Blending Craft & Community LJ CRAFTED WINES

ARTICLE LINDSAY BENSTER PHOTOGRAPHY COME WE CREATE PHOTOGRAPHY

LJ

Crafted Wines is an eminently innovative and award-winning winery, offering exquisite wines while practicing environmental

preservation and community involvement. Owner and founder Lowell Jooste possesses 25 years of experience, with expertise from his roots in South Africa and a meaningful personal history. Tracing back four generations to his great grandfather, Jooste grew up immersed in the industry. He proceeded to own and operate the family winery and vineyard for a quarter century before selling and relocating to California in 2012. Extensive knowledge combined with an inventive vitality earned the local business numerous awards: Finger Lakes International Wine Competition (the fifth largest international wine competition in the world) recognized LJ Crafted Wines with the Double Gold Award for their Patient Terrier Vineyard Pinot Noir. Other notable distinctions include recognition from the Winemaker Challenge and Wine Review Online. However, undeniable success is no coincidence, as every step in their meticulously researched process bears the same degree of consideration and craft.

14

La Jolla Lifestyle | November 2017

In order to attain such accolades, grapes are initially selected from the finest vineyards of the renowned Napa Valley. Due to the unique profiles of individual wine grapes requiring differing climates, particular varieties are collected from separate locations. “Our wine is single vineyard,” expert sommelier Derek Bacciocco explains, “which means each wine comes from one vineyard and is never blended.” While the quality and taste of LJ Crafted Wines established its distinguished profile, perhaps its most exceptional attribute is an innovative technology introducing a novel method of environmental preservation and taste enhancement. The Wine Steward, an avantgarde apparatus designed by Jooste, allows their specialty wines to be transported and served directly from barrels. Not only eliminating harmful waste emission involved in the bottling process, this further preserves the integrity of the original wine. “Only 30 percent of bottles get recycled,” Jooste shares, “leaving 70 percent of bottles as additional waste, filling dumpsites and harming the atmosphere.” With each barrel of wine containing roughly 300 bottles, the number of bottles saved by their methodology stretches over one mile if bottles were aligned adjacently. Further in the spirit of environmental conservation, the shop interior is comprised of repurposed components from the 2014 earthquake, an event destroying the majority of their barrels. Wood from the damaged receptacles lines the shop walls and glass holders, while silver hoops binding the barrels now serve as decorative light fixtures. Beyond the symbolic significance, the recycled pieces accentuate the beautiful ambience. The entire atmosphere of the Birdrock shop perfectly represents the business itself - an unrivaled fusion of quality, environmental consciousness and satisfaction. “It’s an unpretentious environment for locals to gather, where people can catch up and ask questions about wines,” Bacciocco shares. LJ Crafted Wines is kid-friendly, environment-friendly, and just plain old downright friendly to everyone else. The product entices customers and the experience transforms them into family. “We’ve had fantastic support from the community,” Jooste mentions, “we can only thank them!” LJCraftedWines.com

Bella Vista Social Club & Caffe, also known as Bella V, is at the

center of La Jolla’s science and research community. Because of its proximity to Salk, Scripps, and UC San Diego (UCSD), San Diego’s science, biotech, and research community often frequent the cafe. “If you're checking out the biotech scene and the Mesa, we’re a must,” says Amanda Caniglia, who co-owns the cafe with her husband, Nico. Whether you’re in the science industry or not, the cafe prides itself

as a welcome place for all. “We’re a central gathering place for people here,” says Amanda. “It’s an approachable, relaxed atmosphere — very welcoming and inclusive.” From the start, Nico and Amanda wanted to create a piazza,

similar to a common gathering place you would find in Italy. “There was something missing here,” says Nico. “We wanted to create a little piazza for La Jolla so people can meet up with friends, family, and their kids.” The cafe also caters events in their auditorium, which fits 180 people, hosting nonprofit and social networking events, symposiums, and speakers. Bella V’s eclectic menu is influenced by Nico’s 10 years of travel. “I

collected a lot of recipes so I was able to create an unusual menu,” he

says. Nico attended culinary school in Switzerland, but credits most of his culinary knowledge to what he learned in the kitchen growing up in his Italian family, especially from his mother.

WEEKEND BRUNCH

The spread for brunch on Saturdays and Sundays is a highlight of the menu served here. Amanda and Nico present globally inspired creations aimed to please every taste preference. Everything from healthy bowls, Benedectines, Croques and quiches to omelets, paninis and salads as well as French toast and crepes for the sweet toothed are yours. Combine that with the view for a lovely weekend get-together with friends and family. Available 8 a.m.–3 p.m.

The menu’s global influence pulls from regions like Italy, France, India, and Mexico. Main entrees include paninis, salads, and pastas, such as seafood pasta, gnocchi, and ravioli dishes, with wine, beer, and wine-based cocktail options. Because Bella V posits itself as a social meeting place, they offer a variety of tapas, including calamari, truffle Parmesan French fries, and cauliflower ceviche. Bella V ensures their ingredients are always fresh and their recipes stay consistent. Bella V’s Happy Hour is prime time for people to gather on their 7,000 square foot ocean view patio. Throughout the week, they feature live music and karaoke nights, cabaret dinners with highly esteemed musical acts, and UCSD Triton Taco Tuesdays. They also host cultural nights that focus on region-specific food and music. “We’re trying to pull people together to celebrate different cultures,” says Amanda. “We have a multi-cultural staff and we speak several languages, and we love cultural exchange and travel. We wanted to infuse that into the space.” In December, Bella V will host ‘Swissmas’, their annual holiday celebration highlighting Swiss culture, complete with live carols and food tents. Nico’s mobile restaurant, Swieners, will serve their signature Swiss-like hotdog: a baguette stuffed with sausage and melted cheese. They also have exciting projects in the works, airing their own show and also initiating a GoFundMe campaign to help Bella V optimize the space to better meet their customers’ needs. Made Fresh Daily, in Del Mar!

Photography by Dogma Pet Portraits

In a world where pet food can include any number of ingredients that would not only turn your stomach... but might well turn your dog’s, we bring you the only brand of pet food with wide open kitchens, USDA certified ingredients, veterinary trained Consultants, and a level of transparency never before seen in the pet food business. We started JustFoodForDogs seven years ago and in the process invented the fastest growing segment of the pet food industry - fresh whole food diets. These diets are made with ingredients certified by the USDA for human consumption but are nutritionally balanced for pets. Our 8 staff veterinarians have been specifically trained in canine and feline nutrition and they work to ensure the recipes are the very best they can be. In September we opened our 10th location, in the Del Mar Highlands Town Center. We invite you to come by and tour something you have likely never seen before chopping, grinding, cooking and packaging of restaurant grade ingredients... all for your pets! We are pleased to state that our diets have been proven healthy through a year long, university conducted study. Perhaps this is why hundreds of veterinarians in the greater LA area routinely recommend our food for their

patients. We offer seven daily diets, a line of prescription food for sick dogs, and a custom formulation service for pets with Special needs. Have questions? Endless creativity, artistry and intuition were always part of my passion while cooking in the kitchen growing up. The discovery of ingredients would awaken all of my senses.” He began his formal training at Le Bretagne Restaurant in Questembert, France, where he apprenticed with the legendary Georges Paineau. Jumping continents, Chef Guillas moved on to become chef de cuisine at Le Dolmen in French Guyana and to the Maison Blanche restaurant in Washington DC as chef tournant, chef saucier, and sous chef under Pierre Chambrin, former White House executive chef. Chef Guillas relocated to San Diego and spent five years as chef de cuisine at the Grant Grill, located in the US Grant Hotel in downtown San Diego’s historic district. He became the Executive Chef of La Jolla Beach and Tennis Club in 1994. He is also the chef spokesman for the Macy’s School of Cooking where he shares his passion for the culinary arts. Chef Guillas travels extensively throughout the world promoting his restaurants and the San Diego region. “I am energized by the beauty of life, the art of cooking, the discovery of travel and the passion of the human race,” he shares. “Traveling the world, I am inspired by all of the warm, friendly hospitable people who opened their hearts and homes along the way while sharing their culture and cuisine with me during this exhilarating voyage.” For this chef, it is the magic of adding unusual seasonings to titillate the palate that does the trick. FAVE GO-TO DISHES FOR HOLIDAY ENTERTAINING

For the holiday season, I love to celebrate with ingredients that are bountiful during the fall and winter. Truffle Mushroom Cocotte, Organic Rainbow Beets, Wild Prawns, Lobster Tail, Kobe Beef would be found on my holiday menus, to name a few. For desserts, Crème Brûlée flavored with my favorite spirits, Valrhona Chocolate, Nocello Walnut Cheesecake and our signature Spindrift Cobblestone Pie rings in the holidays with joy and delight. That’s like asking a father which is their favorite kid! I love them all, but being raised by the ocean and now living on the ocean, I would recommend to start with the Sea Trio which consists of vanilla infused lobster, tuna and steelhead sashimi topped with caviar pearls. For the main course, the Sea Salt Crispy Skin Branzino is served on a bed of blue crab, celeriac puree and dusted with chorizo brioche…delicious! 22

hen you are tasked with bringing a dessert to a dinner party and are look-

ing for an alternative to the ubiquitous apple pie, give this sweet yet tangy confection a try. We suggest pairing with a scoop of vanilla bean ice cream and a drizzle of dark chocolate. Serves 8 - 12 INGREDIENTS:

Pie crust (your choice) 5 cups fresh or frozen cranberries 1 1/2 cups sugar (add up to another 1/2 cup if you like sweeter or decrease by 1/2 cup if you like tart) 1/2 cup chopped walnuts, toasted 1/4 teaspoon nutmeg 1/2 teaspoon cinnamon 1/4 teaspoon allspice pinch of cloves zest from one orange 4 teaspoons instant tapioca 2 Tablespoons cold butter, cut into small chunks Demerara sugar for sprinkling on top (optional) METHOD:

Preheat oven to 325°. Prepare your favorite pie crust. While it is chilling, combine cranberries, sugar, walnuts, spices, zest, and tapioca in a bowl.

Roll out the crust and transfer it to your tart pan. Pour in all of the filling as it will cook down. Dot the top of the tart with butter.

Bake for about one hour, until the crust is browned and the filling is bubbly. If the crust starts to brown before the filling is done, cover the crust with a ring of aluminum foil.

Sprinkle top with sugar, if desired. Allow to cool and set completely before serving.

Local’s Choice

What I love about La Jolla: The views and spectacular coastline, absolutely breathtaking and something we take for granted! Every day I drive into La Jolla, I am reminded to enjoy these wonderful surroundings.

Chino Farms

Ingredient to work with: Chino Farms corn. It’s delicious and so versatile.

Recommended dish at NINETEN: Stone Crab & Old Bay Spaghettini. Made with Fresno chilis, garlic, lemon, garlic chili oil, herbs, and breadcrumbs.

Restaurant: Asador Etxebarri in Spain. It’s an unpretentious Spanish restaurant in the Basque Country where Chef Victor Arguinzoniz cooks everything over a grill.

My FAVORITE Things

EXECUTIVE CHEF JASON KNIBB | NINE-TEN RESTAURANT AND BAR

Jason Knibb has spent more than a decade as Executive Chef at La Jolla’s NINE-TEN Restaurant, amassing many awards and accolades for his style and cuisine while helming this hidden neighborhood gem. “Call me biased but I have to say it is amazing that we have been around since 2001 and still a lot of locals don’t know about us,” he says. “And we recently unveiled a complete renovation of our main

Best part of working at NINE-TEN: The people. We are truly a family. My team allows me to continue to do what I love, being hands-on and working on the line. Almost every dish that leaves our kitchen has something on it that I actually touched. There is no pomp and circumstance for me. I just want to cook!

dining room, bar, and outdoor dining areas. We invite everyone to come see our new digs!” Nine-Ten.com Secret talent not many know: I used to be a really good surfer!

Local spot to frequent (other than NINE-TEN, of course!): Whisknladle for their elevated comfort food and back-to-basics approach to cooking. George’s at the Cove where Chef Trey Foshee is a master at delivering contemporary California cuisine. Quote: Make it nice or make it twice!

Guilty indulgence: I have an enormous sweet tooth. Can’t get enough of ice cream and candy!

Charity to support: The San Diego Food Bank’s Food 4 Kids Backpack Program, which provides weekend food packages to chronically hungry elementary school students from low-income households. And anything to do with supporting our local farmers and promoting sustainability!
