



I am so thankful that we get the comfort of experiencing each season in Colorado. With the fall breeze comes seasonal tastes and charm in our beautiful town of Parker. Fall sweater weather provides the layers of all things cozy and comforting. October is one of our most delectable issues of the year, and this month we’re celebrating the food and drink that makes our town such a delight for the senses.
With our Food & Drink issue comes an inspiring array of local business owners to champion, from the sizzling seasonal menu at Black+Haus Tavern to Tequila Tasting with Cencalli Taqueria to finding out the spark behind Pam Briere’s vision for Villa Parker, Ovest Via Ristorante and Elevated Taste Catering, we have an endless array of inspiration and experiences to endeavor. We’ve also included a coffeehouse roundup, gift-guide with Nest on Mainstreet and a profile on Parker resident John Winter, owner of Lone Tree Brewing Company.
For me, the smells of fall bring back memories of sitting in my grandma’s kitchen while she added spices to a crockpot. I promise her chili holds all the flavors of magic and whimsy. Or my abuela’s gas stove being lit so she could heat up beans, home made tortillas and Spanish rice. My family knows how to serve the kind of meals that feed your heart and soul.
Food has a unique way of connecting us to our past while bringing us together in the present. We hope this issue encourages you to connect, learn and grow through the exploration of food and drink within our special town.

Dr. Tesia Kolodziejczyk (pronounced “Cola-Jay-Check”) is a Colorado native thrilled to be returning to care for patients in her home state. She practices medical, surgical and cosmetic dermatology with a compassionate, patient-centered approach. Dr. Kolodziejczyk graduated in the top 5% of her class from Rocky Vista University in Parker, CO, and went on to complete both her Transitional Year internship and Dermatology residency at Trinity Health in Ann Arbor, Michigan, where she was Chief Resident.
Books, brews and a dash of creativity—Douglas County Libraries’ Brew Tour served it all up this August and September. Participants sipped and crafted at locations around Parker, from making glass windchimes at Bodega Beer Company to creating teacup terrariums at English Tealeaves, painting pint glasses at the Parker library and more. The annual DCL Brew Tour is a toast to community, connection and supporting locally owned businesses in Douglas County, with prizes and rewards throughout.
Just south of Lincoln and Dransfeldt, you’ll find KickHouse, a welcoming studio that ignites fitness journeys with high-octane, science-driven kickboxing workouts. While it might sound intimidating, it is anything but. Oktoberfest is a beloved beer festival that celebrates Bavarian culture (fun fact: it all started as a royal wedding celebration) in Munich that takes place every fall—this year it’s September 20th through October 5th. The Colorado Brewers Guild, a nonprofit trade organization that promotes, protects and propels craft breweries in the State of Craft Beer, has rounded up Oktoberfest celebrations happening across the state from member breweries. Black+Haus Tavern is welcoming autumn with enticing new brunch items and seasonal cocktails alike. They have a lineup of Southwestern Benedict, Apple Cinnamon French Toast, Fried Chicken and a Biscuit with Habanero Honey Butter, as well as Asian chicken wraps, braised lamb shank and even more, highlighting the simmering spices of fall.
“For fall, I think of comfort food like grain bowls and sweet potatoes. Spices like cardamom, cinnamon, thyme and clove. Of course, pumpkin spice!” Jen Black, owner of Black+Haus Tavern with her husband Brent Niedringhaus, shares her excitement for their changing seasonal menu.
“We have a Pumpkin Spiced Espresso Martini, a Spiced Pear Martini and more. Definitely sweater weather vibes.”
With all the buzz of seasonal menus, Black+Haus Tavern stays true to its staples. Jen mentions some of her favorites. “I’m a sucker for our burger. It’s so good! Our prime rib dip is amazing. I also love our Cuban.”
Black+Haus Tavern is known for its healthy food options. Jen shares her passion, “I focus on clean food. All my stuff is pretty much scratch kitchen. All of our sauces are made. All of our oils are clean. That’s why we do a lot of gluten-free food. We have gluten-free fryers because it’s not just an allergy. It’s a lifestyle. It’s healthy, clean eating.”
This choice sets Black+Haus Tavern apart. With a new location in Littleton, Jen and Brent also put a heavy emphasis on supporting the community.
“I am community-focused. I’m very local. I support locally. I want to do as much as I can to help our local charities. There’s the Parker Senior Center, the Parker Task Force, SECOR, PACE Center, Downtown Business Alliance and Christmas parades,” she lists off the top of her head.
“Anything that supports Parker, we support. We sponsor a lot. We don’t want to be just a restaurant inside of this neighborhood. We want to be
part of the community and part of the neighborhood.” Jen says.
Whether it’s her clean menu options, taking care of her staff or supporting the community through charities and events, it’s all about putting people first.
“I want my guests to feel like they’re appreciated when they come in,” Jen shares.
In addition, Black+Haus Tavern offers an array of over 25 wine options by the glass and even more by the bottle. There are a variety of pairings you can try. Jen recommends talking to her general manager, Ben, who loves to pair the perfect wine with your dinner selection.

“I recently visited the Overland Park Arboretum and Botanical Gardens with the intention of exploring its beauty and capturing photos for future paintings. The day was overcast, with a soft, warm breeze stirring the air. While there was some activity in the park, it was pleasantly quiet. As I strolled along the winding path and crossed the wooden planks over the water, I paused momentarily, taking in the sights, sounds, and feelings of the Scene around me. Despite how fleeting those moments felt, they carried a deep sense of meaning—small yet profound. When I set out to paint this piece, I sought to encapsulate those same emotions and the atmosphere I experienced in that serene, contemplative moment in the park.”

Sitting down with John Winter, local Parker resident and former pilot for United Airlines, proves that passions in life can coincide or change.
“I think once it’s kind of in your blood, it’s in your blood,” John marvels about missing flying. His personal plane, Betty, keeps his love for flying alive while he focuses his enthusiasm on his breweries in Lone Tree and Parker.
“A gentleman that I bought home brew supplies at a home brew supply store said, ‘Have you ever thought [about opening a brewery]?’” John explains. “And I said no, but keep talking and that’s how Lone Tree Brewing came about. He kept talking and I kept listening.”
Now, celebrating their 14th year in Lone Tree this December and having recently celebrated their one-year anniversary in March in Parker, John’s fervor over the brewery’s success is tangible. Interestingly, he stumbled upon it as a means for stress relief.
“I was running the training center for United Airlines,” John explains. “Flying airplanes, you can be as precise as you want to be and brewing is very much a similar endeavor. We’re paying attention to temperatures, fermentation temperatures, yeast count, pounds of grain, etc and it all had some similarity, but the great thing about home brewing is that I never had my phone ring because of it.”

This new endeavor proved to be a source of not only stress relief but also more. John found a sense of collaboration and community filled with selfless individuals who want to help each other succeed in the industry.
“It’s what I believe America was kind of founded on,” John says. “There’d be a new family in the community and there was a barn raising to help them and there was no pay or expectation. And I found most owners in the craft brewing industry are very much like that. They’re always willing to lend a hand.”
He goes on to say, “It’s a very collaborative and functional relationship with everybody and it’s like having extended family everywhere.”
John is part of a group that meets often to collaborate and share ideas on what’s working, what’s not and how to navigate the challenges and successes.
Alongside his partner, Jerry Siote, John is fiercely proud of Lone Tree Brewing and its employees. They are one of the few breweries
of their size to offer paid time off, a 401(k) program with a 4% match and healthcare benefits.
Their Hop Zombie, an award-winning beer typically featured in a oneday sale in October, was marketed again for the summer solstice due to its popularity. John’s tap room manager, Candace Peterson, kicked off the Hop Zombie event in June and it was fantastic.
“She [Candace] did a great job in June,” John exclaims proudly. “We had a kind of IPA fruity type of beverage and the zombie was in a flowered, multicolored shirt. So now we’ve got two Hop Zombie events every year.”
The Parker location recently opened a dark, back room, decorated by Candace, to host private events and future dart leagues. Complete with high tables, dartboards, televisions,
music and a sliding barn door for privacy, Lone Tree Brewing in Parker has established itself in a prime location for festivities, meet-ups and sipping delicious beers.
John’s favorite thing about his breweries is watching his staff excel.
“It’s kind of slowly passing the torch,” John explains. “It’s easy when you are surrounded by great people to kind of take a step back and support them. It’s amazing how you give them the responsibility, trust them for what they’re doing and they excel and do a great job.”

CENCALLI TAQUERIA AND AGAVERIA SERVES UP TEQUILA, HISTORY AND CULTURE
It took Zoe Romero and her husband, Andres Venalonzo, three tries and about nine years to open Mexican restaurant Cencalli Taqueria and Agaveria in Parker, their hometown.
“We actually submitted a letter of intent for two other areas,” Zoe says.
Zoe’s and Andres’ dreams finally became a reality in late July when Cencalli opened in Parker, about two years after they opened the first Cencalli Taqueria in Littleton.
Both Cencalli eateries serve authentic Mexican cuisine, but the Parker location is more agave and spirit-focused.
“As we were operating, we found this new passion in also showcasing cultural aspects through the drink side,” Zoe says. “And we saw a really good opportunity to introduce the agave spirits by adding agave to the concept.”

Cencalli serves five types of spirits distilled from agave and Dasylirion plants. This includes popular options like tequila and mezcal, as well as lesser-known ones such as sotol, raicilla and bacanora.
Rather than producing their own tequila and spirits, Cencalli highlights smaller brands that prioritize people, heritage, culture and sustainability over profit. The restaurant works with 31 to 36 brands, showcasing the variety of alcohol types made throughout Mexico while also educating customers about the spirits’ history, cultural significance and sustainability efforts.
“Agave-based spirits aren’t just made in Mexico, however. They are made all over the world,” Zoe shares. “From Colorado, Arizona and Texas to South Africa, India, Japan and China.”
“If at one point I can showcase that, that would be amazing,” she says.
Zoe’s passion for agave spirits runs so deep that she has become a tequila and mezcal specialist. She’s even in the process of getting additional credentials to become a certified agave sommelier.
But she says her enthusiasm for the spirit stemmed from shame.
Zoe grew up in Guanajuato, Mexico, a state that is known for producing tequila. However, her familiarity with spirits like tequila came from taking shots and partying.
“I did not have this appreciation and through our restaurateur life, I started getting in contact and getting to know people who knew so much about the cultural side of the spirit, and I felt ashamed,” Zoe says. “To be honest, it came out of my own shame of not understanding that side of my culture.”
Now, Zoe’s on a mission to share these cultural spirits and the stories of the families that distill tequila with Parker residents.
Her goal isn’t to have guests pick agave spirits as their preferred liquid, but she wants them to leave the restaurant with an appreciation for and a better understanding of it.
In addition to authentic Mexican cuisine, Parker’s Cencalli Taqueria and Agaveria offers agave- and Dasylirion-based spirits, including:
• Tequila
• Mezcal
• Sotol (made in northern Mexico and distilled from Dasylirion plants)
• Bacanora (an agave-based spirit produced in Sonora, Mexico)
• Raicilla (an agave-based spirit produced in Jalisco, Mexico)

Nestled in eastern Centennial, Branch & Barrel Distilling stands as a testament to Colorado’s ingenuity, resourcefulness, and love for fine whiskey. Founded by friends Ryan, Tom, and Scott, the distillery began as a dream shared over construction sites and plumbing projects. What started as conversations between industry professionals with a shared appreciation for brown spirits evolved into a full-fledged distillery, handcrafted—quite literally—from the ground up.
After months of scouting, the trio secured a former auto body shop in 2015 and transformed it into a functioning distillery. Scott, with his background in plumbing and systems design, constructed the stills and equipment using upcycled industrial parts—everything from old condiment tanks to distilled water tanks. Their first still? A retrofitted Campbell’s soup cooker. True to their DIY roots, every pipe, weld, and innovation was done in-house.
Their flagship product, a high-corn Colorado bourbon, was born from both experimentation and dedication. The grains are sourced exclusively from within the state— Ft. Morgan corn and Monte Vista barley—and the water comes from 1,500-foot wells tapping the mineral-rich Arapahoe aquifer. Sustainability and locality are central to their process, as is ingenuity. Even their bottling line and screw press are retrofitted secondhand equipment, reducing waste while preserving authenticity.

One of the distillery’s turning points came unexpectedly when their first hired head distiller had to leave on his first day due to an allergy. Stepping in was Rick, the building’s electrician, who immersed himself in the world of whiskey-making. By 2019, Branch & Barrel began earning accolades for their bourbons, with every bottle entered into competition receiving a medal—31 and counting, including multiple Double Golds. Their expressions range from the original Flagship Bourbon to creative releases like Plumwood, Honey Bourbon, and Café Miel. They’re known for pushing boundaries with unique infusions and collaborations with local brewers, roasters, and even a golf apparel company.
In 2021, they opened their tasting room, which quickly became a South Metro favorite. With an expanded cocktail menu, special events, and VIP membership club “The Shaded Grove,” the distillery became more than a place to sip whiskey—it became a hub for community and craft culture.
Branch & Barrel is deeply committed to supporting local artists, charities, and the broader Colorado creative scene. • 2 oz Flagship Bourbon
• .5 oz Amaretto
• 3 Dashes Angostura Bitters
• 2 Dashes Walnut Bitters
• Flamed Orange Peel
• Smoked
DIRECTIONS:
STEP 1
Add all the ingredients to a glass with ice (a large cube or sphere works best) and stir about 30 times until chilled.
STEP 2
If you have a cocktail smoker, smoke the drink after mixing and chilling.
STEP 3
No smoker? You can pre-smoke the glass instead. Just wet the inside, create smoke using a torch and wood (like a plank, stave, or chips), then place the glass upside down over the smoke. Always do this on a fire-safe surface!

As the season changes and appetites grow heartier, fall is the perfect time to get creative with ingredients tucked between slices of crusty bread or buttery rolls. Whether you’re looking to upgrade your lunch routine, enjoy comforting flavors and bold textures, or impress guests with a no-fuss meal, these easy-tomake sandwiches strike the perfect balance between simple and sensational.
INGREDIENTS
• 2 slices crusty bread (sourdough, ciabatta, French bread)
• 6 oz roast beef
• 2 slices provolone cheese
• 2 tbsp butter (for toasting)
INSTRUCTIONS
• 2 ½ tbsp mayonnaise
• 1 tbsp horseradish sauce
• 1 tsp Dijon mustard
• Arugula
• Cherry tomato
• Caramelized onions
Toast the bread. Butter one side of each slice and toast in a skillet until golden. Heat roast beef briefly in a pan. To make the spread, mix mayo, horseradish sauce, and Dijon. Spread on the toasted bread. Layer roast beef, cheese, and broil briefly to melt. Add arugula, tomato, and caramelized onions if using. Top with the second slice of bread.
INGREDIENTS
• 1 grilled chicken breast
• 2 slices pepper jack cheese
• 2 slices cooked bacon
• 1 tbsp fruit jam (fig, raspberry, or jalapeño recommended)
INSTRUCTIONS
• A handful of fresh arugula
• 3–4 cherry tomatoes (halved)
• 1 tbsp garlic aioli
• 1 brioche bun (toasted)
Lightly butter the inside of the bun and toast in a skillet or oven until golden brown. Spread a layer of garlic aioli on the bottom bun. Add the sliced grilled chicken breast. Place the pepper jack cheese over the hot chicken to slightly melt it. Layer on the crispy bacon slices. Add halved cherry tomatoes and a small handful of arugula. Spread the jam on the top bun. Enjoy!

• 3 oz goat cheese
• Fresh arugula
• ¼ cup caramelized onions
• 1 pear, thinly sliced
INSTRUCTIONS
• Honey, to taste
• Butter for toasting the bread
• Rotisserie chicken breast thinly sliced
• Sourdough bread, buttered (optional)
Spread goat cheese on one side of the bread. Top the cheese with arugula, caramelized onions, sliced pears and chicken breast. Drizzle with honey. Top with remaining slice of sourdough bread. Use a griddle or panini press to heat the sandwich.
INGREDIENTS
• French bread loaf, halved lengthwise
• 2 cups cherry tomatoes
• 2 garlic cloves, minced
• ¼ cup olive oil
• 1 tsp thyme or rosemary
• Salt, pepper, chili flakes (optional)
INSTRUCTIONS
• 8 oz fresh mozzarella, sliced
• 1 cup arugula
• 2–4 tbsp pesto (thinned with olive oil)
• Balsamic glaze
• Optional: 4 slices prosciutto
• Fresh basil
Toss cherry tomatoes with olive oil, garlic, herbs, salt, and pepper. Roast at 375°F for 20–25 minutes until soft and caramelized. Brush bread with olive oil. Toast in the oven at 375°F for 5–7 minutes until crisp. Layer mozzarella slices on the toasted bread. Add fresh basil. Return to the oven for 3–5 minutes, just until melted. Optional: Top with roasted tomatoes, arugula, and prosciutto (if using). Drizzle with pesto and balsamic glaze.
