Let's Eat, Houston!
There are two reasons this is my favorite time of year. Houston's seasonable shift is finally here –temperatures will dip below 90 degrees and stay there for the foreseeable future. And it is also time for the annual food issue!
I look forward to putting together this particular issue because I get to shine a spotlight on one of Houston's most defining features: its culinary landscape, where food and culture meet in the most delicious ways. I am excited to highlight the chefs, mixologists, and hospitality teams that have hoisted Houston onto a gastronomic pedestal.
This month’s cover story features chef Emmanuel Chavez and the team behinTatemó, which has garnered much critical acclaim, including two James Beard nominations and Food & Wine's Best New Chef in 2023, since opening its doors just three years ago. We go behind the scenes at Tatemó to find out what's next for chef Chavez and his team.
I've packed the pages full of the tastiest bites and sips you need to try right now. "Wich Hunt" dishes up Houston's most delicious sandwiches, while "New & Notable" highlights the best new restaurants on the scene right now.
I hope my love for Houston's food comes through in the pages of this issue. I have a constantly updating list of must-visit spots on my phone, which I share with friends, family, and even random folks who discover that exploring Houston's food scene is part of my gig. And I'd love to share it with you, too—drop me a line, and let's eat!
Heirloom corn and authentic Mexican dishes have propelled Tatemó into the limelight.

BUILDER ERIN STETZER CULTIVATES BEAUTIFUL HOMES AND GREAT RELATIONSHIPS
ARTICLE BY DIANE COWEN | PHOTOGRAPHY BY LUCY CALL
Deep, rich color on walls and ceiling along with dramatic lighting are popular in dining rooms in large luxury homes, such as this one by Erin Stetzer Homes.
“The coolest thing when you’re building a home is to find out the personality of your clients.”
– Erin Stetzer
After more than 20 years in business, Erin Stetzer has carved a comfortable niche in Houston’s luxury home-construction industry, but doesn’t forget those early days, when she and her husband were starting their family.
A native of Ohio, Erin moved to Houston as a sales representative for a chemical company and her work schedule found her constantly traveling. She and husband Alec married 23 years ago and they now have five children, ranging in age from 15 to 21.
Alec had worked in the home-building business and Erin was certain she’d enjoy that work and wouldn’t have to travel so much. She got a job at David Weekley Homes and spent three years learning everything she could about building homes and building relationships with clients. In 2003 she launched her own firm, now Erin Stetzer Homes, just as she was having her first child.
“The coolest thing when you’re building a home is to find out the personality of your clients. Something special happens when they add their flavor and you have to listen for that,” Erin said of her favorite part of the job, getting to know their clients.
Now with a staff of 9, her firm works on about 10 homes at a time. One side of her business is building $5 million-plus homes, and the other side is consulting work, providing private representation for large-scale legacy projects. Those are typically $10 million-plus projects with more than one structure, perhaps a main home and guest homes, plus a barn or shooting range.
She works with renowned architects such as Reagan and Andre, Dillon Kyle and Newberry Architecture, and award-winning interior designers such as Benjamin Johnston, Marie Flanigan and Lauren Haskett.
Ohio native Erin Stetzer is the owner of Erin Stetzer Homes and will be recognized this month as a Leader in Design by the Houston Design District.

Taco de Res, made with wagyu ribeye wrapped in a smoked shallot.
Heirloom corn and authentic Mexican dishes have propelled Tatemó into the limelight.
Customers looking for Tatemó might have to circle the nondescript parking lot on Dacoma St. in Spring Branch before finding the right spot. Co-owner and award-winning chef Emmanuel Chavez explains that there is no sign on the door to discourage walk-in customers from popping into the exclusive reservation-only restaurant.
ARTICLE BY GABI DE LA ROSA PHOTOGRAPHY BY LAUREN HOLUB PHOTOGRAPHY
Chef/owner of Tatemó, Emmanuel Chavez.
Once the door opens, however, guests are immediately transported to the sounds and smells of a traditional Mexican restaurant. Less than 2,000 square feet in size, Tatemó is an intimate space with room for 16 diners at a time. Open Wednesday through Saturday, the restaurant offers two seven-course seatings each evening.
Tatemó, which means to roast, toast, or grill, has only been open for three years but has already upended the Houston dining scene by receiving two James Beard nominations, Food & Wine Best New Chef 2023, Esquire's Best Restaurant in America 2022, and much local acclaim, including Houston Chronicle's Top 100 Restaurants in consecutive years.
Chavez immigrated to Houston from Mexico when he was ten years old. Aside from a few years in Seattle, where he continued his culinary career, he is a steadfast Houstonian. "I can't imagine ever opening a restaurant anywhere else, and I don't think Tatemó would work in any city other than Houston," he says.
Chavez got his start making tortillas and selling them at farmers markets before he and co-owner Megan Maul decided to open a restaurant. After Covid forced them to go through several iterations of their idea, the pair agreed on a reservation-only model where customers prepay for their meals. Chavez explains that this method helps keep food and labor costs down. Although this dining model is standard in other parts of the country, it is a relatively new concept in Houston, and because of this, many mistake the restaurant for a fine dining establishment.
"Houston is so large and there are 20 different places to eat in every strip mall – restaurants are very accessible," says the chef. "Because of how we do things, people want to classify Tatemó as a special occasion or fine dining restaurant. If people want to celebrate something special and eat here, that is great, but it was never our intention."
It was his intention, however, to bring heirloom corn, considered the backbone of Mexican cuisine, to the forefront. Chavez imports all of his corn from Mexico and takes guests on a kernel-tomasa journey during their two-hour dining experience. The seven-course pre-fixe menu at Tatemó rotates every four months, but he emphasizes that small details change daily.

Chef Chavez describes Tatemó as something between a speakeasy and an exclusive restaurant.
"Every day, we try to make it better," he says. "We add or take away things and find inspiration from a chef or even the produce available at the markets. We bring those things in and try incorporating them into a dish."
One of the menu items that will always remain a staple is the quesadilla, a dish that reflects Chavez's roots in Mexico City. At Tatemó, the culinary team is dedicated to carefully preparing, sourcing, and executing their quesadillas. Chavez was among the first chefs in Houston to add avocado and caviar to his quesadillas. He believes that this innovation comes from the confidence and peace he feels in knowing that he and his team are doing things right.
"Since day one when I signed the lease on this space, I had a personal list of goals I wanted to accomplish before I turned 40, and winning a James Beard Award is still one of those goals," says Chavez.
The chef also has his sights set on being a Michelin-star restaurant and says that he and his team operate with that star in mind from the moment they walk in the door each day to the moment they walk out. "When Tatemó opened, people thought it was crazy for us to try and achieve that, especially because at that time, the guide was not even in Texas," says Chavez. "Fast forward two years, the guide is here. We have a little bit of a head start in that sense, so we are working towards a star next year, for sure." tatemohtx.com

Allegretto Vineyard Resort — your next fall road-trip destination
ARTICLE AND PHOTOGRAPHY BY
CHAD JEFFRY
In the heart of Paso Robles sits Allegretto Vineyard Resort — a true wine oasis. Approaching the resort, you can feel the atmosphere begin to take over. Passing by other local wineries and pulling into the resort, you experience the blending of Italian heritage and worldclass wines. The common theme at the resort is the Cello; everything from the shape of the property (the north edge of the property curves much like the instrument) to the design of the courtyard, the names of the wines, and the name of their on-site restaurant.
Allegretto’s resort includes over seven acres, with one of its three local vineyards sitting directly on the property. We had a guide to lead us through our tasting, giving us the full experience - working with our palettes to get the perfect taste from each varietal.
The tasting list included a 2022 Cello Chardonnay, which is finished in stainless steel barrels, and was light, crisp, and citrusy. The 2019 Heart of the Vibe, a blend of Petit Verdot, Cabernet Sauvignon, Malbec, and Tannat, had hints of lily and lavender and reminded me of my days in the Oregon wine country. The 2018 Cabernet Sauvignon from the Willow Creek Vineyard was a surprise because of how clean it finished. We ended with their 2018 Tannat from their Allegretto Vineyard on property.
As someone early on in their wine journey, each tasting was truly unique and tasteful. The progression from Chardonnay to Tannat helped the palette develop and enjoy the flavors and notes of each unique bottle. The robust Tannat was easily the favorite. The grapes originated from southern France through Uruguay and are now grown across the globe. With notes of butterscotch, cherry, and tobacco, it was rich and smooth. Tannat is also touted as one of the “healthiest” wines due to its high level of antioxidants.
Shortly after the tasting, there was a little time to explore the resort itself, from the breathtaking art pieces to the peaceful courtyard, bocce ball court, and the chapel. The most impressive piece may have been a cross-section of a sequoia tree that was felled in 1952, dating back to before 214 BC (before the Great Wall of China was built).
Moving on to dinner, we sat down at Cello Ristorante, the on-site restaurant and bar. Our server picked out their top dishes and drinks that were currently on the menu. She also informed us about the fact that they have not only resort guests who eat here but also regular locals.
I started off with one of Cello’s signature cocktails, the New Fashion — an amazing twist on the regular Old Fashioned that includes Basil Hayden Bourbon, Nitro-Infused Vanilla Espresso Turbo (made in-house and infused with a cinnamon smoke directly from a fresh cinnamon stick, an orange, and Angostura bitters.
We started our meal with the Shrimp & Risotto dish, made with garlic roasted shrimp, spring peas, mascarpone, baby arugula, pecorino romano, truffle, tomato confit, and Calabrian romesco. Shortly after, the 16-ounce Lamb Rack and a glass of the 2017 Tannat arrived. Paired with fresh grilled vegetables, a buttermilk and confit garlic mash, and drizzled with a Tannat demi-glace, this dish was more impressive than the first dish. To finish the meal we had the Triple Chocolate Bomb. The softness of the cake and mouse, with the crunch of the almonds, made this subtle, sweet, and too good to pass up and completely devour.
Next time you’re looking for an extended weekend trip, look no further than Paso Robles and Allegretto Vineyard Resort. They book fast for the weekends as they are always hosting music, art, yoga, and other events, so be sure to plan this one out soon.
