Lauren’s journey as a pastry chef began during her middle school days, a cherished memory she holds close. She recalls, “I took a Home Ec class and just fell in love with creating delicious food to share with friends and family.” Today, her favorite creations are beautiful wedding cakes adorned with her buttercream flowers, transforming each cake into an edible masterpiece.

We had the privilege of interviewing Silvia Edwards, a co-owner alongside her husband Luis Fidanza, whose passionate vision seeks to bring the community together with a touch of Argentina. As she shares, “Buenos Aires Café Galleria is inspired by the desire to share our culture and love of food with our surrounding Austin community.” With a homemade menu and rustic yet elegant decor, she worked with her team to bring the feel of downtown Buenos Aires to the Texas Hill Country.
At Buenos Aires Café Galleria, the commitment to authenticity is captured in their culinary philosophy, where local and organic ingredients meet Argentine cuts of beef. Do you find yourself eating on the run, or perusing “grab and go” offerings on the regular? Do you find yourself skipping meals and then wolfing down anything that isn’t nailed down? Do you eat while driving, in front of your TV, or on your phone, realizing afterwards that you don’t remember eating or enjoying it at all? Do you have negative thoughts after eating, or feel badly about the foods you eat?
We now know that how you eat is just as important as what you eat. Mindful Eating refers to being fully present with the holistic experience of what you are consuming. Distracted, emotional, and disordered eating leads to poor digestion, reduced enjoyment, weight gain, and can take a toll on mental health.
It is possible to cultivate a healthier relationship with food (and your body) through deeper internal connection and awareness of your own bio-individuality. Since all bodies are different, paying closer attention to physical sensations, including natural hunger and fullness cues, can teach you what is right for you.
To practice this, take your time, experiencing your food with each of your senses. How does each bite look, smell, taste, feel? As much as possible, eat while sitting in an enjoyable, relaxed environment to truly savor each moment, and let your adrenal system ease out of fight or flight.
With practice, mindful eating can reduce stress by keeping you in the present moment, versus fixated on worry or doubt. It is a form of self-care that can prevent overeating, increase satisfaction, and improve body confidence. Regulating your eating can also be a way to help regulate emotions for increased calm and balance.
While eating is about nourishment, it can also be pleasurable. Keep in mind that no foods are “good” or “bad.” Instead of restrictive diets, enjoy a wide range of wholesome options, noticing how different ones affect you. This empowers you to choose more of what makes you function (and feel) best and less of everything else.
As you eat, notice when your enjoyment starts to diminish. Let yourself end your meal once you feel satisfied, not full. When drawn to eat, get curious about whether you are actually in need of fuel, or whether you are responding to emotional or environmental triggers (i.e. boredom, sadness, anxiousness, excitement, habit, social cues, etc.).
Remember, health comes in all shapes and sizes and the way we each achieve it will be unique. Mindful eating is like any other mindfulness practice: Some days will go better than others. Being kind to yourself will help you replace judgment, guilt, and shame with self-acceptance and compassion.
Learning to be a more mindful eater paves the way for you to feel more connected with, and grateful for your body, as well as all that goes into your meal-time experience. As an added benefit, the more you practice mindfulness at mealtime, the more you are likely to extend it into other areas of your life.
Becoming more in tune with your natural rhythms and inner wisdom can feel overwhelming, as there can be a complex interplay between food, emotions, and mental well-being. Seeking professional guidance can help you gain insights into your thoughts, behaviors, and habits, so you can transform them into a more balanced and positive relationship with food. Ultimately, this contributes to a more mindful approach to overall wellness.
Building a positive relationship with food takes time and commitment. Be patient with yourself and celebrate the progress you make along the way. Remember, this journey is about embracing an intuitive and compassionate approach to eating (one that is right for you) to bolster both your physical and mental health.

His journey has led him to The Wayback Cafe, where every dish tells a story, and every meal is a chapter in his culinary adventure.
A short drive from downtown, The Wayback offers a serene escape to the tranquil embrace of the Texas Hill Country, where time takes on a leisurely pace. “The first time I walked on the grounds of The Wayback, it reminded me of Glen Ellen, California,” Chef Ron shared. The trees and cottages create a sense of warmth and hospitality, with the sprawling hills and vast skies. This setting takes Chef Ron back to the Wine Country charm of Sonoma. The name “The Wayback” even held personal significance for him. He remarks, “The vibe is refined, without being pretentious – a place that feels like home away from home.”
Within this setting, The Wayback Cafe offers its autumn farm-to-table menu, infusing each dish with the essence of locally sourced ingredients that embrace the warmth and richness of the fall harvest. Chef Ron’s approach to crafting a seasonal menu finds its roots in the very fabric of his surroundings. “The menu reflects simple, clean, well-put-together quality seasonal ingredients,” he explained. And it’s not just about the food; it’s about the connection. “We are close with our clientele,” Chef Ron noted, his passion evident in his words, “I like to hear and see what motivates them. With a seasonal menu that features Herbed Roasted Turkey, Pomegranate Dressing, Ciabatta Sage Merguez Sausage Chestnut Stuffing and Port Wine Cranberry Sauce, among other offerings, both locals and visitors are already booking their holiday reservations.

ABOUT THE WAYBACK CAFE Courtesy of Minted PhotographyApples are the trademark fruit of fall, and with the many varieties to choose from, there is an apple that is sure to please any palate. They can be included in both sweet and savory dishes and are delicious and incredibly healthful. We all have heard the saying, “An apple a day keeps the doctor away.” While they aren’t a cure-all, apples are packed full of polyphenols, antioxidants, vitamin C, B vitamins and fiber. Make the most of autumn’s best produce and the flavors of fall with this simple recipe.
Easier than pie but with all the same textures, this gooey warm dessert is sure to please. For simplicity, this can be made with a premade crust.
Crust:
• 1 1/2 cups flour
• 1/4 cup sugar
• 1/4 teaspoon salt
• 1 stick cold unsalted butter, cubed
• 1/4 cup iced cold water
Filling:
• 2 apples, peeled and sliced into thin slices
• 1/4 cup packed dark brown sugar
• 1 1/2 tablespoons flour
• 1 1/2 teaspoons lemon juice
• 1 teaspoon cinnamon
• 1/4 teaspoon ground nutmeg
• Caramel sauce
• Optional: 1/4 chopped walnuts or pecans
Crust:
(Note: If running short on time, store bought crust works great, too.)
Mix flour, salt and sugar together in a bowl. Cut in the butter. Add water and mix until moistened. Lightly knead the dough and then form into a ball. Next, flatten dough into a thick circular form and refrigerate for one hour.
Filling: Mix the apples, flour, lemon juice, cinnamon, nutmeg and brown sugar together in a bowl.
Assemble and Bake: Preheat oven to 375 degrees. Line a baking sheet with parchment paper. Roll the dough into a circle and set on parchment paper. Arrange apples in center of dough, leaving about one inch of space for the edges. Fold crust over the apples and press to seal edges. Drizzle with caramel sauce and sprinkle with pecans or walnuts. Bake for 35 minutes. Serve with caramel sauce and ice-cream.
