I n the bustling streets of Pensacola lies a gem that shines known as Atlas Oyster House, a place where the vibrant atmosphere is home to elegant waterfront dining and extraordinary culinary creations in a vibrant atmosphere. The man behind this gastronomic wonderland is Chef Jason Hughes, a maestro of flavors known for his unique blend of Southern hospitality and global culinary trends. His journey and creations are a celebration of local traditions and worldly influences.

Originating from Mobile, Alabama, Jason's formative years spanned the scenic Gulf Breeze, Florida, and Daphne, Alabama. These diverse locales instilled in him a profound appreciation for the Gulf's culinary wealth. Embarking on his culinary path at just 16, Jason began as a humble line cook and dishwasher. During his academic pursuits, he committed 40-50 hours each week to the kitchen, passionately learning and refining his culinary skills. Jason's dedication was unwavering – always the first to arrive and the last to leave. This relentless work ethic was his way of compensating for the lack of formal culinary training, driven by an eagerness to learn and excel in the art of cooking. His path took a pivotal turn when he chose the heat of the kitchen over an English major at the University of South Alabama, leading him to a bustling bakery-cafe in Boston. 2009 marked a significant milestone in Jason's career as he returned to the Gulf Coast. His culinary ascent was rapid and impressive – from sous-chef at Stinky’s Fish Camp in Santa Rosa Beach to Chef de Cuisine in Navarre, and eventually becoming the Executive Chef at The Club at Hidden Creek at the young age of 27. His journey meandered through esteemed kitchens such as The Fish House and The Grand Marlin on Pensacola Beach, culminating in his current role at Atlas Oyster House.

Chef Jason's culinary philosophy is as diverse as his background; he sees food as the universal language. He skillfully marries the familiar tastes of the South with international influences, drawing from Louisiana Creole, Italian, French, and even South African cuisines. At Atlas, Jason's signature dish, the Oysters a Yaya, is a testament to his creativity and respect for heritage – a reinvention of smoked gouda cheese and Yaya sauce, inspired by family recipes passed down through generations. How do you feel about the interior design of the restaurant matching the overall concept and your vision?
Our restaurant, Pearl & Horn, draws inspiration from both land and sea, a theme that’s playfully reflected in our decor. The establishment is divided into two main areas, each embracing a side of this theme. The “Pearl Room” captures the essence of the sea with its pearl-white hues, dramatic tiling at the oyster bar, and a palette of blues and greys near the cocktail bar. In contrast, the “Horn Room” offers a land-inspired retreat, reminiscent of a warm, English hunting lodge, complete with lush plants, green tones, rich walnut wood, and an eclectic mix of antiques, books, and a prominently displayed buck.
In what ways does Pearl & Horn’s interior enhance the overall experience for diners?
Our two primary dining areas, the ‘Pearl Room’ and the ‘Horn Room,’ each evoke distinct atmospheres. The Pearl Room, housing the cocktail and oyster bars, buzzes with vibrancy and energy. In contrast, the Horn Room exudes intimacy, with its semi-circular banquettes and lush greenery enhancing a sense of seclusion and coziness.
How does the overall look foster a sense of welcome and comfort, creating this ambiance?
Comfortable seating and mood lighting create a welcoming environment, complemented by rich colors and intricate details. Interior design is crucial, often as enticing as the menu. It can transport guests to a different world.
Are there any distinctive or unforgetta- ble aspects that particularly grab your attention when you first walk in?
Our oyster bar is a particular favorite. As a focal point in the room, we wanted to showcase the beautiful seafood that we would be serving. We chose a tile that reminded me of the pattern and coloring of the outside of oyster shells, but also with gold veining for added elegance.
When you saw the completed design of the restaurant, what kind of emotional connection did you feel with it? I’d love to hear how it struck you!
This project was a labor of love that took years to come to fruition, so the finished design is very dear to us and occupies a special place in our hearts.

Scenario: You are at a “fancy” wine event and you have just been told that they have put out some “amazing” wine. Everyone starts to taste this “amazing” wine and

begins to proclaim that the wine is “Amazing!” You take a sip and… you don’t think it is amazing, in fact, you don’t like it at all! Everyone turns to you, the only outsider to be invited, and begins to ask; “What do you think?”
Last month we talked about how “amazing” our wine scene is here in Pensacola, accessible and fun! I argue that it is true “Wine Country.” I can confidently say that the scenario above DOES NOT describe any of the wine tastings that I have been to locally. That scenario does describe a wine event I was invited to. I was very excited to go; lots of expensive wines with lots of people to talk with about wine. For a wine geek like me, that’s a win! Well, it didn’t exactly turn out that way.

So how would you answer the question above?
There are only a few “truths in wine.” In Vino Veritas. Truth #1: Don’t be afraid to like what you like! Being genuine and authentic, and true to what YOU are tasting, is the best way to stand your ground in a scenario like the one described here. Everyone has a different tongue, a different palate, so don’t be afraid to like what you like, and be confident in voicing that you didn’t like a certain wine. The key is to be honest with yourself and you will have nothing to fear when everyone else disagrees. Having the words and knowledge to describe what you are tasting definitely helps! You will be surprised

when several of the others who first proclaimed that the wine was “amazing” all of a sudden take another taste and denounce it; “well, it really has turned on the second sip.”
One of the other “truths in wine” is that no one knows everything about wine. There are some who do know a lot about wine, and it is marvelous when you find those who enjoy sharing their knowledge in the endeavor of making it a better experience for everyone. It is a great feeling when you can begin to explain why you like that “amazing” wine. I have spoken with a lot of people who don’t come to wine tastings because they think wine tastings are full of wine snobs, or they are going to somehow embarrass themselves because they “don’t know wine.” It’s actually really sad. The wind whispers through windowpanes, casting dancing shadows on the walls within. Rain softly taps on the roof and windows, muffling the sounds of the world. Great Coffee aroma, helping spirits as I head out for my commute.
The front door groans open, releasing a cloud of frosty air that quickly melts into the warmth. Golden light spills from the living room, beckoning you in. A fire crackles in the hearth, I grab the candle remote casting flickering shadows on worn armchairs and a well-loved rug.

Ina Garten, my favorite home chef. For years, my children would ask what I was making; ‘A recipe I have from Ina,’ I’d reply. Then came the question, ‘Why does Ina, your friend with all the great recipes, never visit?’ I couldn’t break the news to them at that point, not until several years later. Telling them she wasn’t my friend was like telling them there wasn’t a Santa Claus.
