Have you ever wondered, “Do fathers matter? What differences do I make in my home as a dad?” Let’s start with the simple answer — the importance of a father is tremendous! Fathers make countless differences in their home and family. However, how much impact you decide to make as a dad is entirely up to you!
My own dad certainly taught me many things, but by far the most important value he taught me is to always be present. Always be there, always be available, and never say, “I’m too busy.” You never know when one of your children may need to talk. They may need help in class, help navigating friendships, help practicing their favorite sport, help with a project, or maybe they just want to talk.
A father’s gifts of quality time, life-giving words, and positive actions have a long-lasting impact on his children.

The Meadows at Mystic Lake is far more than a place to master your follow-through or cheer from the gallery at your favorite golf tournament. It’s a hub of connection where people come together over their love of golf, and where friends, new and old, share a delicious meal in the sun or enjoy the variety of entertainment available at Mystic Lake. Throughout the years, these gorgeous grounds have evolved and changed in many positive ways, but what’s stayed the same is their mission of upholding and promoting the game of golf and its values for all golfers in Minnesota.
This year, they’re celebrating a big milestone — their 20th anniversary. Mike Luckraft, Director of Golf at The Meadows at Mystic Lake, walks us through a little history of this landmark and how you can expect the celebration to unfold.
WHAT WAS THE VISION BEHIND STARTING THE COURSE TWO DECADES AGO?
The Shakopee Mdewakanton Sioux Community purchased Lone Pine Country Club in 2002. In 2003, the course was completely remodeled and reopened in late summer of 2005 as
The Meadows at Mystic Lake. The golf course has since drawn numerous prestigious awards and recognitions from Golf Digest, Golfweek, and Midwest Gaming and Travel.
Course designer Garrett Gill remarked, “This is more than a round of golf. It’s an experience. With waterfalls, native plantings, and statuary, it’s unlike any other golf course.” Another designer behind the course, Paul Miller, reflected, “The Meadows at Mystic Lake is the most exciting golf course project that I have been involved in. We had an opportunity to enhance the natural features of the landscape to create a dramatic golf experience that is second to none in the state of Minnesota.”

We’ve improved the course playability and are continually updating bunkers, tee locations, and turf conditions, overseen by our Golf Course Superintendent, Pete Nolan, who has been with us for nearly the entire 20 years. The golf course is thriving after 20 years in business and continues to make new investments in the operation to enhance the golfer experience. It’s fun to be part of such a great golf facility with great recognition throughout Minnesota and the Midwest.

PASTURE TO PLATE PERFECTION WITH DAVE GONGOLL OF GONGOLL BEEF

This time of year, you’ll be hard-pressed to drive through any Minnesota neighborhood without catching the familiar scents of summer. No, not suntan lotion and fresh-cut grass; we’re talking the unmistakable aroma of charred meats and sizzling success. When looking to up your grilling game, especially with steak, you need tips from a professional who knows the meat inside and out – literally. Someone who understands quality and cuts and has a passion for the process. You need a family-owned and operated local farm, Gongoll Beef, and you need Dave Gongoll.
Gongoll Beef, a third-generation farm located in Mayer, sets itself apart from other local producers in many ways, but what stands out most is the quality of its product. “When we get a steer, they weigh about 100-120 pounds, and right away, we put them on corn,” Dave shares. With this nutrient-dense corn diet, along with a little hay on the side, Gongoll Beef’s Angus cattle gain about 100 pounds a month and turn out some of the tastiest meat you’ll find in the Midwest. How will you know? “When a steer eats corn its entire life, you’ll find white marbling ingrained and evenly distributed throughout the meat, not just along the edges.” And that marbling is the fat that gives it its rich flavor, meltin-your-mouth texture, and irresistible juiciness.
Alsleben Meats, the butcher that Gongoll Beef works with exclusively, also takes the extra step of hanging the beef carcass for two weeks. This allows natural enzymes responsible for breaking down tough connective tissue to act, resulting in more tender meat. Imagine the scene in Rocky when Balboa does a bit of training in the meat locker. That—minus the struggling, small-town boxer.
When a Friday night calls for steaks on the grill at Dave’s house, his cut of choice is a T-bone, sliced an inch and a quarter thick. “Cooking with a bone adds a lot of flavor, and this thickness makes it easier to get medium rare, which is the juiciest.” And if you think the reddish liquid that seeps out of a medium-rare steak is blood, think again. It’s actually a mix of water and myoglobin – a protein that stores and carries oxygen and gives the meat its color and richness.
Now that you know what’s behind the robust, mouthwatering flavor of Gongoll Beef, Dave happily shares his simple yet masterful grilling process, and he’s got it down to a science.
1. Dave thaws his steaks in the refrigerator overnight. 2. When the apron’s on and he’s ready to fire up the barbecue, he lets the meat come to room temperature and seasons it with nothing more than salt and pepper. 3. With the grill heated to 500 degrees, he cooks one side for 2 minutes and 45 seconds, flips it for another 2 minutes and 10 seconds, and then lets it rest for exactly 15 minutes. “Any more than that,” he says, “and you’re eating it cold!”Dave wholeheartedly believes it takes all the key players — farmer, butcher, and top-tier Angus — combining forces to achieve gourmet greatness. We’ve got you! We talked with Geo Villavicencio, general manager and coach at Crusher Fitness & Health, who says there’s nothing more rewarding than taking that first brave step. I love teenagers. I really do. Give me a teenager over a newborn any day of the week. I know babies are magical, and they are darling when sleeping, but I find them to be well… a bit boring. Show me an experience, any experience, with a teenager that could be characterized as boring? Impossible. Terrifying. Mystifying. Trying. Thrilling. Dizzying. I still prefer that drama compared to infant drama.
So due to my love of teenagers and my penchant for harebrained road trip plans, I found myself on a 1550-mile road trip with my 16 year-old son and two of his friends for “spring break.” Before we left, a few people told me I must be crazy to take this on. But I paid no attention to the naysayers because this isn’t even close to the worst idea I’ve had.
Spring break in Minnesota is a time when many people leave the state to refamiliarize themselves with the giant warm orb in the sky others in the US take for granted. Sure, traveling to Florida or Mexico or California makes perfect sense to break up a long Minnesota winter. But where did we go? America’s best-kept secret spring break destination: Louisville, Kentucky. I admit I had to look up how far it was to Louisville, Kentucky. It’s 10 and a half hours. Longer with boys who need snacks every ninety minutes. And why on earth would one travel to Kentucky in March?
College lacrosse games, of course. I had a car full of high school lacrosse players who wanted to see college games. Because the only thing better than lacrosse for these three is more lacrosse interspersed with fast food and doughnut stops. And oddly,
I kind of feel the same. I have grown to truly love the game.
We stopped in Madison, Wisconsin, and stayed overnight. We went to the closest burger place to our hotel, and the stars somehow aligned because they had food but also pool tables. The boys played pool alongside college kids and even invited me to play. I’m terrible, and my son was legitimately surprised by how badly I play as if I had been hiding my pool shark skills from him his whole life. When we paid, the cheerful bartender told me that they were the most polite and respectful teenagers he had ever served. I beamed. He followed it up with what an awful teenager he had been. We agreed, adolescence is tough on everyone involved.
In Kentucky, we watched the University of Utah beat Bellarmine University in a close game on a stunning campus. I was cheering for both teams, which is pretty unpopular in the stands. It was a balmy 81 degrees, and I burned my left arm. That made it feel very spring breaky. We followed it up with a game in Iowa where we watched Iowa State versus Purdue in 34 degrees and rain. I lost sensation in my feet. That made it feel like we were on our way home.
Car conversations ran from Clash Royale to lacrosse stats to snack preferences, and in the background, an impressive music playlist blared that included John Denver, Coldplay, the Bee Gees, and a gentleman named BigXthaPlug, who I was not familiar with. I can really comfortably recommend not including BigXthaPlug during a family car ride.
When we rolled into the driveway, I was fried. Speaking of fried, I really was looking forward to eating a salad. I couldn’t wait to get out of the car, AND I’m the shortest passenger by five inches. I could only imagine how they felt. One of the boys let out a long sigh and said, “Well, where do you think we should go next year?”
And so perhaps I am crazy, but this stage lasts for a blink. Half a blink. The boys, these young men will soon be fully fledged men all too soon. They’ll have careers and relationships and responsibilities and wins and losses. Adulthood comes for us all far too quickly. If you get a chance to hang out with the young men in your life, jump at the chance. Meet them where they are and go where they want to go. Somewhere on the open road. It will remind you when so much was ahead and it was all possibilities.

How Mad Muscle Garage built a business around classic cars and community

Surrounded by classic cars and restoration projects for as long as he can remember, Matt Thoraldson’s love of classic cars and their stories started early in life. Growing up, neighbors and family members were always working on something with four wheels and a story to tell.
“That’s what I love most—meeting people, hearing the stories behind their vehicles. Everyone has a reason they’re passionate about these cars.”
“I always loved watching the evolution of a car,” he says. “There’s just something about seeing it come together—and hearing the stories behind it—that stuck with me.”
That was the beginning of Mad Muscle Garage. That early exposure turned into a lifelong passion. But before opening his own shop, Matt built a career in sales. “I was always in sales, but I wanted the freedom to start my own thing—to manage my own time and build something for myself,” he says. That opportunity came when he landed a position as general manager at a classic car dealership. When the dealership closed, Matt saw a gap—and a chance to fill it.
While Matt had experience in sales, the business started with a focus on restoration and building a portfolio of experience and knowledge of classic cars. “It wasn’t about getting rich,” he says. “It was about doing it right—helping people bring their cars back to life.”
Mad Muscle Garage has since grown into a respected name among collectors and classic car enthusiasts, with a rotating inventory of 50 to 60 vehicles. The shop specializes in buying and consigning high-quality classic and muscle cars—primarily turnkey vehicles ready for the road. “We don’t really deal in unfinished projects,” Matt says. “Condition and quality are everything.”
Most of the cars he sells are from the mid to early’ 70s—a sweet spot for many buyers who are looking to recapture a bit of their youth. “A lot of guys come in and say, ‘I had that car in high school,’” Matt laughs. While interest in cars from the early 1950s and before has declined with changing demographics, muscle cars are still in hot demand.
The business operates by appointment only, and many vehicles sell before they’re even photographed. “We’re averaging about 10 cars a month, and a lot of them ship out of state,” he says. Vehicles typically sell in the $30,000–$50,000 range, and buyers are usually 35 and older—people who want something that’s not just a showpiece but something they can actually drive and enjoy.
Services include buying and consigning vehicles, appraisals, inspections (especially for cars 20 years or older), and restorations when the situation is just right. Matt is also an active member of MSRA (Minnesota Street Rod Association) and sponsors car show events, including the annual show at the Scott County Fair.
But beyond the cars, it’s the people who keep Matt excited to come into the shop every day. “That’s what I love most—meeting people, hearing the stories behind their vehicles. Everyone has a reason they’re passionate about these cars. You never know who’s going to walk through the door or what story they’ll bring with them.”
Looking ahead, Mad Muscle Garage is gearing up for car show season and expanding its reach in the collector community. Matt himself has a personal fleet of about 15 cars, including one from his bucket list—a Dodge Viper he finally picked up last year.
As for the future of the industry? Matt recognizes the growing presence of electric vehicles but sees classic cars as timeless. “Electric has its place, sure,” he says. “But there’s nothing like the rumble of a big-block engine.”
For Matt and Mad Muscle Garage, it’s not just about selling cars—it’s about preserving history, celebrating craftsmanship, and keeping the muscle car spirit alive.

Lake Waconia Band Festival

The 26th Annual Lake Waconia Band Festival will take over Main Street on Saturday, June 21! This “bands only” parade competition is the highlight of the summer marching band season, drawing top bands from around Minnesota with an expected audience of 3,000. Hosted by the Waconia Band Boosters, this event is sponsored by local businesses and supported by over 100 volunteers.
