Dear Readers, Happy Fall!
Our October issue is all about food!

This time of year, I am taken back to my memories of southwestern Idaho, when every year at the opening of pheasant season in midOctober, my parents hosted mid-western pheasant hunters, along with dear friends Jere Long and Jim Buck of Boise. Dad would leave an acreage of unharvested corn, the dried stalks still standing, for the hunters, but the day was more about enjoying great company and sharing a meal, than the hunting.
My parents and our friends established traditions, as we sat around the old oak table in the country kitchen, when Mother would make at batch of chili, and bake apple and pumpkin pies and homemade whole wheat bread—fresh from the oven. My brother Jake reminds me Jim and Jere traditionally brought us a big box of Almond Joy candy bars. We reveled in our friendship for so many years.
It is true—that food brings us all together—and whether we are sharing a meal with loved ones or enjoying a night out on the town, the time spent around the table with great company is always a pleasure to recall.
We trust you will enjoy this October issue and be inspired to explore our growing community and discover new culinary adventures of your own.

Kristine Barber, former music educator and community arts advocate, received the 2024 Excellence in Art Award by the St. George Arts Commission at the annual Arts Summit. Kris began her teaching career in the Washington County School District. In addition to her involvement in arts education, Kris served as the associate conductor of Lieto Voices!, a community choir. In 2016, she was awarded the Utah Music Educators Association Outstanding Jr. High Educator.

At the St. George Arts Summit, Phil Tuckett was presented the 2024 Excellence in Art Award by the St. George Arts Commission. Phil, football player turned filmmaker and winner of 30 Emmys, taught at Dixie State University (renamed Utah Tech). He began his professional football career with the San Diego Chargers, and later, professor of the film department until his retirement. He captured some of the most memorable events in NFL history.

Elevate simple chicken meatballs with a Thaiinspired curry broth with cucumber relish
• 1 pound ground chicken
• 3 cloves garlic, minced
• 4 scallions, chopped
• 1 bunch, cilantro, chopped
• 4 tablespoons breadcrumbs
• 1 whole egg
• 2 tablespoons red curry paste
• 1-inch ginger, grated
• 1 bag baby spinach
• 2 cans coconut milk
• ½ cups chicken stock
• 3 tablespoons parsley, minced
• 1 lime, juice and zest
• Steamed rice for serving
Sauté scallions, 2 teaspoons minced garlic and 2 teaspoons minced ginger in a sauté pan until fragrant. Remove from heat and set aside to cool.
In a large bowl combine chicken, breadcrumbs, egg, cilantro, and onion-garlic mixture. Mix gently and form into small meatballs. Sauté in skillet over medium heat until nicely browned. Transfer to a plate, leaving 1 tablespoon drippings in the pan. Add remaining garlic and ginger. Sauté until fragrant. Add curry paste and warm to release aroma. Add coconut milk and chicken stock and bring to a simmer. Return meatballs to the broth and simmer until meatballs are cooked through. Add lime juice, zest, spinach and chopped parsley and heat through. Serve over steamed rice.

This refreshingly zippy cucumber peanut relish or ajad is the perfect accompaniment to serve with these meatballs
• 2 tablespoons rice wine vinegar
• 1 teaspoon fish sauce
• 2 teaspoons granulated sugar
• 1 tablespoon canola oil
• 1 cucumber, halved lengthwise, seeded and sliced crosswise into 1’4” thick slices
• 1 carrot, peeled and sliced into thin rounds
• 1 bunch, cilantro, chopped
• ¼ red onion, thinly sliced
• ¼ cup dry roasted and salted peanuts, coarsely chopped
• 1 teaspoon bottled crushed red chili paste (or to taste)
• salt and pepper
In a small bowl, whisk vinegar, fish sauce, sugar, and oil until well combined. Add cucumbers, carrot, cilantro, onion and peanuts. Mix gently and add 1 teaspoon crushed red chili paste or to taste. Adjust salt and pepper.

Doug Gerpheide aims to showcase Utah's best

As his knife expertly slides through a hunk of sashimi-grade tuna, the ink on Doug Gerpheide’s arms tells a story. The characters and artwork speak of his heritage, his love of Asian culture, and most importantly, his passion for food. That passion—first ignited while cooking alongside his grandmother, who emigrated from Japan, and later refined at Le Cordon Bleu in Portland—took firm root over



decades as an executive chef at such venues as Colonial Country Club in Fort Worth, Texas; multiple restaurants in Salt Lake City; and wood.ash. rye in St. George.
Now, Doug is fusing his influences into the new menu at Social District Boutique, located in The Shoppes at Zion. From late night sushi to Korean barbecue flatbreads, artisan charcuterie to full entrees featuring steaks and seafood, Chef Doug’s offerings have a singular goal.
“We want to make sure that everything we’re doing has an intention, and that every dish is super high-quality and fits with what we’re trying to accomplish,” Doug noted. “Also, we want to showcase Utah as much as possible, with locally sourced items such as produce and meats, and Utah-made cheeses, wines, beers and spirits.”
What Doug and his team hope to create will be unique in St. George: An upscale “speakeasy” environment, where patrons can enjoy higher-end cuisine, a sophisticated lounge vibe, live music, and even—on Friday and Saturday evenings—late-night small bites and signature cocktails until 1 a.m.
At the recent “Dinner on Main” event, held during September’s Dixie Days celebration, Doug’s six-course meal embodied his take on American cuisine, with a decidedly Asian (and southern Utah) aesthetic: Sushi plates were followed by braised pork-belly and Utah steak (the latter topped with togarashi aioli), as well as shortcake crafted with local peaches.
“That was a way to showcase my abilities,” Doug acknowledges, “but much more importantly, I wanted to highlight what a very cool concept my partners—Adam and Kerry Anne Hunt—created when they opened Social District. Ultimately, we want the Bistro to be a space where you come in, you have some cool food, and just hang out with friends and have a good time.
But it will be a ‘higher-level hang’…so we want every detail to be perfect.”

While I'm not a pie enthusiast, Boston Cream Pie holds a special place in my heart due to its exquisite texture. That's why I created a miniature version of this classic dessert. It's perfect for satisfying your sweet tooth without overindulging!

Cookies:
• 8 ounces (2 sticks) butter, softened
• ¾ cup sugar
• 2 large eggs
• 1 teaspoon vanilla extract
• 2 ½ cups all-purpose flour
• 1 teaspoon baking powder
• 1 teaspoon salt
Cream Filling:
• 8 ounces milk
• ¼ cup sugar
• 3 ¾ tablespoons cornstarch
• ½ teaspoon salt
• 2 egg yolks
• 1 teaspoon vanilla
Chocolate Topping:
• 1 cup semi-sweet chocolate chips
• 4 ounces heavy cream
Preheat oven to 350° F. In large bowl, beat butter and sugar together until creamy. Add eggs and vanilla, mixing well. Gradually stir in flour, baking powder and salt until dough forms. Shape the dough into small balls and place on a baking sheet. Flatten slightly with the bottom of a glass. Bake for 10-12 minutes, or until edges are lightly golden. Let the cookies cool on a wire rack.
Cream Filling: In a saucepan, whisk together milk, sugar, cornstarch and salt. Cook over medium heat, stirring constantly, until mixture thickens. In a small bowl, lightly beat the egg yolks. Add small amount of hot milk mixture to the yolks to temper them; return yolk mixture to saucepan. Continue to cook for additional 2 minutes, stirring constantly. Remove from heat and stir in vanilla. Let cream filling cool to room temperature.
Chocolate Topping: In microwave-safe bowl, combine chocolate chips and heavy cream. Microwave in 30-second intervals, stirring between each, until chocolate is completely melted and mixture is smooth.
Assembly: Take one cooled cookie and place a spoonful of the cream filling on the flat side. Top with another cookie, flat side down, to create a sandwich. Dip top of each cookie sandwich into the chocolate topping. Allow chocolate to set by placing cookies on parchment paper until chocolate is firm.
Total Time: 1 hour
Servings: 24 bites











This hearty chicken noodle soup is the perfect comfort food that is packed with nutritious goodness. This pairs perfectly with homemade beer bread or a sourdough loaf.
INGREDIENTS:
• 8 cups chicken broth (add more if desired)
• Whole fryer chicken, cut in chunks or shredded
• 5 celery stalks, sliced
• 8 carrots, sliced
• ½ onion diced
• 4 tablespoons butter
• 1 teaspoon italian seasoning
• ¼ cup half and half (optional)
• 1 package egg noodles
• Salt and pepper to taste
DIRECTIONS:
In a large stock pot, add 8 cups of chicken broth. Dice carrots, celery and onion and add to the broth. Bring to a boil, and reduce to medium heat until the vegetables are soft. In the meantime, skin and cube 1 whole fryer chicken and add to the stock pot. Next, add egg noodles (frozen Reames homemade egg noodles are my favorite) and let boil until noodles are cooked. Add butter, half and half, salt, pepper, and Italian seasoning. Simmer on low until ready to serve.

• 2 eggs
• Dash of flax milk

• ½ sweet potato, cubed
• ¼ green onion, chopped

1. Whisk together your eggs, milk, and spices.
2. Prepare a skillet over medium heat with your ghee butter or avocado oil. Cook the sweet potato, green onion, and broccoli for 5-8 minutes. Add the spinach and cook for 1 more minute.
3. Pour your egg mixture into the skillet and scramble together until the eggs are your desired texture, roughly 3 minutes.
4. Immediately add your cooked salmon, seeds, parsley, or hot sauce and enjoy while it’s still hot!
