It's that time of year when we celebrate the remarkable men in our lives, and I'm lucky enough to kick off the festivities with the fantastic photo shoot featured in this issue. Working with someone as talented and genuinely kind as Harper Watters, principal dancer with Houston Ballet, is on every photographer's bucket list. One of the hardest things about working with Harper was choosing the photos that were going to be used in the article Believe the Hype because he made every single shot a winner!

Houston has no shortage of great Tex-Mex, and Ford Fry’s Little Rey, sister restaurant to Superica in the Heights, offers a relaxed setting with an outdoor patio, walk-up ordering window, and a large green space for kids and pets to play. It is a choice hangout spot for friends and families looking for a casual night out.

THE CHICKEN
Chef Anthony Mancilla says Pollo al Carbon is a central focus of the Little Rey menu. The chicken goes through a multi-step process to ensure it stays juicy, tender, and well-seasoned.
“We bathe the chicken in a brine made of water, salt, sugar, oregano, and bay leaf, which locks in moisture and adds depth of flavor,” says Mancilla. “After brining, we marinate it in our Achiote purée overnight. Then we smoke it with post oak and cedar, cooking it low and slow for about 45 minutes to an hour to build a strong smoke flavor and crisp the skin.”
THE SIDES
One of the most ordered items on the menu, the Pollo al Carbon, is served with housemade tortillas, rice, and beans –all made with carefully selected ingredients.
“The bean itself is a big part of why our rancho beans are so good. We use the Mayacoba bean, which has a creamy, buttery texture and a milder flavor than the pinto bean,” said Mancilla.
The team at Little Rey uses medium grain rice to keep it moist and tender, making fresh batches throughout the day. The rice is mixed with housemade salsa verde and topped with pico de gallo and lime for heat and acidity.
THE TOPPINGS
One of the hardest parts of dining at Little Rey is choosing a salsa from the restaurant’s salsa bar. Chef Mancilla says it comes down to personal preference but recommends the green taquero salsa for its lime flavor, which complements the smokiness of the chicken.
The grilled onion and charred jalapeño served with the dish aren’t just for show. They are a nod to traditional Northern Mexican accompaniments to grilled and smoked meats and meant to be chopped and added to each taco.

Heidi Walton’s life has been a full immersion in craftsmanship and architecture, first growing up in an 1800s restored farmhouse, then studying environmental design and architecture at Texas A&M and then the University of Houston. It was at A&M that she met Kevin Walton, who then was simply a friend but now is her husband of 13 years. After a short stint in Boston, Kevin returned to Houston to work for Glassman Shumate Maldonado Architects. Now they both work at Robert Sanders Homes, a design-build firm founded by Heidi’s brother.

Both Heidi and Kevin will be honored in June as Leaders In Design by the Houston Design District.
Every day is different, but they’re filled with the task of working with clients to design the exteriors and interiors of their homes while managing the firm’s construction projects.
“Sometimes in our roles as architects, we are designing homes. Sometimes it’s interior design and helping with interior solutions, and sometimes it’s project management,” said Heidi, 41 and a native of Spring. “There can be so much separation between architecture and construction, but we think getting to the end result is more efficient this way.”
They also work with other architects whose projects are being built by Robert Sanders Homes, including Dillon Kyle Architects, Nadia Palacios Residential Design and McIntyre + Robinowitz Architects.
Heidi and Kevin, also 41 and a native of Waller, have taken their two sons – 11 and 7 years old – to Disney World just once. Instead, vacations take them to places where they can admire historical homes and structures, stopping to take pictures of craftsmanship or details they admire.
During the pandemic they often took their sons to construction sites and their oldest would collect construction remnants and then built a fort out of it. A year later, he deconstructed it and built a new one that was even better.
While the couple often works on six-figure projects and homes as large as 6,000 to 7,000 square feet, they think about their work as something that should be accessible to everyone.
“We try to be really inclusive because, at the end of the day, we are doing this because we want to help people. We want to look back in 50 years and say ‘we built this house and think of all of the memories that people made there’,” Heidi said.

Harper Watters isn't just dancing on stage at the Wortham Theater; he's dancing through life with the intention of being unapologetically himself. Born and raised in Dover, New Hampshire, Harper began formal ballet training at the Walnut Hill School for the Arts. His journey into classical ballet began with a love for dance and a need for belonging. Eventually, he left private school behind and found a new home in a performing arts high school, which allowed him to step into his identity while fully embracing the world of ballet.
That path would eventually lead him to the Houston Ballet, where he joined the second company in 2009. From there, he quickly rose through the ranks: corps de ballet in 2012, demi-soloist in 2016, soloist in 2017, and first soloist in 2021. Now 33, Watters has reached a new milestone, a promotion to principal dancer, Houston Ballet's first since 2018. It's proof that his technical excellence, undeniable presence, and individuality set him apart.

Known for his viral treadmill-in-heels videos and behind-the-scenes YouTube series, The Pre Show, Watters has developed a strong social media following. His videos are entertaining, and they broadcast ballet to a wider audience, allowing for conversations about identity, expression, and community.
In the studio, however, Harper is deliberate. "I like to know how it's going to feel in the studio before I get onstage," he says. "By rehearsing a lot in the studio, I am able to fully discover every facet of the role. It makes it possible for me to completely enjoy the performance onstage." His workout regimen includes daily classes, rehearsals, high-intensity interval training, and Pilates. But it's the consistency and thoughtful preparation for each performance that eases his anxiety. "For me, stress and nerves are usually minimal," he says. "I trust the work I put in."
The role of Puck in John Neumeier's A Midsummer Night's Dream is his favorite performance. "Opening night was really special because it was the first time in my career it felt like time stopped onstage," he says. "It showed me what is possible when you fully commit to a role and why dancers are called artists."
As much time as Watters devotes to the stage, he draws just as much from the world around him. His coworkers are always a source of inspiration, "I learn something from every partnership. They inspire me to show up for myself so I can show up for them." Social media also plays a big role in keeping him inspired. "From archival images, performance playbills, museum exhibitions, and contemporary creators, social media is one of the most powerful discovery tools," he says. "I pull from all aspects of my interests and reinterpret them through my point of view."
Fourteen seasons into his career, Watters still sees Houston Ballet as home. "Beyond the dance, Houston Ballet is family," he says. "And I've always known this is where I'm meant to be."

The United Football League launched in 2024, born from the ambitious merger of two leagues—the XFL and USFL. Its mission? To deliver high-quality, high-drama football in the lull between NFL seasons.
