Cultivating Wellness: Imaging, Family, and Community

For Amanda and Logan Lackey, the romantic spark struck while they were study partners at medical school. “It’s safe to say that we fell in love over Guyton and Hall Textbook of Medical Physiology and Gray’s Anatomy,” Amanda says.

Consider it destiny. They both felt a calling to serve others through medicine; they chose radiology since it is a challenging specialty that encompasses anatomy and physiology of the entire human system. Breast imaging in particular piqued their interest due to its direct patient care.

“We liked that we could offer comfort and hope to our patients at a vulnerable time,” Amanda explains.

Today, as owners of Breast Imaging of the Ozarks in Springfield the Lackeys are doing just that — in a community they love. Their medical training and residencies saw the couple moving several times over 11 years. When they had the opportunity — finally! — to plant roots, Springfield opened its doors wide, in the form of two fellowship-trained breast radiologist positions that opened at just the right time at Mercy Hospital.

“Springfield was the perfect size, warm and welcoming,” Logan says. “We noticed right away how local restaurants, bars and boutiques were revered. We’ve also seen a boom in local medical and wellness clinics.”

They find the most rewarding aspect of their business is reaching patients who have either never had a mammogram out of fear or who swore off them after a bad experience. “By getting women in our community regularly screened, we can catch breast cancer when it is small, localized and treatable, saving lives,” Amanda says. “We are the only practice in the area doing contrast-enhanced mammography, an emerging technique comparable to a breast MRI but at a much lower cost.”

The Lackeys designed their clinic — inspired by a Southwest spa — to put patients at ease. As a youth, Amanda enjoyed family vacations to Santa Fe and Arizona, where she says she found “a certain peace” and sought to replicate that experience by offering warm robes and refreshments, diffusing essential oils and playing calming music. “Breast cancer screening can be anxiety-producing, which is why women delay or avoid them,” she says. “Our vision was to create a welcoming space that will give women such a great experience that they actually will look forward to returning.”

As the Lackeys continue to build their business in Springfield, they alternate traveling to other hospitals’ breast imaging clinics to fill in when needed, leaving the other parent to care for their seven children, which includes two sets of twins.

Directing a busy medical practice and managing a large family takes serious discipline and dedication — well-honed qualities that Amanda credits to her time competing on the swim team at Miami University in Ohio on an athletic scholarship. After getting the kids to school, she settles into the routine of the breast center, then returns home after the school day to take the kids to their various activities and sports.

To stay fit, the couple weight-trains up to four times a week and include their children. Nutrition is important. They eat meals prepared on Sunday or enlist the services of food preparation companies such as SC Fuel. In addition, Logan adds, their rice cooker and air fryer is essential. “With seven kids and a busy work life it is imperative to have tools to whip up a quick and healthy dinner,” he says.

And from time to time they splurge on dining out: Amanda’s favorite is Cesar’s Old Mexico for margaritas and enchiladas; Logan’s go-to is the Architect burrito from Architect Coffee Company. A go to meal at home is Enchiladas

- citrus margarita-marinated grilled flank steak with rich black bean enchiladas. The marinade, made with lime juice, orange juice, tequila, and brown sugar, gives the steak a zesty flavor. After a quick 15-minute marinade, the steak is grilled for 4–5 minutes per side for a medium-rare finish. The enchiladas are filled with a sautéed mixture of onions, garlic, black beans, and goat cheese, then baked with Jack cheese until melted.

“We try to live the 80/20 Rule: We eat healthy at least 80 percent of the time and allow ourselves to indulge in moderation the remaining 20 percent,” Logan says. “We prioritize animal protein and eating whole, unprocessed foods as much as possible.”

To recharge, the couple swears by a daily nap — 20 minutes to an hour. In

addition, Logan, an avid golfer, hits the links weather-permitting whenever he can and Amanda loves to get lost in a novel or occasionally indulge in a massage or spa treatment.

During October — Breast Cancer Awareness Month — the couple is even busier. Amanda is on the board of directors of the Breast Cancer Foundation of the Ozarks, which will hold “Hooked on Dance,” its largest annual gala in October. (The couple also are part of the foundation’s free screening mammogram program year-round.) In addition, they support the local chapter of the American Cancer Society’s Making Strides Against Breast Cancer, which hosts an annual walk and luncheon, and Turn the 417 Pink Soirée hosted by Urban Grounds.

QUICK FALL RECIPE: MARGARITA FLANK STEAK

INGREDIENTS:

• Flank steak

• Lime juice

• Orange juice

• Tequila

• Black beans

• Goat cheese

• Jack cheese.

INSTRUCTIONS:

01. Marinate steak in citrus and tequila.

In the late 1980s, nestled in Ft. Smith, Arkansas, a humble kitchen was born from the rich heritage of the Hernandez family. Under the name La Mexican Kitchen, Martin Hernandez and his sister Lucy set out to bring the authentic flavors of their homeland, San Miguel de Allende in Guanajuato, Mexico, to the plates of their new community. Growing up in a family of 15 siblings, Martin and Lucy understood the importance of family and hard work, and they infused these values into their business. By 1989, the Hernandez family had planted new roots in Springfield, Missouri, where they rebranded as Primas Mexican Kitchen. They were driven by a singular vision: to create a welcoming space where families could come together and enjoy the traditional flavors of Mexico at an affordable price. With an emphasis on fresh, quality ingredients and madefrom-scratch recipes, Primas quickly became a beloved dining destination.

“We wanted to bring the essence of our childhood meals to the table,” Marisa Hernandez shared, reflecting on her father’s vision. “In Mexico, eating out wasn’t common, and even having meat for dinner was considered a luxury. Primas was our way of sharing the flavors and traditions we grew up with, in a way that everyone could enjoy.”

hormone-free meats to freshly prepared dishes, we want our guests to feel good about what they’re eating.

The culinary roots of San Miguel have been a guiding force in developing Primas’ menu, with traditional techniques and ingredients at the forefront. The result is a diverse array of dishes that cater to all tastes, ensuring that everyone who dines at Primas finds something they love.

But as time passed, the Hernandez family felt the pull to expand their culinary horizons. By 2023, a new concept emerged, one that would allow them to explore different flavors while staying true to their ethos of family and community.

“Bistro 160 was an exciting new adventure for us,” Marisa explained. “We wanted to offer something different—a place where people could come together for breakfast, brunch, or lunch and experience a fusion of American and Southern flavors with a touch of our Latin heritage.”

The menu at Bistro 160 is a testament to this vision. Take the Green Chile Omelet, for instance, which marries the smoky heat of green chile salsa with shrimp for a breakfast dish that’s bursting with flavor. Or the Harper Toastie, a delicious combination of fresh sourdough bread, pesto, crumbled queso fresco, tomatoes, and onions, topped with a perfectly cooked egg and paired with diced sweet potatoes drizzled with agave syrup.

“We’ve always been committed to using healthier, whole ingredients in our kitchens, and Bistro 160 is no exception,” Marisa said. “From hormone-free meats to freshly

prepared dishes, we want our guests to feel good about what they’re eating.”

Recently, Bistro 160 expanded its offerings to include dinner service, complete with a carefully curated wine list and signature cocktails like Bloody Marys and flavored Mimosas. The dinner menu, overseen by Brandon Blaine, features hearty entrees like the BourbonGlazed Sirloin, served with crispy green beans and loaded mashed potatoes—a dish that’s already becoming a local favorite.

“We’ve worked hard to ensure that Bistro 160 offers the same welcoming experience that our guests have come to love at Primas,” Marisa emphasized. “It’s about inviting people to our table, whether they’re joining us for breakfast, lunch, or dinner.”

The Hernandez family’s dedication to their community extends beyond their kitchens. For over 35 years, they’ve been active supporters of local schools, and many of their staff members are high school and college students from the area. Martin, his wife Terry, and Marisa can often be found in the restaurants, along with their youngest daughter Emma and granddaughter Harper.

“We’re proud of the legacy we’ve built,” Marisa reflected. “Our guests are like family to us, and we’re always excited to welcome them into our restaurants. Bistro 160 is our latest chapter, and we can’t wait for everyone to experience it.”

October is cabin season. The leaves, resplendent in orange, yellow and red, rippling over the mountains. The birds singing in the overhead boughs. The crisp breeze swirling with the still-warm-on-your-cheeks sunshine. Family and good friends laughing over s’mores made over an outdoor fire, the harvest moon hanging low overhead.

Autumn is particularly glorious in the Ozarks, notes Cortney Gabel, who enjoyed escaping to her stepfather’s cabin in Hootentown while a college student at Missouri State University.

The cabin remained in Gabel’s mind after she graduated with a degree in business management and a minor in interior design and began working full-time in real estate. “I remembered the secluded cabin vibes it gave me, and I decided I wanted to start a new business adventure,” she says. “The vision of a unique rustic-meets-creative-modern cabin filled my brain.”

In 2020, she purchased the cabin and set to work renovating it, drawing on skills she honed while studying abroad in Italy and Greece during college and from what she learned from her grandfather and step-father — her “construction role models” — to create a woodland retreat for families, couples and friends.

She opened Ivory Gabel Cabin that October. Since then, her company, Gabel Cabins, has expanded to include two other properties between the Rolla and Salem areas, each with their own feel and theme: Bronze Gabel, a custom-build treehouse-like steel-framed cabin with bronze metal accents and Emerald Gabel, a renovated log cabin with hints of emerald green.

Each Gabel Cabin has a story. For example, Hootentown, the site of Ivory Gabel, dates to the early 1900s. “It was a development area. The railroad and lumber industries were supposed to build up the town in expansion and growth,” she says. “However, the Frisco Railroad did

not come to this area as promised, which stopped growth.”

Today, the Hootentown Bridge remains, and Hootentown Canoe Rental is located by the bridge. The family-owned business has been around since 1993 and offers tubes, kayaks, a grocery store, camping and fishing. “Guests at Ivory Gabel Cabin can walk down to the James River for any outdoor adventure,” she notes.

Over the years, Gabel has delighted in hosting guests and weddings as well as offering workshops and special events, such as yoga retreats, candle-making classes, holistic wellness retreats, nature

camps and bird watching. She is happiest when she is helping others create memories, such as offering guests add-ons for events, such as a pretzel bar or coffee bar.

Like her other two properties, Ivory Gabel Cabin is encircled by forest, allowing guests to feel they have escaped to the woods, but with all the amenities — and special touches. “Guests can add on gourmet s’mores bar or Champagne prepared at arrival,” Gabel says. “And newlyweds receive a homestead breakfast basket.”

Born and raised on a cattle farm in Salem, Gabel understands the value and hard work that goes into homesteading

and supports farms and artisans, such as Creek & Hollow Homestead, Zimmerman Meats, Ozark Mountain Coffee Company and Wofford Homestead candles. Most of the artwork in the cabins are created by local artists and are available for purchase. And pumpkins. Let’s not forget the pumpkins. “We buy nearly 300 pumpkins from a local pumpkin patch each year to decorate the cabins’ driveways, porches and surroundings,” Gabel says. “In November guests can take a pumpkin home with them. Plus, our deer friends love the pumpkins as a tasty snack and visit often.”

Allegretto Vineyard Resort — your next fall road-trip destination

In the heart of Paso Robles sits Allegretto Vineyard Resort — a true wine oasis. Approaching the resort, you can feel the atmosphere begin to take over. Passing by other local wineries and pulling into the resort, you experience the blending of Italian heritage and world-class wines. The common theme at the resort is the Cello; everything from the shape of the property (the north edge of the property curves much like the instrument) to the design of the courtyard, the names of the wines, and the name of their on-site restaurant.

Allegretto’s resort includes over seven acres, with one of its three local vineyards sitting directly on the property. We had a guide to lead us through our tasting, giving us the full experience - working with our palettes to get the perfect taste from each varietal.

The tasting list included a 2022 Cello Chardonnay, which is finished in stainless steel barrels, and was light, crisp, and citrusy. The 2019 Heart of the Vibe, a blend of Petit Verdot, Cabernet Sauvignon, Malbec, and Tannat, had hints of lily and lavender and reminded me of my days in the Oregon wine country. The 2018 Cabernet Sauvignon from the Willow Creek Vineyard was a surprise because of how clean it finished. We ended with their 2018 Tannat from their Allegretto Vineyard on property.

As someone early on in their wine journey, each tasting was truly unique and tasteful. The progression from Chardonnay to Tannat helped the palette develop and enjoy the flavors and notes of each unique bottle. The robust Tannat was easily the favorite. The grapes originated from southern France through Uruguay and are now grown across the globe. With notes of butterscotch, cherry, and tobacco, it was rich and smooth. Tannat is also touted as one of the “healthiest” wines due to its high level of antioxidants.

Shortly after the tasting, there was a little time to explore the resort itself, from the breathtaking art pieces to the peaceful courtyard, bocce ball court, and the chapel. The most impressive piece may have been a cross-section of a sequoia tree that was felled in 1952, dating back to before 214 BC (before the Great Wall of China was built).

Moving on to dinner, we sat down at Cello Ristorante, the on-site restaurant and bar. Our server picked out their top dishes and drinks that were currently on the menu. She also informed us about the fact that they have not only resort guests who eat here but also regular locals.

I started off with one of Cello’s signature cocktails, the New Fashion — an amazing twist on the regular Old Fashioned that includes Basil Hayden Bourbon, Nitro-Infused Vanilla Espresso Turbo (made in-house and infused with a cinnamon smoke directly from a fresh cinnamon stick, an orange, and Angostura bitters.

We started our meal with the Shrimp & Risotto dish, made with garlic roasted shrimp, spring peas, mascarpone, baby arugula, pecorino romano, truffle, tomato confit, and Calabrian romesco. As I took my first bite, it was almost an out-of-body experience. The blends of flavors from the garlic shrimp, bitter arugula, and smooth cheeses didn't last long on the dish.

Shortly after, the 16-ounce Lamb Rack and a glass of the 2017 Tannat arrived. After admiring the truly beautiful plating (stacked upright and together), it was time to revel in the dish. Paired with fresh grilled vegetables, a buttermilk and confit garlic mash, and drizzled with a Tannat demi-glace, this dish was more impressive than the first dish, which I thought would be hard to top.

Finally, it was time for the Triple Chocolate Bomb. A chocolate soufflé cake with raspberry dark chocolate mousse, framboise scented ganache, topped with toasted almonds, chocolate chunks, fresh raspberries and blackberries, and a white chocolate sauce. The softness of the cake and mouse, with the crunch of the almonds, made this subtle, sweet, and too good to pass up and completely devour.

CHICKEN NOODLE SOUP

This hearty chicken noodle soup is the perfect comfort food that is packed with nutritious goodness. This pairs perfectly with homemade beer bread or a sourdough loaf.

INGREDIENTS:

• 8 cups chicken broth (add more if desired)

• Whole fryer chicken, cut in chunks or shredded

• 5 celery stalks, sliced

• 8 carrots, sliced

• ½ onion diced

• 4 tablespoons butter

• 1 teaspoon italian seasoning

• ¼ cup half and half (optional)

• 1 package egg noodles

• Salt and pepper to taste

DIRECTIONS:

In a large stock pot, add 8 cups of chicken broth. Dice carrots, celery and onion and add to the broth. Bring to a boil, and reduce to medium heat until the vegetables are soft. In the meantime, skin and cube 1 whole fryer chicken and add to the stock pot. Next, add egg noodles (frozen Reames homemade egg noodles are my favorite) and let boil until noodles are cooked. Add butter, half and half, salt, pepper, and Italian seasoning. Simmer on low until ready to serve.

TOMATO BASIL SOUP

INGREDIENTS:

• 2 cans diced tomatoes

• 2 ½ cups vegetable broth

• ½ cup heavy whipping cream

• 1 onion, diced

• 3 cloves minced garlic

• 3 tablespoons olive oil (or alternatively, 1 stick butter)

• ½ cup chopped fresh basil

• Salt and pepper to taste

This classic tomato basil soup is easy and quick to make and is the perfect way to get the rustic, tangy and savory flavors of this italian dish.

DIRECTIONS:

Toss the butter or olive oil in the pan. Add onion, and saute until the onion is translucent and soft. Add minced garlic, and saute for 2 minutes. Next, add canned tomatoes and simmer. Transfer to a blender, and puree until smooth. Add the fresh basil and heavy cream. Transfer mixture back to the pan to thoroughly heat, and salt and pepper to taste. Top with fresh parmesan and chopped basil, and serve with toasted italian bread.

CREAMY BUTTERNUT SQUASH SOUP

For a healthy dose of vitamin A, enjoy this creamy soup that boasts a robust, rich butternut flavor. For an easier assembly buy pre-cut butternut squash.

INGREDIENTS:

• 6 cups cubed butternut squash

• 1 small onion

• 2 cloves garlic, minced

• 6 cups water

• ½ cup heavy whipping cream

• 1 teaspoon fresh thyme

• 1 tablespoon salt

• Pepper to taste

DIRECTIONS:

Combine the chopped squash, onion, garlic and red pepper, and place in a large pot. Add water, and bring to a boil. Add salt and simmer for about 30 minutes. Cool and blend mixture in a blender until smooth. Transfer mixture back to pot and add heavy whipping cream and fresh thyme. Pepper to taste. Garnish with pepitas and fresh herbs.

I Got Rhythm Classical Concert Performance

The Springfield Symphony presents Narong Prangcharoen's electrifying concerto, Sound, Echo, and Silence, featuring Thai instruments and orchestra. This is only the second US performance of this mesmerizing work. Also on the program is Tchaikovsky’s Fourth Symphony, known for its dazzling pizzicato movement and a finale rich in percussive beats and flourishes.

Fall Festival at Rockbridge

Vendor booths 10 am - 6 pm. Music by Billy Wayne 3 to 4 p.m. Kids fishing, pony rides, train rides and a bounce house from 2 to 5 p.m. Fishing is $2 per kid and $10 to keep a fish with a limit of one fish. The fish cleaned on site by resort staff as part of the fee.
