Gratitude, the small shift that makes a huge difference

Dear Readers,

Thankfully, November feels like a season of slowing down, of looking around at the people and moments that make life truly rich. Gratitude has a way of shifting our perspective—reminding us that even in challenges, there’s beauty, growth, and connection to be found.

This month, I’m inspired by our feature story with Jenn Drummond. Have you ever had that hard stop in your life, the one that nudges you in a different direction? The one that asks you to evaluate where you are and question if you’re “doing life right?”  After surviving a near-fatal car accident, Jenn realized she was being given a second chance—not just to live, but to live with more meaning. That life isn’t just about work but fulfillment. That shift led her on an extraordinary journey to climb the Seven Second Summits, the second-highest peaks on each continent, a feat no woman had accomplished before. Her story is one of courage, perspective, and gratitude for every day we’re given.

Ways to practice gratitude everyday

Gratitude is such a simple word, yet often so difficult to practice. Too often, it feels tied to obligation, what we should say or do, rather than what we truly feel. But gratitude isn’t about social expectations or forced responses. At its core, it’s about noticing and appreciating the small, genuine moments that bring us light. It starts by noticing the small things that bring us joy, comfort, or peace. Gratitude doesn’t require grand gestures. It can be found in the sound of your child’s laughter, a good night’s rest, or the strength you feel in your body when you wake up. Of course, finding gratitude in daily life is easier said than done. On the surface, it seems simple: notice the good and say thank you. But in reality, gratitude can feel heavy. When we’re moving through grief, stress, trauma, or even just the busyness of everyday life, our brains are wired to focus on what’s wrong. Gratitude also asks us to slow

down and be present, which is not easy in a world that constantly pushes us to do more and move faster. Sometimes guilt sneaks in, too: “I should feel grateful because others have it worse.” But that only leads to shame instead of true appreciation. Real gratitude isn’t about forcing ourselves to be positive or pretending the pain doesn’t exist. It’s about making space for both, acknowledging what’s difficult while also noticing what still brings us light. A frustrating traffic jam might be reframed as extra time to catch up on your favorite podcast. A long to-do list might be softened by a moment of laughter with a coworker. Gratitude often lives in these subtle shifts of perspective. Here’s a simple challenge: take a breath. Inhale, exhale, repeat three times. Then look around you. In this very moment, what’s one thing that brings you light?

That’s gratitude. And it’s enough.

Snap a photo each day of something that brings you joy: your pet curled up, the glow of a candle, a smile from a friend. At the end of the week, look back at those images, you’ll see that gratitude leaves a trail.

On a crisp Utah morning, Jenn Drummond laces up her boots and takes a deep breath. The air feels familiar—mountains looming on the horizon, children’s laughter still echoing from the kitchen. To the world, she is the Guinness World Record holder as the first woman to climb the Seven Second Summits—the second-highest peaks on each continent, recognized as more technically difficult than the famed Seven Summits. To her seven children here in Park City, she’s simply “Mom.”

Her story begins not with a summit, but with a near-fatal accident. A devastating car crash should have ended her life. Instead, it became the turning point that redefined everything. “If I was given a second chance,” she recalls, “I wasn’t going to waste it.” Before that day, Jenn had never camped in a tent. She had no background in alpine climbing. But what she did have was a fierce will, a sharpened perspective on how short life can be, and an unshakable commitment to showing her children that impossible dreams are worth pursuing. She found a coach, crafted a plan, and made the bold decision to chase a record few had ever imagined. The Seven Second Summits are notorious. Unlike the more famous Seven Summits, these peaks are less traveled, more dangerous, and often more technically challenging. To succeed meant walking into avalanches, whiteout storms, and terrains that few mountaineers dared to test. It meant surrendering comfort and risking failure. Jenn faced it all. She endured the loss of a teammate, navigated climbing disasters that forced her to test her courage, and even contracted anthrax from

a donkey sneeze while on Karakoram. Each trial was a test not just of her physical stamina but of her mental resolve. For Jenn, climbing wasn’t just about records—it was about determination. The mountains became teachers, offering lessons about persistence, humility, and the power of one step at a time. “Mountains show us who we are,” Jenn explains. “They strip away distractions, force us into the present, and demand that we choose courage over fear.” Every summit achieved reinforced a truth she now shares widely: growth isn’t about avoiding pain or fear— it’s about facing them, learning from them, and moving forward despite them.

But this is precisely what makes Jenn’s story remarkable: she is both a global record-breaker and a grounded Utah mom. GET KIDS OUTSIDE

FUN ACTIVITIES TO GET KIDS OUTSIDE THIS WINTER

When the temperature drops and snow begins to fall, the first instinct for many families is to hunker down indoors.

For parents, a special program is making it easier than ever to get the whole family outside. The Utah Division of Outdoor Recreation created the Utah Every Kid Outdoors Adventure Challenge. This initiative encourages families with children ages 5-18 years to explore the state’s natural beauty through a series of fun and accessible winter activities. The program provides a structured yet flexible way for families to try new things and discover local parks and trails, turning the winter landscape into a giant playground.

“The Every Kid Outdoors was a legislative initiative in 2019, to encourage kids to get outside,” said Caroline Weiler, youth engagement program manager for the Utah Division of Outdoor Recreation. “After it transferred hands the last six years, it landed here and we revamped it.”

Joining the program is free and available year-round, making it easy for families to participate at their own pace. To make the experience even more engaging, participants can collect unique stickers from the local libraries after completing each activity, which helps track their progress and adds a rewarding element to the challenge.

“Our team has created 15 different adventures challenges that we have hosted events for each month,” Weiler added. “This winter will have our winter games, snowshoeing and hiking. Then we start it all over again next year.”

Activities families can enjoy as part of the program:

• Explore STEM activities such as experiments with salt and ice to discover how they interact.

• Host a star party and observe the winter night sky filled with constellations.

• Ice skating at Millcreek Common is a fun and active way to enjoy the season.

• Go on a winter hike to explore the beauty of local trails and connect with nature.

By reframing winter as a season of opportunity, parents can provide kids with valuable experiences. From the challenges like the EKO initiative to simple backyard play, colder months are filled with chances for kids to grow and explore.

THE SEASON’S BEST SANDWICHES

Stacked forFall

There’s something deeply satisfying about a well-made sandwich—especially when it comes together with minimal effort but delivers big on flavor. As the season changes and appetites grow heartier, fall is the perfect time to get creative with ingredients tucked between slices of crusty bread or buttery rolls. Whether you’re looking to upgrade your lunch routine, enjoy comforting flavors and bold textures, or impress guests with a no-fuss meal, these easy-tomake sandwiches strike the perfect balance between simple and sensational.

INGREDIENTS

• 2 slices crusty bread (sourdough, ciabatta, French bread)

• 6 oz roast beef

• 2 slices provolone cheese

• 2 tbsp butter (for toasting)

INSTRUCTIONS

• 2 ½ tbsp mayonnaise

• 1 tbsp horseradish sauce

• 1 tsp Dijon mustard

• Arugula

• Cherry tomato

• Caramelized onions

Toast the bread. Butter one side of each slice and toast in a skillet until golden. Heat roast beef briefly in a pan. To make the spread, mix mayo, horseradish sauce, and Dijon. Spread on the toasted bread. Layer roast beef, cheese, and broil briefly to melt. Add arugula, tomato, and caramelized onions if using. Top with the second slice of bread.

INGREDIENTS

• 1 grilled chicken breast

• 2 slices pepper jack cheese

• 2 slices cooked bacon

• 1 tbsp fruit jam (fig, raspberry, or jalapeño recommended)

INSTRUCTIONS

• A handful of fresh arugula

• 3–4 cherry tomatoes (halved)

• 1 tbsp garlic aioli

• 1 brioche bun (toasted)

Lightly butter the inside of the bun and toast in a skillet or oven until golden brown. Spread a layer of garlic aioli on the bottom bun. Add the sliced grilled chicken breast. Place the pepper jack cheese over the hot chicken to slightly melt it. Layer on the crispy bacon slices. Add halved cherry tomatoes and a small handful of arugula. Spread the jam on the top bun. Enjoy!

INGREDIENTS

• 3 oz goat cheese

• Fresh arugula

• ¼ cup caramelized onions

• 1 pear, thinly sliced

INSTRUCTIONS

• Honey, to taste

• Butter for toasting the bread

• Rotisserie chicken breast thinly sliced

• Sourdough bread, buttered (optional)

Spread goat cheese on one side of the bread. Top the cheese with arugula, caramelized onions, sliced pears and chicken breast. Drizzle with honey. Top with remaining slice of sourdough bread. Use a griddle or panini press to heat the sandwich.

INGREDIENTS

• French bread loaf, halved lengthwise

• 2 cups cherry tomatoes

• 2 garlic cloves, minced

• ¼ cup olive oil

• 1 tsp thyme or rosemary

• Salt, pepper, chili flakes (optional)

INSTRUCTIONS

• 8 oz fresh mozzarella, sliced

• 1 cup arugula

• 2–4 tbsp pesto (thinned with olive oil)

• Balsamic glaze

• Optional: 4 slices prosciutto

• Fresh basil

Toss cherry tomatoes with olive oil, garlic, herbs, salt, and pepper. Roast at 375°F for 20–25 minutes until soft and caramelized. Brush bread with olive oil. Toast in the oven at 375°F for 5–7 minutes until crisp. Layer mozzarella slices on the toasted bread. Add fresh basil. Return to the oven for 3–5 minutes, just until melted. Optional: Top with roasted tomatoes, arugula, and prosciutto (if using). Drizzle with pesto and balsamic glaze.

Fall is synonymous with gathering with friends and family and enjoying time together. Whether it is for Thanksgiving, a football watch party or a simple fall gathering, these easy appetizer dips are the perfect shareable snack to share.

fig & honey brie

The perfect cheesy fall dip that is both savory and sweet. The chopped pecans add a subtle crunch that makes this irresistible.

ingredients:

• 8 ounce brie wheel

• 1/3 cup fig spread or jam

• ¼ cup pecans

• 2 teaspoons honey

• 1 teaspoon fresh rosemary, chopped

• 1 teaspoon fresh parsley

directions: Place brie in a baking dish. Spread the fig spread on top of brie and sprinkle with chopped pecans. Drizzle with honey. Add fresh herbs, and bake at 350 degrees for 20 minutes. Serve with pita chips or crackers.

garlic herb feta dip

This savory dip is quick and easy to assemble and is perfect to serve with fresh veggies or crackers of any kind.

ingredients:

• ½ cup plain Greek yogurt

• 1 whole garlic bulb, roasted

• 1 ¼ cup feta cheese

• 3 teaspoons olive oil

• 1 Tablespoon lemon juice

• ½ teaspoon dill

• 1 teaspoon parsley

• Salt and pepper to taste

directions:

First, cut the head off of the top of the garlic bulb, and drizzle olive oil on top. Wrap in foil, and place it in an oven heated to 425 degrees. Roast for 30 minutes or until soft. Squeeze roasted garlic into a bowl, and set aside. Next, add the yogurt, feta, lemon juice, salt, pepper and water in a blender and lightly blend. Add the roasted garlic and blend until smooth. Transfer to a serving dish and sprinkle with fresh herbs. Serve with crackers or fresh vegetables. Enjoy!

ingredients:

• 8 ounces softened cream cheese

• 1 can pumpkin puree

• ¾ cup brown sugar

• 1 cup heavy whipping cream

• 1 tablespoon pumpkin pie spice

directions: Place cream cheese in a microwave safe bowl, and soften for 30 seconds. Add brown sugar and blend with a hand mixer until smooth. Add in pumpkin and blend until combined. Mix in heavy whipping cream and mix on high for 2 minutes. Next, stir in pumpkin pie spice. Serve with sliced apples, pretzels, graham crackers or vanilla wafers.

DISCOVER ENDLESS ADVENTURES

Have you visited the Loveland Living Planet Aquarium recently? This nonprofit inspires visitors to explore and learn about our planet’s amazing ecosystems.

Since opening in Draper in 2014, the aquarium has welcomed over eight million guests and provided countless educational experiences. It’s home to seven sustainable exhibit spaces. You can explore ecosystems from all over the world, including kelp forests, coral reefs, the deep ocean, Antarctic waters, Asian cloud forests, South American rainforests, and even Utah's own waterways.

It all started with founder and CEO Brent Andersen, who first brought the aquarium to life in the back of a van in 1988. The Aquavan traveled from school to school, teaching students. Today, the Loveland Living Planet Aquarium is accredited by The Association of Zoos and Aquariums (AZA).

"In its purist form, [opening the aquarium] is the American dream," said James Jensen, director of marketing for the Living Planet Aquarium, said. "Brent went to school to be a marine biologist and discovered how educating kids about the natural world, the living planet, left a spark in their eyes. He decided to make that a mission for himself."

In addition to the aquarium, the Rio Tinto Kennecott Plaza is a nine-acre expansion on the north side that features the massive 165-foot-tall EECO structure (aka the claw) that was created for the rock band U2. The EECO Voyager is a virtual reality experience that allows guests to explore the ocean or the Amazon.

A new building is slated to open this fall, featuring 13 classrooms, a Mountain America state-of-the-art event center, and the home of a new, revamped exhibit, Ford Expedition Asia, which will be a much larger space than its current location.

"Whatever the intent of the guest is, especially if you want something different and a place to connect, the aquarium is a great place to come," said Jensen.

Begins with YOU A SEASON TO SEE THE UNSEEN

The holidays have a way of calling us back to what matters most—faith, family, compassion, and the quiet but powerful act of giving. As lights go up and calendars fill, there are still many who sit in silence, carrying burdens too heavy to bear alone. But what if this season, you could be the spark that changes everything for someone else?

The founders of City Lifestyle, through their private foundation, are once again launching its annual Christmas Giving Campaign—a heartfelt effort to seek out and support individuals and families who have quietly fallen through the cracks. The mission is simple: to bring light, dignity, and hope to those who need it most.

Since its beginning just four years ago, this initiative has grown from a humble idea into a life-changing movement. Last Christmas alone, more than 200 families across the country received unexpected support—financial relief, but also something even more powerful.

Together with City Lifestyle President Matthew Perry, Steven has helped shape this into a tradition that goes far beyond charity. “This is about community,” Matthew adds. “We believe we’ve been blessed, so now we get to be a blessing.”

Every story begins with a nomination. Often, it’s a neighbor, coworker, friend, or teacher—someone who’s been quietly carrying too much for too long. One past recipient, after receiving unexpected support during a time of deep personal struggle, wrote:

“Beyond the very practical solution of receiving funds to fix my car, this thing you guys worked together to do is bigger than that. I carry the Christmas card you sent in my purse. I’m not sure how many people get to carry hope around in their purse. But I do.”

Another wrote in after her husband was diagnosed with aggressive brain cancer and unable to work:

“This support has blessed our family not only financially, but emotionally and spiritually as we trust God to meet our needs throughout this difficult time. Thank you to our anonymous friend and to your foundation. What a joy and gift to be part of God’s family!”

Each year brings countless stories like these—real lives touched by simple acts of kindness. Some use the funds to pay overdue bills, others to afford groceries, medication, or repairs. But no matter the circumstance, the impact is the same: hope is restored.

This season, you have the opportunity to be part of that. The campaign is now open to nominations—completely confidential and prayerfully considered. Whether it’s someone battling illness, facing unemployment, or just in need of a helping hand, you can bring them a moment of grace that will ripple far beyond Christmas morning.

“Knowing my mom was chosen filled my heart with indescribable joy,” said another past recipient. “Your generosity doesn’t just brighten her life; it inspires hope and faith in all of us. It enables her to stay in her home and get back on her feet.”
