The Food Issue

Food for the Heart, and Soul…

In the world of luxury, food transcends sustenance to become an expression of artistry, culture, and experience. It’s where rare ingredients meet masterful technique, OR where your greatgreat grandmother’s recipe is passed down over and over again through the generations and everyone knows that aroma in the air and that certain taste on the palette - food makes memories, brings friends and family together, and often tells a story. Whether it’s a multi-course tasting menu in a Michelin starred restaurant, a private chef crafting his bespoke dishes in your kitchen, or roaming through the aisles of notable cooks at the State Fair of Texas, food is far more than nourishment - it is an immersive experience, a celebration of craftsmanship, a reflection of a special moment.

We all have our favorite places to visit where you see that certain waitstaff member or small business chef - dining is a personal experience that is different for each and every one of us. The Park Cities hosts a wide array of interpretations of classic Texas cuisine presented with artistic flair. At the same time, we also all have our favorites, for whatever reason they are deemed as such. What’s yourssteak and baked potatoes, Greek salad with a most fabulous dressing or pecan pie from your favorite bakery? When you take the time to talk around the table with your family and friends, you’ll suddenly be sharing about elegance, hospitality, and always those unforgettable moments over a meal.

In our October issue we’ll share:

- Maegan Brown and her BakerMama recipe craze- you will want to sign up for her newsletter asap!

-  State Fair of Texas food favorites and a special story about a generational Farm PAC, a family business who prides itself in satisfying customers for over 70 years and is a repeated Winner in State Fair of Texas Big Tex Choice Awards Food Competition!!

- And also, wonderful list of our own Park Cities favorites

Is your mouth watering yet? Ha!

As always, our team wishes you all well!

Matthew 4:4 - Jesus answered, “It is written: ‘Man shall not live on bread alone, but on every word that comes from the mouth of God.”

Revamped Memorial Donation Program Unites Community and Park Spaces

Over the past 20 years, University Park residents have had the opportunity to purchase personalized border stones through a memorial donation program to surround several University Park playgrounds. With the recent installation of new playgrounds at Curtis and Caruth Park, City staff carefully removed and relocated the stones with plans to preserve and reinstall them at their respective parks. Stone orders can now be placed at uptexas.org. All funds raised will go towards future playground improvements and enhancements at the park where the stone is located.

MAKING MEALS WORTH GATHERING FOR

HOW MAEGAN BROWN, AKA THE BAKERMAMA, TURNED A LOVE OF COOKING INTO A BRAND BUILT ON CONNECTION

Most days, Maegan Brown’s kitchen is a lively scene: four kids hovering over bowls of pancake mix, taste-testing pizza toppings, or watching their mom arrange the next eye-catching food board. Known to hundreds of thousands online as The BakerMama, Brown is a best-selling cookbook author and Instagram-viral food board builder who has built a brand around turning everyday meals into something worth gathering for.

ARTICLE BY LAUREN STONE PHOTOGRAPHY BY KELSEY FOSTER PHOTOGRAPHY

While Maegan’s vibrant boards and approachable family recipes have earned her a national following, her heart, and the heart of her brand, is rooted right here in the Park Cities. “It’s such a warm, welcoming place to raise a family,” she says. “The strong sense of tradition, community, and celebration in the Park Cities has absolutely influenced how I cook and entertain.”

Her path to food entrepreneurship started in 2012, when Gold Medal Flour selected her as their official baking blogger. For several years, she developed original recipes for the brand, refining her skills and building an early audience. By 2014,

she was ready to branch out and launched TheBakerMama.com as a personal platform to share what she loved most: accessible, beautiful recipes designed for family life. What started as a side project quickly grew into a brand, a business, and eventually, a bestselling cookbook series.

“I’ve poured so much passion into it over the last 13 years,” Brown says. “I never imagined it would turn into a fullblown brand centered around creating delicious, memorable moments with the people you love.”

Today, The BakerMama encompasses not only her blog and books—Beautiful Boards, Spectacular Spreads, and Brilliant

Bites—but also a line of board-building essentials and an ever-growing library of meal ideas meant to inspire connection over food.

Though her boards are undeniably photogenic—neatly folded charcuterie, vibrant layers of fresh fruit, clever seasonal touches—they’re designed to be unfussy and accessible. That’s part of the appeal. “Boards are approachable, but they still have that wow factor,” she says. “They encourage grazing, spark conversation, and allow for creativity with no pressure for perfection. People love how easy they are to personalize for any occasion, season, or dietary need.”

She’s also not limited by tradition. While cheese and charcuterie are staples, Brown is known for pushing the boundaries of what a board can be. Think breakfast spreads with pancakes and berries, after-school snack boards, holiday-themed dessert trays, and even make-your-own taco bars.

This fall, she’s leaning into warm, comforting flavors like apple, maple, cranberry, and spiced nuts, often served with a few signature touches. “I love adding caramel dip with apple slices, and carving out mini baking pumpkins to use as dip bowls is one of my favorite fall touches. Fresh herbs like rosemary or sage also add a lovely aroma and a beautiful, seasonal finish.”

Even her hosting style reflects this low-stress, high-reward philosophy. According to her, a relaxed atmosphere, a little prep work, and the right vibe is all you need for entertaining. “I always say it’s perfectly fine to mix homemade with store-bought, so you’re not stuck cooking all day,” she says.

Brown’s husband and four kids are still by her side in the kitchen, sometimes helping, sometimes just taste-testing, but always part of the process. “When kids are involved, they’re more excited to try new things, and they’re proud of what they helped create,” she shares.

Despite her success—cookbooks, national press, and brand partnerships—Brown stays grounded in the reason she started: sharing food as a way to bring people together. “I’m just so grateful to be part of a community that values family, tradition, and togetherness,” she says. “It’s a joy to share what I love and hopefully inspire others to gather more, stress less, and savor life’s sweetest moments, one bite or board at a time.”

You can find all of Maegan’s recipes on TheBakerMama.com, follow her on Instagram @TheBakerMama, and find her cookbooks anywhere books are sold.

VANDELAY HOSPITALITY HAS PARTNERED WITH CHEF ELIOTT AZOULAY FOR SNIDER PLAZA’S LE BISTROT

BAR SARDINE

Dallas-based Vandelay Hospitality Group opened French concept Le Bistrot Bar Sardine in December 2024. The Parisian bistro-inspired venue is the company’s second inside Highland Park’s Snider Plaza: It opened New Orleans-style chophouse and bar Jack & Harry’s six months earlier. “Our vision for Bar Sardine was to create a space that encapsulates the essence of a Parisian bistro—where the charm of France meets the warm hospitality of Dallas,” says Hunter Pond, founder and CEO of Vandelay Hospitality. Pond and Vandelay are also behind steakhouse Drake’s Hollywood, D.L. Mack’s, Anchor Sushi Bar, and local seafood favorite Hudson House, which has seven locations across DFW.

Executive Chef Eliott Azoulay relocated from Paris to direct Le Bistrot Bar Sardine’s culinary direction. “I want our guests to feel like they’re in Paris for an hour and a half, two hours when they come to Bar Sardine,” he says. “My dishes celebrate the simplicity and elegance of French cuisine, where each ingredient is meant to shine.” He adds that the menu embodies art de vivre—the French art of living well.

Chef Azoulay grew up in Paris before moving to Orlando when he was 15 to attend a golf academy. He played professionally after college for three years, before leaving the circuit due to an injury. Azoulay met Pond through a mutual friend, and the restaurateur further ignited a passion in Azoulay for culinary arts.

The budding chef returned to Paris, where he trained at École Ducasse, a globally renowned culinary school. He also worked at Parisian restaurants La Fontaine de Mars and Le Petit Lutetia—both favorites of Pond’s in the city of lights. Finally, Azoulay trained under the esteemed Chef Gérald Passedat—who has earned three Michelin Stars since 2008—at his restaurant Le Petit Nice in Marseille. Now, Azoulay looks forward to leaving his mark on Pond’s new concept.

“I’m excited to bring authentic, high-quality French food to Dallas and create an unforgettable experience,” he says.

French and can stand its ground as an appetizer or entrée. For dessert, flaky profiteroles filled with vanilla ice cream and topped with a rich chocolate sauce offer a memorable sweet finish.

Peruse the long list of wine and bubbles labels from France and Napa, California. There are options for a casual, more budget friendly night on the town or a splurge for a formal occasion. Fans of craft cocktails can enjoy standouts such as the Fluffy Margarita Royale, a drink combining tequila, fluffy pineapple, agave, lava salt, prosecco, and a pineapple-infused Poblano pepper liqueur, or one of several spritz options.

“My dishes celebrate the simplicity and elegance of French cuisine, where each ingredient is meant to shine,”

Dinner menu standouts helped provide a memorable taste of France. The Honey Truffle Brie Baguette is a must-try appetizer that is perfect to share or pair with a glass of wine or craft cocktail. When dining in for happy hour or a later night light meal, opt for the Truffle or Caviar frites. For the main course, I recommend Branzino Provençale with ratatouille and homemade pesto if you tend toward surf or a tender filet Diane if you prefer turf. The Escargot with a cognac butter sauce will have you feeling truly

The restaurant’s mood-lit atmosphere features memorable artwork. A small but lively bar anchors the rear of the restaurant, while cozy tables wrap around the space’s perimeter. An outdoor patio enables sunset seating on a temperate evening. “We hope to offer an authentic and intimate dining experience that transports our guests to the cobblestone streets of Paris, where candlelit bistros hum with lively conversation, cocktails are crafted with elegance and precision, and exquisite dishes celebrate the timeless art of dining,” Pond says. Steady dinner and later evening crowds make reservations a must at Le Bistrot Bar Sardine.

Next up for Vandelay and Pond? Reports suggest the hospitality group is working on a third concept to be located in Snider Plaza, a Mexican venue called El Molino.

Evelyn

Reach Hospitality’s latest hotspot opened last March in the Dallas Design District. Known for its successful concepts (The Mexican, Pie Tap), co-owner Todd Istre is a Highland Park resident who understands the market. Evelyn brings a unique personality—confident, refined, and packed with fresh energy—that fills various rooms in the sprawling 9,500-square-foot restaurant. The space cleverly combines upscale dining and dancing with stylish, era-inspired craft cocktails that embody cosmopolitan sophistication. Evelyn’s carefully curated martini selection is unmatched in Dallas and includes

entries like The House, The Vesper, and the romantic Dirty Duo, perfect for parties of two. Another standout is the daring Price of Fame, made with Nolet’s Reserve Gin, dry vermouth, black truffle bitters, and caviar-stuffed olives, specifically crafted for the most discerning tastes. The menu reimagines the luxury of historic Hollywood steakhouses, offering premium meats and fresh seafood that reflect the space’s fashionable vibe—a charming nod to Tinseltown’s golden era of glamour. Set to a sparkling soundtrack featuring disco and rock and roll, the restaurant maintains an energetic and inviting atmosphere.

Jack and Harry’s

6833 Snider Plaza

Nestled in University Park, this refined restaurant radiates the charm and elegance of New Orleans. With its French Quarter flair, the sophisticated chophouse fits seamlessly into the stylish neighborhood. The 5,000-square-foot space—crafted from four former storefronts—feels both expansive and inviting, featuring exposed brick, wood floors, and walls lined with a thoughtfully curated mix of artwork.

Design details evoke a sense of oldworld grandeur, from New Orleans–imported brick and cherry wood paneling to lacquered tile floors, well-worn brass accents, antique Charleston lanterns, equestrian-themed art, and vintage furnishings. At the heart of the space is a crescent-shaped, 30-seat bar that spreads warmth and intimacy, enhanced by the smooth sounds of jazz drifting throughout. The cuisine at Jack and Harry’s is the centerpiece. The fare is fresh and seasonal, beginning with cups or bowls of delectable chicken & sausage, and shrimp & jumbo crab gumbos, a true house specialty. East Coast oysters are flown in daily, and crab cakes, calamari, and other bites are tasty treats. Dive into pan-fried or broiled seafood favorites like Redfish, Salmon, or Snapper, as well as luscious

steaks, all best enjoyed with a classic Sazerac in hand. Brought to life by Dallas-based Vandelay Hospitality, the team behind Hudson House, DL Mack’s, Drake’s, Brentwood, East Hampton, Anchor Sushi Bar, and others. Founder, Chairman & CEO, Hunter Pond, is well-known in the area restaurant circles and is a Park Cities resident. Jack and Harry’s delivers a well-crafted dining experience in comfortable surroundings, full of charm, polished design, and standout dishes. With a promise of quality, authenticity, and timeless style, the restaurant has an ambiance that strongly suggests guests relax and … Laissez les bons temps rouler (let the good times roll).

Nuri Steakhouse

Uptown Dallas is home to a variety of standout restaurants, including this relatively new addition. Opened in 2024, Nuri sets itself apart by fusing traditional steakhouse fare with bold Korean influences. The concept comes from Wan Kim, CEO of the ubiquitous Smoothie King, whose company is headquartered nearby in Coppell. The name Nuri means “whole world” in Korean, reflecting the restaurant’s global vision and commitment to excellence. A seasonal menu highlights premium offerings like Texas and Japanese Wagyu beef, aged steaks, fresh seafood, especially its signature lobster, plus striking sushi, and mouth-watering side dishes.

BBQ

No doubt about it, Texas barbecue stands alone. “Salt, pepper, smoke, and time – that’s all you need for true Texas barbecue, and that’s all you’ll find in our kitchen,” says the staff with all the bravado you’d expect from proud Texans. Opened last summer near the Park Cities, Ten50 is a wonderful step back in time, with old-school spirit and contemporary touches. Fresh sides and homemade desserts reflect its Southern hospitality. But the star of the show is the meat. The brisket, pulled pork, chicken, turkey, and sausage (house or jalapeño cheddar) are all exceptional.

Dallas rock star chef Nick Benevides’ Park Cities restaurant takes inspiration from his hometown of Seattle. The quaint, cozy restaurant focuses on seafood, offering fresh, seasonal ingredients. Dishes like ceviche, fish and chips, chowder, Salmon, and roasted Branzino are all flavorful. The raw bar features oysters, smoked Salmon, Ahi Tuna, Steak Tartare, and a beautiful Dungeness crab cocktail. It’s named after the part of the Lake Washington Ship Canal that runs through Seattle, connecting to the famed Puget Sound. The impressive wine list features selections from France, Italy, and more from Washington, California, and Oregon.

THE ULTIMATE STATE FAIR OF TEXAS CHEAT SHEET

The corny dog was invented right here in Dallas and debuted at the Fair in 1942. If it doesn’t say Fletcher’s – it’s not the original. ‘Nuff said.

Batter is poured through a funnel into hot oil, fried until golden-brown, then topped with powdered sugar. This top-selling sweet treat can’t be beat!

The Pyland family introduced fairgoers to this classic American treat in 1945. Jack’s stands will go through about eight hundred 50-pound bags of fresh potatoes during the Fair’s 24-day run –that’s 40,000 pounds of potatoes!

The Zable family brought Belgian Waffles to the Fair in 1969. These baked pastry waffles are lighter and have deeper pockets than American waffles.

Stiffler’s Sweet Spot will use approximately 86,000 Oreos to fry up this best-selling treat during the Fair’s 24-day run.

BIG TEX’S BEST

ONE TEXAS FAMILY’S INDELIBLE IMPACT ON UNFORGETTABLE STATE FAIR FOOD

A beloved tradition since 1886, the State Fair of Texas is a fall fixture. This year’s festivities kicked off on September 26 and run through October 19.

Visitors from near and far flock to Fair Park for music, midway rides, football, and, of course, legendary fried creations and other tasty treats.

Few people know the landscape better than Sherri Pietsch Kusak. She and her husband, Glen, own Farm Pac Kitchens in tiny Yoakum,

Texas, where they run the family business alongside their son Tyler—a fourth-generation member of the team. The company has operated since 1947, founded by her grandfather.

If the name sounds familiar, it’s likely because their food products have been revered staples at the State Fair of Texas and the Houston Livestock Show and Rodeo for years.

From signature smoked turkeys and turkey legs to 40 different sausages plus ham and brisket, the Kusak family’s offerings have enjoyed an award-winning reputation as iconic and enduring as Big Tex himself.

Their distinctive Hans Mueller Bavarian Garden is a landmark and a popular annual gathering spot for generations. This year, a spectacular makeover of the traditional destination brings a whole new flavor of an authentic German Oktoberfest experience.

The annual Big Tex Choice Awards began in 2005, a yearly competition designed to highlight unique Fair food. On August 6, the 2025 finalists for the Big Tex Choice Award were unveiled, and the Kusak’s Brisket and Brew Stuffed Pretzel was included in the coveted category as a Savory Finalist. “We stuff a pretzel slider with our shredded smoked brisket and top it with Beer Cheese. They are amazing and pair well with all our amazing, imported beers.”

Sherri’s team won in 2008 with Chicken Fried Bacon. But winning resulted in valuable lessons. “We weren’t prepared and ran out of product in the first week. Restocking was a challenge, but also a great problem to have. Now we know winning the Big Tex Choice Award brings lots of interest.”

“My grandfather worked hard to create this company. We’re proud of the legacy.”

Farm Pac Kitchens have reached the finals several times since then.

“Another favorite finalist, which we still serve, is the Deep Fried Brisket Balls, and the Loaded Pork Skin Nachos.”

Mail-order ships all over the U.S., perfect for Park Cities families. “Holidays, birthdays, or a special moment, our gifts are a thoughtful way to show you care to friends, family, or business associates.”
