Kids & Pets

Children and animals hold a special place in my heart. Children aren’t just our future—they are the heartbeat of our communities. Their laughter, curiosity, and endless potential shape the world in ways we can’t quite measure.

As parents and caregivers, we spend so much time nurturing them, teaching them, and investing in their futures. But it’s easy to forget that our children also shape us. They fill our days with purpose and joy, and they remind us of what truly matters.

We also can’t overlook the incredible role pets play in our families. Whether it’s a dog curled up at our feet or a horse waiting at the fence, animals offer unconditional love and teach us powerful lessons in empathy, responsibility, and connection. The bond between kids and their pets can be transformative, creating memories and emotional ties that last a lifetime.

Our family has welcomed many of pets over the years, but our latest adventure has been raising chickens. Not only are they a fun step toward self-sufficiency, but they also offer a lesson in respect and caring for others, while providing endless amusement. Whether it’s chickens, dogs, or horses, pets bring a unique kind of love - one that’s completely unconditional.

At the heart of both children and pets is a simple truth: they need us. Our care, attention, and love help shape who they become—and in turn, they shape us too. If you asked any parent to describe their love for their children, I imagine many would say the same thing: Our children inspire us to be better and to do better. They are catalysts for growth, reminding us every day of the beauty in simple moments.

This issue is dedicated to celebrating the kids and pets who fill our homes with laughter, wonder, and love. “I hope you’re savoring this summer, soaking up each moment, and creating memories with your kids and pets that you’ll cherish for years to come.”

Ringing the Bell, Sharing the Joy

JACKSON’S JOURNEY

ARTICLE BY KAYLE NEPHEW PHOTOGRAPHY BY DESTINY BORGMANN, STEPHANIE ZARICOR
Stephanie Paige Photography
“A toy may seem small, but through Jackson’s Journey, each one becomes a symbol of hope, resilience, and the power of community to lift children up in their hardest moments.”

When you meet Jackson Wood, it’s easy to see why so many people have rallied behind him. With an infectious smile and a brave spirit, Jackson has endured more in his young life than most ever will. Diagnosed with Acute Lymphoblastic Leukemia (ALL) just after turning three, he and his family have faced years of hospital stays, treatments, and uncertainty. But out of this journey came something remarkable—a mission to make life a little brighter for other children fighting their own battles.

It all started in November 2022. After Jackson took a fall and began limping, his parents, Daniel and Robyn, grew concerned when he wasn’t improving. Several trips to specialists and countless tests later, their pediatrician finally discovered an enlarged spleen and sent them back to St. Louis Children’s Hospital for further testing. Bloodwork confirmed what no parent ever wants to hear: Jackson had B-cell ALL, a type of leukemia that requires intensive, multi-year treatment.

The first 30 days were grueling. Known as the induction phase, Jackson endured around-the-clock chemotherapy, bone marrow biopsies, and long weeks in the hospital. He was finally able to come home just before Christmas. But the fight was far from over. The following year, Jackson was hospitalized multiple times with complications from treatment, including serious liver issues that

kept him in and out of the hospital throughout the summer.

Alongside his cancer treatments, Jackson is also working hard on his speech development as he overcomes Apraxia, a condition which affects speech and language. Each milestone is celebrated as a testament to his resilience and determination to thrive despite every obstacle.

Through it all, the Parkland community stepped in and showed up. Friends, neighbors, and even strangers offered to help, sending prayers, meals, and even financial support. Daniel, who owns Woody & Sons Disposal, remembers the overwhelming kindness that poured in. That compassion lit a fire in him to find a way to give back.

During Jackson’s countless hospital stays, one small ritual brought a bit of happiness after difficult treatments—the chance to pick a toy from the hospital's toy chest. But over time, Daniel noticed the selection was often picked over, especially for the youngest patients. “You could tell how much it meant to the kids,” he recalls. “It was something to look forward to after all the pain.”

In July 2024, while Jackson was still receiving treatment, the Wood family launched Jackson’s Journey, a nonprofit foundation dedicated to restocking toy boxes at Children’s Hospital and supporting other families facing childhood cancer. Their mission is simple: to bring joy and comfort, just as others did for them.

Every donated toy—big or small—makes a difference. It’s important to note that all toys must be new, and not pre-owned. Many children receiving treatment are immunocompromised, and exposure to bacteria or viruses on pre-loved toys can pose serious health risks. Donating new toys in their original packaging, helps reduce risk for this vulnerable group of little fighters to avoid any further complications.

Monetary donations are also a vital part of Jackson’s Journey

These funds allow Jackson himself to do something that fills his heart with happiness: personally picking out toys for the other children.

The smile on his face when he gets to choose bright, colorful gifts says it all. In many ways, this tradition has become part of his own healing. It’s not just about delivering toys—it’s about giving back, connecting with other families, and feeling the joy of helping others walk the same road he’s traveled.

When kids who are recovering from chemo or surgery get the chance to pick a toy, it can bring a sense of hope–a shred of normalcy, even if for just a moment in their otherwise frightening world. Whether it’s a Squishmallow, a stuffed animal, or an art kit, any new toy can lift a child’s spirits on their hardest of days.

Stephanie Paige Photography

This February marked a milestone that Jackson and his family had been dreaming of from the very beginning. After more than three years of chemotherapy, countless lab draws, and more obstacles than any child should face, Jackson, now a thriving 6 year old, finally rang the bell that signals the end of treatment. That moment was filled with tears, cheers, and a sense of triumph that words can hardly express. The bell rang not just in honor of Jackson’s courage, but for every child still fighting and every family holding onto hope.

You can support Jackson’s Journey by donating a gift that is sure to bring a smile to a child in need, or if you’d rather, monetary donations are accepted via Venmo. This ensures Jackson can keep filling those toy boxes himself. New toys can be dropped off at convenient locations across the Parkland area, including Pit Stop Gas Station in Leadington, Sam Scism Ford, Froggy Radio Station, Boyd Accounting, Plummers Ace Hardware, Unlimited Mail Solutions, NAPA Automotive, Buckley’s Towing, and Shelter Insurance in Fredericktown. New drop-off locations are coming soon, so stay tuned to their Facebook page for updates.

Many of these children have a dismal prognosis, and many are simply unsure of what their futures may hold. These families often feel helpless, with no control over their child’s fate. What we can offer is a brief reprieve; a sense of respite generating a moment of happiness, and joy.  Any amount, any gesture, truly makes a difference. Together, we can ensure every child battling illness feels seen, supported, and loved—and help create more moments worth ringing the bell for.

Congratulations Jackson, we hope your journey continues to inspire others. For more information, including donation links and the most up-to-date list of drop-off sites, visit Jackson’s Journey with Acute Lymphoblastic Leukemia on Facebook at facebook.com/ jacksondalestrong

DOG FOOD

Recipe from Amy Tinnin - A Cup Full of Sass
ARTICLE BY AMY TINNIN | PHOTOGRAPHY BY ASHLEY MICHELE PHOTOGRAPHY

My two pugs are more than pets—they are a part of our family. As treasured members of our household, we keep their health at the forefront of our minds, which is why I started making their food at home. Today I am sharing their homemade dog food recipe, which has quickly become one of the most popular posts on my blog. With minimal prep and just a crockpot, you’ll be surprised at just how easy this recipe truly is. Every dog has different needs based on age, weight, and genetic tendencies. Please consult with your veterinarian beforehand, as the ingredients in this recipe are flexible and can be easily swapped with other proteins and dog-safe vegetables to ensure it meets your pets health and nutritional needs. Making dog food at home doesn’t have to be hard - it just takes a little planning. My dogs love this recipe, and I know yours will too!

Directions:

1. Add all ingredients to a slow cooker.

2. Break up the ground turkey and mix all the ingredients.

FROM EDUCATOR TO AUTHOR

BY KAYLE NEPHEW | PHOTOGRAPHY BY STEPHANIE ZARICOR

IN RETIREMENT

For Jennifer Huff, retirement wasn’t an ending—it was the spark of something new. After decades of pouring her energy into the Central and North County School Districts, where she trained teachers, introduced new technologies, and helped students fall in love with learning, Jennifer found herself missing the hustle. She missed the kids, the camaraderie, the purpose. So, like any passionate educator with a knack for creativity, she found a way to keep inspiring—this time, through the pages of a book.

In February 2025, Jennifer launched Digital Creations by J. Huff, a vibrant and ever-growing collection of personalized, printon-demand children's books that are as imaginative as they are meaningful. But Digital Creations isn’t just about telling stories— it’s about connection, local engagement, and the power of seeing a child’s dream come to life.

Before stepping into entrepreneurship, Jennifer’s role in the school district had already begun to shift, when she began taking on new roles. What started with tech training and digital tools turned into something more—branding the district, rebuilding the website, running social media, and creating an online professional development website for teachers during COVID. She became a voice for the schools, using digital content to create transparency and build trust with the community.

HOW JENNIFER HUFF IS TURNING THE PAGE

And while she loved the work, it wasn’t just about the tech; she craved impact. Launching Digital Creations paved a way to use her skills, her passion, and her love for education in a way that still made a difference.

“I jumped in head first,” Jennifer says. “I didn’t want to buy a bunch of product that would sit on a shelf and collect dust, so I knew I wanted a print-on-demand model.” That decision set the tone for everything that followed.

She started with a career-focused children’s series called “I Want to Be”, designed as a tool for elementary teachers and school counselors to help introduce young kids to more opportunities and future careers. It was thoughtful, fun, and rooted in her heart. Soon after came coloring books—some just for fun, and others custom-made for local businesses looking for unique branded material to engage families and kids.

Then came the requests. A special book for a local child. A story about a little girl with big dreams. Books that shine a light on topics like Type 1 Diabetes and Cerebral Palsy, including one inspired by a local boy who’s undergoing Stem Cell Therapy. She’s created stories of empowerment—girls doing the very things they’ve been told they can’t do—and even a few clever tales starring her two goldendoodles. One thing’s for sure: no idea is too small, and no story is too personal.

Jennifer’s favorite part? The joy. The elation when a child sees themselves in their very own book. They then take that book to school to read to their class, and share their sense of pride and wonder. This is what keeps her going.

“What I didn’t expect,” she shares, “is how much these books would mean to them. That excitement… this is why I do it.”

Since publishing her first book in February 2025, Jennifer has written and released more than 100 titles, many of them featuring real kids from right here in the Parkland area, which are now being sold around the world, including countries like Canada, the United Kingdom, Spain, and Australia. It’s a true local business— powered by community connections, inspired by her deep love for education, fueled by children's dreams, and elevated by a keen understanding of design and technology.

Even her tools are as modern and adaptable as she. With Canva, Google Slides, and ChatGPT in her creative toolkit, Jennifer has crafted a streamlined, high-impact process that makes it easy for clients to bring their visions to life. She’s even trained ChatGPT to understand her brand voice and mission, making it easier than ever to maintain consistency among everything she creates.

Today, families and businesses alike reach out to Jennifer through her website, social media, and Amazon Author Central to request custom books and designs. Those looking for personalized children’s stories, family keepsakes, or educational materials can simply search “Jennifer Huff books” on Amazon and Kindle to see her ever-growing library of titles.

And while her path may have shifted from school hallways to home office, Jennifer’s purpose has never been clearer. She still doesn’t know exactly what she wants to be when she “grows up”—a running joke with her husband—but right now she is someone making magic from the heart, one page at a time.

“RETIREMENT DIDN’T END MY PURPOSE—IT SIMPLY OPENED A NEW CHAPTER I NEVER EXPECTED.”

HOPE, HOOVES, AND HEALING

How Stacey Gillette and T-K Ranch Are Bringing Innovative Therapy to Local Kids

In the stillness of a country pasture, where the only sounds are the rhythm of hooves and a child’s quiet laughter, a unique type of therapy is bringing healing to those determined to find hope. Not every wound is visible. Not every cure comes in a bottle. Sometimes, it begins in the soft nuzzle of a horse, the steady hand of a therapist who refuses to give up, and the steadfast attempt to offer the certainty that every child deserves to, and can, feel safe and whole.

That vision has guided Stacey Gillette, founder of T-K Ranch Equine Assisted Coaching, every step of the way. A lifelong resident of the Farmington area, Stacey grew up on the ranch, and now lives just down the road. After graduating from Central High School in 2010, she earned her bachelor’s and master’s degrees in social work from Saint Louis University, then spent years working in hospitals, including Mercy Jefferson. But traditional mental health settings never felt like home for Stacey.

“It never felt like I was where I was supposed to be,” she says. “I knew there had to be another way to help people feel seen and supported.”

In 2017, with the encouragement of her parents, Tom and Kelly—whose initials inspired the ranch’s name—Stacey transformed part of their land in Farmington

into a space dedicated to something different: therapy rooted in connection, trust, and the healing bond between humans and animals; Equine Therapy.

From the start, T-K Ranch has stood out among mental health practices in the region. While many clinicians focus solely on traditional therapy methods, Stacey has built an approach that blends evidence-based treatments rarely found in rural Missouri, with the powerful presence of horses. Equine therapy, also called equine-assisted psychotherapy, uses guided interactions with horses to help people process emotions, and develop healthy coping skills. Equine therapy can benefit people of all ages, from children working through trauma or behavioral challenges to adults managing anxiety, depression, or grief. It’s also widely used to support veterans and first responders coping with PTSD, offering a calming environment where they can build trust and regain a sense of control.

Unlike traditional talk therapy, Equine Therapy engages the body and senses, creating powerful opportunities for growth that often feel more approachable—especially for children, teens, and even veterans. Stacey’s goal is to bring evidence based treatments to our area provided by highly trained professionals. This lead her to a natural partnership with Elyse Vesser, LCSW who is certified in EMDR (Eye Movement Desensitization and Reprocessing), a leading trauma therapy that requires extensive continuing education, supervised clinical work, and rigorous credentialing through the EMDR International Association. She is also intensively trained in Dialectical Behavior Therapy (DBT) to treat

severe emotional and behavioral challenges—making TK Ranch one of the only practices in the area to provide both, bringing a rare level of expertise to the Parkland.

“One of the things I’ve strived to do is make therapy more accessible,” she says. That ideology guides every part of her work, from ensuring T-K Ranch accepts nearly every insurance plan, to partnering with the VA Community Care program so veterans can use their benefits for equine-assisted therapy close to home. In 2023, Stacey was encouraged by a good friend and mentor, Dale Wright, to expand her scope even further by partnering with Mineral Area College as an instructor and program leader, where she currently heads the Behavioral Health Support department and mentors the next generation of mental health professionals. And because she believes lasting change also requires systemic solutions, she began law school at SLU this year, determined to advocate for policy reforms that will ensure clinicians are fairly reimbursed—and that more children and families can access the care they deserve.

“My goal has always been to remove barriers,” she says. “People shouldn’t have to leave their community to get the therapy they need.”

That commitment to accessibility and excellence naturally led to a partnership with Rocky Creek Youth Ranch, a nonprofit in Park Hills dedicated to helping youth in crisis. Once a church camp, Rocky Creek reopened in 2015 as a residential community serving up to 40 children and teens who have faced trauma, instability, or neglect.

As Rocky Creek’s Clinical Director, Stacey oversees therapy services for the ranch’s residents, guiding a team of clinicians

who blend individual counseling, group sessions, and equine-assisted programs. Once a month, Rocky Creek staff transports kids to T-K Ranch, where therapy unfolds in the pastures rather than a clinic. For many children, working alongside a gentle, patient horse fosters breakthroughs that traditional methods could never achieve.

Unlike typical riding programs, T-K Ranch focuses solely on groundwork. Kids learn to groom, guide, and connect with horses on the ground—building confidence, emotional regulation, and trust.

Even the animals themselves are cared for with remarkable dedication. Every six weeks, the horses receive pulsed electromagnetic therapy to ease muscle tension, along with chiropractic care and specialized dentistry. “Healing goes both ways,” Stacey says. “When the horses feel their best, they can give their best.”

Maintaining this level of care—for both children and horses—takes resources, commitment, and a community

that believes in the mission. That’s why both T-K Ranch and Rocky Creek Youth Ranch are heavily reliant on grants, donations, and fundraisers to keep their programs going strong. These contributions help cover everything from therapy scholarships to food, housing, supplies, and facility improvements. Together, they ensure that no child is ever turned away because of circumstances beyond their control.

If you’re looking for a way to make a difference, your support can make this data driven service a standard of care rather than a luxury, for our families in need. Because sometimes, the most life-changing therapy doesn’t look like therapy at all. It looks like a child and a horse, standing side by side under an open sky, forming mutual trust and respect, and building unbreakable bonds.

Visit www.tkrancheac.org and www.rcranch.org to learn more, donate, or volunteer. Together, we can help local kids conquer fears, find their voice, and make a giant friend.
