Hello friends,

Every autumn, I look forward to our northwoods pizza tradition where my family, siblings, spouses, and kids gather at my parents’ place around a brick oven built by my dad. We bring scratch-made dough, an array of toppings, and traditional Italian tunes to create our own custom pizzas. The air turns festive, filled with laughter, shared memories, and the comforting scent of bubbling cheese and crust. We have carried this tradition home too, with Saturday nights often turning into pizza night with my kids.

This ritual reminds me why I love this issue so much: food is more than flavor. It is connection, joy, and story.

That is why this Food & Drink issue is special. In exploring Maple Grove, often called the restaurant capital of Minnesota, I have been struck by the shared passion and hospitality of every owner and manager I have met. Whether chatting with Stephanie at Three Squares , where David Burley’s legacy lives on through heartfelt, family-style comfort food, or working with Deb at Buca di Beppo, where generosity and celebration are baked into every oversized portion, you can feel their love for what they serve.

1-4: From July 16–20, 2025, Maple Grove Days filled the city with parades, fireworks, live music, and family traditions. Highlights included the Business Expo, art fair, medallion hunt, children’s activities, and food vendors that lined the streets. Neighbors gathered for community spirit and summertime fun, making Maple Grove Days a vibrant celebration of everything that makes this city special. 5-7: Restaurant Week in Maple Grove, August 10–16, showcased local dining at its best. At Three Squares, neighbors share meals, celebrate milestones, and connect through kindness and good food.

A LEGACY OF PARTNERSHIP AND VISION

Three Squares in Maple Grove has long been a place where neighbors gather for meals that feel like home. Behind its welcoming spirit is owner Stephanie Shimp, whose journey in hospitality began with her partner, David Burley. Together they co-founded Blue Plate Restaurant Company in 1993 and shaped the Twin Cities dining scene. Earlier this year, tragedy struck when Burley passed away. He was known for his warmth, humor, and creativity, the

kind of person who could make anyone feel welcome at the table. As Shimp reflects, “David’s passion and kindness were the foundation of everything we built together.” His vision and recipes continue to leave their mark on Three Squares, ensuring his influence lives on in both food and spirit.

Before opening in Maple Grove, they had already established restaurants around the Twin Cities. They noticed that the suburbs were filled with chain establishments but lacked a true neighborhood

gathering spot. Three Squares was created to fill that gap, offering a place that felt both local and authentic. Even the name reflects that vision: “We all need 3 meals or 3 squares a day. We do breakfast, lunch and dinner,” Shimp says.

A MENU WITH MEANING

From the start, the menu has reflected community and comfort. “The Turkey burger with sweet potato fries and the Steak and Pierogies have been favorites from day one and of course, breakfast

cooked just the way you like it,” Shimp says. Guests continue to return for the French Toast: “Fluffy ciabatta bread dipped in our egg custard scented with cinnamon, sugar and vanilla.”

The food tells a story. “We want each bite to feel like you’re sitting at a good friend’s kitchen table,” Shimp says. The Fish and Chips recipe came from David’s family in Australia. Pierogies are a nod to Shimp’s college days at the University of Minnesota, when she often visited Kramarczuk’s Deli. “We serve breakfast all day because my mom would make ‘breakfast for dinner’ a couple of times a month.” Even the grilled cheese with its shooter of tomato soup speaks to a shared childhood memory.

The sense of family that guides the menu is just as present in the staff. Many employees have been part of Three Squares for years, forming friendships with regulars that extend beyond the restaurant walls. “Eric the daytime bartender has become friends with people and goes biking, hiking, or golfing with them,” Shimp notes. It all begins with hiring good people who look out for one another, creating an environment where hospitality thrives not only for diners but among the team itself.

ROOTED IN COMMUNITY

That spirit of hospitality naturally extends into Maple Grove. From the start, Three Squares has

been part of community life. The Rotary Club meets here for breakfast, and during COVID, supporters lined up for curbside dinners. When news of David Burley’s passing spread, flowers appeared at the front door as a gesture of care and support.

Giving back is central to the restaurant’s mission. Three Squares sponsors local sports, from Crimson Football to Osseo and Champlin Park, while supporting dance, robotics, theater, and golf. The restaurant also backs education and hunger initiatives through pasta feeds, dine-to-donate nights, and free kids meals tied to reading programs. As Shimp puts it, “We always try to support children’s education, and hunger organizations.”

LOOKING AHEAD

As Three Squares evolves, Shimp remains focused on being a place where memories are made. “We’re excited to remain a comfortable spot for life’s big and little moments. Being part of these celebrations never gets old,” she says.

The menu changes with the seasons. Pumpkin pancakes are a fall favorite, and Happy Hour remains a staple for neighbors and friends. Still, the heart of Three Squares will always be the same. As Shimp sums it up: “Minnesota is full of incredible small businesses like us. Supporting that sensitive ecosystem is not just important, it’s essential.”

FROM BASEMENT BEGINNINGS: THE STORY OF BUCA DI BEPPO

In 1993, a quirky Italian restaurant opened in the basement of a Minneapolis apartment building. Called Buca Little Italy, it quickly became a spot locals could not stop talking about. Long communal tables, oversized portions, walls filled with family photos, and a lively, slightly chaotic atmosphere made it stand out. Before long, the eatery embraced a new name, Buca di Beppo, Italian slang for “Joe’s small place.” What started underground grew into a dining destination with a personality as big as its plates. From those beginnings just 20 miles away, Buca’s mission has stayed the same: to bring people together with food so good it feels like a celebration. Today, with more than 40 locations nationwide, that same spirit fills every Buca restaurant. Red checkered tablecloths, bold Italian American flavors, and an unmistakably festive energy still define the experience. Maple Grove welcomed Buca in 1997, and it has remained one of the community’s favorite gathering places ever since. With seating for 95 guests, it has hosted everything from birthday parties and reunions to business dinners and casual family nights. Its most famous dish, Spaghetti with a Half Pound Meatball, continues to leave the kitchen more than anything else and has become a menu legend.

The stories that surround the restaurant add to its charm. General Manager Deb Edison recalls mixing 18 Joe’s Old Fashioneds in a row for one enthusiastic group, a memory that captures Buca’s oversized approach to hospitality. The atmosphere is always filled with laughter, conversation, and the clinking of glasses, making every visit memorable.

Starting October 1, Maple Grove diners will have new reasons to celebrate with the launch of three limited-time menu items:

• Spicy Sausage Pappardelle – Italian sausage with roasted garlic, fresh spinach, and marinara over garlic buttered pappardelle pasta.

TOASTED MALLOW

• 2 ounces cachaça (Brazilian sugar cane rum, silver rum can be substituted)

• 1 ounce Galliano liqueur

• 1/2 ounce lemon juice

• 1/2 ounce brown sugar & cinnamon syrup

• 2 tablespoons pumpkin puree

• fresh nutmeg

Combine all ingredients except for the nutmeg in a shaker tin. Add ice and shake vigorously until sufficiently chilled and blended. Strain through a mesh fine strainer into a martini glass or other decorative glassware without ice. Shave fresh nutmeg over the top as a garnish and enjoy!

PUMPKIN BRAIN PURÉE

• 1 1/2 ounces vodka

• 1 1/2 ounces chocolate liqueur

• 1/2 ounce Frangelico liqueur

• graham crackers

• marshmallows

Combine all ingredients except for the graham crackers and marshmallows in a shaker tin. Add ice and shake vigorously until sufficiently chilled and blended. Crush graham crackers in a plastic bag to make a fine powder. Coat half of a martini glass with your crushed graham crackers and strain your cocktail into the coated martini glass. Layer the top of the drink with marshmallows and toast with a crème brûlée torch. Enjoy!

Savory Roast Beef with Horseradish Cream

INGREDIENTS

• 2 slices crusty bread (sourdough, ciabatta, French bread)

• 6 oz roast beef

• 2 slices provolone cheese

• 2 tbsp butter (for toasting)

• 2 ½ tbsp mayonnaise

• 1 tbsp horseradish sauce

• 1 tsp Dijon mustard

• Arugula

• Cherry tomato

• Caramelized onions

INSTRUCTIONS

Toast the bread. Butter one side of each slice and toast in a skillet until golden. Heat roast beef briefly in a pan. To make the spread, mix mayo, horseradish sauce, and Dijon. Spread on the toasted bread. Layer roast beef, cheese, and broil briefly to melt. Add arugula, tomato, and caramelized onions if using. Top with the second slice of bread.

Sweet & Spicy Grilled Chicken Sandwich

INGREDIENTS

• 1 grilled chicken breast

• 2 slices pepper jack cheese

• 2 slices cooked bacon

• 1 tbsp fruit jam (fig, raspberry, or jalapeño recommended)

• A handful of fresh arugula

• 3–4 cherry tomatoes (halved)

• 1 tbsp garlic aioli

• 1 brioche bun (toasted)

INSTRUCTIONS

Lightly butter the inside of the bun and toast in a skillet or oven until golden brown. Spread a layer of garlic aioli on the bottom bun. Add the sliced grilled chicken breast. Place the pepper jack cheese over the hot chicken to slightly melt it. Layer on the crispy bacon slices. Add halved cherry tomatoes and a small handful of arugula. Spread the jam on the top bun. Enjoy!

INGREDIENTS

• 3 oz goat cheese

• Fresh arugula

• ¼ cup caramelized onions

• 1 pear, thinly sliced

• Honey, to taste

• Butter for toasting the bread

• Rotisserie chicken breast thinly sliced

• Sourdough bread, buttered (optional)

INSTRUCTIONS

Spread goat cheese on one side of the bread. Top the cheese with arugula, caramelized onions, sliced pears and chicken breast. Drizzle with honey. Top with remaining slice of sourdough bread. Use a griddle or panini press to heat the sandwich.
