The Perfect Morning (Or Anytime)
Protein-Packed Bite!
These egg bites are a perfect homemade spring brunch creation – they’re just so pretty, tasty, presentable and easy – plus they can be made in advance! But they’re also simple enough for an everyday breakfast, especially when used as meal prep to make mornings easier. These veggie egg bites offer quick protein and can be part of a balanced breakfast, especially when paired with whole grain toast topped with cottage cheese, chopped tomatoes, drizzled olive oil and some fruit. An easy, delicious, protein-filled quick breakfast with minimal cleanup that morning? I’m in!
INGREDIENTS:
• 12 large eggs
• 6 oz spinach (about 4 C)
• 1 bell pepper
• 1 C whole milk cottage cheese
• ¾ C feta cheese, crumbled
• ¼ tsp salt
• ¼ tsp ground black pepper
• Nonstick cooking spray
DIRECTIONS:
1. Preheat the oven to 350 degrees Fahrenheit.
2. Line a 12-muffin tin and a 6-muffin tin with cupcake liners. Spray each liner with nonstick cooking spray and set aside.
3. Chop spinach and dice bell pepper. Set aside.
4. Crack eggs into a large mixing bowl and whisk together until the yolks and the whites are mixed well. Add salt, pepper and cottage cheese and whisk again until combined.
5. Add chopped spinach, diced bell pepper and feta cheese to the egg mixture. Mix with a large spoon.
6. Use a large spoon to transfer the egg mixture to the muffin tins, filling each muffin tin just below the brim.
7. Bake in oven for about 25-30 minutes or until cooked through. A toothpick inserted should come out clean and egg bites should reach an internal temperature of 160 degrees Fahrenheit. Once cooked, remove from oven and allow egg bites to cool for about 5-10 minutes before enjoying.
Note: These egg muffins can be stored in an airtight container in the fridge for up to 3-5 days and warmed in the microwave for about 1 minute when ready to eat. Alternatively, freeze and thaw overnight in the fridge or thaw in the microwave from frozen when ready to eat. Microwave time may vary and frozen egg bites will take longer to defrost and get to desired temperature. Reheated eggs should reach a minimum internal temperature of 165 degrees Fahrenheit.

As a personal fan and follower since 2020, it is an honor to feature such an esteemed individual—a dream come true.
Gabriela Vascimini is the ultimate 'it' girl and content creator, blending storytelling strategy, brand ambassadorship, and a commitment to empowering women in business, power, and success. From theater and film to digital media, Gab has evolved into a creative force that captures modern lifestyle branding.
Gab was inspired to become who she is based on her interests in theater, acting, making movies, and film. In this risk-taking field, she loved creating short-form content on social media. She believed this made storytelling produce digital and accessible content. Her background in writing and theater naturally evolved into digital branding. After graduating from Columbia University with her BA in Creative Writing and Art History and earning her Master in Advertising from SMU, this bright and sweet creator found her passion in marketing and branding.
Gab NYC, a personal lifestyle brand, has grown from creating content online to becoming a social media powerhouse with a strong presence on TikTok and Instagram.
Gabriela focuses on themes, niches, and aesthetics, which are essential to a lifestyle brand. Her “Day in the Life” videos have been a staple since the beginning and continue today. Starting on TikTok, she produced sketches showcasing her fun, influential, and comical side, establishing a presence that has resonated with her audience over the years.
She later shifted towards fashion and lifestyle as a creator, with vlogs evolving into an everyday sequel—a zero-to-100-day series, numbered and all. Her content spans festive activities to casual outings in NYC, the Hamptons, Greenwich, and beyond.
Her creative process is centered on strategy—brainstorming ideas and curating the perfect vibe for each vlog. What sets Gab NYC apart is its focus on a niche, vibe, aesthetic, and theme, amassing a large following across platforms. Popular series include “What I’m wearing in NYC”
"What I’m Wearing in NYC" to "Christmas Time in the City!" Beyond showcasing locations, she aims to inspire with fresh ideas and experiences. As a Greenwich native and New Yorker, she introduces her audience to cherished spots like Greenwich Ave, creating unique experiences.
Gabriela’s favorite part of content creation is brainstorming. Whether writing or editing, she shares, “editing 200 clips for a 30-second vlog.” As a committed editor and developer of her lifestyle brand, this highlights her dedication to curating the perfect content every step of the way.
“Editing is so important to the storytelling aspect of it, that if I put all this effort into curating content and, you know, finding the perfect shot and putting the script together,” Gabriela highlights the significance of being a creative director personally editing her content. Through balance in the digital space, Gab maintains her authenticity. On TikTok live streams, she connects with her audience by sharing personal stories, creating a bond through topics like "get ready with me" and being candid and unfiltered.
Starting in 2019, this creative writer from Columbia University began her journey on TikTok. Gab NYC started this as a side project, posting comedy sketches about her life growing up in and around New York City!
Gab is also a working artist featured in LoveShackFancy. She was commissioned to hand-paint bags to be sold in multiple store locations. This visionary possesses real talent, which is evident in her digital and physical art; her skills transcend.
“To be successful on social media as a content creator or lifestyle brand, having a strong presence and taking a stance through your voice, style, and personality are what people interact with.”
From her early days as a Broadway theater kid to becoming a digital trendsetter, Gab’s content is rooted in her background.
Gabriela Vascimini, also known as Gab NYC, is a creative storyteller, brand strategist, and influential figure across social media platforms like TikTok and Instagram. • Ralph’s Coffee: A must-stop for coffee lovers.
“I’ve focused on empowering young women— encouraging confidence, self-expression, and embracing style. It’s been amazing to grow with my audience over the past five years.”
As a native New Yorker, she appeals to tourists and locals, navigating social media through her unique niche. Her themed online presence is intentional, offering NYC life recommendations while maintaining an engaging persona.

Shari Ivler’s journey from fashion to food is a story of creativity, courage, and community. After more than a decade immersed in the fast-paced world of fashion merchandising, styling, and interior design, Shari realized that her career no longer fulfilled her as it once did. With her older daughter just three and a recent move out of the city, the timing felt perfect for a change. Embracing the uncertainty of starting something entirely new, she took a leap of faith into the world of catering—a decision that eventually gave birth to Graze NY.

Initially, the idea of creating food boards was more a spark of inspiration than a sure bet. “Worst case it’s a flop, I’ll look for something else,” she recalls, capturing the fearless spirit that has since defined her business. Today, after nearly seven years and over 1,000 carefully crafted cheese boards, her passion has transformed uncertainty into a thriving culinary venture. This evolution wasn’t just a career pivot—it was the pursuit of a passion that resonated deeply with her creative soul.
Drawing on her background in the visual and performing arts, along with her extensive experience in fashion and interior design, Shari treats each board as a blank canvas—an opportunity to blend flavors, textures, and colors into a unique, edible work of art. “I like to look at the boards as a blank canvas. No two boards are exactly the same which keeps it fun,” she explains. The result is not only food that tastes incredible but also a visual experience that invites conversation and draws people together.
“I like to look at the boards as a blank canvas. No two boards are exactly the same.”
Shari’s journey into communal dining began long before the food board trend caught on. In her own home, she was known for creating beautiful spreads that became the centerpiece for gatherings with friends and family. It was around these tables—filled with good food and flowing conversation—that bonds were forged and memories were made. This intimate experience of sharing a meal inspired her to build a business model that emphasizes community and togetherness.
Sustainability is another core value that shines through in every aspect of Graze NY. Shari is committed to working with local farms, bakers, florists, and artisans, ensuring that each board reflects the best of what every season has to offer. “I've built really great relationships with local farms, bakers, and florists. I feel really lucky to live in an area with so many amazing
creatives that all support each other,” she shares. By creating with the season, she highlights the natural flavors and freshness of ingredients at their peak. This commitment not only enhances the flavor and presentation of her boards but also supports local businesses and promotes environmentally responsible practices.
Of course, the path to success was not without its challenges. With no prior experience in launching a business, Shari had to learn the ropes as she went along. From building a website and creating an Instagram presence to reaching out to local food influencers, shops, and restaurants, every step was a lesson in the art of entrepreneurship. “I just had an idea and ran with it,” she says, acknowledging that the business side of things—especially during hectic times like tax season— was a steep learning curve. Yet, it was her unwavering commitment to her creative vision that allowed her to
overcome these obstacles and build a brand that resonates with passion and authenticity.
Balancing the demands of running a business with family life is another facet of Shari’s journey that many can relate to. As a mother of two and a sole proprietor, there are days when work completely takes over, leading to missed softball games and family parties. However, over the years, she has learned the importance of setting boundaries, prioritizing, and sometimes saying no. “I don’t think there will ever be a 50/50 balance,” she admits, adding that finding an ebb and flow between work and home life is key to sustainability. She also notes that asking for help is sometimes very necessary, recognizing that perfect balance is more of an ideal than a constant reality.
Looking to the future, Shari is brimming with ideas for evolving Graze NY. “I hope to do more

personalized menus for people and grow that area of my business. I'm also planning a summer graze retreat—a two-day event in upstate New York focused on all the creative outlets I enjoy and want to share with other like-minded individuals,” she explains. These plans reflect her belief in continual growth and the importance of keeping her offerings fresh and engaging for both her clients and herself. “I'm excited to see what lies in store for Graze New York. It's definitely been a fun ride!”
Shari Ivler’s story is a testament to the transformative power of following one’s passion. Her shift from fashion to food is not just a career pivot, it’s a celebration of creativity, community, and the beauty of taking risks. Her journey reminds us that sometimes, the boldest moves lead to the most rewarding adventures.
914POPUPS FOUNDER MELISSA TOMLIN CULTIVATES COMMUNITY THROUGH EXPERTLY CURATED EXPERIENCES.
“Is the stroll still on?” I ask. It’s December 11, 6 p.m., pitch black, and pouring rain. “Yes!” Melissa chirps. Ever patient, she doesn’t let on that I was the fifth to call. I head to closed-off Court Street for the opening night of the Winter Village & Holiday Market in Downtown White Plains.
For two weeks, 914PopUps founder Melissa Tomlin, The City of White Plains, and the White Plains Business Improvement District partner to transform downtown into an open-air winter wonderland, where you can take pictures with Santa, sing with carolers, watch ice sculpting demos, and shop local artisan provisions in custom-made wooden houses. The family-friendly set-up is reminiscent of Bryant Park’s Village, but no Metro-North ticket is needed.
Family, friends, and elected officials brave the cold and heavy rain to support, sharing fondue in heated igloos, darting in and out of the wooden houses to shop for macarons, mulled wine, and Mongolian cashmere, and then head to nearby restaurant Greca Estiatorio for the kick-off.
Matching with her daughter Mila in a festive green, reindeer-adorned sweater, Melissa grabs a mic. It’s the first time I’ve seen her address a crowd in all the years I’ve known her. “I’m so shy,” she’ll usually say, with a giggle, as she orchestrates behind the scenes. But now, she seems comfortable, confident, in her element. She thanks the crowd, encourages everyone to mingle, and passes the mic to Mayor Tom Roach. He praises the

20-year White Plains resident for her expert execution of his longtime vision for the market. Mila sings Rockin’ Around the Christmas Tree, as Melissa fosters connections, and her husband, John, chats close by. At 9 p.m. prompt, the Tomlins leave to pick up their other daughter, Leila, and head home, where Melissa plans the next day’s schedule on her very filled paper calendar. The strangers she’s cultivated into friends linger long after at the restaurant, sharing bottles of wine and baklava, basking in the magic she’s created.
The evening, Melissa’s signature annual event, is a testament to who she is: a collaborative champion of small businesses and a builder of community. Through her 914PopUps brand, the serial entrepreneur and former Nordstrom stylist supports local business owners, entrepreneurs, and philanthropies by connecting them with audiences. She carefully curates events throughout Westchester and Fairfield counties, and Manhattan, for a diverse, intergenerational group, unified by the goal of supporting local endeavors.
purveyors; and her village-wide strolls drive foot traffic to mom-and-pop stores.
“Genuinely sweet” is how many describe the Canadian-born blonde. She is savvy too, having helped hundreds of small businesses boost sales over the years, through social media promotion, in-person exposure, and word of mouth.
“Melissa epitomizes all that makes Westchester County such a special place: she’s all about charity, connection, and community.”
In the digital age when many feel disconnected, Melissa creates opportunities to bond, often with a purpose, as many events have philanthropic ties. The 250 content creators, restaurateurs, and entrepreneurs in her group chat know they can count on her to make an introduction, uplift their spirits or business, or provide a trusted recommendation. Recently, a mom messaged in search of a musician for a kid’s birthday after the entertainment canceled the day of. Melissa helped within minutes.
“Melissa epitomizes all that makes Westchester County such a special place: she’s all about charity, connection, and community,” News 12 Westchester’s Tara Rosenblum says.
Drawing on her family’s hospitality roots, she’s the consummate host: bubbly, punctual, and warm. Her intimate dinner parties introduce friends to burgeoning chefs; her fashion showcases connect tastemakers with up-and-coming designers; her open-air markets highlight solopreneurs like artists, accessory designers, and small batch cocktail
Many muse how she accomplishes so much, when she sleeps, and how she’s always in a good mood, but her superpower is making others feel seen. Whether you’ve known her for one day or 20 years, Melissa will always make room for you at her table. Longtime friend Lauren Apollonio, says, when the table fills, “She builds a bigger one.”

Flowers have a rich history of symbolic meanings.
As far back as the 19th century, they were used to convey secret messages. Stories throughout history recount how flowers were used to send hidden messages between people. French publishers began producing flower dictionaries that cataloged the many floral codes that had been gathered over time. Some of these meanings were linked to the flower’s root name, often derived from mythology, while others were drawn from the flowers themselves. The colors, medicinal properties, and even the superstitions
associated with these flowers all contributed to the creation of this secret language.
In addition to their symbolic significance, flowers bring natural beauty to any interior, enhancing spaces with their color, texture, and mood-boosting qualities. Floral arrangements not only create a cozy atmosphere but also infuse a room with personality, elevating the overall ambiance. There are multiple ways to creatively integrate florals into your home, and whether using fresh or artificial flowers, creative displays can make quite the statement piece.
Add an extra burst of color and texture to your floral arrangement by layering fruit around the edges of your vase. To achieve this, place a smaller vase inside a larger one, ensuring the flowers stay contained in the inner vase to preserve their shape. Fill the surrounding space with water and then arrange sliced fruit along the vase’s outer sides. For a fresh touch, add ice cubes to keep the fruit looking vibrant longer and to hold them in place. Not only will the flowers’ fragrance fill the air, but the citrus notes from the fruit will add a refreshing scent.
For a dramatic effect, try creating a hanging floral display. Floral cones are available for this style, or you can craft your own for a more personalized, organic look. The contrast between long-stemmed white flowers and a dark wall creates a striking visual impact.
No matter how you choose to display them, flowers are a wonderful addition to any room. They boost mood, improve air quality, spark creativity, and bring a decorative charm to any space.
Using a frog to display flowers creates a minimalist yet elegant look that highlights the individuality of each bloom. It helps the stems stay in place. To set it up, place the frog on your chosen display base, whether it’s a vase, bowl, platter, or any container you prefer. Then, simply insert the flower stems by gently pressing them into the prongs. Tip: Flowers with sturdy stems and a lighter top work best in a frog, as delicate blooms tend to lose their shape more quickly.
