I don’t know about you but I love any opportunity to recognize women who just make life more meaningful and beautiful and there is no shortage of women in The Parkland who continue to inspire me daily. Our wives, mothers and daughters are some of the most influential people of our community, weaving the very tapestry of our lives.

And of course with Mother’s Day this month, all eyes are on moms… But it’s not just the biological matriarchs that move us. The mother figures in our lives also make an indelible impact. It’s the family members, teachers, friends and neighbors doing awesome things in our community, pouring into our lives - making themselves invaluable.
I can remember moving to The Parkland several years ago, looking for a workout program that fit my needs. I stumbled into a class at the Civic Center, knowing no one. Feeling a sense of welcome right away, I knew I had found the right place. The women there opened their hearts and showed me a safe and loving place to not only exercise and do something fun, but they also showed me camaraderie and belonging, ensuring I felt a sense of pride and togetherness that could not be replicated. Since that day, I have a grown deep respect and adoration for these like-minded ladies and we now look after each other, in all facets of our lives. I simply can not imagine life without them. Can you say, “Blessed”?
While it’s always important to shop local and support our small businesses, this month is the perfect time to show particular attention to the female patrons and leaders of our community. That’s one of my favorite parts of this role - connecting with and bringing attention to the women in our area.
They are movers and shakers, builders and makers. They are both seen and unseen. Their silent service blesses those all around them. Their attention to detail shows us something about beauty and nurturing that can’t be fully understood.
I hope you’ll take a few minutes to send a text or make a phone call to the women in your life who have made an impact and deserve recognition. It only takes a minute to brighten someone’s day and remind them how much you love them. To the amazing women of The Parkland, I thank you. I hope you find this edition as a testament to the power you yield. You go, girls!

“The work we do is vital, many people in our community rely on food pantries to thrive.”
Chris Landrum has always had a heart for helping others. For 26 years, she worked as a counselor at Mineral Area College (MAC), where she guided students planning their future careers. Her role extended beyond advising, as she built lifelong relationships with students and faculty, leaving a lasting impact on the MAC community.
Chris’s dedication for giving back hasn't been confined to the walls of academia, however. She has always had a passion for the art of baking – kneading dough, decorating cakes, and sharing homemade goods with friends and family. For Chris, baking wasn’t just a hobby, it was a way to comfort others. Her love for baking, paired with her commitment to community service, ultimately led to the creation of Help the Hungry.
In 2004, she was moved by a Parade magazine article about the Great American Bake Sale, a nationwide charity that raises funds to feed children in afterschool programs. The concept of using something as simple as a bake sale to make a meaningful impact deeply resonated with her, inspiring her to create an event that could directly support her own community.
When she first pitched the idea of a community bake sale to a local business owner, her enthusiasm was met with skepticism. However, the seed had been planted. A year later, she experienced a moment of divine intervention, “Hey Chris, what about this bake sale?” she recalls hearing in her heart.
Encouraged by this renewed sense of purpose, Chris reached out to Chuck Henson, a longtime administrator at Farmington High School and an active member of First Baptist Church. Recognizing the potential of her vision, Chuck helped Chris connect with key community members who could help bring her idea to life. With his support, Chris rallied a group of twelve women from various churches; all eager to join forces for a common cause. Together, they formed the Help the Hungry committee, setting in motion what would become one of Farmington’s most impactful non-profit organizations.
In 2005, the first Help the Hungry Bake Sale took place at the Centene Center featuring vendor booths, a small live auction, and cooking demonstrations. The overwhelming response exceeded all expectations. Donations poured in – so many, in fact, that organizers struggled to find enough space for all the baked goods, raising over $10,000 for those in need within the community.
Thanks to the tireless efforts of volunteers, the bake sale has grown into an annual tradition that raises significant funding for local food pantries. What began as a simple idea, born from a love of baking and a desire to feed those in need, has become a vital resource for many, proving that a little flour and sugar can spice up community spirit to change lives.
Chris' original vision has evolved into more than just an opportunity to purchase homemade treats. It’s now a Parkland-wide celebration that brings together churches, businesses, social organizations, schools, and residents. Each year, the event features an array of activities, including live and silent auctions, raffles, and the much-anticipated Cookin' Clergy Contest, where local pastors have fun showcasing their baking skills. The 19th annual bake sale, held on November 23, 2024, was a testament to the community’s dedication, raising an impressive $118,000. The proceeds were equally distributed between the St. Vincent de Paul and Farmington Ministerial Alliance food pantries.
Over the years, the foundation’s impact has been profound. To date, cumulative contributions have surpassed one million dollars, solidifying the community's unwavering commitment to supporting neighbors in need. The bake sale's success is not only measured in dollars, but in the unity and generosity it fosters amongst participants. Attendees anticipate the yearly event, often lining up early to secure coveted pies and other sweet treats. The live auction features a variety of items, from sports tickets to unique experiences, ensuring something for everyone.
In addition to the annual bake sale, Help the Hungry has expanded its efforts to include another beloved community event, Help the Hungry BBQ. This initiative began over 10 years ago when Tim Morgan, Service Manager at Auffenberg Chevrolet of Farmington, offered his help. Eager to contribute, Auffenberg soon became a key sponsor of the event.
The Help the Hungry BBQ has become a savory staple of the annual fundraising efforts. Last year alone, the event sold 1600 BBQ lunches in just two hours, raising $11,700 with the community coming together to enjoy great food and fellowship for a worthy cause. This event has proven to be just as successful as the bake sale, with all proceeds benefiting local food pantries.
With each bake sale and BBQ, Help the Hungry continues to strengthen its mission of supporting our neighbors, proving we can make a meaningful difference in the lives of others, if we work together. Nearly two decades
later, this foundation stands as a powerful testament to the impact of generosity and goodwill, continuing to shine as a beacon of hope for the Parkland and beyond.
Chris and the women of Help The Hungry have laid a foundation of success, for which we can deeply admire, but her goal has shifted from gaining awareness, to building a legacy. Can we move the needle even more? Chris thinks so. It is now up to us and our daughters to see this movement not only last, but grow and make an even bigger impact. She is the mark of a true pioneer, born of a generation made up of grit and hard work. The young women of The Parkland can aim higher by joining the team and getting involved. In a world where the familiar often feels safest, Rachel Burns chose to carve her own path, one scoop at a time. Stepping away from the structured world of corporate finance, she plunged into the art of ice cream making with nothing but a backyard garden, an old ice cream maker, and an idea that refused to be ignored. What started as an experiment with homegrown mint soon grew into Bold Spoon Creamery, a thriving business built on fearless creativity, determination, and a commitment to flavors as bold as her ambition.
Rachel's journey began in St. Louis, where she spent her formative years. After earning her MBA from Webster University in 2000, she embarked on a successful two-decade career in finance. While thriving in the corporate world, Rachel’s love for gardening inspired a new endeavor. Faced with an accidental overabundance of mint, Rachel dusted off an old ice cream maker and began experimenting. This humble hobby soon became the highlight of gatherings, with friends and family eagerly anticipating her next frozen creation.
The seeds planted in her garden blossomed into a bold vision. In 2019, Rachel laid the legal groundwork for what would become Bold Spoon Creamery. The onset of the COVID-19 pandemic in 2020 presented unforeseen challenges, but Rachel's innovative spirit shone through. With traditional sales avenues uncertain, she adapted by launching a website and personally delivering samples of her ice cream in her University City neighborhood. This grassroots approach led to her first $40 order and laid the foundation for a burgeoning enterprise.
When Rachel was starting out, she gathered a trusted group of friends and peers—an informal tasting panel who dubbed themselves "The Spoons". These dedicated taste testers played a crucial role in refining her recipes. Rachel would have them silently sample each flavor, then complete a survey detailing their impressions on front-end and back-end
flavors, creaminess, texture, and overall taste experience. This meticulous feedback process allowed her to fine-tune her recipes, ensuring every serving met her high standards before making its way to customers.
Bold Spoon Creamery's presence soon graced the Tower Grove Farmers' Market in the heart of St. Louis, where Rachel engaged directly with the community offering samples and compiling feedback. By July 2020, Smokehouse Market in Chesterfield became the first retail store to feature her products, which would prove to be the catalyst for large-scale distribution. Embracing the philosophy that "pivoting in motion would be easier than standing still," Rachel continued to navigate the evolving landscape with agility and foresight.
In January of 2021, Rachel and her husband, Corey, purchased a 57-acre farm in Park Hills where they could effectively scale their business and harvest natural ingredients. They dedicated four months to renovating their production facility, transforming it into a commercial kitchen, and were quickly approved for production. They began growing fruits and herbs, embodying the true essence of "farm to bowl".
Rachel's journey is also marked by her dedication to empowering others. As a mentor and speaker, she shares her insights with aspiring entrepreneurs through the Farmington Regional Chamber of Commerce and the University of Missouri-St. Louis Entrepreneurship Center. Her involvement with local schools and the Future Business Leaders of America reflects her commitment to nurturing the next generation.
All ingredients are intentionally grown or sourced, ensuring bold flavors that celebrate freshness, quality, and craftsmanship in every spoonful.
Today, Bold Spoon Creamery's delights can be found at Ole Tyme Pantry, and regional Schnucks grocers, as well as in venues such as Energizer Park, Enterprise Center, and The Dome at America's Center. Bold Spoon Creamery also has partnerships with St.Louis University, Lindenwood University, and Washington University campuses who carry her products as well. With a dedicated team in Park Hills and St. Louis, Rachel continues to dream big. She aims to expand her brand nationally while still focusing on intentional and strategic growth, deepening connections with current clients, and maintaining the integrity that has become synonymous with the Bold Spoon name.
Rachel's commitment to bold flavors is illustrated by creations like Goat Cheese & Fig, inspired by her appreciation for charcuterie pairings. Rachel is deliberate in partnering with local artisans, such as Baetje Farms in Bloomsdale, MO, which reflects her dedication to community and quality. At Bold Spoon Creamery you won’t find your run-of-the-mill Vanilla or Rocky Road. The name "Bold Spoon" invites us to challenge our palates and savor unique combinations.
Rachel Burns has built more than a business, she has created a legacy of passion, purpose, and bold ambition. As a trailblazer, mentor, and innovator, she inspires others to push past uncertainty and chase their dreams with the same fearless determination that turned a simple backyard experiment into a thriving brand. TERI Morton
Strong Enough

Teri Morton is a force for change in her community. From her work with Play It Forward in the Parkland, to founding the Strong Enough Women’s Conference, she has dedicated her life to uplifting others. Her story is one of unwavering dedication, faith, and love for children in need.
Growing up in the small town of Marquand, Missouri, Teri Morton always felt a calling to serve others. After meeting her husband Dusty while attending Southeast Missouri State University, the couple moved to Farmington where they started their life together. They have been married for 17 years and are the proud parents of four children, each uniquely influencing Teri and her story.
Teri’s journey has not been without personal challenges. Her youngest daughter, Ensley, faced severe medical issues early in life. At four months old, she was diagnosed with a chromosomal disorder that affected all areas of development.
Ensley required speech, occupational, and physical therapy, both in-home and out-patient, to develop essential skills. By age four, Ensley had made incredible progress, meeting unlikely milestones. Teri often describes life in two phases, life before Ensley, and life after Ensley. Ensley’s resilience reshaped Teri’s entire outlook on life. This would prove to be the catalyst that motivated Teri to become not only a voice, but a beacon of support for under-represented and often overlooked children within the Parkland.
Like many other moms, Teri struggled to find avenues of inclusion and organic opportunities for Ensley to make friends and play with others, as all other playgrounds in the area did not accommodate children with disabilities. With more and more community members recognizing the need for an all abilities playground in our area, the initiative to bring this idea to life grew quickly. Feeling drawn to the cause, Teri was on her way to the first meeting when she heard the song ‘If Not Me, Then Who?’ on the radio. It deeply resonated with her, and soon after, Teri would find herself spearheading the movement. She naturally became a prominent voice on the board for Play It Forward in the Parkland, an organization dedicated to supporting disadvantaged children and building the first all-inclusive playground at Engler Park in Farmington.
While working with Play It Forward, Teri was motivated to create a fundraiser that would bring awareness to the cause. This sparked the first Strong Enough Women’s Conference held in 2019. The conference was designed to bring together driven women from all walks of life. Hosting around 250 attendees, the annual gathering features several women speakers who share their unique stories founded on loss, hope, and resilience. Over the past few years the conference has expanded its reach, initially funding the all-inclusive playground, and later providing medical equipment, toys, and other essential items to children and families in need.

for the cause, it also deepened her connection to the community and reveled a greater need within the Parkland. Teri knew she had to take action. Her journey with CASA began in 2022 when she was sworn in as a Court Appointed Special Advocate in the 24th Circuit. These entrusted volunteers help children navigate their unique and often complex circumstances, ensuring their needs are prioritized and voices heard. After a mix up in paperwork, Teri was serendipitously assigned Riley’s case. Over time, their relationship grew beyond the program, as Teri became close with Riley’s guardian. Their bond strengthened when Riley faced the possibility of changing school districts. Understanding the importance of consistency and structure, Teri rallied to support Riley’s best interests, which included a sense of security in a place she could call home.
Teri is also instrumental in organizing annual fundraising events, including the CASA Murder Mystery, which raises vital funds for the CASA program. Another major event she supports is Knight to Shine, a special needs prom sponsored by the Tim Tebow Foundation. With the help of New Heights Church and individuals like Christy Scott and Rocky Good, the event provides an unforgettable night for individuals with special needs. The evening includes limousine rides, a red carpet entrance, paparazzi, great food, and so much more. For those looking to contribute, donations for Knight to Shine can be made through New Heights Church.
Teri Morton’s impact extends far beyond her immediate community. Through her advocacy, event planning, and unwavering faith, she has created lasting change in the lives of many. Whether through her work with CASA, Play It Forward in the Parkland, or the Strong Enough Women’s Conference, she continues to embody the belief that small acts of kindness can transform lives.

This Berry Bruschetta is a delightful twist on the classic bruschetta that we all love. This version uses fruit, bringing a sweet element to the traditionally savory dish. With the use of fresh berries, cream cheese, delicious fruit spread, crumbled cheese, and fresh rosemary, it is the perfect addition to your next spring event. This simple, yet beautiful appetizer could be enjoyed at your next brunch, shower or Mother’s Day celebration. But let’s be honest—you don’t need an excuse to enjoy this delectable dish!

DIRECTIONS:
1. Preheat oven to 350°F.
2. Lightly brush the front and back of the baguette slices with Extra Virgin Olive Oil.
3. Toast baguette slices in the oven for 3-5 minutes or until lightly toasted.
4. Once the baguette slices are cool, spread a generous layer of cream cheese over each slice.
5. Add the fruit spread on top of the cream cheese.
6. Add sliced strawberries and a few blueberries, allowing the vibrant colors to pop. (A great place to find fresh fruit is our local staple, Crystal & Rich’s Produce.)
7. Crumble the fruit cheese over the top for an added layer of richness and depth.
8. Garnish with fresh Rosemary if desired.
9. Serve and enjoy!

• 12 baguette slices
• Extra virgin olive oil (for brushing)
• 4 oz cream cheese
• 1/4 cup Fruit and Honey Triple Berry Spread (or any fruit spread of your choice)
• 1/3 cup fresh strawberries, sliced
• 1/3 cup fresh blueberries
• 2 oz fruit cheese (such as Wensleydale with Autumn Fruit), crumbled
• Fresh rosemary for garnish
