Fall in love with food

As the crisp air of fall settles in and the vibrant hues of autumn surround us, I find myself reflecting on the simple joys that make this season so special. For me, food has always been more than sustenance; it’s a way to connect with the world around us, to celebrate the harvest, and to gather with loved ones.

In this issue, we delve into the heart of autumn’s culinary delights. From the comforting aroma of a simmering pot of soup to the rich flavors of freshly baked bread, fall is a time when cooking becomes a warm embrace. It’s the season of pumpkins, apples, and spices that transform our kitchens into cozy havens. As we explore recipes that highlight the bounty of the season, I hope you find inspiration to create your own memorable meals.

Autumn also brings with it a host of exciting events and traditions. Whether it’s a local harvest festival, a bustling farmer’s market, or a heartfelt farm to table gathering, these moments are made even richer by the food that accompanies them. I’m particularly thrilled to share stories from our contributors who have captured the essence of these fall festivities, offering you a taste of the celebrations happening near and far.

Food, in its many forms, has a unique way of bringing people together. It tells stories, evokes memories, and creates connections. This issue is a tribute to that magic—the joy of cooking, the delight of sharing a meal, and the beauty of experiencing fall’s flavors. The family table is a staple for our family and a tradition I hope our kids continue on for generations.

Crafts Menus for the Stars

Tomasz Wosiak, the Vice President of Culinary Development and Corporate Executive Chef at TC Restaurant Group, has made a significant mark on Nashville’s vibrant food scene. Wosiak, who helms the kitchens at Florida Georgia Line House, Jason Aldean’s Kitchen + Rooftop Bar, Luke Bryan’s Luke’s 32 Bridge, Miranda Lambert’s Casa Rosa, Morgan Wallen’s This Bar, Laney Wilson’s Bell Bottoms Up, and The Sun Diner, brings a rich tapestry of culinary expertise and personal history to his role.

Lebanon Local Tomasz Wosiak

Wosiak’s journey began in Poland, where he first ventured into the culinary world at just nineteen, opening his own restaurant while still in culinary school. His classical training and love for integrating traditional Polish flavors with European influences laid the groundwork for his future success. After moving to Ohio with his wife Laura, his initial struggles to find suitable opportunities as a foreign born chef were overcome through sheer determination and perseverance, eventually leading him to an executive chef position within a year.

Calling Lebanon home, Wosiak enjoys a unique aspect of his daily commute: a train ride that adds a touch of European charm to his routine. The WeGo Star all commuter rail service that runs between Lebanon and Nashville is the perfect way to use his time to prepare rather than sitting in traffic.

Wosiak’s passion for cooking was ignited in his childhood kitchen, where he spent countless hours alongside his mother. Her influence and recipes continue to inspire him, and he often reflects on those formative experiences as he crafts menus for country music stars like Miranda Lambert, Lainey Wilson, and Morgan Wallen.

Wosiak continues to merge his European roots with Southern flavors, creating unforgettable dining experiences and shaping the future of culinary excellence in Nashville and beyond. With hundreds of recipes in his collection, he dreams of compiling them into a cookbook someday—a testament to his enduring passion for the culinary arts.

A CULINARY LEGACY FROM MUSIC ROW: THE STORY OF THE ORIGINAL SAMMY B’S

Nestled in the heart of Nashville’s iconic Music Row, The Original Sammy B’s opened its doors in 1994 under the passionate guidance of Jim and Gina Stradley. For nearly six years, the restaurant was the quintessential gathering spot for everyone from seasoned industry veterans to rising stars. Its legendary status was marked by a vibrant atmosphere and a multitude of unforgettable stories that have become part of its rich history.

Jim and Gina Stradley’s journey into the world of hospitality began in 1987 with the founding of R.S.V.P. Management, Inc., later known as R.S.V.P. Hospitality Services, Inc. This full-service catering company quickly became a staple across Middle Tennessee, serving an impressive roster of clients including Vanderbilt University, ComData, and Cracker Barrel. As their reputation grew, so did their ventures. R.S.V.P. Management expanded to include food service contracts with prestigious establishments like The Athletic Club at Maryland Farms and Rachel’s Garden Café, among others.

In addition to catering, the Stradleys opened several successful restaurants, including the renowned Around the Corner and Sammy B’s on Music Row. Their collaboration with Dan Evins, the founder of Cracker Barrel, led to the acquisition of Rademacher’s Chop House in Lebanon and also later of The Lebanon Golf & Country Club’s food service operations. They also provided exclusive services to Cedar Creek Yacht Club for nine years.

In 2012, the Stradleys revitalized Sammy B’s at The Mill in Lebanon, and the restaurant has since relocated to 705 Cadet Court — the very location of Rademacher’s Chop House from nearly three decades ago. Today, Sammy B’s continues to thrive as a beloved free-standing restaurant, offering off-site catering for various events and providing services at the Lebanon Golf and Country Club, which is open to the public.

GROWTH WITH GRACE

Sammy B’s is currently in the midst of an exciting transformation as they work on creating a new menu that promises to elevate the dining experience to new heights. While continuing with their traditions of 100% hand cut meats and fish, alongside all homemade salad dressings and sauces, Jim shares that while many details are still under wraps, one thing is certain: the salad bar will be a standout feature. “We’re loading it with garden-fresh ingredients and offering a rotating selection of prepared salads to keep things interesting,” he reveals. But that’s just the beginning. Guests can look forward to a fresh array of appetizers, entrees, and desserts, alongside beloved favorites that have become staples at Sammy B’s. This revamp aims to blend innovation with tradition, ensuring that there’s something new for both loyal patrons and newcomers.

THE LEBANON COUNTY CLUB UPDATES

Sammy B’s has rekindled its relationship with The Lebanon County Club, marking the second time they’ve provided their culinary services to this esteemed venue. Their initial foray began little more than a decade ago, serving exclusively to club members. Today, however, the food service is open to the public, maintaining the intimate, club-like  ambiance that characterizes Sammy B’s. Gina highlights this personal touch as a significant aspect of the experience, akin to the warm, welcoming atmosphere of their restaurant where everyone is greeted like an old friend.

The Lebanon County Club, much like Sammy B’s restaurant, serves as a hub for community gatherings. From private events such as weddings, rehearsal dinners, and milestone birthdays, to business and corporate functions, the team takes pride in crafting memorable experiences for both longtime acquaintances and new friends. The venue is known for hosting lively and cherished events, including the much-anticipated Birthday Girls Annual Christmas Party, which has become a local tradition.

The roar of the crowd, the dust rising from the arena, and the thrill of the competition—it’s rodeo season in Wilson County, and this year’s 7th Annual Fellowship of Christian Athletes (FCA) Pro Rodeo promises to be bigger and better than ever. Led by Rodeo Committee Chairman, Ed Barber and presented by Mending Fences Cowboy Church, this event isn’t just about top-tier rodeo action; it’s also a heartfelt mission to support local communities and share a message of hope.

FROM FUNDRAISER TO MISSION PROJECT

In 2018, Mending Fences Cowboy Church, under the guidance of its members and leaders,

envisioned hosting a rodeo to support their church. However, as discussions unfolded, a broader vision emerged. The team felt a calling to extend their support beyond their church and help another local ministry. After much prayer and consideration, they decided to use a significant portion of the rodeo’s proceeds to benefit the local Fellowship of Christian Athletes (FCA). Tim Bryant, Area Director for Wilson County FCA, was approached about this partnership. “The idea of blending rodeo excitement with a cause as impactful as FCA was truly inspiring,” says Bryant. “The rodeo’s transformation into a mission project provided a unique platform to support our programs and extend our outreach.”

Thus, the FCA Pro Rodeo was born—a collaborative effort that combines thrilling rodeo events with the goal of supporting local youth through FCA’s initiatives. Beyond raising funds, the rodeo serves as an opportunity for Mending Fences Cowboy Church to share their faith and build connections within the community.

Established in 2015 by Pastor Fred Davis and his wife Ann in Lebanon, Mending Fences Cowboy Church offers a welcoming, non-denominational environment where everyone can feel at home. Known for its

warm, family-like atmosphere, the church embraces cowboy culture with a strong western heritage. Attendees can expect uplifting sermons and a unique blend of cowboy and country gospel music performed by talented local musicians.

The church also runs Wrangler Church, a vibrant children’s program that shares Bible stories through engaging activities. Although the church faced the tragic loss of its founders in 2021, it has continued to thrive and serve the community. directions:

• Combine 1 cup warm water with 4 ½ teaspoons sugar and 2 teaspoons instant yeast. Let sit for 5 minutes

• Stir in ¼ cup more warm water, 3 ½ cups bread flour, and 1 ½ teaspoons salt

• Knead for 7-10 minutes until smooth and stiff

• Let dough rest in an oiled bowl, covered with plastic wrap, for 1 hour/until doubled

Make Chicago Style, Boiled and Baked, Yeast Bagels at Home

• Divide into 8 balls, shape by pressing your thumb through the center.

• Rest on a baking sheet, covered with a damp towel for 10 minutes

• Preheat oven to 425ºF

• Boil water with 1 tablespoon honey and 1 teaspoon baking soda. Boil bagels for 1-3 minutes, then place on a baking sheet

Join our Sister's Keeper, Inc. on October 12 at The Farm at Cedar Springs for their second annual Boots N' Shoot sporting clay fundraiser. This event will support a critical cause: helping women in the criminal justice system.

Founded in 2020, Our Sister's Keeper aims to bridge the gap in services for incarcerated women, who often face severe trauma and a lack of support. The non-profit, serving Wilson and Smith counties, provides essential resources including drug and alcohol treatment, mentorship, and even temporary pet housing.

This year’s Boots N' Shoot event will feature an expanded format, including an additional flight of teams and a Pro-Am competition where professional shooters will join each team. There will also be a separate competition for the Top Pro title.

Women’s incarcerations have grown at twice the pace of men’s incarcerations in recent decades and have disproportionately been located in local jails. In Tennessee, the number of incarcerated women surged since 2003, with many of these women experiencing severe childhood trauma and struggling to escape the justice system without support. Brittany Davis, a public defender, and Suanne Bone founded Our Sisters Keeper, Inc. to provide crucial assistance to these women. Their non-profit offers rehabilitation, job training, and essential resources, aiming to support women through and after incarceration. Farm-to-Table Experience

The Whited Family Farm invites you to an unforgettable Fall Farm-to-Table experience, October 19, from 6-9 p.m., 10001 Sparta Pike, Watertown.

Start the evening with a charcuterie board spread by The Roasted Coconut. Chef Tom will dazzle with Kalbi short rib bites, Mesquite shaved flank steak, and a creamy Butternut squash soup, followed by an all-youcan-eat feast of Angus steaks, stuffed gouda red potatoes, autumn salad, Asiago roasted green beans, and stewed okra and tomatoes - capped by cinnamon-baked apples with spiced caramel Crème Anglaise for dessert.
