The Minneapolis facility formally opened in early 2020 amidst the onset of the pandemic, with an out door affair to celebrate the new private terminal held in October of that year. “While that was not the most ideal time to open a new location, Minneapolis is hands down one of my favorite Jet Linx terminals,” said Dan Longo, Regional Base President for Jet Linx Minneapolis. “It is striking when you walk inside. It all started when Becky Leffler visited Florida when she was 18. Born in Duluth, Becky loved the lakes but had never visited the ocean until that fateful day. It was love at first sight. On that trip, casually wandering into a gift shop, Becky had an epiphany: this is what she wanted to do. “I don’t think I’ve ever been so happy as I was in that gift shop going, ‘Oh my gosh, I love the color, I love the smell, I love the fact the ocean is out side, and this is what I would like to do someday,’” says Becky. And though the sea breeze doesn’t quite reach Lake Minnetonka, through Sweet Nautical Boutique, Becky finally got her own waterfront gift shop.

Sweet Nautical started as an idea long before the store. “For 15 years, I had been saving my favorite brands and accessories thinking someday I would open a boutique,” says Becky. When Becky retired from her career in commercial real estate, she began thinking about a “retirement job,” and thus Sweet Nautical was born. Becky opened her first store in Prior Lake in 2017, with a second opening in Excelsior in 2019. Becky laughed about the early notion of going into retail. “I understood the business aspect of run ning a company but knew nothing about retail. I got a quick education.”

Since then, Sweet Nautical has flour ished. Becky created a website to show off new apparel in addition to social media

“I love Christmas, and I thought that might be a way to get people into my apparel store. I always say that Christmas saved my business,” says Becky. The Christmas pop-up was a hit, helping Sweet Nautical make a name for itself in Excelsior. “I think people were nostalgic, and staying at home, and family and the holiday meant a ton, so people just flocked to the store.” Due to the success of the holiday pop-up, Becky continued to use the previously vacant store to sell home décor and to repeat the Christmas theme each year.
Both stores sell women’s clothing, swimsuits, jewelry, and shoes, along with signs, towels and other nautical-themed goods. Becky looks for brands that are “unique and classic but with bold colors and prints. I really look for unique,” says Becky. “We try to shop for the whole look, from head to toe.”
“Keepinglocation. Excelsior alive and well during that time was really difficult,” says Becky. But, after seeing the vacant building next door, Becky had an idea: a holiday-themed pop-up.
Becky’s other secret to choosing great brands is her daughters Abbey and Dana. “When I shop for products, my daughters are involved,” says Becky. And it’s the intersection between the three women’s differing tastes that is the true litmus test for a brand. “When the three of us attend markets, we bring back a classic, sophisti cated look with a young twist on it.”
Becky opened the second Sweet Nautical in Excelsior about eight months before the pandemic. “It was pretty dev astating,” says Becky. With a store full of inventory and employees—including fam ily—on payroll, it was a tough time. During those early Covid days, Becky decided to consolidate her stores into just the Excelsior
Sweet Nautical was a retirement job. “I’m still having fun doing it,” says Becky. “If I’m not having fun, I’m going home, so yeah, we have a lot of fun at my store.” Beyond the job, Sweet Nautical still calls back to the feeling Becky had in that Florida gift shop all those years ago. “I just love when someone leaves my shop and feels good.” Becky told me the story of once paying a customer to try on a pair of jeans she wouldn’t have otherwise. Afterward, the customer “felt so happy and good about herself when she left, and I thought ‘that’s why I do this, that’s exactly why I do this.’" And that feeling hasn’t changed through the decades.

Carpentry was always something Mark King, owner of Infinite Decks wanted to do. Since high school he had ambitions to not only build decks, but to be the best, “The competitor in me to always strives and do better and be better,” says Mark. And from that ideology sprang Infinite Decks. Infinite Decks is a “high-end custom, outdoor-specialty company,” says Mark. That means they work on custom decks, metal pergolas, outdoor kitchens and other similar projects around the Twin Cities. In accordance to Mark’s com petitive nature, Infinite Decks strives to be the best: “We separate ourselves by bringing the quality of indoor craftsmanship outdoors. We pride ourselves on our design and quality.”
After working with many different carpenters, con tractors and landscapers, Mark came to realize that many decks were extremely similar in construction and design. In that repetition, he saw an opportunity to do something different with customizable, high-end decks. “No one else was selling that stuff so in order for us to build it, we had to do it ourselves,” says Mark. So, in 2013, Mark started his own business Infinite Decks. Mark comments, “We got to this because I just didn’t want to build the basic stuff. Everyone else can do that.”

A key aspect of Infinite Decks is their custom mate rials including lighting and railings. Mark credits their business partnerships for much of the company’s suc cess: “It’s these types of products and relationships that helps us build and create these high-end custom products that separate us from others.” Infinite Decks partners with Dekor Lighting for their custom lighting. Dekor Lighting has created not one but several underrail lights in honor of Mark and Infinite Decks called the “King light” and the “Infinite Light” respectively.
Their custom railings come from Railcraft which offers a wide selection of colors and top profiles that are cus tom-welded and bent, as well as powder-coated rather than “assembled in your yard,” says Mark. The choice of Railcraft was an easy one for Mark because with their product, “You just get way more options,” he says.

Social media was something Mark was keen to uti lize. From the beginning, Mark created a Facebook and Instagram page to show off recent projects and showcase behind-the-scenes of the company. “We were some of the first deck builders on there,” says Mark. Unsurprisingly, their pages flourished due to the stream of photos of ongoing and completed projects.
Since that time, their social media has, “created a com munity that they were part of from the beginning,” says Mark. Mark has even met clients and partners through their online presence.

By far the flashiest custom aspect of Infinite Decks’ builds is their StruXure louvered roofs. StruXure louvered roofs are basically motorized pergolas that act as a roof when completely closed. “It’s just a really cool option as opposed to a traditional porch roof, and you’re eliminating a lot of the natural sunlight where you dine and hang out with your family,” says Mark. What makes the StruXure louvered roofs so useful is “when you’re not concerned about shade or staying dry, you can open the louvers and let the sunlight in,” says Mark. Especially here in Minnesota where people want to extend the use of their decks earlier in the spring and later in the fall, “The structured lou vered roof is just a great option,” says Mark.
From inception, Infinite Decks was created to do something different with outdoor spaces, and “To most people a deck is just a deck,” says Mark, “To us, it’s an extension of our home. That’s kind of where we bring our detail and quality of the indoors out.” And that sentiment is really what Infinite Decks is all about…creating a custom space for cook outs and family dinners; creating a home, and giving homeowners the options to make it truly unique.
The main difference of working in the winter is how the company sinks footings into the ground. Using heat lamps, Mark is able to break through the frost in order to properly sink footings. THREE CHEFS SHARE THEIR TECHNIQUES TO CREATING THAT PERFECT PLATE.
A meme has been circling lately that says, “My favorite childhood memory is not having to think of what to cook for dinner every single day”. Most home cooks have had at least a few moments of greatness. A turkey that turns out perfectly. A cake that looks close to the recipe photograph. A family favorite that successfully stirs warm feelings of nostalgia. But then there are the long stretches of standard fare that turn out edible but definitely don’t look good enough to land on social media.

So we are gathering up some inspiration from three local chefs for their expert ideas and collecting some insight into the art of plating and why presentation matters.

Fredy Solis, head chef of 318, appreciates the creative aspect of cooking. “I just enjoy playing with food. Creating and playing. That’s my favorite part.” His signature style is rooted in freshness. Everything in his kitchen is made from scratch, sourcing the best local ingredients possible. Fredy also keeps things seasonal, and this is reflected in his menu selections. While flavor profiles are his top priority, Fredy acknowledges appearance matters. “If they (customers) see a dish with a good presentation, people will try it. The visual is very important. People will see something pass by that is appealing and want to order it for themselves.”
Fredy also is thoughtful about composi tion so that every ingredient can be tasted with each bite and says height is often used when plating. “I like to build up a salad. Not leave it flat on the plate. Building it up into a mountain makes it more interesting.”

One of Fredy’s tricks for pleasing plating is flipping the inside out. “Something sim ple like a sandwich — I try to make all of the ingredients even and then cut at an angle to expose the layers. Then I turn both sides outside on the plate. Displaying the inside of the sandwich on the outside. When the interior is visible it communicates to the customer that everything is fresh."

Zach Brown, chef and owner at Bull and Wren says food should be fun and interac tive and people ‘eat with their eyes first’ so appearances do matter. “We often make things shareable. Minnesotans love to share. It should be a talking piece — a con versation starter. Like our seafood tower. We build it from the ground up on a tiered tray. It has great height and we make it intui tive for the customer so they can just enjoy.”

Eli Wollenzien, chef and owner of Coalition, contends plating is both art and science. “A lot goes into creating a recipe and plating is one of many considerations. There are so many different styles of plat ing. Some can get very intricate. There is no one proper way. It has to fit your restaurant and has to be executed consis tently.” At Coalition, he often begins with a base, grain or potato to ground the plate and then cuts a protein in a manner that offers the best presentation. Vegetables cut using a variety of techniques can add texture and color. Edible garnishes can play a role too, adding color and visual interest. “The elements of a dish should be visible. Nothing buried. Some height is always nice. Keeping everything tight together on the plate and compiling ele ments to touch is best. Sometimes dishes have a tableside finish with a poured sauce or spice added by a server.”

Zach likes to use contrasting flavors and elements on a plate for visual and taste appeal. For example, his Sea Bass uses Pico de Gallo and pomegranate seeds. It’s unex pected, but the contrast works. He also likes to use sauces on the plate and infused oils to make the plate pop but also to get the customer involved, deciding how much or how little to add to each bite.
For home cooks, these chefs recommend a variety of things to make dinner at home a heightened experience and even look photo worthy. All of them mention the importance of the actual physical dishes for artful presen tation. White dishes are a great backdrop to highlight any dish. Or even solid black to make a vibrant sauce or side standout. And all three chefs emphasized taking some

time when cooking. Let the meat rest. Create uniformity on each plate. Invest in some proper tools like tongs, ring molds, squirt bottles to gain some control over each element. Prep everything and then assemble at the end. Have some fun with it. And practice. Practice is clearly the secret ingredient at all three of their restaurants.

The home features one-level living—the master bedroom, laundry, kitchen, living room, everything is on the main level. “I think what I am going to like the most is the one-level living,” said Pamela.
Even during the Artisan Home Tour, while most people tend to be awestruck by the bigger multi-level homes, the Simning’s found more people were linger ing and asking a lot of questions during the tour. “I was hesitant to have it on the
