Welcome fall! With the changing seasons comes a change in what we are craving, and with fall that often means comfort food. October is our most delectable issue of the year, filled with some of our favorite dishes and beverages around the area.
Our first stop is Deer Creek Malthouse in nearby Westtown Township, where we met owner Mark Brault who shared the centuries old technique of malting grain by hand. Producing malt prod ucts for brewers, distillers, and bakers.
Booths Corner Farmers Market in Garnet Valley was next on our to do list. A local favorite since the 1950’s. From fresh fruits and vegetables to Angus beef and goats cheese, Booths Corner is a collection of purveyors you won’t find anywhere else in DELCO.
How can we welcome fall without comforting soup? We’ve rounded up a collection of classic soup recipes to warm the heart and soul.
This summer was really hot, almost too hot to cookout sometimes. So as cooler weather prevails we headed back out to the grill to showcase another classic… beer can chicken. It’s suggested that the dish originated Louisiana in the early 80’s. This technique creates a super moist chicken and smoky goodness.
And to cap it off we offer up a unique cocktail from Azie on State called the “Insight.” This lychee fruit inspired vodka and sake with a hint of elderflowers is sure to make your top 5 cocktail list.
From all this, we can all agree that food brings us all together, and whether we are sharing a meal with loved ones or enjoying a night out on the town, the time spent while enjoying food is invaluable.

If you’ve ever wandered through Media Farmer’s Market on a Sunday, you’ve likely come across Deer Creek Malthouse’s stand. Mark Brault, the visionary behind Deer Creek, began his journey a decade ago. What started as a homebrewing hobby evolved into creating economically viable ways to grow grain himself, then moving away from farming and instead bridging the gap between authentic local farmers and the consumers. Brault shares that he disagrees with the lack of transparency in industrial agriculture. He is committed to
transparency and authenticity, ensuring that every product from Deer Creek tells a story. “It is important to us that consumers know they are buying something that is connected to the farm,” he explains. “We want people to know us as craftsmen— local, artisanal, authentic, transparent.”
The team at Deer Creek shares Brault’s vision, drawn to the malthouse by a shared belief in its mission. “It is a labor of love, difficult and labor-intensive, hot in the summer, cold in the winter,” Brault admits. But the challenge is part of the reward.

At Deer Creek, the range of products is diverse, reflecting their holistic approach. “We self-grain, malt, process as flour or coarsely ground ingredients; we brew beer, make baking mix, granola, and barley tea,” says Brault. This commitment to quality and local sourcing extends beyond their own products, adding value to brewers, distillers, and bakers alike. “We truly are an ingredient company… When you see our brand on the shelves, at the farmer’s market, or on our beer at the taproom and see ‘made with Pennsylvania craft malt’ or
‘Deer Creek’ or ‘made local,’ I want it to resonate with the consumers.”
One of Brault’s primary goals is to disrupt the commoditized grain and malt supply chain, which has long been dominated by a few large companies far removed from the Mid-Atlantic. By shortening the value chain and focusing on local relationships, Deer Creek connects consumers more closely with the farms and foods they rely on. They work together with local farmers, purchasing grain during harvest times and supporting small and medium-sized farms. This collaboration ensures a high-quality, traceable product for consumers and sustains local agriculture.
Deer Creek’s malting process is a true craft, requiring skill, care, and a deep understanding of the grain. “We look at what we do as a craft,” Brault says. “It’s not just pressing a button and walking away.” Malting is a highly labor-intensive process, every step of the way. It is different for each type of grain and steeping protocol. It changes the chemical composition of the grain by germinating with water, then dried to stop the germinating process through evenly raking then kilning. “You can create a diverse palette of ingredients, colors, flavors,” Brault notes, highlighting the complexity and precision involved.
As Deer Creek Malthouse continues to grow, Brault remains steadfast in his commitment to producing high-quality malt and grain products while maintaining close relationships with local farmers and consumers. By doing so, Deer Creek not only supports the local economy but also strengthens the connection between people and their food sources. “65 years. That’s how long I have worked at Booths Corner. 65 years. When you ask someone what their fondest memory is of a place they’ve worked at for 65 years, it almost isn’t fair,” wrote the late Paul Cohen in the 2016 book, Booths Corner: I Love that Place! : Delaware County’s Favorite Farmers Market. “Obviously, the fondest overall feeling I have with the market has been working alongside my loved ones.”
The beloved owner of Booths Corners had aspirations of attending college in the early 1950s, however, his dad, Nate Cohen, had alternate plans for his hard-working son. And so began Paul’s successful career in the farmers market industry. Today, the father-son’s lifelong legacy lives on at Booths Corner, with his daughters, Bonnie Fryer and Cindy Hamilton, and son, Benjie Cohen, at the helm.
“Originally when my grandfather first started it, it was just barns, then another barn was added, and another, and unfortunately we had a fire in 1973 and the whole thing burnt down,” recalls Cindy. The tragic event that year wouldn’t stop the Cohens from succeeding.
“We’ve been in the family business since the 50s, and that’s the way most of the merchants have been, so their parents, who my dad knew, now their kids are involved,” Cindy explains. “We see kids working here that we saw when they were born and it’s wonderful that we keep this going. We’re a staple here in Delco and we want to continue with that.”
The Fisher family has been a fixture at Booths Corner for decades, operating several stands which offer everything from Wisconsin cheese, to beef jerky sourced from both Lancaster County and Colorado, plus a huge assortment of tasty bacon and sweet treats as well.

“My grandfather started it 50-plus years ago and it’s been handed down,” he says. “We’re hoping to sustain the quality and customer service that has been passed down from generation to generation. I enjoy giving out samples and seeing people’s faces light up.”
Like the Fisher name, you’ll find quite a few booths that carry the Stoltzfus name as well, as Stoltzfus is one of the top surnames found in Amish communities, and is also popular in some Mennonite communities. Booths Corner is home to Lancaster Co. Meats and Deli, run by Todd Stoltzfus, and Stoltzfus Meats, owned by Ken Stoltzfus. You’ll find fine cuts of farm-to-table meats, such as Filet Mignon, Delmonico, and London Broil, plus fresh pork, ground beef, and sausage.

Larsen for more than two decades. The market offers fresh fish, shrimp, scallops, soups, salads, and of course, their namesake signature crab cake.
“Our crab cakes are made by hand, without filler,” Tim explains, “We’ve been getting our crabmeat out of Baltimore since day one, and pride ourselves on the best available crabs.”
“The week of Christmas we’re open five days a week and we estimate that we sell enough seafood to feed about 10,000 to 15,000 people dinner in those five days,” he says. “That’s very heartwarming and we’re grateful the customers love us.”

Even if You Don't Have a Green Egg

Beer Can Chicken, thought to have originated in Louisiana in the 80’s, is a backyard barbeque favorite. And for good reason, slow cooking a whole chicken perched on a can of classic lager beer creates an uber moist chicken with perfectly crispy skin.
PREPARATION
Although brining is a great option, the steam from the beer itself delivers a tender, juicy, and flavorful whole chicken. I prefer a 3-4lb. oven roaster chicken with a pop-up timer. Apply liberal amount of oil to ensure the seasoning adheres to the skin - organic unflavored coconut oil or grapeseed oil - they withstand heat better than olive oil. Liberally apply your favorite rub or seasonings. Salt, pepper, onion powder, garlic powder, paprika, and cayenne or red pepper flakes for a bit of a kick. Place atop an open can of your favorite beer.
GRILLING
Any style grill will work. (But I prefer charcoal for that smoky flavor). Set your grill temp to 350°F. Place your beer can chicken on an oven safe drip pan (I use a cast iron lid) to prevent spills and flare ups. Approximate cooking time: 1 hour Let the pop timer do the work. Be careful: The can and the liquid inside are very hot. Let chicken rest before carving.

CHICKEN NOODLE SOUP
This hearty chicken noodle soup is the perfect comfort food that is packed with nutritious goodness. This pairs perfectly with homemade beer bread or a sourdough loaf.
INGREDIENTS:
• 8 cups chicken broth (add more if desired)
• Whole fryer chicken, cut in chunks or shredded
• 5 celery stalks, sliced
• 8 carrots, sliced
• ½ onion diced
• 4 tablespoons butter
• 1 teaspoon italian seasoning
• ¼ cup half and half (optional)
• 1 package egg noodles
• Salt and pepper to taste
DIRECTIONS:
In a large stock pot, add 8 cups of chicken broth. Dice carrots, celery and onion and add to the broth. Bring to a boil, and reduce to medium heat until the vegetables are soft. In the meantime, skin and cube 1 whole fryer chicken and add to the stock pot. Next, add egg noodles (frozen Reames homemade egg noodles are my favorite) and let boil until noodles are cooked. Add butter, half and half, salt, pepper, and Italian seasoning. Simmer on low until ready to serve.

TOMATO BASIL SOUP
This classic tomato basil soup is easy and quick to make and is the perfect way to get the rustic, tangy and savory flavors of this italian dish.
Toss the butter or olive oil in the pan. Add onion, and saute until the onion is translucent and soft. Add minced garlic, and saute for 2 minutes. Next, add canned tomatoes and simmer. Transfer to a blender, and puree until smooth. Add the fresh basil and heavy cream. Transfer mixture back to the pan to thoroughly heat, and salt and pepper to taste. Top with fresh parmesan and chopped basil, and serve with toasted italian bread.

One of the ingredients is a Lychee fruit - which you can see in the photo. Lychees have been cultivated for thousands of years in China. Lychee trees have now been grown in Florida for more than 100 years. You can also find them in Hawaii and parts of California. They contain polyphenols that work as antioxidants. You can almost get your full daily recommended amount of vitamin C in one 3.5 oz serving of fresh lychee fruit. Yay, a cocktail with benefits.
