Let's Eat, Houston!

There are two reasons this is my favorite time of year. Houston's seasonable shift is finally here –temperatures will dip below 90 degrees and stay there for the foreseeable future. And it is also time for the annual food issue!

I look forward to putting together this particular issue, because I get to shine a spotlight on one of Houston's most defining features: its culinary landscape, where food and culture meet in the most delicious ways. I am excited to highlight the chefs, mixologists, and hospitality teams that have hoisted Houston onto a gastronomic pedestal.

This issue features Jonathan's the Rub and its continued expansion. What started out as a Memorial favorite has now spread across Houston with no signs of slowing down. Get the scoop on Lady M Cakes and why it chose Houston for its largest and most extravagant location. It is hard to cook a great meal without a good kitchen; that is where Edwards Interiors & Design comes in. Find out how she helps her clients curate the kitchen of their dreams.

Bar Bludorn debuts Sunday brunch

Bar Bludorn, chef Aaron Bludorn’s neighborhood tavern in Memorial, launches Sunday brunch service. The menu features chef Bludorn’s approach to brunch classics such as  Pastrami Benedict  with pastrami hash, short rib, poached egg and béarnaise;  Pancakes  with lemon verbena chantilly and confit strawberries; and Breakfast Sandwich with eggs, gruyere, dijonaise and bacon. Lighter options include  English Pea Hummus;  Hot Smoked Salmon, and  Power Bowl . Bar Bludorn favorites like Country Ham Beignets, Fried Chicken for the Table,  and  Tavern Burger will also be on offer.

Make-A-Wish, in partnership with MetroNational, granted a wish for Genesis, a 14-year-old with a neuromuscular disorder that bounds her to a wheelchair. An avid shopper with a passion for fashion and make-up, Genesis wanted nothing more than a shopping spree with her family. After more than 20 years in business, Erin Stetzer has carved a comfortable niche in Houston’s luxury home-construction industry, but doesn’t forget those early days, when she and her husband were starting their family.

A native of Ohio, Erin moved to Houston as a sales representative for a chemical company and her work schedule found her constantly traveling. She and husband Alec married 23 years ago and they now have five children, ranging in age from 15 to 21.

Alec had worked in the home-building business and Erin was certain she’d enjoy that work and wouldn’t have to travel so much. She got a job at David Weekley Homes and spent three years learning everything she could about building homes and building relationships with clients. In 2003 she launched her own firm, now Erin Stetzer Homes, just as she was having her first child.

“The coolest thing when you’re building a home is to find out the personality of your clients. Something special happens when they add their flavor and you have to listen for that,” Erin said of her favorite part of the job, getting to know their clients.

Now with a staff of 9, her firm works on about 10 homes at a time. One side of her business is building $5 million-plus homes, and the other side is consulting work, providing private representation for large-scale legacy projects. Those are typically $10 million-plus projects with more than one structure, perhaps a main home and guest homes, plus a barn or shooting range.

She works with renowned architects such as Reagan and Andre, Dillon Kyle and Newberry Architecture, and award-winning interior designers such as Benjamin Johnston, Marie Flanigan and Lauren Haskett.

Ohio native Erin Stetzer is the owner of Erin Stetzer Homes and will be recognized this month as a Leader in Design by the Houston Design District.

Growing up in Brooklyn, Jonathan Levine, founder of Jonathan’s The Rub, became a commodities trader in New York City. He soon realized he needed to pursue his real passion: cooking.  Before moving to Houston in 2000, when he opened Jonathan’s Catering (which would eventually become

When it comes to the name and heartbeat of the family-owned restaurant group, Jonathan shares, "My mother Judy – God rest her soul – was a brilliant woman: classical piano player, avid reader, and lover of Shakespeare. She had a great memory and could recite many of his soliloquies,” Jonathan recalls. “At dinner parties in my childhood home – after a couple of vodka martinis, no olives – she would stand on a chair and recite.”

“Our favorite was Hamlet’s ‘To Be or Not to Be’ soliloquy. In this childhood favorite, ‘Therein Lies the Rub’ refers to the eternal questions without answers, the

conundrums, referencing mortality, and questioning the nature of existence. For me, ‘the Rub’ became a theme and part of my legacy, Jonathan’s The Rub."

Jonathan’s The Rub is steadily expanding, currently with three locations: Campbell Place, Memorial Green, and their third and most recently opened East End location at 2929 Navigation Boulevard.

Jonathan’s two adult children, Sam and Jessica, have been operating these locations, and the family is excited to have a third generation join their restauranteering ranks. Jonathan’s grandson Jay, who recently graduated from the Culinary Institute of America, is already in the mix in the kitchen at the East End location.

While the cuisine offers influences from the East, West and Gulf Coast regions, the atmosphere at Jonathan's The Rub is sophisticated yet comfortable, offering a hospitable and inviting space. Their bar program features modern craft and classic cocktails, as well as popular beer and wine selections on draft, and a curated bottle list from their in-house sommelier, assuring a glass can be raised for any occasion.

Family-owned with over thirty-five years of experience, Jonathan’s The Rub features an extensive menu, including seafood, burgers, steaks, Italian selections, and more. The East End location also brings the new addition of true Brooklyn-style pizza. Cooked in an open-concept area showcasing their new pizza oven, “I grew up with authentic Brooklynstyle pizza, and we are thrilled to have introduced it into the menu at this new location,” Jonathan says.

A fourth location in Bridgeland will open in the fall of 2025. As always, Jonathan's The Rub restaurants adapt to the locale to seamlessly integrate into the community. Bridgeland's location will offer casual elegance while still being family-friendly. The menu in Bridgeland will be like their other locations: extremely eclectic, American-focused, and made from scratch.

Hospitality group Noble 33 entered Houston with a fiery flourish with the grand opening of modern-Mexican steakhouse Toca Madera. Diners can look forward to two full-service bars, a private dining room, and live entertainment inducing fire dancers and musicians. KAZZAN RAMEN & BAR

Houston has its fair share of delicious ramen, but now the Bayou City also has bragging rights to the first "volcano" ramen concept in Texas. Kazzan Ramen & Bar features a new style of ramen with thick noodles and vegetables, served in a 350-degrees Celsius hot stone bowl, topped off with the hot soup, and poured into a cylindrical top in front of the guest - causing the steam to rise from the lid resembling a volcanic eruption. West University's newest Tex-Mex restaurant, Maximo, is a collaboration between Benjy Levit and Dylan Murray's team at Local Foods, Eau Tour, and Lee's Den, and chef Tony Luhrman. Culinary director Seth Siegel-Gardner and chef Tony Luhrman created the menu featuring authentic made from scratch dishes. The stars at Maximo are its tortillas; handmade daily using Nixtamal, they add a delicious flavor to its extensive list of tacos, which include barbacoa, sweet potato, crispy fish, smoked chicken mushroom, and king crab. Maximo also features specialty burritos and tortas, including barbacoa grilled cheese and an in-house smoked and cured pastrami torta. PRIME 131

Named after the most coveted table at Benjamin Berg's first concept, B&B Butchers & Restaurant, Prime 131 is a live-fire steakhouse and sushi bar. Reminiscent of New York's Meatpacking District in the early '90s, the spacious restaurant showcases an experience where diners can watch their meal being prepared on four central wood fire grills and two Josper charcoal ovens. CASE CHOCOLATES

Those looking for an only-in-Houston culinary adventure should plan to visit Case Chocolates speakeasy and chocolate shop in the Second Ward. CREDENCE & SIDEBAR

Memorial's bustling restaurant scene has grown even more with the addition of Credence & Sidebar. Popular chef and restaurateur Levi Goode is the mastermind behind the two concepts located inside The McKinley at Memorial City. Credence is a full-service restaurant with a South Texas ranch-inspired menu. Guests can enjoy dishes including Fire Roasted Seafood Tower, Sweetwater Whole Duck, and Wild Gulf Snapper served with trout roe, cooked directly on a custom-made hearth. Those lucky enough to get a table at the reservation-only restaurant and cocktail bar, Sidebar, will be in for a luxurious space inspired by the Texas oil boom of the 1900s. Lady M Confections, a luxury cake brand, recently opened its largest location in Houston.

Combining French pastry techniques with Japanese sensibility, Lady M is famous for its “thousand-layer” mille cakes, made with dozens of layers of paper-thin crepes and light pastry cream. CHICKEN NOODLE SOUP

This hearty chicken noodle soup is the perfect comfort food that is packed with nutritious goodness. This pairs perfectly with homemade beer bread or a sourdough loaf.

INGREDIENTS:

• 8 cups chicken broth (add more if desired)

• Whole fryer chicken, cut in chunks or shredded

• 5 celery stalks, sliced

• 8 carrots, sliced

• ½ onion diced

• 4 tablespoons butter

• 1 teaspoon Italian seasoning

• ¼ cup half and half (optional)

• 1 package egg noodles

• Salt and pepper to taste

DIRECTIONS:

In a large stock pot, add 8 cups of chicken broth. Dice carrots, celery and onion and add to the broth. Bring to a boil, and reduce to medium heat until the vegetables are soft. In the meantime, skin and cube 1 whole fryer chicken and add to the stock pot. Next, add egg noodles (frozen Reames homemade egg noodles are my favorite) and let boil until noodles are cooked. Add butter, half and half, salt, pepper, and Italian seasoning. Simmer on low until ready to serve.

TOMATO BASIL SOUP

INGREDIENTS:

• 2 cans diced tomatoes

• 2 ½ cups vegetable broth

• ½ cup heavy whipping cream

• 1 onion, diced

• 3 cloves minced garlic

• 3 tablespoons olive oil (or alternatively, 1 stick butter)

• ½ cup chopped fresh basil

• Salt and pepper to taste

This classic tomato basil soup is easy and quick to make and is the perfect way to get the rustic, tangy and savory flavors of this Italian dish.

DIRECTIONS:

Toss the butter or olive oil in the pan. Add onion, and saute until the onion is translucent and soft. Add minced garlic, and saute for 2 minutes. Next, add canned tomatoes and simmer. Transfer to a blender, and puree until smooth. Add the fresh basil and heavy cream. Transfer mixture back to the pan to thoroughly heat, and salt and pepper to taste. Top with fresh parmesan and chopped basil, and serve with toasted Italian bread.
