Amidst the changing leaves, anticipation builds for Downtown Meridian Oktoberfest, returning on October 7, 2023, from 10 am to 10 pm. Crafted with care, the Meridian Chamber of Commerce shapes the Oktoberfest experience for the community. Now in its second year, the event exceeded expectations in 2022.
Guiding this spirited endeavor is the Downtown Committee of the Meridian Chamber of Commerce, led this year by Cecyle Brock, Deja Brew’s owner. The
Downtown Committee replaces the former Downtown Business Association, now a Meridian Chamber committee. “Led by downtown merchants, the Downtown Committee recognizes the value of festivals like Oktoberfest in uniting residents and visitors in our community’s heart,” said Sean Evans, President/CEO of the Meridian Chamber.
While rooted in German wedding tradition, Oktoberfest has evolved into a global celebration of camaraderie and cherished German heritage. Delectable cuisine, enticing beverages, and exuberant music and dance set the tone.

The Father of All Birthday Traditions
A BIRTHDAY TRADITION AT ANDERSON RESERVE: LAUGHTER, PADDLES, AND CHARCUTERIE

As I sat at the table, a peculiar feeling washed over me – almost like the onset of an illness or the aftermath of too much sun. It might have been the lingering effects of the sumptuous chocolate decadence that capped off my birthday dinner. Oh, did I forget to mention something else? Yes, there was that unexpected paddling incident too.
You see, up in Sweet, Idaho, at Anderson Reserve, a peculiar birthday tradition unfolded. This revelation came courtesy of Samantha, the fiancée of the owner, Paul, who approached our table with an enormous charcuterie board accompanied by an Idaho State Trooper. My initial thought? “You’re not planning to hit me with that, are you?” But her response was quick and unexpected, “No, but your wife certainly is.”

Now, here’s where things get intriguing. The restaurant, it turns out, is teeming with law enforcement officers. From upstairs to downstairs, cops were serving tables, warmly greeting guests, all in the name of raising funds for the Special Olympics. I turned to the State Trooper, half-jokingly saying, “Aren’t you supposed to be my protector?” With an unconcerned shrug, he replied, “I’m just here to observe.”
Guided by our law enforcement escort, we were led to a corner where a young cowboy, complete with a Duck-worthy beard, had been entertaining the crowd with his guitar strumming and heartfelt singing. As it turned out, he was in on the whole plan. Amidst the melodies, he broke into a rousing birthday song, and my wife, Penny, wielded a giant paddle, showering my backside with playful swats. Involuntarily, I let out an exaggerated “ouch!” – a nod to a comedic bit performed by my friend Scott’s five-year-old self in LA. You see, I was riding the wave of my
newfound confidence as a comedian, mentally cataloging every sight and sound for future comedic material.
Meanwhile, the entire upstairs erupted into a jubilant yet decidedly off-key rendition of “Happy Birthday.” It was the kind of cacophonous chorus I secretly relish.
As my turn approached, I grasped a Sharpie and signed the charcuterie board. The ritual continued, with the next celebrant eagerly stepping up for her turn. It made me question the legitimacy of this many birthday celebrants in Sweet, Idaho. Can there really be such an abundance of birthdays here?
Descending the stairs, I found myself in a small country store that showcased various sauces, honey, and an assortment of NHRA memorabilia owned by Paul. Known for his culinary skills, tonight Paul was out back by the silos, overseeing the construction of a cigar bar. A gathering of folks was engrossed in conversation, and amidst them, Samantha recognized me,

extending a warm greeting. I tactfully joined the conversation when appropriate.
Paul and Samantha’s story, it turns out, was not one of marital bliss just yet. Amidst the bustling restaurant, marriage plans took a back seat. In jest, I suggested, “Shall I become ordained then? I could marry you two and photograph the wedding!” Admittedly, I’m neither a wedding photographer nor an ordained minister, but spontaneity is our modus operandi.
More friends arrived, including the craftsman behind the silos and the windmill that dotted the landscape. Amid laughter, another recounted firing rifles at targets amidst a sprawling ten-acre patch next to the golf course. Mind you, this is the county – not the city – where such
liberties still persist, unlike the place I used to reside. The unconventional fun that many label as abnormal holds no qualms for me.
A shared idea emerged, kindled by Paul and Samantha: stand-up comedy in the upcoming cigar bar. September was marked for their grand opening.

Not far away, the Payette River meandered along, contributing to the enchanting backdrop. During our journey earlier in the day from McCall, we stumbled upon a serene spot along the Payette. From a bridge above, I watched the rafters lazily float by. Later, a quaint country store beckoned,

Friendships sprout rapidly in Boise – just initiate a conversation, extend your hand, and you’re in. It’s truly that simple. But wait, were you expecting a detailed restaurant review or a menu recommendation? Regrettably, I’m not your source for such particulars. The finer details escape me, and note-taking has never been my strong suit. However, what does linger is the emotional imprint that places like Anderson Reserve leave behind. Undoubtedly, the food is exquisite, though I’m reluctant to impose my choices upon you. My preferences are peculiar; I shun cheese, I sidestep sweets – well, mostly.
Anderson Reserve beckons with its culinary delights and a distinct atmosphere, merely an hour’s drive away. Venture forth to meet Paul and Samantha. Don’t forget to gaze at the helicopter stationed outside – could a ride be in your future?
Perhaps the strange feeling I experienced was nothing more than a fleeting sensation. But then again, isn’t that how life often unfolds – a series of ephemeral moments that weave together to create lasting memories?
Before I conclude, I almost overlooked a pivotal tale. This birthday paddle tradition owes its existence to none other than Paul’s father, Dennis. Alas, this time I missed the chance to meet him. The inception of the paddle prank involved a group of California girls passing through, and it was Dennis who wielded an enormous charcuterie board, remarking, “I hear it’s your birthday!” The unsuspecting girls took the bait, lining up along the upstairs rail, their derrieres presented for a playful paddling. Playfully reprimanding his father, Paul quipped, “You started it.” A twist of fate led to an 82-year-old lady declaring, “It’s my birthday too!” – thus birthing a tradition that thrives to this day.

People often take an all or nothing approach to healthy eating. What I mean is that if they "mess up" one day or one meal, in their eyes they have failed and might as well eat everything in sight. At its worst, this can lead to a binge session. This comes back to the importance of incorporating healthy habits over the course of time and giving yourself permission to enjoy, without guilt, occasionally partaking in a "treat.”
AVOIDING FOOD LABELING
Food labeling (and personal labeling) can lead to overly restrictive eating plans followed by giving up on health goals, yo-yo dieting, and disordered eating. We work to get people out of this habit of labeling and of beating themselves up over "bad" choices and into a process of mindfulness where they can make a conscious decision to indulge or not without giving it a good or bad label.
EATING MINDFULLY
Practice mindful eating habits every day. Learn to listen and respond to hunger and fullness cues. Appreciate that the food you eat is what fuels your body's ability to breathe, move, and think. Find pleasure in nourishing your body with healthy foods. Take time to enjoy your food. Don’t expect every day to be perfect and recognize it takes time and patience to solidify new habits.

Roasted Sweet Potato Salad
(serves 4-6)
SALAD INGREDIENTS:
• 2-3 Sweet potatoes (Leave skin on; wash well; cube 3-4 cups into bite-sized pieces)
• ½ cup toasted pecans (or chopped almonds, cashews)
• Avocado oil spray
• Garlic salt blend
• Chili powder (optional)
• 3 cups of Arugula or

• 1 - 1-1/2 cups of pomegranate seeds or fresh blueberries, blackberries or raspberries
DRESSING:
• ¼ cup lime juice
• 1/3 cup quality olive oil (virgin 1st cold pressed)
• 2 teaspoons agave nectar or honey
• ¼ teaspoon salt
• A pinch or 2 of chili powder (optional)
DIRECTIONS
1. Sweet potatoes: Preheat oven to 350 degrees. Spread pieces onto baking sheet in a single layer. Spray with avocado oil; sprinkle with garlic salt, and chili powder (if using). With clean hands, toss potatoes to make sure the seasoning is on all sides of the pieces. Roast in oven about 20 minutes (or until tender and golden brown); stirring after 10 minutes. Set aside to cool.
2. While sweet potatoes cook, prepare the salad dressing. Put all ingredients in a salad dressing shaker or food processor and mix well. Refrigerate until ready to serve your salad.
3. Lightly toast pecans in the oven or on the stove. Lightly coat the pecans with avocado spray. Sprinkle with garlic salt and chili powder, and again, toss to make sure the seasoning is on all sides of the pieces. Be sure to keep an eye on these guys while cooking; they go from perfect to burnt very quickly!
4. When you’re ready to serve, place your salad greens and cooled sweet potato cubes in a glass salad bowl. Add salad dressing. Toss gently. Add berries or pomegranate seeds; gently toss again just enough to mix them throughout the salad. To finish, sprinkle toasted pecans on top!

It’s rare in this world to encounter people with such a deep passion for their interests that they make it a goal to not only share their hunger, but to also teach others how to view it through their eyes. To shift their perspective and shake things up in the best way. Mark Anderson and Ryan Fey—affectionately known as The Grill Dads—have taken their love of grilling and put it on a nationwide—nay, global—stage.
But beyond just enjoying the art of the grill and a love of delicious food, they are both fathers and aspire to change the narrative of what it means to be a dad in our contemporary world.

“Our mission is much bigger than just sharing our love of grilling. We are really looking to redefine the modern dad,” shared Mark, co-host of Food Network’s The Grill Dads and co-author of The Best Cookbook Ever Written by Two Idiots. “In television, movies, and social media, dads are represented as sharks at work and idiots at home. We want to show the world that dads are smart, loving, a big part of their families, and generally work to improve the world.”
Mark, originally from upstate New York, is now a proud Idaho resident. And he didn’t hesitate to dive right into the Treasure Valley community. He and his wife, Sarah, purchased an established Idaho business, UltraClean, that works to restore residential and commercial damage from water, wind, fire, and mold. UltraClean has been a Treasure Valley staple for nearly 20 years and Mark and his family have continued to carry that torch for over 6 years and counting. Mark has also served on the board of the Ronald McDonald House Charities of Idaho since 2019 and is now chapter president.
The other half of the iconic Grill Dads duo is long-time friend and business partner Ryan Fey, who currently lives in Los Angeles and works in creative and strategic consulting for a variety of clients including the LA Rams, VaynerMedia, and Starbucks. A Midwest
native from Pleasantville, Ohio, Ryan and Mark actually met while attending Ohio University more than 20 years ago. It was here that Ryan earned his Bachelor of Science in Journalism and has since excelled in the industries of advertising, public relations, product development, and more. In an article published by Ohio University, Ryan (class of ’98), gave the following sage advice to the incoming class of 2018, “Come out of college ready to rock ‘n’ roll fail. The people that truly excel and succeed are the ones who push all fear of failure aside.”
Authentically honest about his career tries and attempts, Fey is the embodiment of what it means to learn from your failures and to keep trying. Because each of his previous failures has led him to where he is today: a highly recognized celebrity, author, business owner, and family man.
While Food Network is no longer a part of their ongoing Grill Dad journey, the duo has kept busy. “Most of the content that we have created over the last few years has been in partnership with brands and posted on shortform social media platforms,” said Mark. “This year we are making a big investment to launch our own series of full-length content on YouTube. It's called Dad’s Guide to the Universe. We're bringing in a great team to help us build this out, including folks from Eater and Complex.”
Both Grill Dads are highly active on social media including Facebook, Instagram, and LinkedIn. As recently as August 2023, Ryan shared an update on what the two have been up to. Mark and Ryan have been grilling it up all over the world, including a Grill Out with Geico for the Wrexham Association Football Club, the third oldest professional association football team in the world. And of course, traveling to promote their book—The Best Grilling Cookbook Ever Written by Two Idiots—which was released in June 2022. The book, as they describe it themselves is: “63 recipes, countless grilling tips, and terrible dad jokes.” Which we all agree sounds like the perfect combo of entertainment and cookbook.

Proud owners and husband-and-wife duo Emily and John Mason opened the doors to Cedar Draw in 2020 and offer not only delicious cider but also wood-fired pizza! The pair received their license to ferment in 2019 but as they geared up for increased production, 2020 happened. The novel mindfully uses the investigation as well as Papier’s commitment to locally grown foods to pay tribute to Vancouver’s landscape and history.
Love is in the air at this Monday night cooking school. The novel follows a cast of hapless students as they are instructed in both the kitchen and in life by the school’s owner, Lillian. Lillian is the group’s fairy godmother as she hands out morsels of advice and challenges the students with advanced recipes. A cozy read, be prepared to fall in love with the decadence of the school’s dishes as well as the sweet message that lingers long after you put down the book.

The Perfect Steak

Nothing describes summer better than a good cookout! And what is a cookout without a good, quality steak and the perfect grilling recipe?
1. Thaw and acclimate the steak. For searing to occur, the proteins in steak need to be heated to at least 310°F. Tossing cold meat onto a hot grill lowers the temperature and can prevent a crust from forming, so it’s important that any frozen steaks are thawed completely before cooking.
2. Salt your steak 30-45 minutes before grilling. This causes the salt to draw moisture from within the steak up to the surface, where it dissolves the salt and creates a brine that gets reabsorbed into the steak where it breaks down tough connective tissues.
3. Oil the grate on the grill, not the steak. Use tongs and a paper towel dipped in vegetable oil to lube your grates.
4. Manage your heat well. Remember that your grill needs to be hot for your steak to get a good sear. But if it’s hot enough to cause your oil to smoke, it’s too hot.
5. Use the 60/40 rule. The best-tasting steaks are seared on both sides and cooked evenly in the middle. The simplest way to do that is to only flip your steak once. The 60/40 rule suggests that 60% of your cook time should be spent on one side, and 40% on the other.
6. Keep the lid closed. It may be tempting to peek, but trust the experts and keep it shut! Opening the lid makes your grill lose heat, which makes steaks cook unevenly.
7. Check for doneness. A meat thermometer will give you the most accurate temperature reading:
• Rare: 120°F
• Medium Rare: 130°F
• Medium: 140°F
• Medium Well: 150°F
• Well: 160°F
8. Let your steak rest. Pull your steaks from the grill once they’re cooked to 5-10 degrees below your target temperature and rest for 10-15 minutes.

• 1/4 teaspoon salt
• 1 stick cold unsalted butter, cubed
• 1/4 cup iced cold water
Filling:
• 2 apples, peeled and sliced into thin slices
• 1/4 cup packed dark brown sugar
• 1 1/2 tablespoons flour
• 1 1/2 teaspoons lemon juice
• 1 teaspoon cinnamon
• 1/4 teaspoon ground nutmeg
• Caramel sauce
• Optional: 1/4 chopped walnuts or pecans
INSTRUCTIONS:
Crust:
(Note: If running short on time, store bought crust works great, too.)
Mix flour, salt and sugar together in a bowl. Cut in the butter. Add water and mix until moistened. Lightly knead the dough and then form into a ball. Next, flatten dough into a thick circular form and refrigerate for one hour.
Filling: Mix the apples, flour, lemon juice, cinnamon, nutmeg and brown sugar together in a bowl.
Assemble and Bake:
Preheat oven to 375 degrees. Line a baking sheet with parchment paper. Roll the dough into a circle and set on parchment paper. Arrange apples in center of dough, leaving about one inch of space for the edges. Fold crust over the apples and press to seal edges. Drizzle with caramel sauce and sprinkle with pecans or walnuts. Bake for 35 minutes. Serve with caramel sauce and ice-cream.

ELEVATED GRILLED CHEESE
This take on the classic grilled cheese is sure to satisfy your fall cravings. With the combined flavors of savory and sweet, it packs a punch for your taste buds.
INGREDIENTS:
• 1/4 red onion, sliced
• 2 tablespoons brown sugar
• 1 tablespoon olive oil
• Sliced sourdough bread
• 1-2 tablespoons butter
• 4 ounces Brie, sliced
• Fig jam, or preferred choice of jam
• 1 Granny smith apple, sliced
• Arugula
• Thinly sliced ham, optional
INSTRUCTIONS:
Heat olive oil in the skillet and add sliced onions. Cook for a few minutes and then add brown sugar. Sauté until soft. Set aside. Butter the outside of the sourdough bread. Next, spread jam on the inside of both slices. Add cheese, apples, onions and arugula. If using meat, add as well. Top with slice of bread and grill on skillet until both sides are toasted and cheese is melted. Serve and enjoy!
