May is one of my favorite months of the year. Everything is blooming and green and I’m full of hope and optimism. Mother's Day is just around the corner, local events are gearing up like Dining Under the Stars, with the Media 5 Mile Race and Rose Tree Park Summer Concert series soon to follow. Not to mention it’s my birthday this month. (I’m just a happy camper in May)
This month, in our Ladies’ issue, we’re celebrating the influential, the leaders, the trendsetters, the philanthropic, and the educators of our community. These women exemplify characteristics of hard work, leadership, and tenacity. One of the more difficult tasks was narrowing down the long list of impactful women in our community. All I can say is there are not enough pages to truly showcase all the women that make a difference every day.
Speaking of Mother’s Day, this is a good time to be thinking of ways to honor and celebrate all the important women in our lives. And while motherhood is a beautiful thing to acknowledge, let’s not forget the many other meaningful women shaping our lives. The wives, grandmothers, aunts, sisters, mentors, teachers, and friends are also certainly deserving of our admiration. So take the time to share a “Thank you, I appreciate you.” It will probably make their day.

Let’s not forget Cinco de Mayo. Not to be confused with Mexico’s Independence Day. (That’s Sept. 16.) This holiday celebrates the Mexican victory over the French at the Battle of Puebla, on May 5, 1862. Cinco de Mayo has become associated with the celebration of Mexican-American culture and specifically Mexican cuisine. To help you find that perfect carne asada, classic margarita, or cerveza, we listed some of our local favorite Mexican-inspired spots.
If you’re planning on celebrating the women in your life this month (or all year long would be better), we encourage you to shop local! Media Borough offers food composting to borough residents. Separate food from the rest of our household waste and place it in a yellow composting bucket provided free by the borough. Buckets are emptied by your driveway and contents collected for composting at Linvilla Orchard. Composting saves the planet and saves money by keeping materials out of the incinerator and landfills and by reducing the amount of trash that is collected by the borough. Karin and Scott DavidsonOur publisher and editor have lived in the area for decades and obviously love Media. Karin grew up with her best friend Susan, who was from the country of Columbia and loved the food so much, she learned Spanish, Central American and Mexican cooking. So of course she makes it all for her husband - publisher Scott. They both enjoy many types of cuisines but since Cinco de Mayo - its Mexican food time! Please enjoy these local Mexican restaurants.
Founded in 1963, Riddle Hospital is one of the four acute care hospitals in the Main Line Health System. It offers a full range of primary care services as well as a variety of specialty care services. Shelly Buck became president of Riddle Hospital in September 2019, and she is the first female to hold this title. With degrees from Virginia Commonwealth University, the University of Maryland, and Old Dominion University, Shelly brings almost 20 years of experience in healthcare leadership to the table. In her role as President, she provides leadership and operational oversight to identify strategies for success and to ensure that the execution of those strategies effectively aligns with Main Line Health’s mission, vision, and values. Shelly credits her two grandmothers as being her most influential role models – one was an entrepreneur and sold Avon, and the other was an English teacher who earned her doctorate degree. Both women taught Shelly that anything is possible despite obstacles that may arise.

Senior Editor Peg DeGrassa is a lifelong resident of Delaware County, a proud graduate of Neumann University, and has served in her current position with Delco News Network since 2000. A born storyteller, Peg was the editor of both her high school and college newspapers, and one of her first professional jobs was to cover the music scene at the Jersey shore for the Beach Haven Times. As a busy young mom raising her family, Peg still kept her storytelling juices flowing as a freelance writer and eventually went on to become editor of News of Delaware County as well as Town Talk-Ridley. Peg readily admits that she is more comfortable being the interviewer as opposed to the interviewee, but her decades-long career has made her a household name in the community. Just this past March, the Delaware County Women’s Commission honored Peg as a Woman of Achievement for her many talents in producing news, pursuing truth, and reflecting on society.

The Delaware County Chamber of Commerce is a membership-based business advocacy organization with more than 1,300 members, and it has been in existence for more than 130 years. Trish McFarland has held the title of President since 2015, and she is honored to be the first female to hold that position. A lifelong Delaware County resident and proud graduate of West Chester University, Trish acknowledges that she was blessed to have a variety of powerful women in her life who mentored her, warmly took her under their wings, and encouraged her to give back to the community.
WHAT MAKES YOU SMILE ON A BAD DAY?
My family always makes me smile, and my children are definitely my “why.”
I LOVE to coach sports. I’ve been an assistant coach for 5th and 6th-grade CYO girls’ basketball teams and for 7th and 8th-grade girls’ soccer teams.
I’m extremely proud of my staff at the Chamber – we are small but mighty, and together, we consistently achieve truly amazing things. I’m also proud to have such a wonderful Board of Directors. They’re very supportive, and they graciously give me the autonomy I need to do my job effectively and successfully.
Don’t take life too seriously. I have a favorite John Mayer quote that really resonates with me: “Someday, everything will make perfect sense. So, for now, laugh at the confusion, smile through the tears, be strong, and keep reminding yourself that everything happens for a reason.”

The Media-Upper Providence Free Library is a nonprofit organization providing materials and services for the public’s educational, recreational, and vocational needs. The building underwent renovations in 2016 and features the library collection, cozy public areas in which to read and relax, a variety of meeting rooms, and access to public computers. Library Director Sandra Samuel is a proud graduate of George Washington University and the University of Maryland. After serving as Library Director of the Lansdowne Public Library for six years, Sandra took on the role of Director at Media-Upper Providence Free Library in 2017, bringing a wide and worldly perspective to the table. As a result of her father’s career with IBM, Sandra spent her formative years living abroad, specifically in France, Germany, and Japan. She often found herself in the local library and was especially drawn to folk and fairy tales. In fact, Sandra spent most of her childhood in a fairytale-like setting. While in France, her family lived in a 500-year-old home with a grand entrance, mosaic floors, a ballroom, and a marble fireplace in every room.

Fairy tales still make me smile. We moved around a lot when I was younger, but literature was, and still is, a constant companion.
WHAT IS SOMETHING THAT MOST PEOPLE DON’T KNOW ABOUT YOU?
When my family lived abroad, we would often return to the States to visit relatives. My father preferred to travel by boat rather than by plane, and our mode of transportation was the luxury ocean liner, the SS United States. The ship held – and, incredibly, still holds today – the fastest transatlantic speed record for an ocean liner. Despite the fact that the SS United States is now retired and has been docked in Philadelphia for more than 25 years, I still treasure my collection of photos, menus, and program books from our travels on that “Grand Lady.”
WHAT ARE YOU MOST PROUD OF?
As a mother of five, my greatest joy and achievement is having a hand in helping my children become the wonderful adult individuals they are. Professionally and personally, being a librarian allows me to keep exploring and to help others on their path to discovery. Whether your passion is literature, history, gardening, the arts, or something else – everything, everywhere, can be found at the library!

From meeting immediate needs to providing lasting solutions, CityTeam restores lives and rebuilds communities. This faith-based organization offers innovative programs that address systemic issues of intergenerational poverty, food insecurity, and addiction. Born and raised in Arkansas, Kwinn Tucker committed to a one-year internship with CityTeam in 2002 after graduating from Williams Baptist College – and she never looked back, making her home and career here in Delaware County. Kwinn has served in a variety of positions throughout the years, and she ultimately took on the role of Executive Director in 2012.
We share the workload at CityTeam, so once a week, I get to work at the front desk. It’s the highlight of my week because I get to meet so many amazing people – whether they come in to ask for help, to support us with donations, or to volunteer their time. We make everyone feel welcome and feel like they belong, and that warm feeling of community truly fuels me.
I love to bake, and French macarons are my specialty. I’ve also run 4 half marathons. I like to try new things and really challenge myself; I even have a sign in my office that reads “Set Goals and Crush Them.”
Professionally, I’m most proud of our recent capital campaign and the launch of our CityTeam Turning Point for Women, a transitional housing program for young women and young mothers. This has been a great need in our community, and it’s something I’ve been praying for my whole career. Now we are providing important services and residential programs for both men and women equally.
Personally, I’m incredibly proud to have made peace with adjusting my professional ambitions through delegation and paced timing so that I can be present with my husband and two sons. I’ve learned that you can’t make up time at home once it’s gone.

SPICY JERK MAHI-MAHI TACOS

ARTICLE BY EXECUTIVE CHEF STEPHEN BALMER PHOTOGRAPHY COURTESY SPRINGFIELD COUNTRY CLUB AND TAVOLA RESTAURANT + BARGet ready to fire up the grill and kick Taco Tuesday up a notch! Executive Chef Stephen Balmer of Tavola shares one of his favorite Springtime recipes blending fresh seasonal ingredients and exciting spices. This crowd-pleaser features spicy jerk mahimahi tacos with fire-roasted corn, tomato salad with cilantro lime and queso fresco with an avocado cream drizzle.
JERK SEASONING:
• ½ white onion
• 4 garlic cloves
• 2 tsp fresh grated ginger
• ½ tsp cinnamon
• ½ tsp all spice
• ½ tsp nutmeg
• 1 cup brown sugar
• 3 fresh chopped jalapenos
• 2 tsp fresh thyme
• 2 tsp soy sauce
• 2 tsp red wine
• 8 stalks fresh chopped scallions
• 1,2 tsp lime juice
• ½ tsp red pepper flakes
• ½ tsp ground cloves
• 2 tsp extra virgin olive oi
• 2 tsp smoked paprika
• ½ tsp salt
• ½ tsp black pepper
Blend all ingredients above until smooth
Pour marinade over 2 pounds of mahi-mahi
Yields 8 – 10 Tacos
AVOCADO CREAM:
• 16 oz sour cream
• 5 avocados
• Zest of 1 lime
• Juice of 1 lime
• ½ c fresh chopped cilantro
• 1 tsp salt
• 1 tsp pepper
Blend all ingredients until smooth, set aside
FIRE ROASTED CORN:
• 4 fresh cobs of corn
• 2 tsp vegetable oil or blended oil
• ½ tsp salt
• ½ tsp pepper
• Whisk together oil, salt and pepper
• Rub on fresh corn on the cob
• Place corn on low flame of grill
• Turning every 2 minutes to ensure corn does not burn
• Lightly roast until a golden brown
• Set aside to cool
• Carefully cut corn off cob AFTER it has cool
TOMATO SALAD:
• ½ pint grape tomatoes, cut into 3rds
• ½ c finely chopped cilantro (stems and leaves
• Zest of 1 lime
• Juice of 1 lime
• 10 oz queso fresco crumbled
Combine grape tomatoes, cilantro, zest and juice of lime, and crumbled queso fresco
Assembly: Warm flour tortillas on grill until golden brown. Mix mahi-mahi and jerk marinade. Place seasoned mahi-mahi on grill
until internal temperature reaches 145 degrees. Gently break mahi-mahi and place into warm flour tortilla. Spoon roasted corn and tomato salad over mahi-mahi. Finish with avocado drizzle

Bar Chef and Sommelier Irene Moretti of Tavola Restaurant + Bar offers up a delicious sip-sational cocktail that stands on its own and also pairs perfectly with any blackened or spicy dish.
Ingredients:
• 2 oz Blanco Tequila
• Fresh Lime Juice(half lime juiced)
• 4 oz Pink Grapefruit Juice
• 2 oz Ginger Beer
• Lime wedge for garnish
Recipe: Combine tequila, fresh lime juice and grapefruit juice. Pour over ice into a tall glass. Top with ginger beer. Garnish with lime
In December of 2020, the governor of Pennsylvania announced COVID-19 protective measures prohibiting indoor dining for restaurants around the state. At that same time Brittany Joy Scharr, a former restaurant worker for over 10 years, grew concerned for all her friends who were still in the hospitality industry. Restaurants began laying people off or in some cases completely shutting down.
“It was just weeks before the Christmas holiday and it could not have happened at a worse time” according to Brittany.
Feeling bad for her friends, Brittany got an idea from a Facebook group post for MediaEveryone’s Hometown listing all the local restaurants that were still open encouraging the community to support them. So Brittany started a GoFundMe page hoping to raise $1,200 to gift 12 Media restaurant workers $100 each leading up to Christmas day. She posted a request on Facebook, hoping to garner support.
Based on the positive response to donations and nominations, Brittany knew she should record the surprise gifting to share on social media. She enlisted the help of her mother Katherine to record each moment of surprise and joy. Within a few days of posting the first videos, Brittany received enough funding to gift 5 people $100 a day. All totaled, $30,000 was raised and gifted that December.
Brittany attributes the success to postings the surprise videos. Recording not for her benefit but to share with the community just how much the gift impacted local workers. Soon the videos spread like wildfire over social media. “People loved watching the video and the reaction to each person who received the $100 gift. It got to a point where Facebook followers were waiting each day to see the videos” according to Scharr.
Using the Media Facebook group as the primary platform to share her videos, Brittany began to get inquiries for interviews from local and national news outlets. Including 6ABC Action news, PHL17, ABC World News and Good Morning America. 6ABC actually followed Brittany as she gifted on Christmas weekend.
“At that point, I knew that we had created such an outlet for giving and kindness that I felt a personal responsibility to find a way to continue it,” said Brittany. In 2021 the gifting grew to include all small business workers in need, not just the restaurant industry.
Now in its third year, the foundation has grown to include support from local business sponsors. Along with continued support from the public, the Joy Foundation has expanded its
mission to “spread joy to anyone who needs it” according to Brittany.
Examples of gifting included holiday gifts for a Media family who had lost a husband/ father. Furniture for a mother and son starting over from an abusive spouse in a new apartment. Paying off all student lunch debt for all of Rose Tree Media School District amounting to $2,700.19. This led to the same generosity to Penn-Delco, Marple-Newtown, Ridley, and Springfield school districts. Plus food & toiletries for Media Food Bank
Brittany shared that the objective is not to just hand out cash during the holidays but to support those in need throughout the year with needed items. But if the foundation is unable to help, she is quick to share other groups that might be able to support those in need.
“It’s the best feeling ever when you are bringing joy to someone. It serves as reminder to people that you are valued and you’re important. And that’s what motivates me.”

and took videos of each one to post. Brittany adds that “this has been another motivation, an outlet to spend more time with my mom.”
In just a short period of time, the Joy Foundation has garnered a proclamation for the mayor of Media, a certificate of recognition from former PA state representative Chris Quinn, as well as the Philadelphia Eagles That Deserves a Crown award.
According to Brittany, “The mission statement is to spread joy lifting our community up and bringing them together. We continue to be community focused. We plan on expanding to do more good and have a bigger impact. All of our donations go towards bringing someone joy…whatever that might be to that person.”
What started out as a basic idea to help a group of people in need during the holidays has blossomed into a year-round purveyor of joy. In 2023, Be the Joy Foundation officially became a 501(c)(3). Brittany suggests that if you or someone you know locally is in need, go to the foundation website to fill out a nomination form.

When you are the last item on your priority list, it's not healthy. Paying attention to your needs means less stress and better health. Taking time to relax and de-stress can mean an improvement in your mood, brain function, and memory. Relaxing is healing for the mind and body. You’ll make better decisions. What are the different types of relaxation techniques? Listed below are some of the different types of relaxation techniques from The National Center for Complementary and Integrative Health
HEALTH PROGRESSIVE RELAXATION:
Also called progressive muscle relaxation, this technique involves tensing different muscles in your body and then releasing the tension
AUTOGENIC TRAINING:
Through a series of mental exercises involving relaxation and ideas you suggest to yourself (autosuggestion), your mind focuses on your body’s experience of relaxation.
GUIDED IMAGERY OR “VISUALIZATION”:
In guided imagery, you picture objects, scenes, or events that are associated with relaxation or calmness and attempt to produce a similar feeling in your body.
BIOFEEDBACK-ASSISTED RELAXATION:
Through feedback that is usually provided by an electronic device, you learn how to recognize and manage how your body responds. The electronic device lets you see how your heart rate, blood pressure, or muscle tension changes in response to feeling stressed or relaxed.
SELF-HYPNOSIS:
In self-hypnosis programs, people learn to produce the relaxation response when prompted by a phrase or nonverbal cue (called a “suggestion”) of their own Breathing Exercises: For breathing exercises, you might focus on taking slow, deep breaths—also called diaphragmatic breathing."
