Tell me one funny story from your childhood. I grew up in the Brady Bunch. I have 3 older sisters and my mom remarried a man who had 3 boys who were between my sisters and I in age. My step brothers fought about everything. Every game the 4 of us played together ended because someone got mad, in a fight, or ended up throwing something at someone else. I grew up never really knowing how you win at Monopoly because someone always accused someone of cheating; one of my step brothers usually did! And the board was pushed onto the floor long before anyone went bankrupt!

Northern Colorado's Cattle Baron’s Ball

The Cattle Baron’s Ball in Northern Colorado is the Premier Western Style Fundraiser for the American Cancer Society (ACS) in the region, funding cancer research and resources. Since the event’s humble beginnings 30 years ago, the local Ball has raised more than $9 million to support efforts against can cer. In 2021, among more than 160 gala events ACS hosted across the country, the Northern Colorado Cattle Baron’s Ball ranked as the seventh highest grossing event, following after major metro markets such as San Francisco, St. Louis, and Dallas.
Rachel Befort, Senior Development Manager at the American Cancer Society, said the ACS funds millions of dollars toward cancer research grants in Colorado, ensuring we continue to progress in the fight to save lives. Meet some of the key players dedicated to Northern Colorado’s annual Cattle Baron’s Ball. More than 30 years ago, the Director of the ACS pitched Kaye Monfort to start the Cattle Baron’s Ball in Northern Colorado. Being no stranger to the live stock industry, western way of life, and helping oth ers, the idea resonated with Kaye. “Of course, I loved the idea because it would be for cancer research, education, and help for local cancer patients,” said Kaye. “I also loved the western/cattle/cowboy ele ment of it.” While the Cattle Barron’s Ball has evolved over the past 30 years, Kaye most appreciates how much money it continues to raise thanks to the gen erous Northern Colorado community.

Jim and Kirsten have family members and friends affected by cancer, which is a big reason they support the ACS. “Whether it’s happened to you, or someone you know, there probably isn’t anyone that isn’t touched by cancer in some way,” said Kirsten. What Jim and Kirsten love the most about the Cattle Baron’s Ball is shar ing it with friends. “Each year, we add more tables and more friends,” said Kirsten. “It’s special to share in the experience and be surrounded by people who care about cancer as much as we do.”

Clay and Raechel Drake started attend ing the Cattle Baron’s Ball 25 years ago and have served on several committees and are serving as chairs for next year’s ball. “We’ve had the opportunity in the past, but now the timing felt right,” said Clay. Clay was diagnosed with incurable but treatable cancer in 2015, which has further fueled his passion for the Cattle Baron’s Ball and raising funds for the ACS. “The medication that I’ve taken to treat my cancer would not have been possible if it weren’t for the ACS,” said Clay. Attending the Cattle Baron’s Ball brought everything full circle for Clay. His favorite part of the ball is the personal connections and relationships he makes while supporting the ACS. Raechel loves the buzz and excitement beforehand, but is most in awe and touched by how many people give generously to support the ACS.

Wendy appreciates that there are several ways to join the fun of the Cattle Baron’s Ball while supporting a great cause. You can buy a ticket to the event, donate an item for the auction, purchase from the auction, or volunteer.
Wendy has been involved in the Cattle Baron’s Ball for several years and has served on the committee that secures sponsors for the event. As the Chief Operations Officer at Banner Health Northern Colorado, she has seen firsthand the impact that the fundraiser brings to the region. “The American Cancer Society’s work around research, support for cancer patients, and education to the community are priceless,” said Wendy. As much as the ACS has impacted Northern Colorado, the community support that comes from the Cattle Baron’s Ball is invaluable. “The dollars raised always amazes me and is a testament to how our community feels about the work of the ACS,” said Wendy.

Jerri and Gus remember going to the very first Cattle Baron’s Ball 30 years ago, featuring Toby Keith before he became a well-known artist. “We’ve had so much love for the Cattle Baron’s Ball ever since the first one,” said Jerri. As avid supporters of the ball, it became more personal to Jerri and Gus after each of them went through their own cancer journeys. Jerri and Gus each discovered they had cancer through routine screenings. Gus discovered his cancer in 2005, while Jerri discovered her cancer four years ago. “We suddenly became more tuned into the main objective of the ball – raising funds for cancer research, treatment, and information in Northern Colorado,” said Gus. Gus said that the amount of cancer support and resources in Northern Colorado are great, thanks to the ACS and generous donors. “When you participate in the Cattle Baron’s Ball, you help fund cancer resources, right here in Northern Colorado,” said Gus. Jerri and Gus enjoy the fun and camaraderie at the ball while raising funds for a great cause.

As the owner of Accessories with a Flair, a hair salon and boutique in downtown Greeley, Linda’s favorite aspect of the ball is helping ladies pick out their Western Chic clothes for the night. Linda also donates items from her boutique for the silent auction. “We are so lucky that a group of philanthropists created the Cattle Baron’s Ball 30 years ago and have made sure it is the best in the West.” said Linda. “You see old friends and make new ones as you support a great cause!”

Julie and Warren Yoder were chairs of the Cattle Baron’s Ball in 2018 and felt it was a special way to honor friends. Julie and Warren were nervous about the task of chairing such a large event, but the timing was perfect. “We had just lost a treasured friend to cancer and were walking through the cancer journey with another friend,” said Julie. “I felt helpless, and I was ready to do whatever it took to help fight this life-altering disease.”
Julie and Warren remain involved in the Cattle Baron’s Ball and are passionate about supporting the ACS. Although the fun atmo sphere, great food, and live music are always impressive, Julie’s favorite part of the Cattle Baron’s Ball is watching how generous everyone truly is. “We live in an amazing community where every one pulls together and helps those in need,” said Julie. “It never ceases to amaze me the amount of money given in one night to this very worthy cause.”
The Cattle Baron’s Ball honors cancer survivors, caregivers, donors, volunteers, and life. This year’s Cattle Baron’s Ball includes a cocktail reception, gourmet steak dinner, silent and live auctions, prize drawings, a private live concert with LOCASH, and dancing under the tent! The Northern Colorado Cattle Baron’s Ball cele brates our heritage of agriculture, livestock, and the western way of life while giving to a wonderful cause and making a difference in people’s lives in our community.
Richard and Linda have attended the ball since its incep tion. Linda served on the Board of the ACS for 20 years and facilitated the Look Good, Feel Better program, providing classes for women going through treatment. The classes taught women how to cope with the challenges and how to feel more normal during their health journey while having a little fun.

Dale Cisek has loved music from his earliest days. This local artist, originally from Ohio, began playing guitar at the young age of 12 and became hooked when he first saw the Beatles. After tak ing lessons for a few years as a teen, and perform ing with a few bands, Dale inherited his teacher’s students and began teaching lessons through out high school and into college. Following his college years, Dale enthusiastically jumped into music full time. He landed in Loveland, CO in 1976 and hit the scene with several different bands along the way. Dale is a freelance Patineur by day and musician by night. Today, Dale plays guitar and sings in the Dale Cisek Band. He focuses on R&B, blues, and rock configurations, while writing many of his own songs. Dale’s soulful singing and edgy guitar work drives the band in an energetic way. The band plays originals and music they craft from R&B, rockabilly, rock, reggae, tak ing those songs and making them their own.
The last song after a good night. When the band is running on all cylinders, it’s like a med itation. When you have all the personalities working together, there’s no feeling like it.
HOW WOULD YOU EXPLAIN YOUR MUSIC?
WHAT DO YOU LOVE THE MOST ABOUT WHERE YOU LIVE? I love Colorado, the climate, easy access to the mountains, and most of all, the people. I am still friends with quite a few people who I met when I first moved here.
We have all long term professional musi cians in the band. Mike Ryan and I are both on guitar and vocals (13 years playing together) while Wes Melander plays bass guitar with Reece Pullen on drums. Some of us have toured regionally, while many of us have opened for large acts. This band is having a great time and suits all of our needs right now.
HOW HAS LIVING IN THE REGION INFLUENCED YOU? When I moved here I had an acoustic guitar, but then I moved into playing electric and acous tic. Now I play both and we perform live all over the state, at city concerts, and other venues.
An Americana/R&B rhythm that makes you want to dance and helps take your trou bles away. Our music gives one respite when they’ve been breaking their backs all day long. It soothes the mind and fills the soul.
A good club with a good stage where music is the main focus. I play in the moment and to the highest level possible. Our band holds regular practices, creates new material, and we are always polishing our work.

Hearing that you can’t get your haircut because the bar ber doesn’t know how to cut your type of hair is becoming a thing of the past in Northern Colorado thanks to XAAK’s Barbershop in downtown Loveland. Owners James and Margarita Holland, who opened doors on Martin Luther King Jr. Day 2022, offer a much needed alternative to the hectic Denver commute that many patrons would otherwise have to take just to get their hair cut well. Transplants from larger cities and locals alike are raving about the clean shaves and skillful fades they receive from James, aka “Hanns” The Barber. XAAK’s identity as a true black barbershop is a mean ingful distinction of historical and cultural significance that James hopes will become a valuable addition to Loveland’s community landscape. African American bar bering is famously known for it’s exceptional precision and detail, no matter what type of hair you have. As James puts it, “I love to see the shock and awe on people’s faces when they are turned to the mirror and see how good their hair looks when it's done.” Black barber shops are also known for having a wel coming culture where people can authentically connect and engage in meaningful conversation. Since the 19th century, black barber shops have been an essential part of American history playing a critical role in the cultural and economic development of African American communities. It was sheer happenstance that led to the establish ment of XAAK’s in Loveland. James, a Houston native, met Margarita while attending Colorado State University (CSU). He had studied criminal law and political science at Grambling State University and CSU, with his eye on a career in law enforcement. Margarita studied human resources. James had nearly completed his degree when financial constraints altered their plans and the couple returned to Houston to work and focus on family.

While their dreams took a turn, the reroute has evolved into a blessing after all. In Houston, James had worked in various management positions and even a stint in law enforcement before taking a year off to rest and reflect. That’s when the idea of becoming a professional barber surfaced. He had learned to cut his own hair from his Dad who was a licensed barber while serving in the military. While it’s a good skill to have, James never imagined that his early know-how would evolve into his passion and live lihood. But then James believes that everything happens for a reason, and that faith-filled mindset is what put his unforeseen legacy into motion. James was driven to succeed, which for him meant becoming the best professional barber he could be. He completed his barber training at Houston Barber College and went on to get his Instructors Endorsement besides. He did everything he could to better himself at his craft. Even the challenge of 2020 became an opportunity for James to hone his skills. When people couldn’t find a place to get a haircut due to closures, James took his haircuts to the people. “I cut people’s hair wherever I could - in parking lots, at the unemploy ment office, on the sidewalk,” he recalls.
James and Margarita had full intentions of opening a barber shop in Houston, but changed plans following a brief yet fortuitous stop through Loveland. The co-own ers have run with it and are doing their part to add to the quality of life in the Loveland and northern Colorado community. Margarita, who leads management and HR for the shop, sits on the Board of Directors for the Loveland Creative District.
XAAK’s, an acronym for the names of his four children, offers a menu of services from traditional ‘Texas’ fades to custom cuts, as well as beard and esthetician services. “If you have hair, I’ve got a chair!” James gleams.
“There is a need for us to be here,” James says, adding, “I want to provide a great service for people that is close to home.” He views the business as so much more than a barber shop. What really matters to James and Margarita is making meaningful impact on Loveland’s cultural and economic well-being.

My grandparents and my mom escaped from Hungary in 1956 after 7 generations. Their restaurant, small grocery store, and bowling alley busi ness was taken by Communist gov ernment after WW2 and they chose to escape with nothing but my mom and come to America where my great uncle sponsored them. They lived in a one room place above the restaurant they ran in Boulder, CO. My mom met my dad at CU Boulder. They married and my dad was an Air Force Colonel and my mom was in the CIA. I have a passion for supporting and collaborating with the Berthoud community, which in turns supports America. I believe in the term United We Stand, Divided We Fall and desire to give back for the opportunity this country has given my family.
I’m inspired by Ruth Bader Ginsburg (RBG) because she was a woman of few spoken words while making a huge impact as a pioneer on the Supreme Court. I often reflect on her quote, “Fight for the things that you care about, but do it in a way that will lead others to join you.” The hours that she put in, along with her focus, when writing her supreme court briefings was amazing. She worked incredibly hard, both for our country as well as for her family.

Living in a society that is increasingly “me-me-me” focused, it’s heartening to realize there are still plenty of people who make it a point to reach out and help others. Christine Torres, a local realtor in Berthoud, is raising the bar when it comes to giving back in her community.
I got involved back in 2014 when my daughter was at Berthoud High School (BHS). When suicides were on the rise, I wanted to get involved to be preventive instead of reactive. Thompson School District paid for a week of training with Sources Of Strength Suicide Prevention to train me to teach other high schools about the program. From there, the athletic director asked me to be the president of the BHS athletic booster club whose mission is to support all 16 sports teams. I began interacting with all small businesses in Berthoud that would sponsor the boosters club. I learned how to market the local busi nesses to the Berthoud community in this role. WHAT IS YOU WHY?

There are several different focuses for me that include nonprofits, local gov ernment, and support of the schools. An example of my nonprofit engagement is the Rope For Hope fundraiser for House of Neighborly Services where 50 edgers will be rappelling off of the side of The Foundry in Loveland. Attending Town Hall meetings and staying in touch with the Chamber of Commerce is always a pri ority. I enjoy coordinating the BHS home coming parade and community bonfire at Grace Place. In honor of noodles’ humble origins in Asia, we shared two healthy, winter warming recipes with ramen and soba noodles. Easy to make on a busy weeknight or for a special someone.
Recently, noodles have been growing in popularity as carbohydrates are no longer the notorious demon of the diet world. Although keep in mind not all noodles are cre ated equal. Noodles made with white flour are still bad but the varieties made with rice, buckwheat, semolina and seaweed are - dare we say - good for you. Not only do they provide us with great comfort, but these types are packed with nutritional benefits and vitamins (in moderation). The other bonus about noodles is that they can be prepared with superfoods, veggies and staple proteins with flavors that bring your tastebuds all across the globe.
NOODLES - THE GLORIOUS COMFORT FOOD THAT REMINDS SO MANY CULTURES OF HOME. Noodles have become the staple food worldwide (from Rome to Bejing) for centuries. The oldest evidence of man enjoying a good ole noodle dish dates back to nearly 4,000 years ago! We can thank Asian origins for the creation of the noodle, which in 2017, is consumed across the globe.

5. Heat a large skillet over medium heat. Add the sesame oil. Once hot, add enough pork to cover just the surface of your skillet, do not overcrowd the skillet. Sprinkle a little brown sugar over the pork, add 2 tablespoons soy sauce and 2 tablespoons rice vinegar, toss. Allow the pork to caramelize, about 2 minutes. Stir and allow the pork to continue to caramelize, about 3-5 minutes total. Remove the pork from the skillet, repeat with the remaining pork. Keep the pork warm.
Recipe by Half Baked Harvest | @halfbakedharvest | HalfBakedHarvest.com Prep time: 25 minutes | Cook time: 7 hours | Total time: 7 hours 25 minutes | Yields: 4 bowls of soup + extra pork INGREDIENTS + 2-3 pounds pork shoulder roast (or butt) + 4 cups low sodium chicken broth, plus more of needed + 1/4-1/2 cup + 2-4 tablespoons low sodium soy sauce (Use low sodium) + 1/4 cup + 2-4 tablespoons rice vinegar + 2 tablespoons fish sauce (optional) + 2 tablespoons thai red curry paste + 1 tablespoon fresh ginger + 1 tablespoon sambal oelek (chili paste) + The juice of 1 lime + 1 tablespoon Chinese five spice + 1 teaspoon black pepper + 2 tablespoons sesame oil + 1/4 cup + 1 tablespoon brown sugar + 2 cups wild mushrooms, left wholeor button mushrooms, sliced + 4 packs Ramen noodles, seasoning packets discarded + 4 soft boiled or fried eggs, for serving + Chopped carrots, sliced jalapeño, cilantro, green onions, for serving CURRY ROASTED ACORN SQUASH + 1 medium acorn squash, seeded + diced + 2 tablespoons coconut oil, melted + 1 tablespoon curry powder + 1 tablespoon white miso paste + 1 tablespoon brown sugar + Pepper, to taste INSTRUCTIONS 1. Add the pork to the bowl of a crockpot. Pour the chicken broth, 1/4-1/2 cup soy sauce, 1/4 cup rice vinegar and fish sauce over the pork. Add the Thai red curry paste, ginger, sambal oelek, juice of 1 lime, Chinese five spice powder, black pepper and 1 tablespoon brown sugar. Cover the crockpot and cook on low for 7-8 hours or on high for 4-6 hours.

4. Meanwhile, remove the pork from the crockpot and add the mushrooms. Cover the crockpot and crank the heat up to high. Lightly shred the pork with two forks or your hands.
2. About 40 minutes before you are ready to eat, roast the squash. Preheat the oven to 400 degrees F.
3. In a small bowl mix together the melted coconut oil, curry powder, miso, brown sugar and a good pinch of pepper. Add the cubed squash to a greased baking sheet and pour the curry mixture over the squash. Toss well. Bake for 30-40 minutes, tossing a couple of times during cooking. You want the squash to be lightly browned and crisp.
6. Add the Ramen noodles to the crockpot and allow them to cook 5 minutes. Once the noodles are cooked, stir in only half of the pork. Ladle the soup into bowls. Top with extra caramelized pork, curry roasted acorn squash and an egg. Season the egg with salt and pepper, Add the carrots, jalapeños, green onions and cilantro if desired. Happy slurping!

Serves: 2 INGREDIENTS + 4-6 ounces soba noodles + 1-2 tablespoons toasted sesame oil + 2 medium cucumbers (or 1 large seedless cucumber) + ¼ cup chopped scallions + 1 tablespoon tamari or soy sauce + 2 tablespoons rice vinegar + 1-2 tablespoons ponzu sauce (or extra tamari & rice vin with a squeeze of lime) + Avocado slices + Sesame seeds Optional additions: + tofu or a protein of your choice + sriracha or chile flakes
3. Toss the cucumber slices and scallions with the soba noodles. Add tamari, rice vin egar, and ponzu and toss again. Taste and adjust seasonings. Top with sliced avocado and sesame seeds. Serve cold.

INSTRUCTIONS
1. Boil the soba noodles in salty water until al dente. Blanch them for 30 seconds in a bowl of cold ice water, then drain. Return them to the (empty) bowl and gently toss with a splash of sesame oil so they won’t stick together while you finish everything else.
2. Thinly slice the cucumbers using a juli enne peeler (you could also use a mandolin or veggie spiraler). Discard the first peel (it will be all skin) and carefully make your slices around the seeded part in the middle.
