ACCORDING TO DICTIONARY.COM THE WORD ECO MEANS “A COMBINING FORM REPRESENTING ECOLOGY, IN THE FORMATION OF COMPOUNDS (ECOSYSTEM; ECOTYPE); ALSO WITH THE MORE GENERAL SENSE “ENVIRONMENT,” “NATURE,” “NATURAL HABITAT” (ECOCIDE; ECOLAW; ECOPOLITICS).” When the April theme was determined to be Eco, I had a lot of ideas of what we should feature. I researched some of the delicious restaurants in town that serve fresh local ingredients like Juniper, Bramble Breakfast & Bar and Elote’ Café. That made me hungry and decided with summer around the corner, maybe getting a little exercise would be a better alternative. So, I focused on some of the beautiful parks in the Tulsa area with their gorgeous flower beds and walking trails such as Redbud Park, Tulsa Botanic Garden, and the Zoo. I found out there are numerous parks in the area and couldn’t decide on which one to feature! Did you know that Broken Arrow has the Ray Harral Nature Center? It’s a 40 acre park with a suspension bridge, arboretum and a Nature Center with live and mounted displays, animal hides, information on plants, trees, flowers, birds, bees, fish and various movies on wildlife? Reading about the parks got me in the mood to plant my

What’s the connection between cultural wellness and bodily health? Can a change in what people eat change not only the way they feel, but the way they understand their history, their heritage, and their future. This symposium draws together native chefs, documentary filmmakers, food historians, policy experts, and political activists to explore the cultural and health effects of indigenous cuisines. Event starts on Friday, April 13 at 6 p.m. with a lecture and meal prepared by Ben Jacobs, an Oklahoma native and one of the innovative chefs behind Denver's Tocabe restaurant. On Saturday, April 14, at 8 a.m., panel discussions and film screenings focus on different aspects of native food culture, ranging from the mental and physical health effects of indigenous cuisines to the work of the historians, seed keepers, and chefs recovering and reinventing traditional

IMAGINE BUYING FRESH PRODUCE OR BOUNTIFUL FLOWERS WHILE GIVING BACK TO THE COMMUNITY? Meet A New Leaf (ANL), a hidden gem, ready to be discovered. This non-profit organization educates, employs and equips individuals with developmental disabilities. Their mission is to provide these individuals (including those with Autism Spectrum Disorder) with vocational and residential services to increase independence and individual choices. Although Oklahoma has approximately 60,000 individuals with a developmental disability, only 2,500 are served by the state. And 85% of those with developmental disabilities are unemployed, a statistic ANL works hard to lower. Their vocational services are largely focused on horticulture. Studies have shown horticulture therapy helps those with developmental disabilities improve cognitive abilities, task initiation, memory, stress reduction and emotional bonding. “We’re providing a safe community for clients to learn, grow and feel successful,” shares Kevin Harper, ANL’s Marketing Director. ANL has six greenhouses, two retail centers and a farm. In their greenhouse, clients work with job coaches to learn skills such as planting and cultivating bedding and house plants, succulents and poinsettias. They sell items at the retail and wholesale level. Local businesses allow ANL’s clients to come to their offices and sell to employees; thus, clients integrate with society. This past Valentines, they delivered over 160 (more than double last year) dozen roses to customers; over Christmas, they sold 4,400 poinsettias. At Blooming Acres, ANL’s CSA farm, clients grow vegetables and customers sign up for their share during the growing season. Once a week, clients, who take great pride and ownership of their work, enjoy delivering produce to customers. And half of the produce goes to community food banks and food deserts— teaching clients to give back. Although Blooming Acres doesn’t have an organic certification, they follow rigid standards. “We naturally grow everything and follow organic guidelines, mainly for the safety of our clients,” Harper shares. ANL also helps clients not interested or incapable of working in horticulture. Clients bag 3,000 pounds of dog food for shelters every week. Others work at Meals on Wheels, on a wholesale crew daily selling flower arrangements to flower shops across the state, and at a mobile nursery going to businesses to sell products. Some provide janitorial services for churches and business; others make jewelry. Harper always seeks new opportunities for clients to work and receive a paycheck. Their latest opportunity is an agrihood in Owasso. A private donor gifted them fifty acres of land and ANL’s goal is to break ground in 2020. Here, clients will live and integrate with society —they’re opening the agrihood to the general public. Another ANL program is Autism Works, a community based, pre-vocational program for youth with Autism Spectrum Disorder. Autism Works helps middle and high school students in the Tulsa public schools make the transition to adulthood, higher education and/or employment through teaching social skills in a classroom setting.

Nowhere is this more apparent than in his Dynamite roll. This roll is made to show off the balance of ingredients, every flavor unique throughout the roll and yet coming together for a perfect experience.

UP WITH TREES OFFERS TREE SCHOOL

MANY OF US KNOW ABOUT UP WITH TREES AND THE WONDERFUL SERVICES THEY PROVIDE FOR OUR CITY. Most would say Up With Trees is known for planting trees all along the roads of our city. Which is true and just one of the wonderful things this organization does for our community. Did you know Up With Trees offers Tree School? Tree School is an amazing program that Up With Trees offers to our local schools systems. Tulsa public school is one of the first school systems the program has started in, but plans to expand to other local schools systems in the future. I was recently asked to help teach the Tree School program with a good friend of mine John Kahre and was delighted to be part of such an amazing program. The program is currently being taught to 4th and 7th grade students and some of the classes have been adjusted for High schools students as well.

During the program we visit the school on four different occasions, during each one hour session we teach the students very important information such as the benefits of trees, tree biology, we also teach students the importance of planting the right tree in the right place and to make sure not to plant trees under or near power lines. We then move on to the importance of caring for trees, making sure trees are healthy and how to tell if the tree is not healthy. This is usually a fun day because we take the students outside to observe the trees they have on their school campus. Students get to measure the trees, touch the trees, and we discuss the shape and size that each tree is expected to

be and if it is planted in the right place or not. Then students get in groups and inspect the trees for pests or disease, and if any of the trees are in need of removal. On our last class session we do a recap and then we give the students a small tree identification book and ask them to tell us what tree in the book is their favorites. The students then get to make posters about their favorite tree, telling us fun facts about the trees and why this is their favorite tree. I really loved some of the answers some of the children would give about why this is their favorite tee. Some were the usual – “I like this tree because the leaves are shaped

like a heart” or “We like this tree because the leaves change colors in the fall”. But one of my favorites I would keep hearing was “We like this Maple tree because it gives us maple syrup”. I always just had to laugh at this answer. After the final tree school session is over the students get to plant trees on the school campus. This is usually an interesting day where we see the students asking all sorts of questions about the trees being planted, what kind of tree is that, how big will it get, where are we planting this tree, is this a fruit tree? So exciting to see how much the students have learned about trees in just a short amount of time. I am thrilled to be part of the Tree School program and hope to continue teaching it for many years to come. Trees are such an important part of our lives and I love teaching others all about trees and the important role that trees play in our lives.
