THESE DELICIOUS RECIPES ARE LIGHT, BRIGHT AND FEEL LIKE SUMMER
The sun has returned, and grilling season is upon us. With the nice weather comes vegetable gardens and fresh produce, along with the overwhelming desire to be outside as much as possible. We’ve compiled some fresh and light dishes that you can shop for at your local farmers market and whether you’re looking for a quick mid-week meal or something to grill for a crowd on the weekend these dishes won’t disappoint. These pair well together or can stand on their own!
• 2lbs. Outside skirt steak*
• 2 Tablespoons lime*
• 2 Tablespoons finely, chopped cilantro
• ¼ Cup olive oil or avocado oil
• ¼ White onion, finely chopped
• 1 Tablespoon cumin
• Salt and pepper to taste
1. Place skirt steak into gallon freezer bag
2. Combine all other ingredients in bowl and mix. Pour over steak and marinate for 3-4 hours or overnight in the fridge.
3. Bring skirt steak to room temperature by letting it sit out for one hour.
4. Get your grill hot on one side and medium on the other.
5. Once the grill is ready, wipe excess marinade off steak. Starting on the hot side, place skirt steak on grill for 2 minutes per side, attaining a nice sear.
6. Transfer steak to the cooler side of grill and cook until the internal temp is 130°. Let rest for 10 minutes (temp will rise while resting).
7. Carve and serve. This dish pairs well with beans and rice or served as tacos. Following is a chimichurri sauce that compliments it nicely.
*Outside skirt steak is a more tender cut than inside skirt steak, for this recipe outside skirt is recommended. Do not use too much lime as the citrus can cook the meat before putting it on the grill, resulting in a tougher texture.
• ½ Cup parsley, finely chopped
• ½ Cup cilantro, finely chopped
• 2 Tablespoons red wine vinegar
• 3 Cloves garlic, minced
• 1 Red chili (whole or deseeded depending on desired level of heat)
• ½ Teaspoon dried oregano
• 1 Teaspoon salt
• 1 Tablespoon lime juice (optional)
Combine all ingredients in a bowl. You can make this in the late morning and let it sit for around 4-6 hours, or you can make it the day before and let the flavors meld overnight in the fridge. Just be sure to take it out and get it to room temp before you serve it, as olive oil hardens in the fridge. Serve over skirt steak or tacos.
• 2 Ears sweet corn
• 10oz. Cherry tomatoes
• ¼ Cup lime juice
• 1 Finely chopped jalapeno or serrano (whole or deseeded depending on desired level of heat)
• ¼ Cup cilantro, finely chopped
• ½ Cup white onion, chopped
• 2 Cloves garlic, minced
• Salt to taste
1. Grill corn, you do not need to soak the corn beforehand.
2. Place corn on the grill (inside their husks) over medium heat turning every few minutes.
3. After 10 to 12 minutes shuck the corn and put the cobs back on the grill for 2-4 minutes rotating frequently to achieve that charred look and flavor.
4. Cut the corn from the cob, place in bowl and add all other ingredients. Let the mixture meld for about an hour and serve with tortilla chips or as a taco garnish.

Instructions:
1. Brew Coffee: Make a pot of your favorite coffee.
2. Cool and Freeze: Allow the coffee to cool, then pour it into an ice cube tray and freeze.
3. Serve: Add the coffee ice cubes to your iced coffee for a rich, undiluted flavor.
Create stunning and elegant ice cubes using edible flowers. These pretty ice cubes are perfect for special occasions or adding a touch of beauty to everyday drinks.

• Edible flowers
• Water
Instructions:
1. Prep the Flowers: Rinse the edible flowers thoroughly.
2. Fill the Tray: Place the flowers in an ice cube tray, filling each compartment halfway with water.
3. Freeze Partially: Freeze until the water is just starting to set, then fill the rest of the tray with water to fully submerge the flowers. This helps keep the flowers centered in the cubes.
4. Freeze Completely: Freeze until solid.
5. Serve: Use these beautiful ice cubes in your favorite drinks for a floral touch.

Have you been eyeing a breathtaking view or a luscious green patch near a waterscape? For special times with your favorite people, nothing says warm weather fun like a picnic. Follow these tips for preparation ideas.
Throw pillows are a must. Pull them from your couches or invest in outdoor pillows that can be used repeatedly. A large throw is also essential to protect from moist ground and grass stains. Bring your favorite tunes with one of the many available portable speakers or unplug and enjoy the sounds of nature. Cut flowers add a wow factor.
You don’t have to own a picnic basket to have a picnic. But if you do bring a basket, make sure to have some way to chill your perishables and drinks. Reusable silverware, plastic wine or drink cups, and plates often come with a picnic basket set, but can also be purchased separately. Keeping it elegant, but easy (and cool) is the key!

A cheese plate with fruit is the perfect start to your picnic fare. As with the cheese, your drink selections should coordinate with the main dish. The train system is easy and affordable and a great way to see the countryside, so be sure to plan some day trips using their easy transportation systems. Don’t be afraid to visit with the locals to hear where they would go to base some of your day trips on their recommendations. They are generally spot on every time.
• To indulge in the traditional treat that Switzerland is known for, visit Sprungli which serves the best chocolate in Switzerland.
• To treat yourself to a Michelin restaurant, head to Zurich and eat at Kronenhalle.
• Aperol spritz and local craft beer is readily served at almost every cafe to enjoy.
• When in doubt, ask the locals, as they are happy to suggest their favorite eateries.
• Appenzell and Lake Constance is surrounded by Switzerland, Austria and Germany. An easy and short train ride to Appenzell and a quick gondola ride up the mountain boasts a beautiful view of the lake and surrounding areas.
• Ticino is where the locals suggest to visit and holiday. It is known for its waterfront promenade, bridges, castles, historical buildings and stunning landscape.
• Take in the sights of Zurich and its magnificent lakeside views. This spectacular city boasts amazing views, food and locals.
• Take a short three hour train ride to Paris to explore the gorgeous city and delectable French food.

Planning to load up the family truckster and head out on an adventure? This easyto-pack and satisfying snack is a great way to keep growling tummies quiet while you’re behind the wheel. Grab the kids, prepare it together, and try not to eat them all before you hit the road!
• 2 cups quick oats
• 1/2 teaspoon salt
• 1 teaspoon ground cinnamon
• 1 cup peanut butter
• 1/4 cup honey
• 1/3 cup apple butter
• 1 large banana, mashed (1/2 cup)
• 1/2 cup dried cranberries
• 1/2 cup pepitas
• 1/2 cup raisins
1/ Preheat oven to 325°F. Line 2 large baking sheets with parchment paper.
2/ Combine all the ingredients into a large bowl of a stand mixer (or hand mixer). Mix until all the ingredients are combined and the dough is thick and heavy.
3/ Portion 1/4 cup mounds of cookie dough onto prepared cookie sheets. Use the back of a spoon to slightly flatten out into a cookie shape. (The cookies will not spread in the oven.)
4/ Bake for 16-18 minutes or until the edges are slightly brown. Cool cookies on the baking sheets for 10 minutes, then transfer to a wire rack to cool.
5/ Cover leftover cookies and store at room temperature for up to 5 days or 10 days in the fridge.

Meet Jax, our adorable Pet of the Month! Jax is a 2-year-old boy with a big heart. He brings joy to everyone he meets. A true family dog at heart, his favorite thing in the world is playing with his dog mom and littermate siblings. He still gets to enjoy playdates with three of them, and nothing makes him happier! Jax loves running, being chased, and digging to his heart’s content. His sweet, gentle nature shines through whether he’s cuddling with his family, sharing with his dog sister (even when she steals his bone!), or being kind to the household kitty. Always eager to please, Jax is the definition of a loyal companion and a champion cuddler. Originally a foster pup, Jax became the happiest “foster fail”. His mom wouldn’t change a thing about her perfect friend.
