Welcome fall! With the changing seasons comes a change in what we are craving, and with fall that often means comfort food. October is our most delectable issue of the year, filled with some of our favorite dishes and beverages around town. We had the pleasure of sitting down with the chef and owner of Cafe Juanita, and learned about how she develops the menu - whenever you visit Cafe Juanita you know your taste buds are in for a treat! We also included a few fun spooky cocktail recipes for you to try at home, whether you're sipping alone or entertaining guests. The smells of fall bring memories to my mind of pumpkin patch visits, tailgating, and Halloween parties; and the aroma of cinnamon, apple, pumpkin, chili and soups of any kind brings me right back to those moments. There is definitely an art to creating a flavorful dish that not only satisfies our taste buds but evokes memories. The aroma of certain spices and foods can bring us right back to another time, which can be incredibly powerful and comforting. Food brings us all together, and whether we are sharing a meal with loved ones or enjoying a night out on the town, the time spent while enjoying food is invaluable. Autumnal Tablescapes

As the colors transform around us, so does our table decor. I researched the hottest trends for your Fall 2023 table decor.

Loose leaves, eclectic dried florals and foliage make for a highly sophisticated look. Try arranging dried floral displays in multi-size mini vases either in clear, amber or deep blue glass hues. Or make a boho tree branch chandelier to hang over your dining table; tying stems, mini pumpkins and fairy lights to it for an ethereal look.

Fresh pumpkins and gourds of all shapes, sizes and color offer a timeless appeal that transitions through Halloween into Thanksgiving. In a captivating twist, intersperse some seasonal fruits such as pomegranate and fig.

I personally love white pumpkins interlaced with dried eucalyptus and soft candle light.

Faux pumpkins are also a popular choice; this year play with layered textures such as knit, velvet and rattan.

Mercury glass and copper are very much seasonal must-haves, especially if you intend to bring that cozy harvest look all the way through to Christmas.

Not Resting on Their Laurels

Kirkland Lifestyle talks with Chef Holly Smith about Cafe Juanita: Past, present, and future.

Holly Smith has been running Cafe Juanita as the owner and chef for 23 years. Previously, she’d worked at the Dahlia Lounge and Brasa in Seattle, and gone down the “French part” of her creative path before settling on a regionally specific Italian specialization. Tom Douglas himself was the one who suggested Smith purchase Cafe Juanita. Given that her first cooking job was in a house, the restaurant was especially appealing as a free-standing building

with garden space. By the time she bought it, the restaurant had already been operating under the name Cafe Juanita for twenty years. Smith says she kept the name to be pragmatic, understanding that locals would keep calling it Cafe Juanita regardless.

Operating as a female restaurateur in a field that can feel male-dominated, Smith cites Tamara Murphy of Terra Plata, Maria Hines - formerly of Tilth and Agrodolce, and Lisa Dupar of Lisa

Dupar Catering and Pomegranate Bistro as other notables. Of awards bestowed on female chefs Smith says, “I’m conflicted. It’s not weight-lifting…there are no gender-based differences in how the job is done.” However, Smith notes that many restaurants affiliated with female chefs and/or owners have closed in the last ten years.

Our supply chain, work-life balance, and staffing are all different.” Even now, Cafe Juanita still sees guests who are coming out to dinner for the first time since COVID. “I’m grateful, and I know the team feels proud that people trust us with their health, and we keep improved safety measures in place.” The restaurant came back after the pandemic with a tasting menu only, but Smith emphasizes that substitutions are available as well as à la carte menu items.

Smith says one of the hardest struggles in running a restaurant is finding experienced people in the hospitality industry with stability in their profession. “The labor thing is getting harder and harder. This is an area that’s hard to afford to live in, and that makes running a business challenging; you need a community of workers and consistency is key in food and hospitality.”

Asked about what inspires Cafe Juanita’s menu, Smith says “Hunger is at the forefront of menu development.”

Seasonal flavors like nectarines, squash blossoms, asparagus, etc. lend a sense of timeliness to the food. Each dish is ingredient-driven, and the vegan, vegetarian, and omnivore options are all in the same vein. Smith maps out menus, engages in tasting and tweaking, and experiments to see how each dish should be plated. The restaurant is closed on Thursdays, and Smith calls those “R&D days” for menu development, when the staff makes and tastes new recipes, or even just talks about them.

As for the future of Cafe Juanita, Smith says “I can imagine getting to a place where there are a few less tables,” to keep menu flows consistent, they’ve controlled for volume since before the pandemic. Conscious of the impacts of climate change and the sustainability of certain ingredients in the supply chain, she asks, “What are we going to have left to cook in ten years?” The menu is more vegetable-driven than in previous years, and Smith mentions that Cafe Juanita serves little salmon, as it’s a precious resource that’s prone to being overfished. “The most important thing to me is that Cafe Juanita always feels modern and continues to evolve. Our team is not interested in resting on our laurels.”

Seattle-based The Waves co-founders, and President and CEO respectively, Andy Comer and Gaurav Tiwari met as fellow wine lovers. Comer, formerly GQ’s first-ever digital editor and a marketing executive for brands such as Nordstrom, entered the hospitality industry recently—earning Seattle restaurant Tomo a 2022 James Beard Award

All wines are hand-selected by this dream team, organically farmed, and free of 70+ additives that are currently allowed—without consumer disclosure—in the United States. “We’re like Spotify, for natural wines,” states Tiwari. “We are here to make shopping for wine more transparent, approachable, and fun.”

“We were shocked to learn that only 5% of the world’s vineyards are organic,” says Comer. “Consumers have a right to know about all these added ingredients, and they deserve a company that eliminates the noise and assures organic farming and quality product. Wines have been made naturally for 6100 years. It was only in the 20th century that these additives came into play for a variety of reasons,” he emphasizes. The additives are used to stabilize the wine, kill bacteria, sweeten the flavor, and enhance its appearance.

“Great wines are made in the vineyard, not the winery,” says Tiwari. LEGION SPORTS BAR

Kirkland Lifestyle caught up with Leilani Wong, who owns the soon to open high-end sports bar with former Seahawks Richard Sherman and Kam Chancellor. Located in Bellevue at Lincoln Square, 700 Bellevue Way, Legion will feature an upscale bar setting that is welcoming and inclusive. “Elevated soul food” is on the menu, with Chef Reginald Jacob Howell at the helm. While the establishment takes its name from the Seahawks’ Legion of Boom, Wong is quick to point out that Legion is for fans of all the Seattle sports. “We are very excited about being a part of this community,” she says. Look forward to visiting Legion this fall!

ROCKCREEK

An offshoot from Seattle, RockCreek will be opening in December near the waterfront across from The Slip at 89 Kirkland Avenue. Chef/owner Eric Donnelly has owned RockCreek Seafood & Spirits in Fremont since 2013. The new Kirkland space will offer a robust food program including the greatest hits from the Seattle location, along with new dishes and a heavy seafood focus complete with a chilled shellfish platter.

The 5,000 square foot space will seat 90, with an additional 60 seats outdoors, and a private dining area with a bar that seats up to 45. The restaurant will be open for lunch, happy hour, and dinner daily, with brunch service Saturday and Sunday. A 33-foot natural basalt bar anchors the main dining room, alongside beautifully designed yellow walnut booths, rough sawn barn tresses, and a large woodfire oven. Newly installed floor to ceiling windows will offer sweeping views of Lake Washington and downtown Seattle. “We’re really looking forward to getting up and running, having those beautiful summer evenings on the patio with a bottle of rosé,” Donnelly says.

MOSS BAY HALL

The proprietor of Moss Bay Hall, Justin Andrews, is Kirkland born and raised and knows exactly the type of place that’s needed downtown. He’s now raising his own family here, and has coached football at Lake Washington High School as well as Little League. Andrews has co-owned Queen Anne Beer Hall since 2020 and Moss Bay Hall will be a sibling to that establishment. Having taken over the old Wilde Rover spot on Central Way, he’s gutted the space to create something for everyone to enjoy. Moss Bay Hall will feature 24 taps, a great wine selection, tapas, flatbread pizzas, and the pretzels that are so popular in Queen Anne. Kirkland residents are excited for this addition to downtown, and the possibility of live music there. Moss Bay Hall is slated to open by the end of 2023.

• 2 ounces cachaça (Brazilian sugar cane rum, silver rum can be substituted)

• 1 ounce Galliano liqueur

• 1/2 ounce lemon juice

• 1/2 ounce brown sugar & cinnamon syrup

• 2 tablespoons pumpkin puree

• fresh nutmeg

Combine all ingredients except for the nutmeg in a shaker tin. Add ice and shake vigorously until sufficiently chilled and blended. Strain through a mesh fine strainer into a martini glass or other decorative glassware without ice. Shave fresh nutmeg over the top as a garnish and enjoy!

TOASTED MALLOW

• 1 1/2 ounces vodka

• 1 1/2 ounces chocolate liqueur

• 1/2 ounce Frangelico liqueur

• graham crackers

• marshmallows

Combine all ingredients except for the graham crackers and marshmallows in a shaker tin. Add ice and shake vigorously until sufficiently chilled and blended. Crush graham crackers in a plastic bag to make a fine powder. Coat half of a martini glass with your crushed graham crackers and strain your cocktail into the coated martini glass. Layer the top of the drink with marshmallows and toast with a crème brûlée torch. Enjoy!

PUMPKIN BRAIN PURÉE

• Mint cocolate chip ice cream

• Halloween Oreos

• Gummy worms

Crush 5-8 Oreos inside a plastic bag. Layer the bottom of a glass with half of the crushed Oreos to make a nice base. Add 2-3 scoops of mint chocolate chip ice cream and fill the rest of the glass with cold milk. Add another layer of crushed Oreos to float on top. Finish with 2-3 gummy worms around the top and enjoy!

CANDY CORN BOURBON

• 2 ounces bourbon

• 1/2 ounce brown sugar & cinnamon syrup

• 2 dashes of orange bitters

• 5 candy corns

Combine all ingredients in a shaker tin. Muddle the candy corns inside the shaker tin, add ice and shake vigorously until sufficiently chilled and blended. Strain through a fine mesh strainer in an old fashioned glass over a large ice cube. Garnish with a piece of candy corn on top of the ice cube and enjoy!

THE FLAVOR OF FALL

Apples are the trademark fruit of fall, and with the many varieties to choose from, there is an apple that is sure to please any palate. They can be included in both sweet and savory dishes and are delicious and incredibly healthful. We all have heard the saying, “An apple a day keeps the doctor away.” While they aren’t a cure-all, apples are packed full of polyphenols, antioxidants, vitamin C, B vitamins and fiber. Make the most of autumn’s best produce and the flavors of fall with this simple recipes.

APPLE GALETTE WITH CARAMEL DRIZZLE

Easier than pie but with all the same textures, this gooey warm dessert is sure to please. For simplicity, this can be made with a premade crust.

INGREDIENTS:

Crust:

• 1 1/2 cups flour

• 1/4 cup sugar

• 1/4 teaspoon salt

• 1 stick cold unsalted butter, cubed

• 1/4 cup iced cold water

Filling:

• 2 apples, peeled and sliced into thin slices

• 1/4 cup packed dark brown sugar

• 1 1/2 tablespoons flour

• 1 1/2 teaspoons lemon juice

• 1 teaspoon cinnamon

• 1/4 teaspoon ground nutmeg

• Caramel sauce

• Optional: 1/4 chopped walnuts or pecans

INSTRUCTIONS:

Crust:

(Note: If running short on time, store bought crust works great, too.)

Mix flour, salt and sugar together in a bowl. Cut in the butter. Add water and mix until moistened. Lightly knead the dough and then form into a ball. Next, flatten dough into a thick circular form and refrigerate for one hour.

Filling: Mix the apples, flour, lemon juice, cinnamon, nutmeg and brown sugar together in a bowl.

Assemble and Bake:

Preheat oven to 375 degrees. Line a baking sheet with parchment paper. Roll the dough into a circle and set on parchment paper. Arrange apples in center of dough, leaving about one inch of space for the edges. Fold crust over the apples and press to seal edges. Drizzle with caramel sauce and sprinkle with pecans or walnuts. Bake for 35 minutes. Serve with caramel sauce and ice-cream.

Woodinville Sauce Co. embodies local flavor in more ways than one. Its label features a drawing of a chef tasting his creation and is inspired by Dave Holthus, who wears his chef’s smock whether he’s manning a farmers market booth, offering samples at a store, or mixing ingredients in the facility where his sauces are made, bottled, and labeled. He’s Chief Flavor Creator, ingredient procurer, sauce marketer, and around-the-clock solo entrepreneur. His restaurant-grade sauces have caught the eye and taste buds of numerous retailers, including PCC Community Markets, where he landed in late November.

Serendipity Cookies was founded by Selina Park; she started baking in late2019 while working as an ICU nurse to help cope with the stress she was facing at work due to Covid-19.
