Exploring community

We live in an efficiency and productivity-obsessed age. And I admit - I fall into the trap sometimes too. The trap of believing the only things worth doing are those for which I can make an exact calculation of the time, effort and investment it will cost me. The things that result in the highest level of control and least amount of uncertainty.

But the truth is -  that is really a sad and unfulfilling way to go through life.

We must leave some room for exploring, for trying new places and things, for being a beginner, even for getting lost. It is those times that are unstructured and open-ended where the space exists for connections to be made, friendships to be fostered and trust to be built.

In the last few months I've really been analyzing my relationship with my kids, how our family operates as a unit and what we love spending our time doing. The way I made this more clear, was to first focus on the things that I don't love spending time on. For our family - it’s screens. For yours, it may be too many busy weeknights away from home or not enough dinners around the table together. But I've noticed that "adventures" and “exploration” doesn't even have to be something big and crazy. It can be playing a board game out on the patio, walking a new trail or going out to find a fun cookie place we've never been to before in a different part of town. The photo is of a "big" trip to Disneyworld with our then 8 year old daughter Ava. She loved it; but for my wife and I, we REALLY needed a vacation after our Disney "vacation" to recover. We left feeling like we just completed an evening of "speed dating"- we rushed from one ride to another trying to take in as much as we could during the action packed 5 minute blurs sandwiched between hours of waiting and winding in lines. It left little in the way of true connection with one another as emotions flared rushing from place to place to our designated spot in line on time.  This year we are focused on spending time together as a family, exploring and learning about our world with each other.

Our hope is that this issue encourages you to make room for exploration. To prioritize time away from the regular schedule of life. To lose yourself on a trail or in a book. To book that trip you’ve been thinking about, to make time for the things that matter most to you, but often come last on the calendar.

Rosebud Steakhouse Brings Elevated Dining to Southlake
ARTICLE BY JENNIFER BROWN-THOMAS PHOTOGRAPHY BY SAMANTHA FARRIS, JAY GRISHAM AND ROSEBUD STEAKHOUSE
Steve Coppolillo and Angelo Eliades, co-owners of Rosebud Steakhouse in Southlake.
“I’m so OCD about how every single dish leaves the kitchen. It has to be perfect. Every time. That’s non-negotiable.” — Steve Coppolillo

In a city brimming with dining options, Rosebud Steakhouse in Southlake has managed to do something rare: set a new standard for what a steakhouse can be. With its roots in the original Rosebud Restaurants group dating back to 2000, the new Southlake location is the fourth in a growing collection—and the crown jewel of a brand renaissance led by industry veterans Angelo Eliades and Steve Coppolillo, co-founders of Creative Hospitality Concepts.

They took over the steakhouse concept during the height of the pandemic, a time when most restaurateurs were retreating. But for Eliades and Coppolillo, the challenge was an invitation. Their vision wasn’t just to serve great food, but to create an unforgettable experience—a steakhouse where craftsmanship, care, and community converge.

“At Rosebud Steakhouse, our concept is founded on delivering an elevated dining experience where no expense is spared and no detail overlooked,” the team shares. “From the moment guests walk through our doors, they step into a world where tradition meets quality—and each plate is a testament to craftsmanship and passion.” That passion runs deep.

Steve Coppolillo began cooking at thirteen in his Italian family’s kitchen. Food was never just sustenance; it was a way to connect, to celebrate, to show love. That foundational belief carried him into a degree in hospitality at Purdue, and then on to training at elite establishments like the Ocean Reef Club in Key Largo and the Cheesecake Factory’s corporate program in California. Now, after decades in the industry, he still approaches every plate like it’s his first—with obsessive precision and pride.

“I’m so OCD about how every single dish leaves the kitchen,” Steve says. “It has to be perfect. Every time. That’s non-negotiable.”

Rosebud Steakhouse is ready to serve you and your family.
A delectable dish at Rosebud Steakhouse.

That commitment is evident in every corner of the menu. Steaks are sourced exclusively from Meats by Linz, known for its USDA Prime Linz Heritage Angus beef. From genetics to packaging, every step is meticulously controlled to ensure consistency and excellence. Signature cuts like the Chicago Cut Bone-In Ribeye and Bone-In Filet Mignon deliver the richness and texture that steak lovers dream of, while seafood options like Dover Sole and Asian Sea Bass dazzle with fresh simplicity.

Still, what makes Rosebud truly extraordinary isn’t just what’s on the plate. It’s what happens around it.

Angelo Eliades, who oversees front-of-house operations, has spent more than 35 years in hospitality. While he didn’t step into ownership until later in his career, his perspective is one honed by

But Rosebud Steakhouse doesn’t stop there. House made pasta dishes, including the indulgent Steakhouse Short Rib Bolognese and classic Chicken Parmesan, bring elevated comfort to the table. Appetizers like the Lobster Got and Lambchop Lollipops set the tone from the first bite. And desserts—all made in-house— offer a final, unforgettable note. Butter Cake and Carrot Cake are guest favorites, often remembered long after the meal ends.

“At Rosebud Steakhouse, our concept is founded on delivering an elevated dining experience where no expense is spared and no detail overlooked. From the moment guests walk through our doors, they step into a world where tradition meets quality—and each plate is a testament to craftsmanship and passion.”

decades of listening—to guests, to staff, to the small details that make or break an experience.

“We prioritize guests first, then staff, then leadership and ownership last,” Angelo explains. “And usually, you see the reverse.”

That guest-first philosophy is more than a talking point—it’s embedded in the restaurant’s DNA. From carefully curated wine programs to a “pull system” that empowers the entire staff to serve every table, Rosebud Steakhouse has reimagined hospitality as a team sport.

“All the servers work together as a team. Instead of one person taking care of a guest, the entire staff does,” Angelo explains.

Impeccable food and service is a hallmark of Rosebud.

Claffey Pools

Legacy in the Water

ARTICLE BY JENNIFER BROWN-THOMAS | PHOTOGRAPHY BY CLAFFEY POOLS

In 1987, masonry contractor Paul Claffey carved a turquoise ribbon of water into a quiet Southlake backyard, convinced that a pool could pull a family together the way a kitchen table does. He pictured cannonballs, midnight swims, and birthday candles reflected on still water. More than three decades later, over 10,000 backyards shimmer with Claffey craftsmanship—each one a tribute to a dream—and now carried forward by Paul’s three children: Shelly, Brian, and Charlie, who honor the legacy their father set in motion.

“We’re still active owners—all three of us are in the day-to-day business,” Shelly says from inside the new sales building. From 3D renderings, to the luxurious courtyard with spa, cabana, and water feature examples, to the new selections room with hundreds of samples for clients to explore, everything a client needs to picture their custom oasis lives at this location—and so do the Claffey siblings. “Being on-site keeps us connected to our customers and to our team. We would have it no other way.”

The team at Claffey Pools numbers around 90 employees, many of whom have spent a decade or more shaping gunite, setting tile, and perfecting hydraulics. This continuity creates not just efficiency, but artistry—refined through time and teamwork. Together, they’ve earned hundreds of design awards and a longstanding place in Pool & Spa News’ Top 50 Builder and Service rankings— most recently holding the No. 4 Builder spot in the U.S. in 2024. Yet the most meaningful wins often happen poolside: a child’s first brave jump, a graduation party by the water, a grandparent floating beneath the stars.

“That’s the joy of what we do—seeing the memories and happiness a pool brings into a family’s life,” Shelly says. Her designs range from sleek lap lanes to freeform lagoons, always guided by one question: How do you imagine using this space? “Our job is to shape water around the rhythm of real life.”

Claffey introduced its Weekly Maintenance & Warranty Division two years ago to ensure that every pool remains as beautiful and functional as the day it was completed. Now cleaning over 1,000 pools, the program reflects the same standards that built their reputation: detail, dependability, and family-level service. “We build it, and now we maintain it. Offering full-cycle care felt like the natural next step,” Shelly explains.

That care extends well beyond the backyard. Claffey Pools has donated over a million dollars to local causes and is deeply

involved with national initiatives like St. Jude Children’s Research Hospital and PHTA’s Step Into Swim, which provides drowning-prevention classes for children who otherwise couldn’t afford them. Supporting veterans, first responders, and youth athletics remains equally central to their mission.

Integrity, they say, is the current that runs through it all. “Our name is important because it’s what we stand for—quality, integrity, and being there for our customers,” says Shelly. Their greatest compliment? Generational trust. Whether it’s a renovation call from a client twenty years later or a grown child coming back to build with Claffey, those relationships affirm the family’s legacy—and fuel its future.

Spend a moment in the design center and you’ll hear future memories being dreamed aloud—toddlers on a baja shelf, cousins grilling beside a stacked-stone wall, grandparents counting fireflies as the day winds down. Every detail leans toward connection: tile that stays cool in the sun, heaters that stretch the season, automation that brings light with a tap.

Claffey Pools may have grown into a full-service firm, but its heart remains the same—a family, shaping water with purpose, and bringing people closer in the process.

“THAT’S THE JOY OF WHAT WE DO—SEEING THE MEMORIES AND HAPPINESS A POOL BRINGS INTO A FAMILY’S LIFE. OUR JOB IS TO SHAPE WATER AROUND THE RHYTHM OF REAL LIFE.”

A JOURNEY THROUGH the Farmers Market

Exploring What’s Fresh, Local & In Season

Samantha Farris and daughter MaKayla Allen enjoy exploring local hidden gems and supporting small businesses around Southlake, Keller, and the surrounding areas. From handmade items to fresh finds, their favorite adventures are the ones shared together.

Once a month, we set aside a Saturday just for us—and one of our favorite traditions is visiting the local farmers market. It all started with a sweet tooth and a charming little macaron stand, Zava Macarons, run by owner Kati Marquez and assisted by her mother Penny DeLuca, the sweetest mother-daughter duo. They greet everyone with a smile, and their macarons are truly some of the best we’ve ever tasted—light, flavorful, and perfectly made every time. That small moment sparked something special for us, because we’re also a close mother-daughter pair who relate to their bond. Stopping by to see them has become a must.

The farmers market has become more than a place to buy goodies—it’s an experience we look forward to. We love seeing our favorite vendors each time we go. The fresh fruit stand is a must-visit, where we pick up juicy peaches or crisp apples, depending on the season. We also like to bring home a little cactus or a bundle of fresh flowers to brighten up our space—it’s our way of bringing a little beauty home with us.

Every visit brings something new to discover. From handmade candles and soaps to local art, fresh bread, and even treats for our puppies, there really is something for everyone. The market is pet-friendly, which means we get to see all kinds of adorable dogs strolling by, making it even more fun.

One of our favorite parts is just talking to people. The vendors are always full of stories, and there’s a true sense of community in the air. We make our way through the shops, trying samples from local vendors or grabbing a bite from one of the rotating food trucks.

If you’ve never been, we highly encourage you to check out a local farmers market—you never know what new favorites you might find. Keller’s Farmers Market is open Saturdays from 8 AM to noon, and it truly has something for everyone!

FAMILY TIME is the Best Investment

These simple, yet intentional ideas can make the best memories.

EAT DINNER TOGETHER AS A FAMILY.

This meaningful time around the table is where connections happen. Let everyone share good moments from the day or something they struggled with. Create a jar of conversation starters, exchange giggles and cook up something delicious.

CREATE SURPRISES

Everyone likes to feel special – and surprised. The littlest things make the biggest impact: A backyard picnic; a sleepover in an indoor fort; an afterschool ice cream treat; a bathroom spa day.

CREATE FAMILY TRADITIONS

Build weekly or monthly traditions – movie nights with popcorn, board game marathons, a gratitude jar, evening bike rides, living room

dance parties, even a family book club to discover old favorites and new reads.

EXPRESS LOVE AND GRATITUDE

In busy seasons, it’s easy to forget to let a loved one feel appreciated and thought of. Tuck a hand-written note in a lunch box or give an unexpected hug; spend time sharing what you’re thankful for about them.

KEEP GENERATIONS LINKED

Consider Sunday meals with grandparents or weekly phone calls if distance separates. Invite them to share their childhood stories and treasured memories. Start a yearly family scrapbook filled with favorite photographs and vacation souvenirs.

ENJOYING SUMMER

In the moments between fishing in our pond and swimming in the pool, our family will celebrate birthdays and have outdoor parties. True to form, I love creating something traditional in an untraditional way. My beach ball garland is a spin-off of the traditional balloon garland. Everyone uses balloon garlands… so let’s make one out of beach balls instead! Everyone serves a birthday cake… how about one carved out of a watermelon for a crazy twist?? I hope you join me in the making of these fun additions to a party!

Beach Ball Garland

Have you ever noticed that when blown up, beach balls have a little plastic loop that forms where they are blown up and sealed?  It makes for the perfect place to string twine through and use as an outdoor “balloon” garland! String it up, add some extra beach balls to the pool or yard and you have all the party decorations you need!

Materials

• 2 packs of assorted sized beach balls (assorted 20”, 16” and 12” for a total of 36)

• 1 pack of mini beach balls (5” sized, total of 25)

• Thin rope or twine

• Air pump

Instructions

1. Using an air pump, blow up all the beach balls... It takes a while!

2. Arrange inflated beach balls in a line on the ground, alternating sizes as you go.

3. Starting on one end, thread your string or twine through the blow loop of each beach ball until you reach the end.

4. Tie each end of your beach ball garland to a post or tack to a wall.

Watermelon Cake

A cake that you could eat for breakfast! Made only of fruit and (if you want to go real crazy) some fresh mint and whipped cream too. A few years ago we started making watermelon cakes for our summer birthday celebrations due to one of our little ones suffering from food allergies. In order to make a cake that even she could enjoy, the watermelon cake was born in our lives. Even if you don’t have family or guests with food allergies, this cake is a thriller and loved by all!

Ingredients

• 2 large watermelons

• Assortment of berries and fruit

• 4 wooden skewers

• Toothpicks

• Whipped cream (optional)

• Fresh mint (optional)

Instructions

1. Prep both watermelons by cutting off the rinds and sculpting to create a cylinder shape with a flat top and bottom. Make the bottom cylinder bigger and the top cylinder slightly smaller.

2. Stack your smaller watermelon on top of the larger using wooden skewers to support the center.

3. Use assorted berries and fruit to decorate the outside of your watermelon cake. For the sides of the cake, use toothpicks to help the berries stay in place.

4. Serve alone or with a dollop of homemade whipped cream.

“I love creating something traditional in an untraditional way.”
