Chef Jennifer Parker, known for her healthy and vibrant creations in Palm Beach, brings a creative spin to Thanksgiving by sharing a few of her favorite recipes. “Here, it’s all about using local ingredients and citrus-y flavors year-round,” she says. Jennifer crafts a bespoke holiday spread that captures South Florida’s essence, featuring dishes with our region’s finest produce. To complete the experience, she incorporates a festive aesthetic. “I always turn to Ovando for exquisite florals that elevate the table and complement the meal,” she adds, making each gathering unforgettable.

for the Turkey:

• 1 whole turkey (12-14 lbs)

• Salt and pepper

• 1 orange, quartered

• 1 onion, quartered

• 4 cloves garlic, smashed

• 2-3 sprigs fresh thyme

• 2-3 sprigs fresh rosemary

• 1 cup chicken broth

for the Glaze:

• 1 cup freshly squeezed orange juice (2-3 oranges)

• Zest of 1 orange

• ½ cup honey (Florida orange blossom preferred)

• ¼ cup soy sauce

• 4 whole star anise

• 1 cinnamon stick

• 1 tbsp grated fresh ginger

• 2 tbsp butter

Prepare the Turkey: Preheat oven to 325°F (165°C). Rinse turkey inside and out, pat dry, and season with salt and pepper. Stuff the cavity with orange, onion, garlic, thyme, and rosemary.

Roasting: Place the turkey on a rack in a roasting pan. Add chicken broth to the pan for moisture. Roast the turkey, basting occasionally with pan juices. Cook for about 15 minutes per pound, but start checking the temperature two-thirds through.

Prepare the Glaze: In a saucepan, combine orange juice, zest, honey, soy sauce, star anise, cinnamon, and ginger. Bring to a boil, then simmer for 10-15 minutes until slightly thickened. Stir in butter and discard star anise and cinnamon.

Glazing: About 30 minutes before the turkey is done, generously brush on the glaze, ensuring all surfaces are coated. Continue roasting, basting occasionally with remaining glaze.

Finishing: The turkey is done when the internal temperature reaches 165°F (74°C) in the thickest part of the thigh. Let it rest for 20-30 minutes before carving.

Serving: Carve and serve with your favorite sides. The orange and star anise create a beautiful balance of sweet and aromatic flavors perfect for the holiday feast.

ORANGE AND STAR ANISE GLAZED TURKEY

ingredients

• 12 oz bag fresh cranberries

• 1 cup sugar

• ½ cup fresh orange juice (1-2 oranges)

• Zest of 1 orange

• ½ cup water

• 1 cinnamon stick (optional)

• Pinch of salt

directions

1. Rinse cranberries, discarding any soft ones. In a medium saucepan, combine sugar, orange juice, water, and salt. Add the cinnamon stick if using. Stir and bring to a boil over medium heat.

2. Add cranberries; they will start to pop. Reduce heat to medium-low and simmer for 10-15 minutes, stirring occasionally, until the sauce thickens. Remove from heat, stir in the orange zest, and discard the cinnamon stick if used. Let cool to thicken further, then serve or refrigerate.

CARROTS OVER LABNEH

for the Carrots:

• 1 lb carrots, peeled and cut into 2-inch pieces (heirloom preferred)

• 2 tbsp olive oil

• 1 tbsp honey

• 1 tbsp harissa paste

• Salt and pepper to taste

• Labneh (or Greek yogurt)

for the Pistachio Gremolata:

• ½ cup shelled pistachios, finely chopped

• ½ cup fresh parsley, finely chopped

• Zest of 1 lemon

• 1 garlic clove, minced

• 1 tbsp olive oil

• Salt to taste

for Garnish:

• ½ cup pomegranate arils

directions

1. Preheat oven to 400°F (200°C). Toss carrots with olive oil, honey, and harissa, season, and roast for 25-30 minutes.

2. For gremolata, mix pistachios, parsley, lemon zest, garlic, olive oil, and salt. Spread labneh on a platter, top with carrots, gremolata, and pomegranate arils. Enjoy!

Make your own: pumpkin spice, whipped cream, pumpkin loaf, caramel sauce, and candied pecans for the best flavor. Store-bought options work if short on time.

WHIPPED CREAM PUMPKIN SPICE MIX

ingredients

• 1 cup heavy whipping cream

• 2 tbsp powdered sugar

• 1 tsp vanilla bean paste

directions

Chill mixing bowl and beaters in the fridge for 15 minutes. Pour cream into the chilled bowl, add sugar and vanilla. Whip on medium, then high speed until soft peaks form. For stiffer peaks, continue whipping but avoid over-whipping.

• 3 tbsp ground cinnamon

• 2 tsp ground ginger

• 2 tsp ground nutmeg

• 1 tsp ground allspice

• 1 tsp ground cloves

directions

Combine spices, mix well, and store in an airtight container.

PARKER’S PUMPKIN SPICE CARAMEL TRIFLE

PUMPKIN SPICE LOAVES (MAKES 2)

ingredients

• 1 cup pumpkin butter

• 1 cup pumpkin purée

• ¾ cup coconut oil

• ½ cup maple syrup

• 3 eggs

• 1 tbsp vanilla paste

• 3 cups gluten-free flour

• 2/3 tsp baking soda

• 2 tsp pumpkin spice

• ½ tsp salt

directions

Preheat oven to 350°F. Mix wet ingredients, then add dry ingredients. Mix until just combined. Pour into pans, sprinkle with cinnamon sugar, and bake for 60-70 mins. Cool, then cube.

Assemble Trifle: Layer whipped cream, caramel sauce, candied pecans, and pumpkin loaf cubes. Repeat 2-3 times, finishing with whipped cream, caramel, and nuts.

THE KIND KITCHEN

UNITED WAY OF PALM BEACH COUNTY

Join Project Thanksgiving this November by volunteering to sort food at the Palm Beach County Food Bank. Your efforts will ensure struggling families can enjoy a nourishing holiday meal. Cash donations also help, with $20 feeding a family of four. Last year, they raised over $60,000—help them make an even bigger impact this year! Call (561) 375-6600 to register.

Spread kindness by delivering fresh, wholesome meals to families in need from Palm Beach Gardens to Delray Beach. Volunteers are needed to cut turkey, bake muffins, and pack side dishes. THE LORD’S PLACE

This Thanksgiving, The Lord’s Place will provide traditional holiday meals to those in need, ensuring that everyone can enjoy a comforting feast. INTO THE WILD

The roar of lions greets you as you enter McCarthy’s Wildlife Sanctuary, a powerful reminder that this is no ordinary place. The sound reverberates through the towering palmettos, as fractured sunlight spills onto the clean, well-kept grounds.

The Lifesaving Work of Mark McCarthy
Injured wildlife is often brought to the gate, where honking twice will bring someone to assist within minutes.

This serene oasis in West Palm Beach is home to more than 200 animals, most of whom were rescued from neglect, unsafe conditions, or surrendered by owners unable to care for them.

At McCarthy’s, the stories behind the animals are as varied as the species themselves. Take Oliver, the squirrel monkey surrendered after attacking his owner’s new boyfriend, or Larry the Nile crocodile, who once lived in a bathtub. Larry, now thriving in his spacious pond, was named after Mark’s attorney, a fitting nod to the quirky history of many sanctuary residents.

Mark McCarthy and his wife, Aneth, live just across the street and have dedicated their lives to these animals. Beyond the daily feeding and cleaning, their work includes everything from caring for an Amur leopard, one of the world’s rarest big cats, to rehabilitating

injured native species like red-tailed hawks. The animals’ well-being is paramount, and that commitment is reflected in every inch of the sanctuary. Whether it’s the low chuff of a Bengal tiger or the gentle squawk of a rescued parrot, McCarthy’s is a refuge where the rescued not only survive but thrive.

Founded in 1990, McCarthy’s Wildlife Sanctuary has become a haven for a diverse range of animals. Mark, who once worked in film production, moved from Miami to Palm Beach County, bringing with him a dream of creating a place where both exotic and native animals could flourish. The sanctuary’s eight acres are lush with trees Mark planted himself, and the pond—now home to dozens of abandoned pet turtles—was dug out by Mark as part of the foundation for the sanctuary.

Among the more unusual residents is Tatu, a ringtailed lemur native to Madagascar with a unique backstory. Tatu was found wandering the parking lot at MetroZoo in Miami, abandoned by someone who could no longer care for her. When zoo staff realized she wasn’t one of their own, they called McCarthy for help. “Someone just dropped her off and left her there,” Mark recalls. “She was thin, wearing a collar that had slipped down around her waist.” Now, Tatu thrives at the sanctuary, a testament to the many animals that find a second chance here.

But McCarthy’s isn’t just a home for the exotic. The sanctuary has rescued thousands of animals native to Florida. Injured wildlife is often brought to the gate, where honking twice will bring someone to assist within minutes. Over the years, McCarthy has sheltered everything from screech owls and tortoises to pelicans and bobcats, rehabilitating and releasing them whenever possible.

Mark’s care for the animals goes far beyond their physical well-being. Many of the creatures at McCarthy’s have been with him for years. Norma Jean, a macaw gifted to Mark when she was just a chick, has been a cornerstone of the sanctuary’s educational outreach for over 33 years. She has participated in more than 7,000 wildlife programs, teaching over half a million South Florida students about conservation. “It’s important to keep the animals engaged,” Mark explains. “Just like a horse needs regular handling, these animals need constant interaction to stay connected.” Norma’s calm demeanor and experience make her a perfect ambassador for the sanctuary’s mission, highlighting the role education plays in the future of wildlife protection.

a place where exotic animals, once lost or abandoned, find peace, and where people find purpose, knowing their efforts will make a lasting difference.

Despite the sanctuary’s peaceful atmosphere, it requires immense resources to operate. Cages cost $30,000 each, and the big cats alone consume 1,000 pounds of meat each week. With no government funding, McCarthy’s Wildlife Sanctuary relies solely on private donations, the generosity of supporters, and the dedication of volunteers. The Batchelor Foundation has been a crucial partner in keeping the sanctuary running, and Mark is deeply grateful for their ongoing support. “We couldn’t do it without them,” he acknowledges.

Over the years, McCarthy has faced his share of challenges. A rattlesnake bite once left him in a coma for three days, but instead of being

deterred, he returned to his work with renewed passion. Today, he serves as a hub for antivenom treatments, providing life-saving antidotes between Miami and Orlando.

As dusk settles in on the sanctuary every evening, you can feel the quiet harmony that exists between the animals and the people who care for them. There’s a deep sense of satisfaction here— the kind of content that only comes from doing meaningful work. For Mark, Aneth, and their team, the sanctuary is more than just a place for wildlife to live. It’s a place where exotic animals, once lost or abandoned, find peace, and where people find purpose, knowing their efforts will make a lasting difference.

• 1.5 oz London No.3 Gin

• 0.5 oz Munyon’s Paw Paw

• 0.5 oz Rosemary & Honey syrup

• 0.75 oz lemon juice

• 1 egg white

• Sparkling apple cider

DIRECTIONS

To make the syrup: Heat 120g water with 200g honey and rosemary sprigs. Do not boil—just warm enough to extract the rosemary’s essence.

Shake first 5 ingredients without ice first (or use a milk frother for extra creaminess). Add ice, shake again, and top with cider.

TORETTO MARTINI

Named in honor of Dominic Toretto from The Fast and the Furious, this local twist on the classic espresso martini shines with Miami’s JF Hayden coffee liqueur—because, let’s be honest, Miami is hard to beat when it comes to coffee.
