Manmitas Black Rice and Crab Balls with pikliz, a Haitian condiment of pickled chili pepper and cabbage “Manmita means ‘heart,’” adds Damon. “…a universal symbol of love.” This dish is an homage to his partner, Wesley’s, Haitian family after they lost a relative.

His inventiveness and respect for the heritage of each dish are buoyed by the fresh produce and meats from local farmers.

(The space itself is in an auspicious venue. Markle Court is named after Tiny Markle, a wildly popular AM radio personality. AM radio, you may recall, used to be cool. He broadcast from a studio there until he died, at 60, in 1980. He was also considered a trailblazer and was heralded as a “giant in the city of Bridgeport.”)

Born and raised in Norwalk, the youngest of six kids, Damon announced one day that he was, now, a vegetarian. His parents, both from the “deep south” and

saddled with five other offspring, wished him Godspeed, good luck making all of those meals.

He began studying herbology and figured out how the hell to cook. Broccoli, tofu. Ramps and mushrooms he foraged in Ridgefield and Weston. “I was winging it,” he laughs. “My parents weren’t cooking that stuff.”

After school, he joined the Whole Foods seafood department and was quickly promoted to head. He soaked up the financial side, learning how to be margin-savvy and was named a Top 3 performer in the Northeast.

He left and, no longer a vegetarian, explored his carnivorous side by perfecting the art of smoked brisket and mac & cheese, which he sold from his home. “I got really good at it,” he admits.

A stint at the Bedford Post Inn taught him the French method of cooking and the cruciality of a good sauce, and he became very, very good at pasta.

Then he was chef at Win Win coffee shop in Pennsylvania, started a catering business for high-end parties, and turned down a job at the prestigious Eleven Madison

Park to open the popular The Steak Truck in Bridgeport.

Despite 29’s success, it’s a tough business. “You have to put out the perfect product or close to it because it could sink your business if you don’t,” he concedes. “Somedays you’re tired and you don’t want to cook.”

He lights up when talking about future plans though, including in-house farm dinners in June. “Local farmers will come and explain what you’re eating from their farms - even the chickens!” Then there’s an eight course pop-up dinner “for hard-core foodies” with celebrity Chef Ro, a Food Network Chopped champion and a Forbes magazine Overachiever Under Thirty.

Oh, and a documentary about what Damon’s done for the city of Bridgeport. Stuff like that

Before leaving, I ask him to tell me his best joke. He beams and says, “I don’t have a joke. I’m not really funny, I’m serious.”

Well, knock me over with a swizzle stick.

So I told him mine. Now he has a restaurant and a joke.

GUYS NIGHT OUT

Hey guys!

Looking for a place where you and your suds buds can throw a few back and yell at oversized TV screens? Where you can slap each other’s backs and safely discuss your favorite Real Housewives franchise without fear of judgment or reprisal?

Yes? No?

And What They’re Drinking

We’re clearly not experts on guy drinking, so we turned to Our Unofficial Panel of Guys Who Drink (OUPGWD) and asked: where goes the bros?

The answer is sort of surprising, and sort of not.

The swarthy stalwarts remain: The Black Duck and Southport’s The Horseshoe. While guys applaud the pints - “Beer so cold it could freeze

a wart. Why can’t everybody do this?” - one laments, “their amazing bathrooms - that’s sarcasm.” Votes are conclusive that these two bars are the most conducive to doing whatever it is guys do without spousal adornment.

Dunville’s, which doesn’t cast a wide net but maintains a clutch of fiercely loyal barflies, is also lauded for its “I can’t be bothered with anything but a cold beer” ambiance, and “go there for hard drinking.”

Regular guy’s nights, however, are largely for new residents. Many members of OUPGWD went to the Duck once a month or so when they first moved here, to bond with a crowd of like-minded men, but then came a maturation of their collective dude-id and they moved on to a calmer locale.

Now, most of OUPGWD value bars not for their rollicking bar scene but for their “Good ambiance, laid back crowd, and nice staff.”

One man admits, “I always love Little Pub and Marley’s [in Wilton]. And Hudson Malone, but at a table so anyone I see is

just a quick hello and a wave. Is that anti-social??” Well, no. I mean, you waved.

“The way I think about it is, I’m taking time out of my crazy schedule to spend time with somebody so I want to give them my undivided attention.”

Another says, “I do enjoy beers on the Metro North with other Westporters. The return trip, not in the AM of course.”

And what are they drinking?

“Spicy marg at Bartaco.”

“I mostly stopped drinking liquor because of the after-effects. 190 Post has Sapporo on tap with a samurai sword handle which was cool.”

“Bombay Sapphire, tonic, splash of grapefruit juice, anywhere.”

“Beer.”

“Tequila with lime and splash of soda wherever I go.”

“I once convinced myself I could drink as much vodka as I wanted to without repercussion, socially or otherwise.” (He was mistaken)

“Maker on the rocks with a splash of water.”

Desegregating Wall Street

In his memoir, I Pried Open Wall Street in 1962, Westport resident Winston Allen relates his pivotal role in desegregating Wall Street and becoming the first minority-owned independent broker-dealer firm in the history of the United States.

Before that, as a black teen living in Harlem, he had never been exposed to segregation until he traveled to Miami, wherein he had his first taste of racism.

His retelling of these experiences is powerful and important.

“Prior to the Federal Policy of the mid to late 1960s, few blacks held responsible positions in private industry. I faced seemingly insurmountable barriers, hurdles and obstacles when I dared to enter an entry-level position with an established and well-endowed Wall Street investment firm.

“I had just returned from Paris where I studied on a Fulbright Scholarship in 1961 at the Sorbonne in Paris. Instead of giving up, which is alien to my nature, I took matters into

my own hands and fought my way through the tightly slammed-shut Wall Street doors and became the first black person in the history of the United States to open a historic broker-dealer firm on Wall Street.

“I share my grueling but uplifting story that will inspire others, despite barriers, hurdles, and obstacles to pursue dreams that are considered by some to be ‘over the top.’ This book is my road map on how to escape the trap of institutional bias, by being relentlessly resourceful, creating and pursuing your own path and controlling your own destiny.

“I should reiterate that my life achievements did not always happen solely through my design and orchestration, but also through a multitude of good fortune, luck, and by encouraging people.

“Living in Harlem in the 1930’s and 1940’s was very different from what we think Harlem represents today. Of all the black neighborhoods in the US, Harlem where I grew up was the most unique and beautiful. I later learned

that when Harlem was first conceived and constructed in the 1890’s it became a symbol of elegance and distinction for wealthy whites, who enjoyed the deluxe life that Harlem offered. Contrary to popular perception Harlem was a luxury residential area in the late 1890’s. This area of newly constructed luxury residences resulted in an oversupply because of over-aggressive residential construction.

“The real estate overbuilding in the 1890’s, was an outgrowth of the prevailing view that the new subway system extending to upper Manhattan would make Harlem more accessible and lucrative. When overbuilding and thousands of vacant apartments came on the market at the same time it brought financial ruin to many developers, owners, landlords, and contractors. A decision was reluctantly made to start renting the deluxe empty apartments to black families. Landlords found that they could charge and collect traditionally higher rents from blacks because they were conditioned to pay more because of their rare chances of finding desirable housing. That’s why it was possible for me to grow up in a huge, beautiful seven-room apartment in a manned elevator building with my family in the 1930’s, 1940’s and 1950’s. I was surrounded by supporting relatives and friends. I lived this comfortable, protected life until I graduated from college.

“The first time I experienced segregation was when I was thirteen, and I traveled from New York to Florida, by train, in a sealed compartment in 1946. Before the porter left, I was told I was not allowed to exit the compartment and all of my meals would be served to me in my sleeping car compartment. The porter closed the curtains, covered the windows and instructed me not to be seen from outside of the window.  The porter then proceeded to exit the compartment and locked the door from the outside. When the train arrived in Washington, D.C., I did peek out the window and for the first time saw “WHITES ONLY” and “COLORED” signs.

“I did not understand the purpose of these signs or what the signs actually meant until I saw that people religiously obeyed these signs. Then I began to understand. Since this was my very first exposure to what was happening, I couldn’t believe my eyes.

“The way I observed from peeking through my window black people being treated, spoken to and stripped of any dignity was a shock for this 13-year-old boy that never experienced any of this. The more I observed, the angrier I became. Right then and there I made a vow to myself to never, ever allow anyone to treat me in the manner that I just witnessed. This train ride riveted my mind and remained with me to this day and developed me into the person I am.”

Winston’s residence is registered on the National Register of Historic Places by the U.S. Department of the Interior and officially designated as the Allen House.

There is interest in turning his book into a movie.

Memorable Ways to Celebrate The Father Figure in Your Life

What do you buy for the man who has everything? Perhaps an experience oriented around what dads value most— time together —is just what he needs. Fathers and father figures are invaluable in our lives. They help shape and mold us. They’re there for us and support us. If you haven’t already planned something special, take a look at our list of ideas and circle your favorites. If you have kids, let them join in the fun too!

Whether you decide to spend a day at home or enjoy a day on the town, these innovative celebration ideas will include fun for the whole family and make Dad feel loved. Whatever activity or surprise you land on to show your dad, husband, brother or father figure your appreciation for all they do, the most important thing is that you all get to spend some quality time together.

COOK SOMETHING ADVENTUROUS

If some of Dad’s role models include Gordon Ramsay and Bobby Flay, consider thinking outside the box and create a meal with something you wouldn’t usually go for like bison burgers or grilled octopus tentacles. Tackling a complex recipe may seem challenging but the memories and the meal will be worth it.

GO ON A BIKE RIDE

Find a local trail you haven’t tried before, load up the bikes and set out for a day of riding. Finish off the day with a nice meal out after all your hard work.

MAKE A TIME CAPSULE

Dig a hole in your backyard and have Dad help the kids gather items around the house (like a current newspaper or flyers) and put them in a waterproof bag.

WHAT IS THE WESTPORT LIFESTYLE?

Letter from the Editor

Earlier this month, I was delighted to be interviewed by Dan Woog for his 06880 podcast/vlog.

Can’t lie - I’m used to being on the other side of the interviewing table and now have a new appreciation for the subjects of my interrogations.

Among the questions he asked me was, “What is the Westport lifestyle?” A great question and, no doubt, one in which my sputtered response will underwhelm listeners everywhere.

But it’s a question that merits more thought and a more coherent response, because what is the Westport lifestyle now?

We live in an expensive, exclusive town on the beach. There is breathtaking wealth and breathtaking beauty, both people and places, at every turn. For this reason, it’s easy and convenient for outsiders - even some insiders - to define or dismiss us as aspirational.

I’d disagree with that, though we certainly live an elevated lifestyle.

But if a team of martians planted themselves on Main Street and forced me to decide, I’d say: Westport lifestyle is busy

We’re busy making Emmy-award winning TV shows and starring in Broadway shows.

We’re busy litigating high-profile cases and opening restaurants around the country.

We’re busy getting our kids out the door every morning and organizing group gifts for the bus drivers.

The number of gyms and sports alone is testament to the activity we seek and the energy we need to burn. Have you seen how many people hurl themselves into the Long Island Sound mid-winter? Or those who swim at sunrise, red buoys tethered to their midsections?

Sports keep us bustling, as do making sets for the high school and middle school musicals. We’re busy bristling plots of public grass with its related signage.

Oh, and shopping, cooking! How many grocery stores are we keeping in business? I don’t know, but I bet the people who are busy at DiscoverWestportCT.com can let me know.

We’re not busy mowing our own lawns, necessarily. And when our internet is down we may marvel at the inactivity required while waiting in the calling queue for service help.

I asked Chat GPT. It insists our “lifestyle is known for its quaint New England charm,” which doesn’t even make sense.

But in all fairness, it’s not an easy question and AI is hardly an expert on "life."
