Welcome to our October editorial! This month, we are celebrating the glory of food and wine. We want to appreciate the local places that feel like home, where everyone knows your name, just like the famous song from the show Cheers. As a Pensacola resident, I have truly come to savor the diversity of dining options and creativity available to us. In this month’s cover, we celebrate Ballet Pensacola’s 46th season! We gathered the pro fessional dancers for a magical fairy tale photo shoot to celebrate with a champagne toast. I am inspired by how Ballet Pensacola has creatively found a way to bring the community an experience filled with magic before each show. You can never go wrong tying in the warmth of food and drink in a culinary and artful collaboration. Ballet Pensacola will be sponsoring inspired culinary delights at special events before the opening of each show. We can not wait! Exploring Pensacola’s savory fares you have the array of delicious International food trucks that can be found throughout our city. In the last year, we have been lucky enough to have a steady growth in emerging hidden gems, Small cozy restaurants serving up home-cooked meals from Cuba, Ethiopia, Vietnam, and Jerusalem. Speakeasies are popular as a newer genre on the scene. Our team was hosted in an intimate private party at SisterHen by A.J. Galecki the bar manager extraordinaire. We had the opportunity to dive into the popularity of these 1920s concepts, which have found revitalization across the country. A signature cocktail was fashioned for us, much to our delight! Let’s not forget the culinary feats we make at home. There’s something truly special about gathering around the kitchen with loved ones, surrounded by delicious food and good wine. It’s a time to reconnect, share stories, and make memories. And what better way to do that than by recreating your family’s beloved recipes? The warmth of the kitchen, the laughter, and the occasional shouts of disagreement over how to make a certain dish - these moments will stay with us forever. No matter where or when you partake in your enjoyment of food and drink, whether by yourself, family, or friends, savor every moment and every bite, for these experiences will create great memories. events fashioned to the community for its enjoyment. Pensacola is unique in the fact that as a small town, the arts here usher in a level of sophistication and continuous celebration that only being home to the Big 5 - Ballet, Museum of Art, Opera, Symphony, and Theater - can bring.

Of the five, Ballet Pensacola is perhaps the best kept secret. This month Ballet Pensacola is opening its 46th season. With a strong lineup and intended to appeal to the greater Pensacola community, never before has the ballet put together such a rich program of offerings for us to partake in. They are serving up events to elevate every production, for young and old alike. Different venues throughout with offerings of eats and sips, opportunities to meet

the professionals, and to get a small token to mark the multitude of experiences.

The season begins with the timeless classic, Cinderella. In celebration of it, and aimed at the littlest of princesses in the community, there will be a  Tutus & Tiaras Tea. It is considered a high tea, a wonderful array of cakes and cookies, whipped sugars and creams, sprinkles and sparkles. To swizzle, there will be teas and a signature drink for the fairest in the kingdom. Find your finest royal wear and join the festivities at the best tea party in all of the land.

In December, Ballet Pensacola offers the timeless classic we all know and love, Tchaikovsky’s The Nutcracker, with some extra surprises in store. If it does not start and end with sugar, then are you doing

it right?  The Nutcracker: Land of the Sweets is sure to delight. Only those with the finest appreciation for sugar plums and sweets will relish this event - of course, everyone loves one sweet or another. Take a walk through the land of the sweets where hot chocolate warms the spirit. Marshmallows and sprinkles, cookies and puddings, cakes and chocolates, all crafted locally, will start your season off with this wonderful array of sugary pleasures.

Next, transport yourself to the land known for its passion, dance, and most importantly - food. The spring production of Don Quixote, a timeless classic for all ages, will transport Ballet Pensacola guests for a night to remember. With flavors deeply rooted in the Mediterranean with influences from the north of Africa,  Sangria at Sunset is the sort of downtown event that brings in an unexpected breath of fresh air. Sip on Sangria, cava and Spanish wines to the hypnotic sounds of the Iberian peninsula. Tapas and pintxos, Spanish-style small finger foods, are the language of love at this event. This experience is curated to whisk you away to another time and place. Salud!

With one last opportunity, in their season, to create something fresh and new, Ballet Pensacola is having their first ever Choreographer’s competition, appropriately called:  Ballet-Bourbon-Ballot . The event itself continues to be shrouded in mystery, and what more exciting way to pique the curiosity of the local crowd? With drinks and bites to tempt our ‘good times’ Pensacolians, this is a twist on your usual tasting event. We have all tried it the traditional way. CHICKEN NOODLE SOUP

This hearty chicken noodle soup is the perfect comfort food that is packed with nutritious goodness. This pairs perfectly with homemade beer bread or a sourdough loaf.

INGREDIENTS:

• 8 cups chicken broth (add more if desired)

• Whole fryer chicken, cut in chunks or shredded

• 5 celery stalks, sliced

• 8 carrots, sliced

• ½ onion diced

• 4 tablespoons butter

• 1 teaspoon italian seasoning

• ¼ cup half and half (optional)

• 1 package egg noodles

• Salt and pepper to taste

DIRECTIONS:

In a large stock pot, add 8 cups of chicken broth. Dice carrots, celery and onion and add to the broth. Bring to a boil, and reduce to medium heat until the vegetables are soft. In the meantime, skin and cube 1 whole fryer chicken and add to the stock pot. Next, add egg noodles (frozen Reames homemade egg noodles are my favorite) and let boil until noodles are cooked. Add butter, half and half, salt, pepper, and Italian seasoning. Simmer on low until ready to serve.

This month Alex puts A.I. to the test

“Siri, what wine goes with a supreme pizza?” Why even bother knowing a few basics of Wine-Food pairing when you have your own personal sommelier on your phone? Well, Siri, Alexa, and Google were put to the test. Could they pair the perfect wine for our lunch, or would my picks come out on top?

The challenge: pick two wines, a red and a white, to have with a full assortment of street tacos and two different pizzas! The tacos included four different meats cooked in five different styles. The pizzas were a supreme and margherita. We would be using the basics of Wine-Food pairing taught by all of the accredited wine programs along with my own knowledge of wine against the best the A.I. web had to offer.

The lunch audience included myself and some elite runners from Running Wild. Each A.I. was asked for the best wine pairing with each individual food and then for the best wine pairing with all the food

together. Results varied yet after sorting them a few similarities emerged. The A.I.s took a more targeted approach, and on the whole, picked a Chianti Classico and a Sauvignon Blanc.

Our food had a lot of big flavors, so we needed a red and a white with a little bit of everything. Everything includes a balance of everything good in a wine; fruit, earth, minerality, and acid; great flavors and texture. The picks; A high-end red Douro blend and a playful white blend from Puglia.

The A.I. choices did very well, but everyone agreed that the “everything wines” did better. So, there still is some art involved with good wine and food pairings. Knowledge, experience, and creativity matter! Use A.I. as a guide, but don’t be afraid to think for yourself and experiment, you will have much more fun in the end. Cheers to that!

ANNo sign needed. No secret password. If you find this quaint place, look for a red pay phone, pick it up, and ask for entrance.

The door opens to a dimly lit room, flickering candlelight, and the chink, chink of ice softly sifting through a cocktail shaker. Sister Hen, off North Alcaniz Street, is Pensacola’s only realistic speakeasy, and a phenomenal place to sip craft cocktails.

Behind the bar, patrons in the cool space find warm bartenders with a mix of sophistication and friendly conversation. Described as “cool, fly, tatted, and skilled,” A.J. Galecki the bar manager, is reminiscent of a prohibition-era bar kept with modern edginess. His principal bartender, Chloe Stibolt, is a vision in black silk who adds to the nostalgic 1920s vibe. She finds eclectic antique glasses and teacups to serve drinks in a nod to prohibition days.

His philosophy is a good bartender is a good bartender whether he’s making a twenty-fivedollar drink, or a simple lemon drop shot.

Chloe says customers are a blend of locals and visitors. “It really is an intimate space. It offers something different. Sort of a secret. Some people make it their regular spot.” She added that some customers walk over from their homes in the historic Old East Hill neighborhood. Others are visitors staying at Lily Hall, the boutique hotel upstairs.

The space is sister to the highly rated BrotherFox restaurant next door which serves most everything with a live-fire approach, so after a meal of coal-roasted oysters or Carne Asada for two, couples wander over to Sister Hen for a nightcap. The businesses opened in March 2023. Chloe says the speakeasy’s location spread by word of mouth. It was never advertised. Despite the low-key nature of the little hideaway, there’s often a wait because the intimate space only holds twenty people.

The only thing not shrouded in secrecy is Sister Hen’s reputation for outstanding service and exceptional drinks. A.J. knows his way around a bar after eight years in training by masters. “They instilled in me a lot. First, make everybody feel great, and I care about the ingredients.” For example, expresso martinis were not added to the menu until he and his staff found the perfect expresso. “Like coffee, drinks have a theory and are science based.”

A.J. adds, “We do scrubs a lot which is equal parts vinegar, sugar, and fruit. It was an old way in the 1800s to preserve fruit on the homestead.”

He used a similar method to come up with a special signature drink just for Pensacola City Lifestyle Magazine called the La Rua Sour. La Rua is the street they are located on in the neighborhood.

A.J. says when he mixes a drink, he pays attention to every detail including how much he shakes or stirs it, and he makes adjustments. Chloe explains, "We don’t change the menu seasonally. We change it based on what people like.”

The menu is extensive and includes selected classics like a Pimm's Cup, Old Fashioned, or Side Car, but it includes house-curated concoctions as well. An A.J. original is the Gingerfication .  “That’s a cocktail that always gets ordered a second and a third time." It is a blend of bourbon, Campari, lemon, and locally sourced blackberry-ginger balsamic vinegar. A local patron and fan of the

drink simply said, “It is incredibly well-balanced. Complex flavors of bitter and sweet.”

Though many of the drinks sound bougie or avant-garde, A.J. is quick to explain he’s not a “snotty dude” when it comes to pleasing customers. His philosophy is a good bartender is a good bartender whether he’s making a twenty-five-dollar drink, or a simple lemon drop shot.

Sister Hen also serves beer and wine and works at having competitive prices.  The speakeasy opens at five Wednesday through Sunday and closes earliest at ten. It is often open until midnight or later. Happy hour is five to six with some $7 dollar drinks.

Sister Hen is easily one of Pensacola’s best-kept secrets. It’s a twist on old times with a fresh new flair.

THE LA RUA SOUR

A Pensacola City Lifestyle Signature

Cocktail fashioned by A.J. Galecki

Don't just make the cocktail, consider planning a dinner party and serve up a La Rua Sour to your guests. Whether it's themed as a prohibition-era underground soiree or a porch side refresher, this concoction is sure to help you and yours relax on a cool fall evening. Cheers!

ingredients:

• 2 oz Gin

• 3/4 oz Ginger root syrup (made in house)

• 3/4oz Lemon

• 2 dashes Angostura aromatic bitters

• 1 Egg white

• Orchid flowers

• Tall glass

directions:

1) Combine ingredients.

2) Shake and strain.

3) Dry shake (Shake again) to further emulsify the egg white.

4) Garnish with red wine (Pinot noir).

5) Pour into a tall glass over ice.

6) Garnish with an orchid.

GINGER SYRUP

ingredients:

• 450g cane sugar

• 450g water

• 300g Ginger root

directions:

1) Mix equal parts water and cane sugar.

2) Blend and strain. Strain again.

Flavors and aromas that tell the story of your past

“Memories are often associated with flavors and aromas. Over 55 years ago, my German mother carefully collected recipes from her mother, that had been part of our family for over 150 years. These recipes were originally brought over from Germany and adjusted in Northern Minnesota when Laura Ingles lived not far away on the Little House on the Prairie. Thanks to my mother’s dedication, these recipes have not been lost and continue to be cherished by my family and children.

Pastry:

• 1 stick of butter

• 1 cup of flour

• 1/4 teaspoon of baking powder

• A dash of salt

1. Mix all ingredients by hand. It will have the consistency of pie crust.

2. Pat into a round glass or ceramic pie dish.

Custard Cake:

• 1 egg, beaten

• 1/4 cup of heavy cream

• 1 cup of sugar

1. Pour the mixture into the prepared pie crust. Top with 5 or 6 peaches, sliced. Place the pieces overlapping in 3 or 4 rows, in a circular formation.

2. Bake at 350 degrees F for 1 hour.

3. Turn the heat down to 275 degrees F and bake for another 30 minutes.

4. Remove from oven and allow to cool before serving.

Prep time: 15 minutes. Cook time: 90 minutes.
