Wanderlust

I have wanderlust. I can’t tell you how many times my husband has come home from a day at the office and I start off his welcome home conversation with, “Um … I did something today.” That’s then followed by, “I booked a trip to X or Y or Z!” (Ask him about the time I booked a cruise to Europe—oops! But one of our best family memories now!) Or he wakes up in the morning and I’ve spent the night poring over itineraries and put a hold on “the perfect next trip!”

Lucky for me, he loves to travel as much as I do, as do our children.

I just get this urge to explore and to have new experiences. To learn.

That’s one of the reasons I always love our yearly travel issue. We get to take you places, whether near or far, through our pages. While we often feature just one travel story in an issue, this edition is packed with them.

From staycations to trips to Moab, Utah, there’s plenty to explore. We also have summer must-haves, a stylish boutique (I love the summer fashions!), and local chefs share their favorite summer recipes.

When it comes to escaping life, a good vacation is always what my heart desires. I escape the daily routine of early mornings to late nights and the grind of answering emails, texts, and phone calls. Especially for this time of year, I’m doing my best to ignore the massive amounts of “I’m bored! Can I have a snack?” for the four hours a day my kids aren’t in camp.

Travel is great and a must-have for my family and me. It can be a simple day trip around town to taste the flavors at a new restaurant or to explore a new place. Our favorite trips are new adventures, where we can spend quality time in a new place and stay up extra late playing games or having a third helping of dessert (it’s vacation, after all!).

We take our yearly trips to Georgia and Colorado to visit family, where it’s always fun watching the cousins playing together and creating new memories in the same places my sister and I did growing up.

My family and I love exploring new places on our drive to Colorado, where we can stop in small towns and see things that only a road trip can offer.

Right now, my kids are at a prime age when they still enjoy being around me. Yes, I’m taking full advantage!

I’ve said it time and time again—Arizona has so much to offer right here in our backyard. Enjoying a staycation is always a must for us, as well as a weekend in our beautiful northern mountains. There’s so much just a road trip away!

LOCAL CHEFS SHARE THEIR FAVORITE SUMMER RECIPES

During the summer, chefs delight in creating light, bright dishes to showcase the seasonality of ingredients—especially fruits and vegetables. This month, four lauded local chefs are sharing their favorite summer recipes, some of which may be enjoyed at their eatery and all of which are easily replicated at home.

Watermelon Gazpacho

“This is a fun Arizona twist on the classic. Our Watermelon Gazpacho blends sweet, juicy watermelon with heirloom tomatoes, crisp cucumbers, and a touch of Fresno chili for a gentle kick. It’s light, hydrating, and bursting with flavor—your ultimate chilled escape from the Arizona heat.”

INGREDIENTS

• Cubed Watermelon | 1.5 pounds

• Heirloom Tomatoes | 1 pound

• Cucumbers | 0.5 pounds

• Fresno Chili (seeded) | 1

• Shallot  (peeled) | 1 whole

• Sherry Vinegar | 1/3 cup

• Extra-Virgin Olive Oil | 1 cup

• Pistachios (roasted) | 2/3 cup

• Water | 1 cup

• Salt | 1½ tablespoons

• Smoked Paprika | 2 teaspoons

DIRECTIONS

Put all ingredients into a Vitamix blender. Start the blender on the slowest speed and then gently turn to the highest speed over the course of about 10 to 20 seconds. Once at the highest speed, remain there for 30 seconds. Remove from blender and refrigerate for 2 hours until gazpacho is cold and all ingredients have had time to blend together to create a depth of flavor. Stir before serving, and garnish with a drizzle of extra-virgin olive oil and additional crushed pistachios. The recipe makes 64 ounces.

Grilled Asparagus and Egg

“Ideal for any meal—breakfast, lunch, or dinner— not only are asparagus in season right now, but the grilling method also used to cook them preserves the veggies’ key nutrients while imparting a fantastic crispness and charred flavor profile that juxtaposes the richness of the egg.”

INGREDIENTS

• White Wine | 1 cup

• Shallot | 1 (sliced)

• Thyme | 2 sprigs

• Butter | 1 pound

• Lemon | 1

• Sea Salt | 1 tablespoon

• Jumbo Asparagus | 8 pieces

• Olive Oil | 1-2 tablespoons

• Salmon Roe | 0.5 ounces

• Chives | 1 handful, minced finely

• Egg | 1

DIRECTIONS

The asparagus and egg will be topped with beurre blanc butter, so start by making it and then setting it aside. To make the beurre blanc, place 1 cup of white wine in a sauce pot. Add 1 sliced shallot and 2 thyme sprigs. Reduce to almost dry and then stir in 1 pound of butter slowly, in very small increments, making sure to stir constantly so it does not break. Strain out shallot and thyme and season with a squeeze of lemon and salt. Put this to the side. Next, toss asparagus with olive oil and sea salt and grill until tender. Place down on a plate all facing the same direction. Mix lemon zest, salmon roe, and chives together and spoon over asparagus generously. Poach the egg and place on top. Season with a pinch of sea salt. Serve the beurre blanc drizzled on top or on the side for dipping. The recipe makes one large serving to share.

Steak With Gremolata and Veggies

“I love this dish as it spotlights creamed corn with blistered cherry tomatoes, grilled asparagus, and a fantastic gremolata, which helps cut through some of the richness from the corn and steak.”

INGREDIENTS: GREMOLATA

• Parsley | 1 ounce

• Basil | 1 ounce

• Mint | 0.5 ounces

• Shallot | 0.5 ounces

• Garlic | 0.5 ounces

• Capers | 0.25 ounces

• Anchovies | 0.25 ounces

• Lemon | 0.5 juiced and zested

• Chili Flakes | 1.5 grams

• White Balsamic Vinegar | 60 milliliters

• Olive oil | 120 milliliters

• Salt

• Pepper

INGREDIENTS: STEAK AND VEGETABLES

• Corn | 2 ears

• Onion | 1

• Fennel | ½ bulb

• Garlic | 3 cloves

• Heavy Cream | 1  cup

• Parmesan | ¼ cup

• Honey | ¼ cup

• Asparagus

• Small Tomatoes | 10 halved or 5 wholes

• Olive Oil | drizzle

• Steak | cut of choice

DIRECTIONS

Start by making gremolata by mincing the herbs separately until fine, followed by the shallots, garlic, and capers. Mash anchovies into a paste and add. Finish with lemon, chili flakes, vinegar, olive oil, and salt and pepper (to taste).

Grill corn in husks and rotate until charred. Pull from the grill and place in a bowl. Cover with plastic until cool. Grill the corn again and then transfer to bowl for another cooling. Mince onion, fennel, and garlic. Sautee onions, adding in fennel, corn, and garlic, and then add the cream, Parmesan, and honey. Heat thoroughly and then use an immersion blender to blend about 50%, allowing some kernels to remain.

To make asparagus and tomatoes, take off woody ends and blanch in boiling water briefly, then dunk in ice water. Toss halved or whole tomatoes in olive oil with asparagus, salt, and pepper. Finally, cook steak on the grill until the preferred temperature and plate with vegetables. Finish with a scoop of gremolata.

Oreo Peppermint Ice Cream

“Forget the holidays! Cool, creamy, and incredibly refreshing, peppermint ice cream is the ultimate treat in the hot summer months. The natural chill of peppermint has a cooling effect on the palate. Once the mixture is cooled over an ice bath and churned in an ice cream maker, it takes on a light, airy consistency that’s both satisfying and easy to scoop.”

INGREDIENTS

• Whole Milk | 3 cups

• Heavy Whipping Cream | 3 cups

• Peppermint Candies | 1 cup

• Crushed Double Stuf Oreos | 2 cups (or more!)

DIRECTIONS

Expert tip: Before doing anything else, crush Oreos and then pre-chill them for several hours. By pre-chilling the Oreos before mixing them in, you prevent the ice cream from softening too much, allowing it to go straight into the freezer and harden into scoopable perfection.

Once that is done, it’s time to make some ice cream! First, gently heat milk and heavy whipping cream together. Slowly add in peppermint candies, keeping heat very low to prevent scorching. Essentially, do this until candies dissolve into mix. Once peppermint candies have dissolved, place cream mixture in a mixing bowl on top of an ice bath, whisking to cool down quickly. Next, time for the ice cream machine, which can easily be purchased online or at a local shop. It is important to spin ice cream machine exactly as the manufacturer specifies because all machines differ. Once the base reaches a soft-serve consistency, slowly mix Oreos into the mixture. Finally, store ice cream in the freezer until completely hardened and then enjoy!

Whether you’re arriving as just a couple, as a family, or as a large group, there are options to accommodate. The cabins sleep two to 24 guests, depending on which of the seven you choose. Whispering Oaks can accommodate a total of approximately 65 guests per night.

The locale was created by Mike and Kelly Shumway, who opened it in 2005. For Mike, who has since passed, it had marked the culmination of a childhood dream. He had grown up in Moab, spending his time enjoying the impressive outdoors and hoping to someday build a lodge. The couple took the first step toward that dream in 1998, when they purchased a piece of property on the west side of the La Sal Mountains.

After building on the land and spending time there, the couple realized they couldn’t keep the view to themselves and, after building several cabins, began welcoming guests.

Today, there are a total of seven cabins of ranging sizes perfect for those seeking a tranquil retreat, stunning views of majestic red rock formations, and comfortable lodging, with plenty of activities to take part in if desired.

“They are all secluded, peaceful cabins that are surrounded by trees and views, and where you can sit outside on porches/ patios without seeing your neighboring cabin guests—yet they are within walking distance,” Kelly says. “I call the décor rustic luxe, and they feel like home.”

Each quaint, cottage-like cabin is equipped with kitchen amenities, full bathrooms, fireplaces, and a hot tub. There are barbecue grills, fiber optic internet, and satellite television, and some cabins also have outdoor showers.

One of the cabins—Cedar Bend Lodge Cabin—is 6,000 square feet and includes wraparound decks, as well as a detached deck that’s ideal for micro weddings or events for up to 35 people.

THE PAVILION

In 2007, the Shumways added a pavilion to the destination to accommodate the growing requests for onsite weddings, corporate events, and

group retreats. Located at just under an 8,000-foot elevation, its cooler mountain temperature, coupled with the stunning scenery and private locale, made it an immediately popular option.

The pavilion itself is a covered 1,800 square feet of event space that can accommodate up to 200 guests and offers numerous layout options.

There’s also a 55,000-square-foot lawn outlined with aspen and pine trees.

“Although our intent wasn’t for Whispering Oaks to be a wedding venue,” Kelly says, “word of mouth spread and, since 2007, we’ve hosted some 300 pavilion events.”

Although Whispering Oaks is open all year (four-wheel drive is recommended during the winter months), the pavilion is only available May through October. Micro weddings can always be held in the Cedar Bend Cabin, regardless of the time of year.

WHAT TO DO

Some arrive looking for solitude and relaxation. This they find in the serene nature—the views of the La Sal Mountains, the Canyonlands, the Abajo Mountains (Monticello), and the Henry Mountains (Lake Powell)—and the setting in general.

For those who come looking to explore, there is much to see and do.

“There’s convenient access to Utah’s Adventure Capital—Moab, the Colorado River, Arches National Park, Canyonland National Park, Dead Horse State Park, and more,” Kelly says. “And there’s so much to explore on the La Sal Mountains. There are lakes, bicycle trails, hiking, repelling, snowshoeing, cross-country skiing, and snowmobiling.”

There are also four catch-and-release ponds on property, a canoe and floating dock, and a children’s playground and sandbox.

GETTING THERE

Whispering Oaks is just an eight-hour drive from Scottsdale or there are convenient flights from Phoenix’s Sky Harbor International Airport to Utah’s Adventure Capital in Moab.

Florida’s SkyBeach Resort Offers a Unique Experience

It’s where sun meets beach and blue skies meld into the blue horizon of the serene gulf. It’s where white sand beaches beckon and Old Florida charm meets luxury.

It’s the beachfront SkyBeach Resort, located on the southern tip of St. Petersburg in Florida, and it’s where its guests find serenity.

SkyBeach opened in July 2024 as a 113-room love letter to St. Pete’s vibrant culture, although the property’s history dates back to the 1950s. It was once the Polynesianthemed Outrigger Inn and went through several owners before being purchased in 2022. It then underwent an extensive renovation to create the enticing destination it is today.

NEW UPGRADES

Stepping into the reimagined lobby sets the tone for the resort. The double-height atrium foyer features a sophisticated coastal ambience and two custom-designed check-in desks.  There’s also the renovated SkyBeach Event Center, a 6,260-squarefoot event center with multiple space configurations. And for those looking for a pick-me-up, the beloved downtown St. Petersburg café Paradeco Coffee Roasters now has a location in the resort’s courtyard.

Of course, the new experiences don’t end there. The highly anticipated SouthSeas Tapas is slated to also open shortly.  The restaurant will offer an elevated take on coastal dining while paying tribute to the property’s legacy as the former Outrigger Inn. It will feature fresh Gulf Coast and locally sourced ingredients infused with French and Asian influences, as well as Tiki-inspired cocktails, all served against a backdrop of views of the marina.

SouthSeas Tapas will be the resort’s second dining venue. SkyBar + Grille, which is already open for lunch and dinner, is a two-story, open-air bar and restaurant located on SkyBeach’s private beach.

THINGS TO DO

While many opt to simply relax on the private beach (and in a cabana!) or at one of the resort’s two pools, there are also plenty of other entertainment and recreational offerings available.

SouthSide Sports is an outdoor community sports destination. It has 12 pickleball courts, four professional beach volleyball courts, and one tennis court. It’s led by Director of Racquets Eduardo Ferreira, a former top 100 tennis player.

SkyBeach also features a newly renovated, state-of-the-art marina with 29 boat slips.

And of course, there’s the Azibi Stage, SkyBeach’s signature live entertainment venue. Set on the sand with the Gulf as its backdrop, the stage plays host to musicians on the weekends.

NEARBY

Want to explore the area? SkyBeach is near several must-see attractions, such as The Salvador Dali Museum and The Chihuly Collection. You can also head to Fort De Soto Park, Maximo Park, or the Sunken Gardens. From historic landmarks to pop-up galleries to shopping and even Busch Gardens, there is plenty to see and experience.

But of course, after a busy day, coming back to SkyBeach provides a welcome respite.

LIME MINT

ROSE MOJIT

A Lime Mint Rose Mojito adds a floral twist to the classic mojito, creating a refreshing and elegant cocktail. Here’s a recipe that balances the traditional lime and mint with the delicate aroma of rose.

Ingredients:

• 2 oz Gin (or Vodka)

• 1.5 oz Fresh Grapefruit Juice

• 1 oz Pear Liqueur (or Pear Juice)

• 0.75 oz Fresh Lime Juice

• 1 sprig of Rosemary

• Sparkling water

• Garnish: Rosemary sprig, grapefruit slice, pear slice

Instructions:

Place the rosemary sprig in a cocktail shaker. Lightly muddle the rosemary to release its oils. Add the gin (or vodka), grapefruit juice, pear liqueur and lime juice to the shaker. Add ice. Shake well until thoroughly chilled. Strain the mixture into a chilled glass filled with ice. Top with sparkling water or Prosecco. Garnish with a rosemary sprig, a grapefruit slice, and a pear slice.

Ingredients:

• 1 bottle wine (such as Sauvignon Blanc or Pinot Grigio or Garnacha)

• ½ cup brandy or rum

• ½ cup elderflower liqueur

• 1 cup sparkling water

• 1 cup fresh strawberries, sliced

• ½ cup fresh raspberries

• ½ cup fresh blueberries

• ¼ cup fresh mint leaves

• 2 sprigs of fresh rosemary

• 1 cucumber, thinly sliced (optional)

• 1 lime, thinly sliced

Instructions:

In a large pitcher, combine the white wine, brandy (or rum), and elderflower liqueur. Stir gently to mix.Add the sliced strawberries, raspberries, blueberries, mint leaves, rosemary sprigs, and cucumber slices to the pitcher. Gently muddle the berries and herbs slightly to release their flavors. Cover the pitcher and refrigerate for at least 2 hours, or preferably overnight, to allow the flavors to meld. Just before serving, add the sliced lime and sparkling water or club soda. Stir gently. Serve the sangria over ice, ensuring each glass gets a mix of fruit and herbs.

Ingredients:

• 10 fresh mint leaves

• 1 lime, cut into wedges

• 2 tablespoons white sugar (or simple syrup, to taste)

• 2 ounces white rum

• 1 ounce rose water (adjust to taste, as it can be potent)

• Club soda or sparkling water

• Garnish: Mint sprigs, lime wedges, edible rose petals (optional)

Instructions:

Muddle:

Place the mint leaves and lime wedges in a glass. Add sugar. Use a muddler to gently crush the mint and lime. Pour the white rum and rose water into the glass. Stir well. Fill the glass with ice. Top with club soda or sparkling water. Stir gently. Garnish with a mint sprig, a lime wedge, and, if desired, edible rose petals.
