Oh, October. October is absolutely my most favorite color, scent, and month of the year. It’s easily my favorite pick of the dozen. It’s when the heat of the summer truly trades into the coolness of fall, and when the colors of the Flint Hills start to burst. It’s when those Fightin’ Wildcats take the gridiron. It’s also when foodie season officially kicks off. With the changing seasons comes a change in what we are craving, and with fall that often means comfort food. October is our most delectable issue of the year, filled with some of our favorite dishes around town.
The smells of fall bring memories to my mind of sitting in my mom’s kitchen and the aroma of cinnamon, apple, pumpkin, chili, and soups of all kinds brings me right back to her table. She also loved her front porch. The fall front porch highlighted in this issue, which was expertly decorated by Blue River Traders, has all the traits of a special front porch in the autumn. Cozy. Warm. Safe. Peace. Calm.
Speaking of staying safe, October is Cyber Security Awareness Month. We touch on the benefit of boosting your cyber security with locally owned and operated Trenchant Cyber Security. It was great getting to talk to Ed and Callie Hansen and hear about their passion for helping individuals and small businesses with their digital safety.
Also, it was our pleasure to bring to you some of Manhattan’s favorite burgers! The Little Apple has many fantastic, local places offering that mouth waterin’ beef on a bun, and we’re excited to share them with you. We’ve also included a few recipes for you to make for a Wildcat tailgate or to try at home for your family. With several K-State weekends bringing people into town over the fall, this is a great time of year to try out new recipes.
There is an art to creating a flavorful dish that not only satisfies our taste buds but evokes memories. The aroma of certain spices and foods can bring us right back to our childhood, which can be incredibly powerful and comforting. Food brings us all together, and whether we are sharing a meal with loved ones or enjoying a night out on the town, the time spent while enjoying food is invaluable. Welcome to The Food Issue. From October 16th to 18th, Hale Library is hosting "AI and the Future: Exploring the Intersection of Language(s), Science, and Ethics." This artificial intelligence symposium is entirely free and promises an array of engaging panels, lightning talks, and workshops. Congratulations to the Manhattanarea Special Olympics USA Unified Volleyball team on winning the bronze medal at the 2023 Special Olympics World Games in Berlin, Germany! With the K-State football schedule in full force, there are still few things better than getting ready for the big game than with some delicious and easy to make treats. From a treat with heat to one that is purple and sweet, here are a few fun game day recipes to try for the next game! Go Cats!
• 1 (12-ounce) box of Rice Chex cereal
• 1 ½ cups of white or semisweet chocolate chips
• ¾ cup of smooth peanut butter
• ½ cup (1 stick) of unsalted butter
• 2 ½ cups of powdered sugar
• 2 teaspoons of ube (purple yam) powder
1. Place Rice Chex cereal in a large mixing bowl.
2. In a microwave-safe bowl, combine chocolate chips, peanut butter, and butter. Microwave on high for 1 minute. Stir, then continue microwaving in 15 second intervals, stirring in between each, until almost melted and smooth.
3. Pour chocolate mixture over cereal and gently stir to coat evenly.
4. In a large resealable bag, mix powdered sugar and ube powder.
5. Transfer coated cereal into the bag. Seal bag well. Shake until cereal is evenly coated with the purple sugar mixture.
6. Spread Purple Wildcat Chow on wax paper-lined baking sheet and let cool for 10 minutes.
7. Enjoy! Store in an airtight container in the refrigerator.
• Jalapeños
• Raspberry jam
• 8 oz cream cheese (room temperature)
• 1 lb. package bacon
• 1 cup brown sugar
• 1 tablespoon chili powder
1. Pre-heat oven to 325°F.
2. Slice jalapeños lengthwise, removing seeds and ribs.
3. Spoon a teaspoon of raspberry jam in each jalapeño half. Fill the rest of jalapeño with softened cream cheese.
4. Wrap each jalapeño half with halved bacon strips.
5. Combine brown sugar and chili powder. Coat each bacon-wrapped jalapeño with the mixture.
6. Line a baking sheet with tin foil and put poppers cut side down. Bake until bacon is crispy and caramelized.
7. Enjoy!

• 1 cup guacamole
• 1 cup sour cream
• 1 cup salsa
• 1 cup shredded cheese
• ¼ cup black olives
• ¼ cup green onions

Blue River Traders, founded in 2004 by Ron and Marilyn Feldkamp, stands as a testament to the enduring spirit of small-town entrepreneurship and community. Apples are the trademark fruit of fall, and with the many varieties to choose from, there is an apple that is sure to please any palate. They can be included in both sweet and savory dishes and are delicious and incredibly healthful. We all have heard the saying, “An apple a day keeps the doctor away.” While they aren’t a cure-all, apples are packed full of polyphenols, antioxidants, vitamin C, B vitamins and fiber. Make the most of autumn’s best produce and the flavors of fall with this simple recipe.
Easier than pie but with all the same textures, this gooey warm dessert is sure to please. For simplicity, this can be made with a premade crust.
Crust:
• 1 1/2 cups flour
• 1/4 cup sugar
• 1/4 teaspoon salt
• 1 stick cold unsalted butter, cubed
• 1/4 cup iced cold water
Filling:
• 2 apples, peeled and sliced into thin slices
• 1/4 cup packed dark brown sugar
• 1 1/2 tablespoons flour
• 1 1/2 teaspoons lemon juice
• 1 teaspoon cinnamon
• 1/4 teaspoon ground nutmeg
• Caramel sauce
• Optional: 1/4 cup chopped walnuts or pecans
Crust:
(Note: If running short on time, store bought crust works great, too.)
Mix flour, salt and sugar together in a bowl. Cut in the butter. Add water and mix until moistened. Lightly knead the dough and then form into a ball. Next, flatten dough into a thick circular form and refrigerate for one hour.
Filling: Mix the apples, flour, lemon juice, cinnamon, nutmeg and brown sugar together in a bowl.
Assemble and Bake:
Preheat oven to 375 degrees. Line a baking sheet with parchment paper. Roll the dough into a circle and set on parchment paper. Arrange apples in center of dough, leaving about one inch of space for the edges. Fold crust over the apples and press to seal edges. Drizzle with caramel sauce and sprinkle with pecans or walnuts. Bake for 35 minutes. Serve with caramel sauce and ice cream.

Ingredients:
• 1 1/2 cups all-purpose flour
• 1 teaspoon baking soda
• 1/2 teaspoon baking powder
• 1 1/2 teaspoon ground cinnamon
• 1 teaspoon nutmeg
• 1/2 teaspoon ginger
• 1 teaspoon salt
• 1 1/2 cups canned pumpkin
• 1 1/2 cups sugar
• 2 teaspoon vanilla extract
• 1/2 cup vegetable oil or canola oil
• 1/2 cup melted butter
• 2 eggs
Directions:
1. Preheat the oven to 350 degrees.
2. In a mixing bowl, add the flour, baking soda and baking powder, spices, and salt. Set aside.
3. Combine the oil, butter, and vanilla in a liquid measuring cup.
4. In a mixing bowl (with a paddle attachment), beat the pumpkin, sugar, and eggs until combined.
5. Turn the mixer to low and slowly add the liquid ingredients. Let this process take about 1 to 2 minutes so the mixture becomes light and fluffy.
6. Using a spatula, fold the dry ingredients into the wet and slowly fold until the ingredients are blended.
7. Prepare a 10 x 5 loaf pan by buttering it really well and then adding a strip of parchment paper to the bottom and up the sides for easy removal.
8. Bake in a preheated 350-degree oven for 1 hour. The bread will be fully risen in the center, like a loaf. Make sure it’s fully cooked and brown on the top otherwise it will fall in the middle once removed from the oven.

Hailing from Benbrook, Texas, Terry first came to Kansas State in 1999. Playing five games his redshirt freshman season, he would start every game the next two seasons before capping off a legendary career with a Holiday Bowl victory over Arizona State in 2002. He was drafted that spring in the second round, 51st pick overall, to the Denver Broncos, spending a few seasons in the NFL. Graduating with a degree in Finance from K-State, Terry is currently the Chief Commercial Officer (CCO) for a company called Calculum, Inc. They’re a data company that uses advanced analytics and AI-based systems to help companies improve financial supply chains. He resides in Miami, Florida.
