Season of Flavors

Welcome to one of my favorite editions of the year— our annual Food + Wine issue.  Not only does it celebrate the creativity of chefs, mixologists and sommeliers in our community, but it also comes with one particular perk: our team gets to eat (and drink) everything after the photo shoots! I know, it’s a tough job, but someone has to do it.

From savory bites to sweet sips, this issue is sure to make your mouth water. Our cover story takes readers on a road trip to a romantic vineyard, the kind of place perfect for sipping wine and savoring food against a backdrop of rolling hills. Closer to home, we shine a spotlight on the brand-new Liberty Collective, a dynamic new dining destination and entertainment complex that is quickly becoming a favorite hangout spot for the community.

Since no October issue would be complete without a nod to Halloween, we’ve included a collection of festive cocktail recipes that are sure to impress at any gathering. And if you’re feeling inspired to try something new in the kitchen, The Learning Kitchen shares Thai recipes that balance bold spices with vibrant freshness.

Designed by Eli Hariton—runner-up on HGTV’s Design Star: Next Gen—the space is a getaway where competition meets camaraderie, chef-driven flavors meet courtside energy and the community discovers a new way to connect.

Behind the project are Mike and Heather Ewers, Liberty Township residents who had a dream for a family-friendly entertainment destination. First scouting larger markets, their hearts kept returning to their own backyard.

“The more we looked at it, demographics and competition, nobody’s really doing this in the suburbs,” says Mike. “And we thought Liberty is the best place to have the Collective flagship for the United States.”

That vision guided every decision: creating a place for connection—affordable, welcoming to all ages, and even pets, thanks to a designated outdoor area.

Inside, the Collective comes alive with flavor, and there’s something for every appetite—including a wine and bourbon lounge and a 30-tap self-pour beer wall.

“We wanted a variety,” Heather explains, “and we picked these restaurants out of 63 who applied.”

Kickstart your day with Caladesi Island Coffee Co.’s premium coffees, Collective Coolers and fresh pastries.

Rice Life brings the sizzle of teppanyaki and bold flavors of hibachi to each plate.

Bristol’s Burgers Beef and BBQ serves smashburgers, slow hickory-smoked barbecue and award-winning wings.

The honest flavors of Roberto & Miguel’s Handcrafted Mexican dishes are rooted in Guatemalan tradition, each dish created to share.

Ms. Lei Lei’s Crafted Chicken specializes in hand-breaded chicken with fries and jumbo rings, all made with care from scratch.

Save room for dessert from The District Creamery & Sweets, featuring hand-scooped ice cream and tasty goodies from local bakery LuLu’s Sweets Boutique.

For flexibility, the Collective doesn’t use traditional servers. Guests scan a QR code at their table to access menus, place orders and get a text when it’s ready—all on one tab, no matter how many restaurants a family samples from. Guests can also walk up and order directly from each restaurant. Seating spans patios, a deck and two indoor levels, giving guests great vantage points to catch the action—and free Wi-Fi at every table to stay connected.

But it’s more than just food and drink.

In the center of the complex, a 25-foot LED screen keeps the energy buzzing, complemented by 32 additional television screens, private event spaces and weekly live performances.

The fun continues outdoors with The Beach at Liberty Collective, featuring five sand volleyball courts, table tennis, cornhole and a wide green for games or gatherings.

Partnering with Ohio Valley Beach Volleyball founder Rob Long and Kerri Walsh Jennings’ p1440 Foundation, The Beach offers training, tournaments and pro-level matches.

The sand becomes a stage for soccer, dodgeball, yoga, flag football, hoop ball and even sandy pickleball, with leagues set to launch soon.

“You’ll be able to register your team or as a free agent on our website,” Heather adds.

The Collective also adapts with the seasons. In winter, the upstairs deck transforms into an enclosed space with stateof-the-art golf simulators for golf leagues and open play.

True to the Ewers’ vision—to do good—the Collective aims to partner with teams, local organizations and businesses to benefit the community through events and partnerships.

That sense of home fuels everything for the Ewers.

“We just wanted to make a place where people come together, meet with old friends and make new friends,” Mike shares.

Flavors of Asia

Bring the unique flavors of cultures from around the world to your table with the hands-on cooking classes available at The Learning Kitchen in West Chester. Learn by doing at your own personal cooking station as you follow the professional guidance of the area’s top chefs. Here, Chef Timmy Kirk shares his favorite recipes for Fresh Vegetable Spring Rolls and Pad Thai—two delightful dishes that take your tastebuds on a journey to the bold and fresh flavors of Thailand.

Pad Thai

SERVES 2

• 6 ounces (dry weight) Pad Thai rice noodles

• ¼ cup water (+ a little extra if needed)

• 4 teaspoons tamarind paste (half the amount if using tamarind concentrate)

• 4 teaspoons brown sugar

• 1 teaspoon molasses

• 3 Tablespoons fish sauce

• 2 medium eggs, beaten

• 1 shallot, julienned

• 10 medium raw shrimp, peeled and deveined

• 1 cup bean sprouts

• ½ cup grated carrots

• 2-3 green onions, julienned

• 2-3 Tablespoons crushed peanuts

• Pinch chili powder, optional

• 2 lime wedges

INSTRUCTIONS

1. Place noodles in a large bowl; cover with the hottest water from your tap.

2. Soak ~10 minutes until softened, but still pretty firm. Set aside.

3. In a bowl, combine water, tamarind paste, brown sugar and molasses into a sauce.

4. Whisk eggs in a separate bowl.

5. Heat oil in wok; cook egg until just set, remove and reserve.

6. Add more oil; stir-fry shallots 1 minute. Add shrimp; cook 1 minute per side.

7. Increase heat to high; add noodles, then sauce. Stir until boiling/steaming.

8. If noodles remain too firm, add a splash of water. When liquid mostly evaporates, add fish sauce and stir.

9. Add bean sprouts, carrot and green onion; stirfry 30 seconds.

10. Serve with garnishes of cilantro, peanuts, chili flakes and lime juice.

11. Enjoy paired with Clean Slate, a Riesling from Germany’s Mosel Valley.

Fresh Vegetable Spring Rolls

MAKES 8

• 8 round rice paper wrappers

• 4 ounces (dry weight) rice vermicelli noodles

• ½ cucumber, julienned

• ½ large carrot, julienned

• ½ cup red cabbage, julienned

• Fresh cilantro and/or mint

INSTRUCTIONS

1. Bring a pot of water to a boil, then turn off heat. Add noodles. Soak ~20 minutes until softened. Drain, rinse under cold water and toss with oil to prevent sticking.

2. Dip rice paper wrapper 3–5 seconds in a dish of warm water to soften. Place on a plastic-wrapped plate.

3. Add herbs and ½ cup veggies to bottom third of wrapper. Top with vermicelli.

4. Fold bottom edge tightly over filling, then fold in sides like a burrito. Roll gently forward until sealed.

5. Serve as an appetizer with Spicy Peanut Sauce.

Spicy

Peanut Sauce

• 1 Tablespoon finely chopped garlic

• ¼ cup smooth peanut butter

• 2 Tablespoons soy sauce

• 2 Tablespoons water

• 2 Tablespoons sugar

• ½ Tablespoon rice vinegar

• ½ Tablespoon hot chili oil, plus more to taste (optional)

• ¼ cup cilantro leaves, finely chopped

INSTRUCTIONS

Combine all except cilantro in a bowl and whisk until smooth. Add cilantro just before serving.

Do The Monster Mash With These Fall-Focused Cocktails Perfect For Halloween Festivities

TOASTED MALLOW

• 2 ounces cachaça (Brazilian sugar cane rum, silver rum can be substituted)

• 1 ounce Galliano liqueur

• 1/2 ounce lemon juice

• 1/2 ounce brown sugar & cinnamon syrup

• 2 tablespoons pumpkin puree

• fresh nutmeg

Combine all ingredients except for the nutmeg in a shaker tin. Add ice and shake vigorously until sufficiently chilled and blended. Strain through a mesh fine strainer into a martini glass or other decorative glassware without ice. Shave fresh nutmeg over the top as a garnish and enjoy!

PUMPKIN BRAIN PURÉE

• 1 1/2 ounces vodka

• 1 1/2 ounces chocolate liqueur

• 1/2 ounce Frangelico liqueur

• graham crackers

• marshmallows

Combine all ingredients except for the graham crackers and marshmallows in a shaker tin. Add ice and shake vigorously until sufficiently chilled and blended. Crush graham crackers in a plastic bag to make a fine powder. Coat half of a martini glass with your crushed graham crackers and strain your cocktail into the coated martini glass. Layer the top of the drink with marshmallows and toast with a crème brûlée torch. Enjoy!
