A love letter to the service industry.

It has been a privilege of mine to be a part of the team behind this exciting new publication.  Over the past several months, I’ve had the pleasure of getting to meet new members of the community, share some of your incredible stories, and I have been constantly reminded of why I love this little town so much.  This issue is a very special one for me, and that’s why I wanted to make sure that I really got to shine a light on the incredible world of hospitality while taking a moment to say thank you to all of our friends in the service industry that make our meals, our nights out, and our celebrations so special.  I myself began working in restaurants when I was 15, and 28 years later, I’m still in love with the industry that helped to shape me.  Working in restaurants taught me so many life lessons, the most important being how to treat others. It is where I met my husband, and it is in restaurants where our children were raised.  In this very special food and drink focused issue, we hope you learn something new about your favorite establishments and their teams. There is such a deep history throughout Rochester, and so many rich stories behind the places we are all familiar with.  To all of the establishments that took time to let us come into your space and learn a little more about you, thank you.  To our readers - wherever you decide to dine out next, be kind to one another, and don’t forget to thank your server.   I truly believe the world would be a kinder place if everyone spent some time working in service of others.

We hope you enjoy reading this issue as much as we loved creating it.

Cheers!

Lipuma’s Coney Island

The one with the line down the sidewalk.

Lipuma’s Coney Island is more than just a restaurant; it’s a beloved part of Rochester’s history, built on dreams, determination, and heart. Founded in 1969 by Bill Lipuma, this iconic eatery is a local landmark, serving up classic coney dogs with a side of family spirit.  Before opening Lipuma’s, Bill ran several successful establishments in Detroit, including Orbits and Mondos. But something about Rochester captured his imagination. Sunday drives through its rolling hills inspired him to bring his next vision to life.  Encouraged by his father’s work ethic, Bill approached his mother, Carmela Lipuma, with his dream. One Christmas, she gifted him $5,000 to help start his restaurant at 621 North Main Street, Rochester, by the Paint Creek River.  Lipuma’s became known for its delicious hot dogs, blending global flavors with classic Detroit coney dogs. After nearly 30 years, Bill passed the business to his son, Tony Lipuma, whose warmth and humor have made him a beloved figure, continuing the family legacy for over 50 years.

Give Thanks

The one where customers vowed to continue traditions.

Gerald Matthes founded Give Thanks Bakery in 1998 after a successful career in global advertising in New York and Detroit. Born in Germany and raised in England, Gerald pursued his advertising dreams in New York but had learned bread baking early in life. His family’s baking tradition began in Braunsbach, Germany, where his grandson August Matthes started a guest house and bakery. Two generations later, Wilhelm Matthes expanded the business into 33 outlets across England over 80 years, before it was sold in the late 1970s. On a business trip, Gerald visited Braunsbach and was inspired to open a European-style bakery in 1997. He partnered with Jean-Marc Seranon, a pastry chef from Nice, France, and later Trale Broudy, an artisan bread baker from California, joined the team. In January 2021, Katy and Dietrich Knoer, longtime friends and customers of the bakery, acquired Give Thanks Bakery from Gerald, who is now retired. They are committed to continuing the rich tradition established since 1998.

RJ’s

The one where everybody knows your name.

RJ’s Pub in Rochester Hills has been a community staple since 1989, offering a warm, “Cheers”-like atmosphere where everyone feels at home. Founded by a family man with a vision, RJ’s quickly became the go-to spot for locals to gather with friends, enjoy a quick bite, and unwind with a cold drink. Known for its homemade family recipes, including signature dishes like ranch dressing, meatballs, and their secret pizza sauce, RJ’s sets itself apart from chain bars and pubs. With over 34 years in business, RJ’s remains the local favorite for great food, cold drinks, and friendly service.

George’s Coney Island

The

one with the George’s “special” pita

Set back in the North Hill Plaza Shopping Center on the corner of Rochester and Tienken Road is George’s Coney Island, a “mom and pop” place catering to locals for breakfast, lunch, and dinner. The restaurant has a family-owned feel with the bustle of a fast-paced coney in the background. Compact but cozy, it delivers some of the yummiest coney-style food around. Weekend mornings are perfect for the Grand Breakfast or pancakes, but our favorite guilty pleasure is George’s special pita—stuffed with breaded chicken strips, cheese, lettuce, tomatoes, and a side of ranch. Chili fries are a must on the side.

PCYC

The

one that’s been serving beer since prohibition ended.

The Paint Creek Tavern, or PCYC, is a Rochester institution located next to the Paint Creek trail. Once part of the Detroit United Railway’s powerhouse, it’s now known for its burgers, beer, and outdoor ambiance. In 1920, Walter W. Brown built a concession stand on this site, which transitioned into a tavern after Prohibition’s repeal in 1933. By 1954, the business was officially known as Paint Creek Tavern. During World War II, it operated as the Victory Canteen. Today, it’s famous for its ceiling full of money, wings, burgers, and scenic patio views. See you at happy hour.

Georgio’s Pizza + Pasta Holy Cannoli’s

The one with the 40-year-old family recipe.

When approaching Georgio’s while walking down Main Street, you’ll first notice the large window where the team is on display as they make all the homemade pies. Diners can watch them toss the dough and work the brick oven while they wait. They specialize in hand-tossed pies & Italian fare made from family recipes. Their dough is made in-house every day with a sourdough starter, and the cheese is of a premium Buffalo Milk mozzarella. For the sauce, they use whole tomatoes that are hand-milled and seasoned with a family recipe that has been a staple for over 40 years. Every pizza is hand-tossed and baked in a brick oven to achieve an authentic NY–style pizza. The slices are huge and the ingredients are fresh.  What more could you want?

The one with the secret recipe for youth.

Holy Cannoli’s in Rochester, Michigan, is a family-owned bakery bringing smiles to everyone with their hand-rolled, authentic Sicilian cannolis. Since 2012, this charming shop has followed a fifth-generation recipe passed down through the Schulte family since 1896. Co-owned by Nicole Schulte-Franey, her mother Cathy, and grandmother Sharon Beheler, who proudly claims to be the fastest cannoli roller around, helps the team roll an incredible 1,000 to 1,500 pastry shells daily! Sharon, a third-generation baker says, “cannolis keep you young”, “all of my grandmothers, aunts and uncles lived to be 100”. With over 125 unique flavors—think key lime, raspberry white chocolate, and even Pop Rocks, Holy Cannoli’s keeps tradition alive while adding fun twists. Every bite delivers a taste of history and delicious innovation!

La Collina

The one with rich Italian flavor.

Home Bakery

The

one that baked for Katy Perry and Aerosmith

Home Bakery, a treasured fixture in Rochester, Michigan, boasts a rich history intertwined with its iconic building. Established in 1929 by George and Anna Grainger, the bakery is renowned for its high-quality baked goods. However, its history extends far beyond its establishment. The building, known as The Rollin Sprague Building or “The Old Stone Store” is the oldest commercial building in Rochester.  Rollin Sprague, a prominent local physician had the building built in 1849.  Designed by English stonemason Thomas Anscomb, the structure features

unique coursed cobblestone walls, making it one of the few of its kind in Michigan. Over the decades, the building served various purposes, from a general store to a poolroom and car dealerships. In 1947, the Scha-Ben bakery opened in the space, eventually rebranded as Home Bakery in 1954. The building has undergone several renovations, including a significant Victorian-style makeover in 1899 and a restoration in 1995, which revealed indigenous remains, linking the site to a Native American burial ground. Home Bakery has remained a family-owned gem throughout its history. The Kuczajada family, who acquired the bakery in the 1980s, elevated its reputation with innovative cake designs and won numerous awards. Their meticulous restoration of the building also earned it a place on the National Register of Historic Places. In 2014, Heather Tocco took over, bringing her creative flair to the bakery. Under her ownership, Home Bakery has gained celebrity attention, baking cakes for high-profile clients like Katy Perry and Aerosmith. Tocco’s team of decorators continues to push boundaries with elaborate designs, making Home Bakery a beloved landmark in Rochester and a beacon of artisanal craftsmanship.

Dessert Oasis

The one with the cheesecake slices + hidden cocktail bar below

Since 2009, Nathan Hamood has been serving delicious coffee in Rochester, MI. If you’ve been around, you might recall the original spot at the South end of Main Street. What began as one coffee shop has expanded to four locations: Detroit, Ferndale, Royal Oak, and Rochester. Hamood didn’t just serve coffee; he mastered roasting beans for the best flavor. The Ferndale Cafe + HQ, opened in 2023, features a roastery, bakery, training lab, and offices. Known for inviting spaces, perfect coffee, and community support, you’ll find local art and live music at the Rochester location. Just downstairs is the Eastman Bar, another Hamood venture. Pro tip: enjoy cheesecake with coffee, then cocktails at Eastman.

Downtown Cafe

The

one that treats you like family.

Downtown Café, established in 2001, was Rochester’s first breakfast and lunch spot, founded by Tim Delaney with a simple goal: to serve fresh, original breakfast items with warm, friendly service. Tim started with just $35 in the register and a commitment to treat every customer like family. By distributing menus, giving food samples, and relying on word of mouth, the café quickly gained a loyal following. Nearly everything is made from scratch, from soups to pancake batter to freshly squeezed orange juice. With a focus on quality and care, Downtown Café remains a beloved spot for starting the day right.

Griffin Claw

The

one that won top prizes on a whim.

After submitting IPAs to the World Beer Cup and naming them on the spot, Norm’s Raggedy Ass IPA and Bonnie’s Raggedy Ass Imperial IPA won top prizes for best IPAs in the world. This success led the founders of Griffin Claw to build a brewery in 2013, focusing on creating exceptional beers in every style. Founded by Bonnie LePage and Mary Nicholson, the company now offers taproom locations in Birmingham and Rochester Hills, featuring bar food and a variety of drinks. Griffin Claw has also expanded into distilling, using their own spirits in cocktails, available at taprooms and retailers.

Red Knapps

The

one that was established in 1950.

For over 70 years, Red Knapp’s Dairy Bar has been the heart of Rochester, Michigan, where generations have made memories. Established in 1950 by Lyle “Red” Knapp, this iconic burger joint was built by hand with love and determination. Located on Main Street, Red Knapp’s quickly became the go-to spot for locals, offering a simple menu that stands the test of time. The secret to their mouthwatering burgers? Fresh buns from the bakery next door, locally sourced Michigan beef, and a signature sauce. And it wouldn’t be Red Knapp’s without their legendary milkshakes, known for being the best in Rochester. Come create your own memories at Red Knapp’s Dairy Bar.

Dime Store

The one in the TOP 100 Brunch Spots in the US.

Dime Store, an all-day brunch hotspot first opened in 2014 on Griswold in Downtown Detroit, quickly expanded to Rochester Hills in Papa Joe’s Gourmet Market Plaza. Known for creative dishes like eggs Benedict, omelets, and chef’s specials, Dime Store is consistently recognized among the top 100 brunch spots in the U.S. and has won multiple “Best of Detroit” awards. The Rochester Hills location, led by Head Chef George Sleator and GM Mitch Freem, features classics and new items like Croque Madame Benny. Using fresh, locally-sourced ingredients, the restaurant offers a friendly atmosphere with locally-roasted Zingerman’s coffee and Rishi organic teas.

Chomp

The one with something for everyone.

For over 30 years, the Brinker family has brought exceptional sandwiches and fresh fare to Rochester. From Ray Brinker’s “Food Tray” in the 1960s to Tim Brinker’s “Pop’s Deli,” known for its soups and seafood gumbo, the tradition evolved with Tim’s daughter, Ashley, opening “Chomp Deli and Grille” in 2010. Chomp continues the legacy with a focus on fresh, locally sourced ingredients, offering a menu that meets diverse dietary needs. Their vegan and gluten-free options, alongside traditional favorites, ensure a satisfying meal for everyone. Chomp blends family heritage with a commitment to healthy, high-quality food in a welcoming environment.

Yates
The one that started when Abraham Lincoln was President.

Yates Cider Mill, founded in 1863 in Rochester, Michigan, is the oldest cider mill in the state. Established during the Civil War, when Abraham Lincoln was President, Caroline and William Yates initially operated it as a gristmill to grind grains into flour for local farmers. This role made the mill an essential part of the community. The original structure that still stands today was rebuilt in 1894. Over time, Yates Cider Mill evolved. William’s son, Frank William Yates, transformed it into a cider production facility, which later passed to Harry Yates in the 1930s. Under Harry’s leadership, the mill began producing fresh apple cider and donuts. Located along the Clinton River, Yates Cider Mill offers a scenic, historic setting that attracts visitors seeking a taste of Americana. The Yates family’s commitment to quality and tradition has kept the mill a cherished institution for six generations and 160 years, preserving its rich history while continuing to offer fresh, beloved products.

Kruse and Muer on Main/ Chop House/Cabin Kruser’s
The one that includes a story of being lost at sea.

Chuck Muer, known for Charley’s Crab restaurants, and Bill Kruse began their friendship in 1972 when Bill was hired as an Assistant Dining Room Manager. Sharing a passion for great food and good times, the two became close friends. In 1988, when Bill decided to start his own venture, Chuck, confident in its success, invested and even lent his name to the business. Kruse & Muer Quality Foods opened in what is now The Village of Rochester Hills.  Tragically, in 1993, Chuck Muer, his wife Betty, and their friends George and Lynn Drummy were lost at sea while sailing in the Bahamas. They attempted to race back to Florida ahead of a freak cyclone. The last presumed location of their boat, “Charley’s Crab,” was in the Gulf Stream off Florida’s east coast. The swift currents of the Gulf Stream have kept the sea’s secrets well. The story of their disappearance is displayed on the walls of Kruse and Muer on Main, keeping Chuck’s memory alive in the place he helped build.

meeting THE HOUSE

Where the guests and the crew feel like family.

It’s a special thing when you are able to walk into a space and feel like you’re at home.  That is exactly what the owners of The Meeting House have done.  After meeting in 2003 while working at Beverly Hills Grill, Jason Mood and Chef Christopher Johnson decided to take the leap and open a restaurant of their own.  They both left their

positions in June of 2012 to focus on completing their renovations and hiring their teams to prepare for a grand opening date of the busiest weekend in Downtown Rochester, the kick-off to Lagniappe and the Big Bright Light Show.  They were welcomed that weekend by the community with open arms, and twelve years later, they’re still serving some of our favorite dishes, with no plans of slowing down.

While there is no denying that the space, food and drink are all beautifully done, the truly remarkable thing about TMH is the people that make up the Front of House (FOH) and Back of House (BOH) crews.  Mood and Johnson know that it is their team that makes TMH the special place that it is.  “Our crew IS our culture.  It carries from FOH to BOH in this cohesive way that is really important to us.  Our team takes pride in working here and in serving our guests.  Service is what we do - It’s important that we provide a level of service that makes our guests feel like we genuinely care -- like we appreciate them, and we want them to feel it”, says Mood.

The small but mighty BOH crew consists of a team of 7 - Kiersten, Lewis, James, Alex, Joseph and Jake.  Each weekend, just inside the dining room listed on the chalkboard, you’ll find something different like the chicken and waffles at brunch, or a dinner feature like their Scallops.   Those features come from shared ideas, pulling from some of their own favorites.  “It really is a collaboration amongst the whole team.  They work together to create something different every weekend which is a feat in itself.  Their creativity always impresses me”, says Johnson. When sourcing their products, they lean on local vendors like Fairway Packing, Stoney Creek Mushrooms and Give Thanks Bakery.  Johnson and his team work to create a new menu for each season with a mix of new dishes and fan

favorites.  A few staples on the menu include the TMH Salad, Truffle and Garlic Chicken Wings, Lightly Smoked Chicken Breast and Steak Frites.  “Our menu is often guest-led.  When we took the Chips and Cheese dip off the menu for a period of time, our regulars didn’t waste any time letting us know that they wanted that one back.  So, it made its return.  We’re all about keeping our guests happy if we can do it” says Johnson.

As important as the focus is on the food, there is an equally important spotlight on the beverage side of things.

The TMH bar team, led by Bar Manager Bianca Lucia, puts heavy emphasis on rotating their drink menu seasonally alongside the food menu and brings in the classics, while adding seasonal flavors and unique combinations.  A few of their new fall favorites include, “Campfire Song”, a

s’mores-inspired Old Fashioned and the”Duchess”, a white cranberry martini that will keep the bar rocking through the upcoming busy holiday season.

The Meeting House is a restaurant that stays inspired by and for the community, with the plan to be around for many more years.

The Meeting House is located at 301 S. Main Street in Downtown Rochester.  They are open for dinner TuesdayThursday 4 pm to 10 pm, Friday 4 pm to 11 pm, Saturday 10 am to 11 pm and Sunday 10 am to 11 pm.  Brunch service is offered on the weekend only.  Happy Hour is offered at the bar Monday-Friday.  TMH has an outdoor rooftop patio as well as an event space.  Reservations can be made by calling (248) 759-4825 and event inquiries can be made at themeetinghouseevents@gmail.com

A TASTE OF UMBRIA: Nonna Leonilda’s LENTIL SOUP

In the heart of central Italy, nestled among the rolling hills and mountains of Umbria, lies the small town of Castelluccio. Known for its breathtaking landscapes and rich agricultural traditions, this region is particularly famous for one humble yet exceptional ingredient: lentils. These tiny, nutrient-packed legumes have been a staple in the kitchens of Castelluccio for centuries, and they hold a special place in the culinary heritage of the area.

For my nonna, Leonilda Bologna, lentils were more than just an ingredient—they were a connection to her roots, her family, and the traditions of her beloved hometown. She learned the art of cooking from her mother and grandmother, who would often prepare hearty dishes using the local produce. Among these, Nonna Leonilda’s lentil soup stood out as a family favorite, a dish that warmed our hearts and nourished our bodies during the fall and winter months.

The lentils from Castelluccio are renowned for their unique qualities. Grown organically and sustainably in the fertile valleys between the mountains, these lentils are smaller and more delicate than those found elsewhere. Their distinctive flavor and texture make them a versatile ingredient in many dishes, from soups and stews to salads and sides. But perhaps the most comforting way to enjoy them is in a simple, rustic soup, just as my nonna used to make.

ITALIAN FLAVORS TO LIFE AS THE OWNER OF BOLOGNA VIA CUCINA,

Nonna Leonilda’s lentil soup is a reflection of the land it comes from—simple, wholesome, and deeply satisfying. The

Owner, Danny Balogna.

lentils, rich in protein, fiber, and complex carbohydrates, form the backbone of the soup, providing a hearty base that is both nourishing and delicious. Naturally gluten-free and low in fat, lentils are also packed with essential nutrients, including B vitamins, iron, magnesium, potassium, and zinc, making this soup not only tasty but incredibly healthy.

One of the things that made Nonna’s soup special was its versatility. While it was always delicious on its own, she would sometimes add ground sausage for an extra layer of flavor and richness. The combination of the earthy lentils and savory sausage created a symphony of flavors that was hard to resist. But even without the sausage, the soup was always a hit, a testament to the quality of the lentils themselves.

As I share Nonna Leonilda’s lentil soup recipe, I’m reminded of the warmth and love that she poured into every meal she made. This soup is more than just food—it’s a connection to our family’s history, a taste of Umbria, and a reminder of the simple pleasures of life. I hope you enjoy this recipe as much as my family has over the years.
