Nurturing Community, One Guest at a Time
“Food is one of the most direct ways we connect with people,” says Chef Michael, Executive Chef of Coppin’s at Hotel Covington. “A well-prepared meal can create memories, bring comfort, and foster community.”
Located on Covington’s bustling Madison Avenue, Hotel Covington opened in 2016, breathing new life into the walls of the historic Coppin’s Department Store building. The facility boasts 114 guest rooms, in addition to a number of unique restaurants, refreshing courtyards, and relaxing lounges.
“Working with those who share our commitment to quality allows us to showcase the best of the region while also supporting the local economy,” Chef Michael reports. “Beyond sourcing, we also partner with community organizations on special events and initiatives, which allows us to connect with people in ways that go beyond the dining room,” he says.
Chef Michael’s culinary journey began at just 16, working as a casino buffet cook. “I realized quickly that if I worked hard, I could learn, grow, and move up,” he recalls.
That mindset has served him well, both in and out of the kitchen.
“Becoming a chef has taught me patience, discipline, and perspective,” he says. “It’s shown me that even in the middle of chaos, the best path forward comes from staying calm, collected, and focused.”
It's wisdom that applies far beyond the culinary world. Chef Michael expresses how fortunate he’s been to work alongside exceptional chefs who shaped, in his words, “not only how I cook, but how I lead.”
Among those inspirational people is Gary Davis, executive chef for the Cincinnati Reds. “He remains one of the best leaders I’ve known— he consistently prioritized his team’s well-being and pushed me to be my best.” He also touts working alongside William Becker at Horseshoe Casino, when Becker was vice president of food and beverage, and Chef Michael was sous chef. “He was one of the most creative chefs I’ve worked with, and someone who demanded the highest standards,” Chef Michael says, today.
Chef Michael's first executive chef role was at Jeff Ruby’s, downtown. “What I took away most from that experience was the uncompromising attention to detail and the unmatched standard of service, lessons that continue to influence me today.”
He’s also learned the value of effective teamwork in that time.

“I lead with collaboration and empathy. The best kitchens are built on respect and open dialogue—by listening to my team’s thoughts and opinions, I can guide us all toward the highest standard,” he says.
When asked to name a couple of Hotel Covington’s signature items, Chef Michael is quick to respond: zucchini fritters and a seared scallop entrée.
“The zucchini fritters are one of our most approachable appetizers,” he explains; “shredded zucchini with herbs and panko, lightly seasoned and served with a refreshing tzatziki. They’re simple, familiar, and consistently a crowd favorite.”
The seared scallop entrée, on the other hand, is “a bit more elevated,” Chef Michael says. “We pair the scallops with a harissa beurre blanc, braised peas and fava beans, and a gremolata. The dish works so well because of the contrast—the natural sweetness of the scallops balanced with the spice of the harissa you get a bit of citrus from the gremolata.”
“A common misconception is that being a chef is all glamour and creativity,” he points out. “In truth, this career is built on discipline, consistency, and attention to detail. Creativity comes through that structure, not outside of it. It also goes far beyond cooking; you have to understand the business side, manage operations, and develop your team.”
Chef Michael, who grew up just a half hour away in Southeastern Indiana, today considers Greater Cincinnati home.
“What I love about Cincinnati is that it’s a city with extraordinary food and beverage scene, anchored by many incredible restaurants. We have world-class cultural institutions, professional sports teams, and neighborhoods that are rich with character. I’m also a lifelong Reds fan and a season ticket holder," he
says. "There’s nothing quite like the atmosphere at Great American Ballpark on a summer evening—the energy of the crowd, the connection between the city and the team—it’s a reminder of how much pride people take in this community.”
Hotel Covington provides three services daily— breakfast (Monday–Friday), lunch (Monday–Friday), and dinner (Sunday–Thursday until 9pm; Friday and Saturday until 10pm). On weekends, Hotel Covington offers brunch. “We also operate Coppin’s Alley, our late-night walk-up window, which is open Thursday through Saturday evenings,” he adds.
No matter the day, time, or dish, it all comes back to nurturing the community, Chef Michael says.
“It’s not just about what’s on the plate, but about creating a complete experience where hospitality, service, and atmosphere all come together,” Chef Michael explains. “When we do it right, guests leave not just satisfied, but with a sense that they’ve been cared for. That is what makes this work meaningful.”

That diet you’re on isn’t going to work. Certainly not for the rest of your life. That’s what Certified Nurse Practitioner Emily Bach knows, and teaches her clients ahealthier way.
Emily Bach Health Coaching helps clients build a better (and longer) life by creating and maintaining sustainable habits. It goes deeper than “eat more and move less.” Emily says it’s about breaking cycles we’ve been trapped in for decades.
Emily advises, “If you want to lose that physical weight, you also have to deal with the mental weight. Some of it may be coming from stress, anxiety and even trauma. We’re using food as a coping mechanism.”
The food industry doesn’t help, according to Emily. She says, “we’re eating a lot of foods that weren’t around 50 years ago. They’re designed to keep us eating more and more… definitely past the point of being full.”
There are four main pillars of Bach’s client work. They are:
• Awareness - helping people recognize how their eating patterns and daily activities affect their overall health
• Education - sharing knowledge about the intricacies of nutrition
• Hunger Cues - helping clients tune into their body’s signals
• Logistics - managing details within busy lives
That last pillar—logistics—is often the game changer. Emily explains that understanding the nuances of someone’s daily routine can unlock untapped potential.
“It can be the littlest things preventing someone from gaining healthy habits,” Emily explains. “We go deep and figure those things out.”
Those details become harder to manage over the holidays. When treats abound, travel ensues, and stress triggers are everywhere, keeping up good habits can be more challenging.

“The key is not to throw in the towel. Stick with your plan until you can’t. Then make the best choice you can in the situation and be done with it. Don’t stay in guilt mode. Just move on… starting with the very next meal.”
So what does that plan look like? Emily recommends creating an eating strategy that spans from Halloween to New Year’s. Whether you plan a week at a time or just one day ahead, the goal is to make decisions before you’re in the moment. That way, you’re not relying on willpower alone.
“Plan to eat your favorite things like your grandma’s pecan pie for example. But then also maybe plan to eat healthier the day before and the day after,” Emily says.
She continues, “This is why diets never work. Because you restrict yourself for a few weeks or months and then you get burnt out and you just go back to bad habits.”
The solution isn’t to skip the pie—it’s to be intentional. Grandma’s pie may be worth it, but those cookies in the break room that don’t even taste good? Not so much.
Another tip Emily shares is to bring a healthy dish that you love to holiday gatherings. Emily says she likes to bring perfectly roasted root vegetables, for example, to Thanksgiving. A truly delicious salad that looks inviting is another requested option. For holidays, that might include dried cranberries, nuts, and whole grains.
Emily is also passionate about helping children develop a healthy relationship with food, including her own two little ones. Even during the holiday chaos, there are ways to support kids in forming balanced habits. One of her favorite strategies is to neutralize food—removing emotional labels like “good” or “bad.”
Giving her kids a brownie on their dinner plate is one way she does this. “So many of us were taught we have to finish what’s on our plate to get dessert. And that’s not actually healthy.”

“When I worked in a hospital I was just putting on band-aids, literally and figuratively. I was helping people with heart disease and other chronic diseases. What I do now really gets to the root cause so they can have a better chance at avoiding those things,” Emily explains.
She helps people enjoy their lives not only now but later in lifeincluding all those holiday gatherings in the years to come.
Most clients begin with a 12-week program designed to disrupt unhealthy patterns and replace them with a strong, lasting foundation. Emily adds, “I want people to be able to get on an airplane to visit their kids, go hiking and play with their grandkids when they’re in their 70s and 80s.

How To Stay Festive And Healthy? Sure Thing
Halloween is typically filled to the brim with salt, sugar and carbs. It can be hard to stay on the nutrition wagon during spooky season, but there are plenty of fun ways to add a festive spin to favorite healthy dishes.
With luck finding a melon or watermelon at the store, simply carve it like a jack-o-lantern and make the mouth large enough to have other sliced fruit emerging, such as cut pineapple, sliced grapes and apple chunks. Along the side, peel mini oranges and add a green stem to mimic pumpkins.
These fan favorite boards can easily be kept healthy with some additions. Make any treat spooky with edible eyeballs. Adding them to a small snack such as mini bell peppers or grapes and strawberries is a fun way to stay on theme without sacrificing a healthy streak. Eyeball salami rolls also can be added, starting first with a green olive in the center, surrounded by a roll of mozzarella cheese and then surrounded by salami or even prosciutto.
This fall staple easily can be incorporated into a fall gathering or Halloween night by carving jacko-lantern faces in orange peppers, and resuming a favorite recipe from there. Serving bread on the side? Use a skull or pumpkin shaped cookie cutter to re-shape it.
Hummus and pitas can be made scary in no time. Use a ghost shaped cookie cutter to shape pita bread, lightly toast and serve with red pepper hummus, which is usually orange in color.
The easiest bet for a quick and healthy Halloween treat? You can’t go wrong with a veggie tray shaped like a jack-o-lantern. Use baby carrots as the base, and cucumber or celery to shape the mouth and stem. The eyes? Two round bowls of veggie dip.
