Stoltz Co. Designs Event Spaces with Beauty and Function

In Tennessee, where barns dot the countryside, building a place to celebrate is about more than putting up four walls and a roof. For Will Stoltz, it’s about honoring tradition while shaping spaces that serve the needs of today.

Stoltz and his brother Mahlon are the founders of Stoltz Co., a design and build company known for creating custom event venues across Middle Tennessee. With roots in Lancaster, Pennsylvania’s Amish community, where barn building was as common as cornfields, Stoltz brings generations of craftsmanship to every project.

“I grew up in the Amish community,” Stoltz said. “My father was a farmer who started building barns when I was very young. Construction work was a natural part of my childhood. We were taught hard work, honesty and integrity. Those values still guide Stoltz Co. today.”

One of the company’s specialties is custom builds for weddings, parties and community events, often using timber framing and mortise and tenon joinery. These methods aren’t just aesthetic choices. They’re built to last.

One recent project highlighted these principles. Using mortise and tenon construction, Stoltz and his team created a venue that is both sturdy and visually

striking. “This style has been used for hundreds of years. It’s strong, and the exposed beams give the interior a lot of character,” he said.

Designing event spaces requires a balance of beauty and function. Stoltz said most clients want large, open spaces with high ceilings and exposed wood framing. “We help guide the design, but ultimately, the structure itself naturally lends to openness and flexibility,” he said.

Event venues often serve more than one purpose. Some are built in a client’s backyard to host both private and public events. Others are constructed for businesses that need a dedicated place for internal gatherings. “Instead of renting space over and over, some companies just build their own,” Stoltz said. “It can be used for anything from a Christmas party to a corporate retreat.”

Certain features have become especially popular in recent builds: lofted second floors, spiral staircases, and decorative concrete floors are in high demand. Most clients prefer exposed timber framing, often requesting designs that reference traditional barns.

In Middle Tennessee, barns are more than just nostalgic architecture. They’re central to the visual and cultural identity of the region. Many clients want their event space to reflect that heritage, even if it’s a brand-new structure.

“Some people want us to build a new barn and then let the wood age for a year before staining it, just so it has that older look,” Stoltz said. “Barn-style venues are definitely the most common request.”

Another style gaining popularity is the chapel-pavilion hybrid. These structures blend the open, airy qualities of a barn with the traditional form of a chapel.

Stoltz recalled a client who added one of these pavilions to her wedding venue, resulting in a notable business boost. “She wanted more outdoor options for her clients, and after we built the pavilion, her bookings went up 80 percent,” he said.

Durability and safety are just as important as visual appeal. Stoltz said timber frame construction is one of the strongest ways to build a wooden structure. His team also offers optional FEMA-rated storm shelters, which can be integrated into both residential and commercial projects.

While some clients want Stoltz Co. to handle the entire construction from start to finish, others choose a more flexible approach. “We can build just the shell, and the client can finish it over time,” Stoltz said. “It works well for those with budget constraints who want to phase out the process.”

When it comes to starting a custom build, Stoltz says it begins with a conversation. “Bring us your vision. If you don’t know exactly what you want, we’ll show you examples and ask what stands out. From there, we can build something that reflects your style and needs.”

Though each project is unique, Stoltz’s work is rooted in consistency: solid craftsmanship, a respect for the land, and a desire to create spaces that bring people together. In a region where hospitality and heritage go hand in hand, the event venues Stoltz builds do more than host gatherings, they become part of the story.

“It started with my sister, who passed away,” she shares. “The butterfly became a symbol of her, and over the years, I’ve seen it show up again and again.” What began as a quiet reminder of loss has grown into a powerful metaphor for Mallory’s journey. “It’s ironic, but fitting,” she reflects. “The Butterfly is all about change and transformation. And that’s what my life has been. Transformation in so many ways.”

Though her Instagram feed, @MalloryNikolausHome, is full of elegant trim work, inspired décor, clever DIYs, and home renovation updates, Mallory’s real story lies between the posts. “I feel like transformation, the shift from where you’ve been to where you’re going, is my story,” she says.

That story didn’t begin in perfectly lit rooms or curated aesthetics. Raised in a difficult home environment, Mallory knows what it means to long for refuge. “I grew up in dysfunction,” she shares candidly. “I didn’t want that for my family. So, I turned that pain into a power and a passion for creating spaces that feel safe and full of love. It’s in the transformation where the growth happens and where happiness happens.”

She and her husband, Craig, rented for the first decade of their marriage. They lived in a one-bedroom apartment with their two young boys, juggled multiple jobs, and took out student loans while slowly carving out a life together. “We lived the hard life,” she says. “It wasn’t glamorous. Nothing in our home cost more than $40 back then because I thrifted everything,” she adds with a laugh. “But I loved it.”

Her passion began humbly with spray-painting thrift store furniture while Craig was in dental school. “I remember looking at price tags and thinking, ‘That’s not for me.’ But I never stopped believing in what was possible. There was so much pride in taking something broken and making it beautiful.”

Her Instagram offers glimpses into her classic European vibe style and also into her personal life. She shares about her family, her healing, and the sometimes messy, beautiful process of becoming. Through her vulnerability online, Mallory has become more than just a content creator; she’s become a quiet companion to many who are walking through their own valleys.

“People tell me, ‘I found you through a DIY project, but I stayed because of your heart.’ That’s the most meaningful part. I share because I want people to know they’re not alone,” she says

Still, it has not always been easy. “Being vulnerable on the internet is scary,” she admits. “Not everyone meets it with compassion. But the deeper connections make it worth it.” Followers reach out, even years later, saying, “I lost my sister and thought of you. If you could get through it, I can too.” That, she says, is the real reward.

Mallory also knows her style isn’t for everyone, and she’s OK with that. “Not everyone loves my choices, and some people are vocal about it,” she says. “But even that is part of the journey. I spent 30 years as a people-pleaser, hustling for my worth, thinking the more I can produce, the more people will like me. Now, I set boundaries. If you’re in my home or my life, you should feel honored, because that’s not something I give as freely as before.”

Just as their dream home, affectionately dubbed The Monarch Revival, was nearing the redesign finish line, another transformation was taking place. “I’ve never completed an entire house,” Mallory chuckles. “Life moves us before we get to that point.” The next transformation led them to Franklin nearly a year ago.

Like many families, the Nikolaus crew relocated for the schools, the lifestyle, and the sense of community.

“Our old neighborhood didn’t have a lot of kids,” she says. “We wanted our boys to have friends nearby.”

Now, with Craig’s brother living close by and cousins just down the street, their five boys are thriving.

But Franklin is more than a backdrop. It’s where Mallory’s story continues to unfold. Today, the same woman who once spray-painted thrift store furniture on a budget is documenting the renovation of her current Franklin home, aptly named the Monarch Colonial. She is quick to remind her followers this isn’t HGTV. “This is my actual life and I love that I can share this process in real-time,” she says. And she is loving every chaotic and beautiful minute of it.

Being transparent and authentic is important to Mallory. This is evident when she talks about her renovations and DIY projects. “We bought a smaller home in a great neighborhood and decided to invest in the finishes,” she explains. “But I never forget what it was like to be at the bottom, look at numbers and think, ‘There’s no way.’ That’s why when I post about renovations, I always include the real time and the real costs.”

She’s also refreshingly honest about her mental health transformation. Living with ADHD and OCD, Mallory has learned to embrace her mind’s complexity as a kind of superpower. “When I’m healthy, they balance each other beautifully. I can get so much done,” she says. “But when I’m under stress, either one can take over, and it is debilitating. I’ve learned to work with that and how to listen to myself. And Craig is a huge support offering comfort and balance.”

Craig, her husband of almost 20 years and part-time sidekick helper, remains her biggest cheerleader. “We eloped after dating for just three months,” she says with a laugh. “Everyone thought it wouldn’t last. But we keep choosing each other, even when it’s hard. Especially when it’s hard.”

Now, Mallory is living a life far from where she started, surrounded by beauty, supported by love, and followed by half a million people on Instagram who find comfort in her honesty, creativity, and heart. Through her DIY projects and personal stories, she shows others it’s possible to reimagine their lives, to start small, dream big, and believe in what could be. But she doesn’t see herself as finished.

“I still feel like I’m transforming,” she says with a smile. “But maybe that’s the point. Maybe we’re always becoming. I don’t think I’ll ever be ‘done.’ And that’s OK.”

Because in Mallory Nikolaus’s world, the beauty isn’t just in the before-and-after, it’s in the becoming.

A Light Summer Bite

When I was catering, one of my most popular warm weather appetizers was a Peach, Tomato, and Goat Cheese Bruschetta. Fresh seasonal fruits were tossed with a homemade balsamic vinegar dressing and served over a log of goat cheese. Spread onto toasted baguette slices, it was a hit with every crowd. Here I’ve transformed the hors d’oeuvre into a scrumptious pizza. Whip up this healthy snack and pair with a refreshing light cocktail for an easy summer dinner perfect for sharing with friends.

Peach, Roasted Tomato, and Goat Cheese Pizza

INGREDIENTS

Yield: (1) 10” pizza

• 12 ounces cherry tomatoes, halved

• ¼ cup + 1 tablespoon olive oil, divided

• 2 teaspoons balsamic vinegar

• 1 teaspoon kosher salt

• 1 garlic clove, minced

• ¼ teaspoon sea salt

• Unbaked refrigerated pizza crust

• 1 peach, pitted and sliced

• ¼ cup goat cheese

• ¼ cup softened cream cheese

• Honey

• Chopped fresh basil

DIRECTIONS

1. Preheat oven to 425º.

2. Lightly grease a baking sheet. Press pizza dough into a 10” circle. Bake 7-8 minutes until lightly browned.

3. Spread tomatoes onto a rimmed baking sheet. Toss with one tablespoon of the olive oil and balsamic vinegar.

4. Turn cut sides down. Sprinkle with kosher salt.

5. Roast at 425º for 10-12 minutes until charred and a few begin to pop.

6. In a saucepan over medium heat, combine remaining olive oil, garlic, and salt.

7. Sauté garlic one minute. Brush mixture evenly onto surface of pizza shell.

8. Top evenly with marble-sized bits of goat cheese and cream cheese.

9. Add tomatoes and peaches.*

10. Bake 8-10 additional minutes until crust is golden brown.

11. Drizzle with honey and sprinkle with chopped basil.

*Go as heavy with the toppings as desired. The more the merrier! The photo depicts less than the amount in the recipe to clearly show each one.

St. Germain Spritz

Elderflower liqueur shines in this fresh cocktail that will cool you off even on the hottest summer nights.

INGREDIENTS

Yield: 1 cocktail

• Ice cubes

• 7-8 mint leaves

• 1 ounce elderflower liqueur (St. Germain)

• ½ ounce lime juice

• 5 ounces Prosecco

• Sparkling water

• Sliced fresh lime and mint leaves for garnish

DIRECTIONS

Smack the mint leaves to release their oils. Place in the bottom of a glass. Place ice cubes, elderflower liqueur and lime juice in a cocktail shaker. Shake 30 seconds and strain into a glass. Top with Prosecco and splash of sparkling water. Garnish with lime slice and mint leaves.

From Coffee Beans TO COPPER STILLS

When Jeff Arnett left his nearly two-decade career at Jack Daniel’s, where he served in the prestigious role of master distiller, he wasn’t walking away from whiskey. He was walking toward something new. Something personal. Something made for good company.

Enter Company Distilling, Arnett’s exciting new venture based in Thompson’s Station, with additional outposts in Townsend and Lynchburg—just down the street from his former employer.

“I had been contemplating whether I wanted to do something else, something for myself,” Arnett says. “An opportunity came about where I could build my own distillery, my own brand. I knew myself well enough to know I’d probably regret it if I didn’t believe in myself enough to give it a shot.”

Arnett’s road to whiskey wasn’t a straight shot. A Jackson, Tennessee native, he originally set his sights on the automotive industry until a hiring freeze rerouted him to Procter & Gamble. There, he cut his teeth at the Folgers coffee plant in New Orleans, learning the intricacies of flavor evaluation—acidity, bitterness, body—all skills that would later come in handy with whiskey.

After stints managing decaffeination and dairy-style production plants (yes, he once helped make Hawaiian Punch and SunnyD), Arnett eventually found his way back home to Tennessee, landing a post in Jackson making Pringles. Soon enough, he shared a résumé with a Nashville headhunter, who helped him land a job in quality control at Jack Daniel’s. The rest, as they say, is history.

“When the master distiller before me, who had been with the company for about 40 years, decided to retire, they asked me to serve in that role,” he says. “I was responsible for overseeing all the whiskey production for Jack Daniel's.” As the de facto voice and face of the brand, Arnett traveled to 41 countries on its behalf.

Then the opportunity for his own brand began to take shape. The idea behind Company Distilling was simple: create spirits that feel like an invitation, whether you’re new to whiskey or a seasoned aficionado.

“I called it ‘approachable complexity,’” he says. “Can you create a single bottle that the new drinker and the mature drinker can both enjoy equally?”

The flagship whiskey is a wheated bourbon finished with maple wood, a nod to Arnett’s passion for wood finishes that go beyond the traditional oak barrel. Company Distilling also offers an apple wood-finished whiskey, a cherry wood-finished rye, and is experimenting with other woods nodding to the land around them (stay tuned for a mulberry product in honor of Lynchburg).

The brand began in Thompson’s Station, offering a neighborly vibe perfect for walking up, grabbing a cocktail and chatting with old friends. Company Distilling acquired H Clark Distillery in 2020 and planted roots that have grown to two additional locations.

Townsend, a quaint riverside town on the peaceful side of the Smokies, deviates from Thompson’s Station by serving as a “brewstillery.” With so many campers, hikers and outdoor adventurers in the area, it was important to offer a cold beer to cool off after a day outside.

And then there’s Lynchburg, a brand-new destination distillery just down the street from Arnett’s former employer. He hopes Company Distilling complements its neighbor Jack, offering a casual hangout for visitors to keep the spirits flowing after a guided tour.

In addition to its award-winning bourbons and craft beers, Company Distilling also produces Nothing Vodka, a cheeky, affordable vodka brand perfect for spiking a little orange juice around the campfire. There’s also an award-winning gin (produced on the same still from the former H Clark Distillery) and a lineup of eight flavored moonshines under the Ace Gap label, paying tribute to Tennessee’s rich logging and moonshining history.

“If you’ve got a cooler with some cups, milk, lemonade or limeade, we can basically pair up a bottle with that and you can make something that tastes pretty nice,” he says.

With three diverse distilleries in the market, Arnett encourages people to visit them all: gather with friends in Thompson’s Station, head to Lynchburg for a Jack Daniel’s tour followed by a cocktail, then truck it to Townsend for a hike cooled down with a cold beer.

Directions

• .5 oz Maple Simple Syrup (Ratio 1:1 Water/Maple Syrup)

• 1 dash Fee Brothers Black Walnut Bitters

• Splash of Soda Water

• 1 Cherry

• 1 Orange Peel

Directions

1. Add bourbon, maple simple syrup, and bitters to a cocktail mixing glass with ice. Stir rapidly for 30 seconds until mixed and chilled. Strain into a rocks glass over a large ice cube. Add a splash of soda water. Garnish with cherry and orange peel.
