I hope this letter finds you lying by the pool or lake and soaking in some much-needed Vitamin D.
As the days grow longer and the weather gets warmer, I find myself eagerly anticipating the arrival of summer. There's just something about this season that brings about a sense of excitement and adventure.
Sure, fall has my favorite flavors and scents, Winter has its cozy charms and I can't deny the beauty of spring. But when the summer solstice rolls around, I’m more than ready for the long, languid days sitting by the pool or floating on a boat.
The pages in our Summer Fun issue will help you make the most of this season in South Denver. And even if summer doesn't mean three months of summer vacation anymore (because we're, you know, adults) we can still look forward to an adventure by crossing things off our ultimate summer bucket list (check the table of contents for ours!).

Postino is throwing down this summer with the inaugural Battle of the Bruschetta, a three-month, bracket-style competition between eight limited-time bruschetta recipes developed by Postino executive chefs. The C.A.S.T. (“Catch A Special Thrill”) for Kids Foundation will hold its inaugural C.A.S.T. for Kids event at Chatfield Reservoir in Littleton on Saturday, July 29. This will be a free boating and fishing event for children with special needs. The event is open to all children, ages six through 18, no matter their disability. The Highlands Ranch Farmers Market has been part of the Douglas County community for over 14 years. Located in the square of Highlands Ranch Town Center, the market brings more than 40 vendors to our area every Sunday.
Under the white vendor awnings of the market, you’ll find everything from fresh local produce to oreo churros made while you wait and handed to you warm from the fryer carefully wrapped in a paper bag.
Rich Freeman is the Manager for Denver Farmers Market, which operates four markets, including Highlands Ranch. He says, “The reason why farmers’ markets are so popular is simple. People like to know where their food comes from, and they love the personal interaction with our farmers and family-owned businesses - like Styria Bakery. Colorado proud!”
Styria Bakery is a regular at our local farmers market and provides gourmet breads and pretzels. Their handmade gourmet breads use a natural starter, reducing the need for commercial yeast and any number of preservatives added by other bakeries.
Styria Bakery owner Shannon Campbell also mentions how important the personal interaction with customers is to her.
“All three of our children’s first summer job was working at a farmers market and our customers have watched them grow up. From our family to yours, thank you for continuing to support our business,” she says.

Ask any athlete in Colorado what one of the most basic elements of maintaining performance and health at high altitude is, and they will answer hydration.

Coloradans love summertime living. With blue sky for miles and views from Pikes Peak to Longs Peak, who wouldn’t? An all-season outdoor space helps extend deck season beyond the summer months, akin to adding a room to your home.
That’s precisely what this Westridge homeowner wanted. Sitting on the southwest border of Highlands Ranch, the orientation of their home offers expansive mountain views right out the back door. They called on Elite Landscape & Outdoor Living to turn their exposed concrete patio into a year-round outdoor living space.
“We liked the idea of having an extension of our family room to the outdoors. We also wanted to maximize our unobstructed views of the mountains.”
“Our favorite feature of the project is the 20-foot glass wall and door. It opens up our great room, brings in more light, and has transformed the inside of the house as well,” the homeowner tells us. “People come in through the front door and are instantly drawn to the patio for the views of the backyard and mountains.”
Once outside, the patio cover and deck extension spaciously fit an outdoor lounge area, dining table, and cooking space. The homeowners use this space for entertaining, basic weeknight dinners, watching tv, and sitting around the fire pit. They can open the glass sliders completely to invite people directly outside. The patio roof both shades the space during summer months and retains heat from wall-hung heaters during cooler months.

EXPLORE A NEW AREA OF YOUR CITY
Nothing describes summer better than a good cookout! And what is a cookout without a good, quality steak and the perfect grilling recipe?
1. Thaw and acclimate the steak. For searing to occur, the proteins in steak need to be heated to at least 310°F. Tossing cold meat onto a hot grill lowers the temperature and can prevent a crust from forming, so it’s important that any frozen steaks are thawed completely before cooking.
2. Salt your steak 30-45 minutes before grilling. This causes the salt to draw moisture from within the steak up to the surface, where it dissolves the salt and creates a brine that gets reabsorbed into the steak where it breaks down tough connective tissues.
3. Oil the grate on the grill, not the steak. Use tongs and a paper towel dipped in vegetable oil to lube your grates.
4. Manage your heat well. Remember that your grill needs to be hot for your steak to get a good sear. But if it’s hot enough to cause your oil to smoke, it’s too hot.
5. Use the 60/40 rule. The best-tasting steaks are seared on both sides and cooked evenly in the middle. The simplest way to do that is to only flip your steak once. The 60/40 rule suggests that 60% of your cook time should be spent on one side, and 40% on the other.
6. Keep the lid closed. It may be tempting to peek, but trust the experts and keep it shut! Opening the lid makes your grill lose heat, which makes steaks cook unevenly.
7. Check for doneness. A meat thermometer will give you the most accurate temperature reading:
• Rare: 120°F
• Medium Rare: 130°F
• Medium: 140°F
• Medium Well: 150°F
• Well: 160°F
8. Let your steak rest. Pull your steaks from the grill once they’re cooked to 5-10 degrees below your target temperature and rest for 10-15 minutes.
Chance Adventure Co gives families the freedom to hit the open road in classic style.
Kelley and Sam Chance have it figured out when it comes to spending quality family time together with their two young sons, Sully, 9, and Grady, 7. They literally took a chance in 2013 and bought Stella, a 1984 Airstream Excella, as a renovation project. One family camping trip and they were hooked. Now they are true vintage Airstream enthusiasts.
They sold Stella, but the “silver bullet” calling never left and Chance Adventure Co was born. Sam had talked for years about renovating and renting Airstreams.
“Once the pandemic hit, it was now or never,” Kelley says. “We welcomed Carolina into our family, a 1983 31’ Excella, and she’s been rocking out camping trips with us and our clients since early last year. In 2020, she traveled to Yellowstone, Glacier, the Badlands, Upper Peninsula in Michigan, Indiana Dunes, Kannapolis, Kansas and more. Georgia, a 1978 31’ Sovereign Land Yacht, is currently being renovated from the frame up.”
They will be adding to their fleet soon and are adding an Airstream Renovation Workshop on their Tonganoxie property. They also have the Chance Adventure Co shop, loaded with outdoorsy inspired items.
Adventure is a part of life for this active couple, who live on 10 acres. They have horses, garden, hike, bike and explore.
“By far, our favorite thing to do as a family is travel and spend time outdoors. We hiked the three miles roundtrip, 480-foot climb to Delicate Arch when the boys were 8 and 5, biked through the Badlands, kayaking Lake Michigan. We’ve had so many incredible experiences connecting the four of us, and connecting us to nature via camping,” she says. “The boys have learned a deep appreciation and love for Mother Earth, to navigate the terrain using a compass or their own wits, to identify and care for the flora and fauna around us, and they’ve gained so much confidence and courage through it all.”
Each trailer is thoroughly cleaned and sanitized after each rental. Airstreams are available for rental for road trips, or they can deliver and set up at local locations.
