Scott Callahan, certified physician assistant (PA) and founder of Dolce Vida Medical Spa, purchased the iconic stone building two years ago.Working with DeMotte Architects, Callahan completely renovated and reinvented the historic space.

Fifteen years ago, the Dolce Vida office in Hamden was one of the first med spas to open in Connecticut. Since then, Dolce Vida is the only practice in the state that has won the Top 100 Best Aesthetic Injectors award seven years in a row. This unparalleled recognition is due in large part to the expertise of its staff and their dedication to offering some of the most cutting-edge procedures in the country.

Today, Dolce Vida operates in four locations: Westport, Hamden, Trumbull, and Ridgefield, with a team of medical doctors, physician assistants, nurse practitioners, aestheticians, and medical specialists. USING THESE TIPS YOU CAN MAKE A DELICIOUS HOMEMADE BARBECUE SAUCE.

A good barbecue sauce is comprised of a variety of the same six components. The key is to discover what style you enjoy most, and don’t be afraid to experiment. Oh, and taste often during the preparation process to adjust if so desired.

SOMETHING SWEET

This can be honey, cola, molasses, preserves, brown sugar, or syrup. This caramelizes as you cook, bringing those smoky, sugary flavors.

SOMETHING TANGY

Think vinegar, mustard, or citrus. This is what brings the zing to your sauce.

SOMETHING SPICY

This provides your heat: a hot sauce is a great choice. A good rule of thumb is to use about 1/2 teaspoon for every cup of sauce you’re making.

SOMETHING LIQUID

It can be beer, water, chicken stock, soda, or wine. Start with about 1/2 a cup and see what happens.

SOMETHING TOMATO

You’ll most likely use ketchup, but you can also use tomato paste.

THE SPICE COMBINATION

This can depend on your liking and taste and can include anything from onion powder to garlic powder to chili powder to allspice to cayenne pepper to mustard powder to liquid smoke to cumin to Worcestershire sauce and more. Start with a teaspoon of salt, and keep tasting as you experiment with your desired spices.

INGREDIENTS

• 2 cups ketchup

• 1 cup water

• 1/2 cup apple cider vinegar

• 5 tablespoons brown sugar

• 5 tablespoons sugar

• 1/2 tablespoon  black pepper

• 1/2 tablespoon onion powder

• 1/2 tablespoon ground mustard

• 1 tablespoon lemon juice

• 1 tablespoon Worcestershire sauce

DIRECTIONS

In a medium saucepan, combine all ingredients. Bring mixture to a boil, reduce heat to simmer. Cook uncovered, stirring frequently, for 1 hour 15 minutes.

EZ Services is not your average business. What sets it apart is its owner, Ezra Zimmerman.

Zimmerman has lived in Ridgefield his entire life. He launched EZ Services in 2011, starting out with a little bit of everything— from tree work to junk removal to moving.

Over the years, the company became more focused on moving. Now renowned throughout Fairfield County and beyond for its white-glove treatment, EZ Services first operated out of a warehouse on Bailey Avenue. Today, they’re based in a sprawling 5,500-squarefoot facility at 679 Danbury Road, across from Flobee’s.

A few years after starting the business, Zimmerman began doing philanthropic work.

“I’ve always been about helping others,” he says. “And I’ve always thought businesses don’t give enough back to people who are in need—especially, typically, blue-collar businesses.”

Determined to change that narrative, Zimmerman decided to lead by example. He partnered with Open Doors, a housing and homeless service organization that supports individuals and families on the path to stability.

From 2015 to 2020, Zimmerman and his team collected over 5,000 coats in Ridgefield and delivered them to the Open Doors facility in Norwalk. He’s also organized drives for the Women’s Center of Greater Danbury (now The Center for Empowerment and Education).

Beyond Fairfield County, Zimmerman and a few friends once pooled their own money to purchase over 400 turkeys, hand-delivering them to families in Harlem on Thanksgiving.

When Hurricane Harvey devastated Houston in 2017, Zimmerman didn’t hesitate.

“That was one of our biggest missions,” he recalls. “We raised over $20,000 in less than three days. I flew to Texas with a friend and met

another friend there. Then we filled a truck with supplies and drove to Houston, donating everything to a church supporting displaced residents. We wrote them a check with the leftover funds.”

As our conversation with Zimmerman unfolds, his humility becomes more apparent. That Houston mission landed him and his friends on national news—something he mentions in passing.

“That was pretty interesting,” he tells us with a shrug.

Pressed a little more, he shared a few additional stories—like the time, early in the pandemic, when Danbury Hospital ran out of ventilators. They called Zimmerman, who sent a member of his team to Kentucky—not once, but twice—to retrieve a truckload of them. The second time, the truck even had a police escort back to Danbury.

When Hurricane Helene wreaked havoc in North Carolina last September, Zimmerman launched a GoFundMe page and raised nearly $11,000. With a friend, he purchased pallets of food, winter clothing, and other essentials, then drove the items to Arden, NC, donating everything to the Asheville Buncombe Community Christian Ministry.

Zimmerman is a member of Shir Shalom in town, where his mother, Deborah Katchko-Gray, recently retired as cantor after 25 years. He can’t point to a watershed moment for his philanthropic drive. It just seems part of his nature.

For the past six years, he’s quietly provided dozens of meals to residents of the Ridgefield Housing Authority and others in town who were, as he puts it, “going through it.”

He adds, “Oftentimes I’d slip $1,000 or $1,500 into the bags because I knew they needed that money for food and bills.”

EZ Services has also partnered with SOAR Together to sponsor a Social Seats meal, which provides an opportunity for intergenerational community members to connect with each other for food and conversation.

Zimmerman currently sits on the Executive Board of Compassionate Ridgefield, an organization dedicated to cultivating empathy and inclusivity in town. He is a natural fit.

“The whole purpose of the group is to promote compassion,” he says. “We meet once a month and go over what’s been happening in town. We have these coins we give to people who’ve demonstrated compassion in their lives or in the community. The spreading of those coins has helped raise awareness and share the mission.”

With five large trucks and nearly as many staff members, it’s easy to forget that Zimmerman’s day job is moving, decluttering, and junk removal. But just like his charitable efforts, each job is approached with care and respect.

“We specialize in high-end moving,” Zimmerman explains. “Antiques, artwork, pianos, home furnishings—we pride ourselves on being able to move everything without a scratch. That’s our cornerstone. We’ve done everything from moving a single couch upstairs to clearing out entire estates.”

With a heart of gold, Zimmerman is forging a new gold standard for blue-collar businesses.

“I aim to do something philanthropic once a quarter,” he says. “For the most part, we’re the ones putting up the money. And any time I’ve accepted donations, they’ve gone straight to the people who need it most.”

How Mike McManus Is Elevating Wellness, One Step at a Time

Mike McManus has always thrived in a team setting. A former Division I football player at Marist College (now Marist University), he found himself missing the camaraderie and shared purpose of a team setting once he entered the corporate world. As he advanced in his career, the long hours and sedentary lifestyle began to take their toll.

“A theme far too common for so many,” McManus says. “I always thought I could out-train a bad diet, but at some point in your thirties, the weight just doesn’t melt off anymore.”

The turning point came while coaching his daughter’s soccer game. Sixty pounds heavier than during his football days, McManus struggled to keep up.

“I had a moment where I asked myself, ‘What kind of example am I setting for my kids?’”

That question sparked a transformation—one that would ultimately evolve into Forge Ahead, a wellness company rooted in evidence-based nutrition, personalized coaching, and a surprisingly simple practice: rucking.

Originally from Long Island, McManus moved to Ridgefield in 2015. He holds an MBA from the University of Connecticut, completed Harvard’s Principles of Biochemistry course, and is certified as a Nutrition Coach through the National Academy of Sports Medicine. He also serves as a lieutenant in the Ridgefield Volunteer Fire Department—a role he considers a deep honor and privilege.

Though McManus had always been surrounded by sports, it was his growing interest in the science behind metabolic health, recovery, and sustainable

wellness that drew him into the world of biochemistry and nutrition.

“The more I studied, the more fascinated I became by how nutrition influences everything from energy levels to mental clarity,” he says. “There’s so much information out there—I felt compelled to break it down, experiment, and find what truly works.”

From plant-based to carnivore, McManus explored the nutritional spectrum. By the time the pandemic hit, he was in the best physical shape of his life—but mentally, the isolation was challenging.

“I’m an extrovert. I get energy from being around people,” he says. “When that disappeared, I realized just how vital community is to overall health.”

So, he suggested masked meetups with a few friends at a local coffee shop. Soon, the outings turned into long, socially distanced walks around town. One day, someone suggested adding a little weight.

“I said, ‘You know, the military’s been doing that forever—it’s called rucking.’”

Derived from the German word for “back” (der Rücken), rucking refers to the act of walking with weight on your back—a

staple of military training. Today, it’s recognized as a low-impact, highly effective form of cardiovascular exercise for men and women alike. Whether you use books, groceries, or specialized ruck plates, the idea is simple: load up with some weight and start moving.

Early in his rucking journey, McManus connected with GORUCK, the leading supplier of rucking gear, and Forge Ahead became an official GORUCK-registered rucking club.

What makes rucking so effective, McManus explains, is its ability to tap into Zone 2 cardio—a heart rate sweet spot (roughly 60–70% of maximum) that promotes fat oxidation, builds endurance, and requires minimal recovery time.

“We started going farther, adding more weight, and something just clicked,” McManus says. “We were getting fit, sharing stories, and building real mental toughness together. Then the questions started—people wanted to know what to eat, how to feel better, how to stay consistent.”

That’s when Forge Ahead truly took shape—not just as a fitness group, but as a full-spectrum coaching platform focused on sustainable transformation. McManus developed a four-phase coaching model that blends education with action, placing long-term health above quick-fix gimmicks.

The program begins with metabolic re-education and body recomposition, then progresses through meal timing adjustments, strategic food reintroductions, and ultimately, long-term self-sufficiency.

Forge Ahead offers three coaching tiers— Essential, Advanced, and Premium—to meet clients wherever they are in their journey.

The Premium tier offers the most hands-on experience: weekly check-ins, in-depth strategy sessions, and even personalized grocery store visits. McManus helps clients navigate the aisles with confidence, building plans tailored to their goals, preferences, and dietary needs—all while using whole, nutrient-dense foods.

“I love coaching, and I love watching people discover their own version of success,” McManus says. “For each person, that looks a little different—and that’s what makes the journey so meaningful.”

One of the most powerful things McManus has learned, he says, is that not all calories are created equal.

“Nutrient quality matters. Bioavailability matters. Food should serve a purpose.”

That belief inspired his self-published book, Making Nutrition Digestible, a science-backed guide to understanding nutrient absorption and food sourcing across both plant and animal foods.

At home, Mike and his wife, Christina, are raising their four daughters with those same values. The family grows fruits and vegetables, raises chickens, and sources an entire cow each year from a trusted rancher.

“Bones, fat, organ meat, muscle meat—we use everything,” McManus says. “That one animal nourishes us for a whole year. We’re deeply grateful for what it provides.”

In a world of fads and shortcuts, McManus—now 41—is walking proof that the way forward is through the fundamentals: real food, real effort, real community.

“It’s amazing what happens when you get outside, ditch the processed stuff, and just live a little more intentionally,” he says.
