Meet the Browns

If you’ve ever wondered where to find the best brunch spot, a cozy corner for date night, or the hidden gem that locals keep to themselves, Kelly and Akeem Brown are your go-to guides. Proudly serving as an active duty, faith-filled Air Force family here in Surprise, the Browns have turned their love of food and community into a flavorful journey they’re eager to share. With big hearts and even bigger appetites, they’re shining a light on the restaurants and small businesses that make Arizona such a special place to call home.

“Food has always been our love language. We believe a great meal can bring people together and create lasting memories,” Kelly says with a smile.

What began as casual date nights and family dinners soon grew into something bigger. Friends and neighbors started asking for their recommendations, and before long Kelly and Akeem realized they had an opportunity to give back to the community they love. That’s when they launched Beyond Surprise: AZ Eats & Adventures with The Browns, a growing hub where locals can find honest reviews, restaurant spotlights, and insider tips for dining out across Arizona.

“Everyone is welcome at our table,” Akeem explains. “We want this to be a place where people share ideas, connect, and celebrate the incredible food culture here.”

While food is at the heart of their platform, the Browns see Beyond Surprise AZ as much more than a review page. It’s a way to connect neighbors, support small businesses, and encourage families to try something new. Whether it’s a locally owned taquería tucked away in a strip mall, a trendy fine dining spot perfect for celebrations, or the food truck you might have driven by a dozen times, Kelly and Akeem are passionate about giving these places the recognition they deserve.

“Arizona’s food scene is so diverse. From small-town treasures to urban hot spots, every restaurant has a story worth telling,” Kelly notes.

The best part of Eats & Adventures with The Browns is that it’s not just about Kelly and Akeem; it’s about everyone. Their Facebook group, Beyond Surprise: AZ Eats & Adventures with The Browns, invites locals to swap recommendations, share photos of their favorite dishes, and cheer on family-owned businesses. From date night ideas to ladies’ brunch recommendations, family dinner picks, or large group celebrations, the Browns provide inspiration for every occasion, while encouraging community voices to join in the fun.

The Browns also see their work as an extension of their Air Force values: service, connection, and

community. “We love people,” Akeem says simply. “This is our way of serving the community we call home.”

There’s something about October that invites us back into the kitchen. As the air turns crisp and the season shifts, I find myself baking and cooking more. I love whipping up our favorite fall recipes that fill my home with warmth and familiar flavors that bring our family together around the table. From cookies and cheesecakes to hearty soups simmering on the stove, fall inspires me to embrace the joy of creating and sharing.

Of course, my greatest joy isn’t just in the baking itself, it’s in sharing it. With four daughters at home and a husband who can’t get enough, I always have eager taste-testers for whatever I’m pulling out of the oven. They each have their favorites, and I love seeing their faces light up while they enjoy the flavors of fall.

Food has a way of bringing us together, and some of our best family moments happen right around the kitchen table, forks in hand. That’s what makes this October issue so special. Our Food & Drink Issue celebrates those flavors and traditions that turns meals into memories. Inside, you’ll find inspiration for cozy fall recipes, the best local restaurants, and drinks that warm you up as the evenings get cooler. BRINGING FAMILY RECIPES TO SURPRISE DINING

For Chef Mario Rana, the restaurant industry isn’t just a career, it’s a calling passed down through generations. With his wife and daughter by his side in Surprise, Mario is preparing to open the newest location of Osteria Mia this fall, adding to a growing portfolio that already includes Osteria Mia in Norterra, The Stetson Social, and Tiki Star.

Mario’s story begins with family. His grandfather owned restaurants in New York City and Phoenix, while his parents ran their own ventures, including a restaurant and nightclub. By age 15, he was already working in cafés, and by college, he was spending more time in kitchens than classrooms. “Cooking was the first time I was able to express myself artistically,” he says, recalling the moment he realized food was his true passion.

He immersed himself in cookbooks and chef autobiographies, developing a personal style rooted in tradition but always evolving. Many of Osteria Mia’s beloved dishes trace back to recipes handed down by his parents and grandfather. “Many of the recipes at our Italian restaurant are family recipes my parents taught me,” Mario explains. Before his grandfather passed, he even came into the restaurant to share his favorite recipes from decades of running Italian kitchens.

The Rana family is deeply embedded in the restaurant scene. His parents still own and operate eight restaurants, while his brothers contribute in various ways, from ownership to support. At his own concepts, Mario experiments with specials, refining dishes through customer feedback before introducing them to the full menu.

Favorites include the Diavolo Pizza at Osteria Mia, the Spam Cubano at Tiki Star, and the indulgent Jalapeño Popper Burger at The Stetson Social. These signature items reflect Mario’s playful yet elevated approach to food. “I can eat our Diavolo Pizza every day, it’s the perfect balance of sweet and spicy,” he admits.

Restaurant life, however, comes with constant demands. “This industry isn’t for the weak; it’s a 24-hour job,” Mario says. Yet, when he does step away from the kitchen, you’ll find him with his wife and daughter on road trips, at concerts, or enjoying backyard barbecues.

As Surprise prepares to welcome Osteria Mia, Mario hopes the West Valley continues to embrace locally owned restaurants. For him, it’s about more than food; it’s about culture, connection, and building community around the table.

Stein Erickson Sticky Toffee Pudding

Date Cake

ingredients:

• Dates, pitted – 6.25 oz

• Water – 1 ¼ cup

• Baking soda – 1 tsp

• Unsalted butter, soft – 2 oz

• Sugar – ¾ cup

• Eggs – 2

• All-purpose flour – 1 ¾ cup

• Baking powder – 1 ¼ tsp

• Salt – ¾ tsp

• Vanilla extract – 1 tsp

directions:

Step 1. Boil water and whisk in baking soda; pour over dates. Cover and rest 30 minutes, then puree slightly chunky.

Step 2. Whisk flour, baking powder, and salt; sift and set aside.

Step 3. Cream butter and sugar until pale and fluffy. Add eggs one at a time, scraping between.

Step 4. Alternate adding dry ingredients and date puree; mix in vanilla. Finish mixing by hand until smooth.

Step 5. Scoop batter into molds, ⅔ full. Bake at 350°F for 15–25 minutes until browned and springy. Unmold and cool.

A rich date cake soaked in warm toffee sauce, perfected for high altitude indulgence.

This dessert involves two steps: baking the date cakes and making a syrup to soak and warm them in. The recipe has already been converted for high altitude, so if you live at sea level, double the baking powder. Many measurements are in weight, so a digital kitchen scale is recommended. This recipe makes 10–12 puddings. Dates can be purchased fresh in the produce section or dried (increase water by ½ cup and soak 15 extra minutes if dried). A silicone muffin pan works best, though liners or buttered/floured pans also release cakes well. Baking time varies—check every 5 minutes. For “family style,” arrange cakes in a greased 9x13 pan, cover with hot toffee sauce, wrap in foil, and bake at 350°F for 12 minutes.

Toffee Sauce

ingredients:

• Butter – 9 oz

• Light brown sugar – 7 oz

• Light corn syrup – 3 oz

• Heavy cream – 10 oz

• Fleur de Sel – ¾ tsp

• Vanilla bean (or 1 Tbsp extract)

directions:

Step 1. Combine all ingredients in a large pot (split vanilla bean, add seeds + pod if using).

Step 2. Bring to a boil, stirring occasionally.

Step 3. Reduce to a gentle simmer for 5 minutes. Strain.

Step 4. Pour ¼ cup sauce into ramekins, place a cake inside, then cover with another ¼ cup sauce. Wrap tightly with plastic.

Step 5. Refrigerate until ready. Microwave wrapped cakes for 1 minute before serving.

Step 6. Unmold into bowls, drizzle with extra sauce, and serve with vanilla ice cream.

INGREDIENTS

• 3 oz goat cheese

• Fresh arugula

• ¼ cup caramelized onions

• 1 pear, thinly sliced

• Honey, to taste

• Butter for toasting the bread

• Rotisserie chicken breast thinly sliced

• Sourdough bread, buttered (optional)

INSTRUCTIONS

Spread goat cheese on one side of the bread. Top the cheese with arugula, caramelized onions, sliced pears and chicken breast. Drizzle with honey. Top with remaining slice of sourdough bread. Use a griddle or panini press to heat the sandwich.

• 1 grilled chicken breast

• 2 slices pepper jack cheese

• 2 slices cooked bacon

• 1 tbsp fruit jam (fig, raspberry, or jalapeño recommended)

• A handful of fresh arugula

• 3–4 cherry tomatoes (halved)

• 1 tbsp garlic aioli

• 1 brioche bun (toasted)

INSTRUCTIONS

Lightly butter the inside of the bun and toast in a skil let or oven until golden brown. Spread a layer of garlic aioli on the bottom bun. Add the sliced grilled chicken breast. Place the pepper jack cheese over the hot chicken to slightly melt it. Layer on the crispy bacon slices. Add halved cherry tomatoes and a small handful of arugula. Spread the jam on the top bun. Enjoy!

Grilled Chicken Sandwich

INGREDIENTS

• French bread loaf, halved lengthwise

• 2 cups cherry tomatoes

• 2 garlic cloves, minced

• ¼ cup olive oil

• 1 tsp thyme or rosemary

• Salt, pepper, chili flakes (optional)

• 8 oz fresh mozzarella, sliced

• 1 cup arugula

• 2–4 tbsp pesto (thinned with olive oil)

• Balsamic glaze

• Optional: 4 slices prosciutto

• Fresh basil

INSTRUCTIONS

Toss cherry tomatoes with olive oil, garlic, herbs, salt, and pepper. Roast at 375°F for 20–25 minutes until soft and caramelized. Brush bread with olive oil. Toast in the oven at 375°F for 5–7 minutes until crisp. Layer mozzarella slices on the toasted bread. Add fresh basil. Return to the oven for 3–5 minutes, just until melted. Optional: Top with roasted tomatoes, arugula, and prosciutto (if using). Drizzle with pesto and balsamic glaze.

Roasted Tomato & Mozzarella Caprese French Bread Savory Roast Beef with Horseradish Cream

INGREDIENTS

• 2 slices crusty bread (sourdough, ciabatta, French bread)

• 6 oz roast beef

• 2 slices provolone cheese

• 2 tbsp butter (for toasting)

• 2 ½ tbsp mayonnaise

• 1 tbsp horseradish sauce

• 1 tsp Dijon mustard

• Arugula

• Cherry tomato

• Caramelized onions

INSTRUCTIONS

Toast the bread. Butter one side of each slice and toast in a skillet until golden. Heat roast beef briefly in a pan. To make the spread, mix mayo, horseradish sauce, and Dijon. Spread on the toasted bread. Layer roast beef, cheese, and broil briefly to melt. Add arugula, tomato, and caramelized onions if using. Top with the second slice of bread.
