SUMMER GRILL RECIPES

THESE DELICIOUS RECIPES ARE LIGHT, BRIGHT AND FEEL LIKE SUMMER

The sun has returned, and grilling season is upon us. With the nice weather comes vegetable gardens and fresh produce, along with the overwhelming desire to be outside as much as possible. We’ve compiled some fresh and light dishes that you can shop for at your local farmers market and whether you’re looking for a quick mid-week meal or something to grill for a crowd on the weekend these dishes won’t disappoint. These pair well together or can stand on their own!

INGREDIENTS:

• 2lbs. Outside skirt steak*

• 2 Tablespoons lime*

• 2 Tablespoons finely, chopped cilantro

• ¼ Cup olive oil or avocado oil

• ¼ White onion, finely chopped

• 1 Tablespoon cumin

• Salt and pepper to taste

DIRECTIONS:

1. Place skirt steak into gallon freezer bag

2. Combine all other ingredients in bowl and mix. Pour over steak and marinate for 3-4 hours or overnight in the fridge.

3. Bring skirt steak to room temperature by letting it sit out for one hour.

4. Get your grill hot on one side and medium on the other.

SIMPLE SKIRT STEAK

5. Once the grill is ready, wipe excess marinade off steak. Starting on the hot side, place skirt steak on grill for 2 minutes per side, attaining a nice sear.

6. Transfer steak to the cooler side of grill and cook until the internal temp is 130°. Let rest for 10 minutes (temp will rise while resting).

7. Carve and serve. This dish pairs well with beans and rice or served as tacos. Following is a chimichurri sauce that compliments it nicely.

*Outside skirt steak is a more tender cut than inside skirt steak, for this recipe outside skirt is recommended. Do not use too much lime as the citrus can cook the meat before putting it on the grill, resulting in a tougher texture.

INGREDIENTS:

• ½ Cup parsley, finely chopped

• ½ Cup cilantro, finely chopped

• 2 Tablespoons red wine vinegar

• 3 Cloves garlic, minced

• 1 Red chili (whole or deseeded depending on desired level of heat)

• ½ Teaspoon dried oregano

• 1 Teaspoon salt

• 1 Tablespoon lime juice (optional)

DIRECTIONS:

Combine all ingredients in a bowl. You can make this in the late morning and let it sit for around 4-6 hours, or you can make it the day before and let the flavors meld overnight in the fridge. Just be sure to take it out and get it to room temp before you serve it, as olive oil hardens in the fridge. Serve over skirt steak or tacos.

ROASTED CORN SALSA

INGREDIENTS:

• 2 Ears sweet corn

• 10oz. Cherry tomatoes

• ¼ Cup lime juice

• 1 Finely chopped jalapeno or serrano (whole or deseeded depending on desired level of heat)

• ¼ Cup cilantro, finely chopped

• ½ Cup white onion, chopped

• 2 Cloves garlic, minced

• Salt to taste

DIRECTIONS:

1. Grill corn, you do not need to soak the corn beforehand.

2. Place corn on the grill (inside their husks) over medium heat turning every few minutes.

3. After 10 to 12 minutes shuck the corn and put the cobs back on the grill for 2-4 minutes rotating frequently to achieve that charred look and flavor.

4. Cut the corn from the cob, place in bowl and add all other ingredients. Let the mixture meld for about an hour and serve with tortilla chips or as a taco garnish.

The Giving Trees

Chris Henninger reflects on trees, life lessons, and the roots of compassionate service

I ask Chris Henninger, owner of Live Oak Tree Service, why he chose to dedicate his life to trees.

“Trees look ancient. You never know how they’re going to grow once you plant them. They're majestic.” For Chris, trees symbolize both unpredictability and grace, mirroring life itself.

Chris’s relationship with trees began early: in the summers he worked alongside his father, who owned a tree service in Macomb County. "My dad taught me this trade,” Chris declares, adding that he’s been climbing trees professionally since 1993. When Chris lived for a time in Florida, he encountered the southern live oak—a tree that would profoundly inspire him. “It’s the heaviest, densest hardwood in North America. It doesn’t grow in Michigan, but I fell in love with it down south. When I returned, naming my business after it felt right.”

Trees for Chris are deeply personal—and he’s not the only human who’s like that: Chris recalls trees being significant markers in many of his clients’ lives. "I’ve had trees with sentimental value in my own life,” he reflects. “I try to respect that with customers.”

Chris also knows the flip side of trees: “Some give peace,” he notes, “others cause anxiety. A perfectly healthy tree can still pose a hazard, so peace of mind and prudence have to take priority. But it’s all about what's right for their home and family. Sometimes people hesitate to remove a tree. I tell

them, 'We can always prune first. It’s costlier, but you won’t have to say goodbye yet.’”

He recalls one couple's struggle with a majestic oak whose branches repeatedly threatened their home— and their toddler. “We started to remove the tree, and they came out, torn. They weren’t ready. So we waited,” Chris says gently. “Ten minutes later, they decided. It was hard. A week later, they called me to come trim one of their other trees, and the man told me his wife had been in tears the whole week over the loss of that tree.”

I suggest that when a tree of ours dies, we’re confronted with your own mortality. Chris agrees. “It’s sobering,” he says. “Maybe that’s why people grieve them so deeply.”

Chris’s deep emotional connection with trees surfaces vividly when he brings up Shel Silverstein’s The Giving Tree— a book I still know by heart and immediately demonstrate to Chris. We’re both moved recalling the end of the book, when the tree—now a stump—offers the boy, who’s now an old man, a place to rest. “That's profound,” Chris opines. “That book shows how important trees are to creation.”

When I ask about Chris’s guiding philosophy, he takes a moment before thoughtfully referencing Colossians 3:17: “Whatever you do, in word or deed, do everything in the name of the Lord Jesus.” For Chris, this isn't mere scripture—it’s how he runs his business. “When I show up at someone’s home, my goal is honesty and integrity. I want to serve them well, as though working directly for God.”

Reflecting on his most valuable life lessons, Chris distills them succinctly: “Do what you say you’re going to do, and always treat people how you want to be treated. Those are the two biggest lessons I’ve learned—good and bad.”

When I ask about the future of his business, Chris’s aspirations remain clear: “I want to always provide good service at a fair price. If I can’t, I'll find something else. That’s my ambition—to simply do right by people and their trees.”

I come away clear: for Chris Henninger, caring for trees is more than a business. It’s a sacred covenant, rooted— quite literally—in service, compassion and respect.

Earlier this year—fifteen years into her career—Sue Everett got the call no life insurance agent forgets.

It was her first death benefit claim.

When men are willing to talk about life insurance, they often joke about it.

“One guy told me, ‘Why would I die and let her next boyfriend enjoy my money?’

Another said, ‘If I’m gone, they’ll figure it out.’ But here’s the thing: nobody should have to figure it out in the middle of their grief. That’s not love. That’s just irresponsible. Do the honorable thing, and protect your loved ones the way they deserve to be protected."

Sue specializes in helping young families in the prime of life. Those men often think they don’t need life insurance, because time is on their side. “I hear it all the time: young, healthy, optimistic guys saying, 'I'm not going to die tomorrow,’ Sue relates. “I reply, 'That's exactly why now is the best time to set up life

insurance—while it's affordable. The younger and healthier you are, the easier—and cheaper—it is to get covered.”

That’s a young person’s other misconception: life insurance is too costly. But Sue says the reality is, healthy people in their late 20s or early 30s can secure substantial coverage for as little as $10 to $30 a month. "When I hear a guy claim they can't afford it, I pull out my 'mom' pad and ask about daily coffees, takeout lunches, or streaming subscriptions. Most people spend far more monthly on these little luxuries than it would cost to protect their families."

One overlooked option Sue highlights is whole life insurance for children, which not only protects them early but builds value as they grow. "“It’s one of the smartest things you can do for your kids,” Sue says. “You’re setting them up with something lasting, something they’ll thank you for years down the road. It's pennies a day when they're young, but it offers lifelong benefits.” Sue even took advantage of those lifelong benefits herself: “I cashed in my own policy after 12 years and got a very nice chunk of change. It can come in handy when you might need it."

At the end of the day, Sue says, love is about facing life’s saddest truth with a brave heart and a clear head.

“We're all going to leave this life someday. The honorable thing—the loving thing—is making sure those left behind aren't burdened financially. That's why I'm committed to this work. It's not just insurance; it’s compassion in action."

With how a man cave is usually done in mind, there are plenty of ways to make this hideaway both agreeable and full of style. I always start with what is most important to your man and 9 out of 10 times it is comfortable seating. So, with that in mind, I start with smart seating. Do we need a sectional? Can we get away with a cool reclining chair? Do we need Barstools? Comfortable, durable, and stylish seating is my jumping-off point.

Next, of course, there will need to be a TV for gaming and/or sports watching. Try and get him the size he wants, if it can work in space and not be too obnoxious (ladies, you’ll thank me later) because this is all men truly care about. Lastly, without getting too “theme-y,” I organize what he loves and treasures into a gallery wall. I recently did one wall of really cool wallpaper for a husband that was a huge Star Wars fan. It was a black and white Star Wars print that gave this aficionado a fun way to bring his subject matter and style together.
