I love you a latte.
I'll admit, coffee has a certain psychological hold over me. You know the way gasoline reminds you of summers on the family boat or maybe how a wet dog reminds you of where you hail from, and how any time it rains it brings you right back there? That's coffee for me.
Dad always had a pot going in the morning. The gurgling, the plopping of those first big drops hitting the glass bottom, and the smell—a thick, palpable wave of raw goodness. And my mom always ordered it "light and sweet" which was code for extra cream and sugar at Dunkin Donuts. When it went cold or the bottom was just a puddle of sugar, she'd let our dog Frankie lick it up right out of the cup. I'll never forget him—a miniature dachshund— lying on the armrest of our couch and having the sweet remains all over his whiskers when he was done. He lived until he was 18 years old and I swear it was the coffee that kept him running all those years.
My husband's childhood home had quiet mornings with coffee and conversation. And whenever someone came over or we arrived somewhere as a guest, there was coffee to be had. When we gathered at my sister's house after our father died, we all had a cup of coffee to wrap our hands around, even though I didn't even drink it back then. I certainly did that day, and all the ones that followed. Even into my first pregnancy (decaf, of course), I have a glowing memory of my husband walking into our hospital room, eyes squinty from a mask-hidden smile, holding our lattes. He was a dad, and me—a mom. We needed coffee.
No matter where any of us go or what paths we take when we set out on our day or lives, coffee is something that brings us together for a few minutes. We gather and we fill ourselves up in more ways than we think. And I'm grateful for something that still stops all of us in our tracks.
It's a long-running joke that my generation—hello, Millennials!—is addicted to fancy cafe coffee, and I have to laugh because maybe it's true. Yeah, I probably pay upward of twelve times more than my father did in his heyday, but in the grand scheme of things, it's a small price to pay to feel a sense of slowness and warmth. And if it reminds me of togetherness, you bet you'll see me standing in line at Clyde Coffee with a happy grin.

Lassoing Missoula's Mobile Mouthfuls!
Food + Beverage Truck Roundup
ARTICLE BY EMMA TROTTER PHOTOGRAPHY BY ERIKA SPAULDING
When we think of Missoula’s Out to Lunch, Downtown ToNight, or the Clark Fork River Market (every Saturday through October 29!), we tend to get hyped up for the mobile food and beverage scene.
Kebabs sizzle at Madeline’s Mediterranean and the smell of chicken karaage wafts from Aiko’s. Or, if you’d rather sip and stroll, Bamboo Bar has you covered. River City Eats churns out sliders and fries, or turn up the heat at M-80 Chicken. For dessert, Qatayef and Big Dipper’s Coneboy are just steps away at any given community get-together.
Luckily for us, these trucks and trailers bring diverse options right to our favorite festivals, markets, and just about every social atmosphere. If you’ve ever gratefully devoured a meal from a food truck outside one of Missoula’s many breweries, you know intimately that they have a knack for being in the right place at the right time. And don’t fret—these wheels and wagons carry on through the seasons, which is why we’re offering a spotlight of our staff favorites. For a convenient mapping of all available mobile options on any given day, follow Food Truck Locator on Facebook or Instagram.

THE FLAVOR OF FALL
Apples are the trademark fruit of fall, and with the many varieties to choose from, there is an apple that is sure to please any palate. They can be included in both sweet and savory dishes and are delicious and incredibly healthful. We all have heard the saying, “An apple a day keeps the doctor away.” While they aren’t a cure-all, apples are packed full of polyphenols, antioxidants, vitamin C, B vitamins and fiber. Make the most of autumn’s best produce and the flavors of fall with these simple recipes.
APPLE GALETTE WITH CARAMEL DRIZZLE
Easier than pie but with all the same textures, this gooey warm dessert is sure to please. For simplicity, this can be made with a premade crust.
INGREDIENTS:
Crust:
• 1 1/2 cups flour
• 1/4 cup sugar
• 1/4 teaspoon salt
• 1 stick cold unsalted butter, cubed
• 1/4 cup iced cold water
Filling:
• 2 apples, peeled and sliced into thin slices
• 1/4 cup packed dark brown sugar
• 1 1/2 tablespoons flour
• 1 1/2 teaspoons lemon juice
• 1 teaspoon cinnamon
• 1/4 teaspoon ground nutmeg
• Caramel sauce
• Optional: 1/4 chopped walnuts or pecans
INSTRUCTIONS:
Crust:
(Note: If running short on time, store bought crust works great, too.)
Mix flour, salt and sugar together in a bowl. Cut in the butter. Add water and mix until moistened. Lightly knead the dough and then form into a ball. Next, flatten dough into a thick circular form and refrigerate for one hour.
Filling: Mix the apples, flour, lemon juice, cinnamon, nutmeg and brown sugar together in a bowl.
Assemble and Bake:
Preheat oven to 375 degrees. Line a baking sheet with parchment paper. Roll the dough into a circle and set on parchment paper. Arrange apples in center of dough, leaving about one inch of space for the edges. Fold crust over the apples and press to seal edges. Drizzle with caramel sauce and sprinkle with pecans or walnuts. Bake for 35 minutes. Serve with caramel sauce and ice-cream.

Feed Your Soul
Food is exciting to cook, and satisfying to eat but is it enjoyable to read? Novels where food is prominently featured can be a veritable feast for the eyes. Food imagery, also called gustatory imagery, adds depth to a novel, providing a springboard for all kinds of descriptive and symbolic language. Different dishes can transport a reader to new regions of the world, reveal a character’s culture, or symbolically deepen the meaning of a text. So, dive into this list of autumn reads and don’t forget to save room for seconds.

Stanley Park
The School of Essential Ingredients
by Erica Bauermeister by Timothy Taylor
True crime fans and foodies alike will enjoy this beautifully written novel. The novel follows a Vancouver based chef, Jeremy Papier and his failing bistro. As Papier tries to hold his dreams together, his homeless father drags him into a real-life, 1940’s “cold case” investigation. The novel mindfully uses the investigation as well as Papier’s commitment to locally grown foods to pay tribute to Vancouver’s landscape and history.
Love is in the air at this Monday night cooking school. The novel follows a cast of hapless students as they are instructed in both the kitchen and in life by the school’s owner, Lillian. Lillian is the group’s fairy godmother as she hands out morsels of advice and challenges the students with advanced recipes. A cozy read, be prepared to fall in love with the decadence of the school’s dishes as well as the sweet message that lingers long after you put down the book.
A Moveable Feast
by Ernest Hemingway
Published after his untimely death, A Moveable Feast is Hemingway’s memoir. A love letter to 1920’s Paris and the literary movement, Hemingway charters the reader through his early years there, one cafe at a time. Along the way, familiar characters like Gertrude Stein and F. Scott Fitzgerald float in and out. This no-frills prose will stick to your ribs and leave you satisfied.
The Sol Majestic
by Ferrett Steinmetz
If you love science fiction, this big-hearted, culinary space opera is sure to hit the spot. The story follows impoverished Kenna, an aspiring guru who hungrily wanders the cosmos until he wins dinner at the galaxy’s most renowned restaurant, The Sol Majestic. A novel that is both fun and thought provoking, Steinmetz uses striking food imagery to explore what truly excites the spirit.

Quality Community AND
For four years, Missoula foodies raved about the “Wally & Buck Burger.” Back then, to find it you had to follow the smell of sizzling beef coming from a retrofitted camper parked in the side lot of Kettlehouse Brewing. Inevitably, after taste buds had been tantalized and stomachs settled into contented bliss, the next question became: Who are Wally and Buck? The title comes from a combination of the last names of owners Travis Walnum and Kelsey Buckley, a local couple with a love for quality and community.
In 2019, after working out of their camper for four years, Travis and Kelsey opened the Wally & Buck restaurant. Located across from the old Missoula Public Library and a stone’s throw from the new location, Wally & Buck was the first business to move into the commercial block on East Front Street. From outdoor seating to the indoor space, the restaurant’s look and feel is Missoula modern, accessorized with tradition and story. In the seating area, a large Red Angus cowhide covers one wall. “When we had our food truck, we served that entire animal,” said Travis.

industry. “I’ve had many years of experience in restaurants, going back to my teens when I scooped muffin batter and washed dishes,” he said. “I just swam upstream from there. Every new opportunity kept me going.”
When it came time to build the menu, Travis and Kelsey stayed true to their vision of making the best burger in Missoula. “We decided from the very start to hyper-focus on one thing, to do one thing and do it well,” said Kelsey. The star of the menu is The Wally—a 10-finger burger with a flirt of bacon jam. The Wally is grilled “smash-style” with a quarter-pound ball placed on the grill (instead of a flat patty). This technique does a better job of locking in the juices. “It’s a nod to the classic, drive-thru style burgers with a culinary twist,” said Travis.
They understand that Missoulians know local, so Travis and Kelsey make every effort to ensure their ingredients are sourced in ways that maximize both sustainability and economic impact. “Local and sustainable are prerequisites for everything we source,” Kelsey said. “Because our customers are so educated about local, healthy food, they can see the quality without us needing to explain it. When we’re considering our items, we try to make decisions that support area suppliers and respect the environment. For our burgers, we use Oxbow beef out of Missoula. They practice regenerative farming and their values align with ours.” Even the drink selection meets those higher standards. “When we’re choosing the drink menu,” said Travis, “we consider the carbon footprint of trucking beers from all over the country. So, we’ve decided to offer
